OUR NEW FARM KITCHEN PICNICS TO GOURMET TREATS FROM THE FARM

This spring, our Werf became home to the Spier Farm Kitchen. “We meticulously restored the werf so that it could once more become a hub of activity – where agriculture, artisan food and creativity find expression,” Mariota Enthoven, Spier’s family owner says. “The opening of the Spier Farm Kitchen – which is housed in a building more than 200-years-old overlooking this historic farmyard – is the latest step in bringing this dream to life.” From our farm salads to handcrafted pies: The Farm Kitchen offers everything you need to create your own delicious picnic as well as an assortment of gourmet goodies for your fridge and pantry. Executive Chef Lolli Heyns and her team use seasonal produce grown at Spier or sourced from trusted local suppliers to create nutritious, farm-inspired food.

TASTE THE FARM AN INSIDE LOOK AT OUR TASTE THE FARM DINNERS

Over the course of two intimate dinners at Eight hosted in July and August by Farmer Angus and Executive Chef Lolli, diners were introduced to the Spier way of growing and making food. Farm-to-table: what does it mean? Sourcing as much as possible from our own farm – and the rest from trusted nearby farmers and suppliers who share our ethos. It means herbs and vegetables grown with love – and without harmful pesticides or artificial fertilizers. Diners were invited to take fresh vegetables home with them – a tasty reminder of an unforgettable evening.

Diners made their own almond and rocket pesto – then slathered it on Hoghouse’s freshly baked sourdough. Fancy trying this at home? Get the recipe at spier.co.za/blog. There’s much more to beef than fillet and sirloin. Farmer Angus explained the many various cuts – from ribeye to hangar steak – that he supplies to the farm as well as many of the Cape’s leading restaurants. Farmer Angus’ chickens, pigs and cattle roam happily on Spier’s pastures. They’re reared without antibiotics or hormones. Dishes on the five-course menu included Farmer Angus’s 28-day matured beef rib eye served with an olive crumble and mushrooms, pan-seared pork neck, and chicken bone broth accompanied by a hen’s egg and greens.

Ben Ngubesilo, Banqueting Manager Ben Ngubesilo has worked at Spier for the past 15 years. He loves interacting with different people. What do you love most about your job? I love meeting with different people all the time. We host many different kinds of events at Spier – everything from weddings and conferences to intimate private dinners – so you get to interact with people from all sorts of different backgrounds and parts of the world. What are you proudest of having achieved? Being appointed Banqueting Manager. When I first joined Spier I was a runner. What’s the key to being happy in life? Take any complaints