T R A N S F O R M AT I O N I always stop at this bend in the trail and quickly stash my bike, whip out my phone to capture a video and a few photos of Bobby and Emery cruising around the berm.

There are always smiles, some hoots and giggles, and even at the same angle, it just never gets old.

From the eyes of an almost-two-year-old, everything is new. And for those of us lucky enough to witness a child experience the world, we get to see how even the same trails and camera angles transform every time.

In the past six months, our son has gone from his first mountain bike ride-along to being a seasoned passenger on singletrack. Six months from now, he’ll have had his first ski season, and another half year after that, our three-year-old will probably be teaching us a thing or two about what it means to “go faster.”

Having and raising a child is a “hold on tight” kind of ride, defined by a constant flow of transformation. It has also made me more aware of how much change is happening all around us, always.

We often think of transformation as a dramatic turning point, a clear before and after. More often, it happens quietly and continuously. A child grows a little taller. A familiar trail takes on a new meaning. The last ears of Olathe corn make their way from field to table. Western Colorado continues to evolve into an adventure classroom, while the Grand Junction Business Incubator celebrates 40 years of helping entrepreneurs shape what comes next.

That spirit runs throughout this issue. We look at transformation through artists, landscapes, businesses and communities, as well as the smaller seasonal shifts that remind us nothing stays exactly as it is. Fall makes that especially visible. Cottonwoods turn gold, orchards give their last fruit and the landscape begins its slow preparation for winter.

Maybe that is the invitation of this season: to pay attention to what is changing, appreciate what has brought us here and stay curious about what comes next.

And the next time I stop at that spot in the trail, I know I’ll reach for my phone again. The view may be familiar, but I have a feeling it won’t look quite the same.

Williams’ family has farmed the land for five generations, and each generation has reshaped the orchard. Some changes happen quickly through replanting or irrigation improvements.

Others require years of patience. Red-fleshed cider apples took nearly a decade before producing usable fruit. Rebuilding rocky mesa soil has been an even longer project.

“I’ve come to see transformation less as a single moment and more as a long process,” Williams says. “You’re always deciding what to preserve, what to replant and how to prepare it for the next generation.”

That long view is evident in the cider itself.

Williams has devoted years to cultivating traditional English and French bittersweet cider apples — varieties prized for their tannins, structure and complexity but largely unfamiliar to American drinkers. This year’s releases include a single-varietal French bittersweet cider made from Binet Rouge alongside several new Frenchinspired bottlings. The cidery is also exploring co-fermented wine-cider hybrids, natural ciders and expanded sparkling wine production.

“There are hundreds of these old cider apple varieties, each with its own history,” she says, “but many faded out as modern cider styles took over the industry.” Bringing them back so they don’t disappear is part of what drives her work.

“When someone tastes one of these ciders,” she adds, “they’re experiencing a flavor that had nearly been lost.”

Perhaps the greatest transformation Williams hopes to inspire happens around the tasting table. Many consumers still associate cider with something sweet and simple.

Williams believes fine cider deserves the same conversation as wine because it expresses vintage, variety and terroir with equal precision.

“Our elevation, cool nights, UV exposure and the specific varieties in our orchard all show through in the final product,” she says. “When someone tastes our cider and starts asking where the apples were grown, what the season was like or why a variety tastes the way it does, that’s the moment it stops being just a drink and becomes about farming, place and fruit.” : snowcappedcider.com

Small Changes Bring Big Transformation

s the alpine country subtly shifts from green to gold, personal transformation often unfolds in parallel. Living your greatest expression does not happen overnight; small adjustments compound overtime, benefiting your health and leading to long-term transformation.

Kyler Hijmans, nurse practitioner at Vail Healthspan, says that consistent, intentional changes are not about seeking perfection. “Consistency is about doing the habit mostly right, most of the time,” she says.

Once you commit to small changes that optimize your foundation, sustainable transformation becomes possible.

“Health is not a destination,” she emphasizes. “It is not something you are going to get and reach. It is a practice of doing small things every day.”

Hijmans encourages focusing on the five below core pillars of health when seeking personal transformation. All the while, approaching yourself with self-compassion.

To transform your sleep hygiene, Hijmans recommends choosing a consistent wake-up time each morning, having a screen-free hour before bed and charging your phone outside of the bedroom or across the room from where you sleep.

“Little, tiny tweaks to your daily diet will have a huge impact on your overall health,” Hijmans shares. “When you make small changes, people will feel better really fast.”

Rather than opting for the appealing, quick-fix juice cleanse, enjoy a variety of fruits and vegetables every day.

Instead of a quick piece of toast on your way out the door, add in an egg for a source of protein, and aim to include protein with each meal.

Physical Activity

Adults are recommended to complete 150 minutes of moderate aerobic activity plus two strength training days per week. For general health, most adults should aim for a daily step count of 7,000-8,000.

“Consistency beats intensity,” Hijmans says. “Doing something small consistently is going to give you a more powerful outcome than doing something hard once.”

In-person connection often declines in fall as days get shorter again, but that makes intentional connection more important. This is as simple as taking a mindful moment to connect when you encounter a familiar face in the grocery store or gym, making plans to hike with a friend and purposely being present around the dinner table.

Stress Management

Stress management should be a daily practice. Hijmans recommends checking in with your stress levels daily in a way that makes sense to you. Take a pause each day for a mindful moment of self-love, look for the glimmers in life and journal each night about three things that went right that day or three things you are grateful for.

Manage your current and potential future stress by scheduling preventive care. “It is just as important to check in when you think things are great,” Hijmans says. “Just like getting your blood pressure checked regularly.”

1. P rep your cocktail glass with ice and set aside. If you can source pellet ice, it’s a fun touch that feels like you’re still holding onto summer.

2. I n a mixing tin, combine all of the ingredients, except the apple slice.

3. A dd ice and shake well. Strain into the prepped cocktail glass and garnish with the apple slice, topping off with more pellet ice if desired.

1. In a small saucepan, combine all three ingredients. Over medium heat, bring the mixture to a low boil and simmer for five to seven minutes, letting the heat soften the ginger and infuse the honey syrup.

2. Remove from heat and let completely cool to room temperature.

3. Strain the solids through a fine-mesh strainer and store the syrup in the fridge for up to two weeks.

This ginger-honey syrup yields a little under two cups. Use any leftover syrup on pancakes or waffles, in stir-fry dishes or in drinks that would benefit from a spicy kick.

BUTTERNUT SQUASH AND APPLE SOUP SERVES ABOUT 4

1 medium butternut squash, cut in half and deseeded 1 medium white or yellow onion (or half a large one), quartered 1 large Granny Smith apple, cored and quartered (not peeled) 3-4 garlic cloves, peeled 2-3 cups chicken or vegetable stock ½ cup heavy cream Salt and pepper to taste 2 oz goat cheese and chives to stir in Olive oil

1. P reheat oven to 350 degrees Fahrenheit.

2. O n a parchment lined baking sheet, place the butternut squash. Drizzle and brush with olive oil. Place cut side down and roast in the oven for 30 minutes, then remove.

3. A fter 30 minutes, brush the quartered onion and apple pieces, and garlic cloves with olive oil and place around the butternut squash. Return to the oven for 20-30 more minutes or until the squash is completely cooked through.

4. R emove the flesh of the squash and put into a blender with the apple, onion and garlic.

5. Add two cups of chicken or vegetable stock and blend until smooth. Add more stock if needed until desired consistency.

6. Put in a soup pot and heat until simmering.

7. Add cream and serve with a dollop of goat cheese and sprinkle with chives.

GOAT CHEESE AND APPLE SANDWICHES SERVES 3-4

8-10 oz plain goat cheese 2 oz fresh chives, minced Apricot jam 1 Granny Smith apple 6-8 slices of bread of your choice, sourdough or whole wheat recommended Butter Salt and pepper to taste

1. In a bowl, combine the goat cheese, chives, salt and pepper, and refrigerate until ready to assemble the sandwiches.

2. Spread butter on one side of the bread, arrange on a lined cookie sheet and toast under the broiler. Slice the apple very thinly.

3. To assemble the sandwiches: on the untoasted side of the bread, spread apricot jam on one slice, then layer the thinly sliced apple. On another slice, thickly spread the goat cheese mixture, then put the sandwich together.

Unaweep Canyon, which sits on the northern end of the highway, glows in the late afternoon light. Unaweep is the Ute word for “canyon with two mouths,” named for the fact that water flows out from each direction of the canyon due to a central divide partway through it. It is the only canyon in the world where this phenomenon occurs.

Highway 141 is one of the main access points for Divide Road, an unpaved road that winds up and across the Uncompahgre Plateau. The higher elevation and cooler temperatures lend themselves well to groves of aspen trees like this one.

al Mazrin started CLAWS in 2007 in her grandmother’s garage, when she rescued

23 cats from Mesa County Animal Services.

Today, it’s the largest cat sanctuary on the Western Slope, and it’s home to over 600 felines across four locations.

The name stands for Cats League and Assistance of the Western Slope, but the acronym can send another message: “Cat lives are worth saving.”

“I love all animals, but cats are it,” Mazrin says. “I’d do anything for them.”

And there’s plenty to do.

As a sanctuary, cats are safe from the second they set paw in CLAWS until the day they find a new home or pass in the no-kill organization’s care. But that also means there are often more cats in need than the sanctuary has room for.

So, the organization is hoping to address some of the root causes of the Grand Valley’s cat overpopulation problem in addition to saving as many little lives as possible. Mazrin explains CLAWS has hosted a handful of spay and neuter clinics, and is teaming up with other organizations to advocate for a stronger Trap Neuter Release (TNR) program in the valley.
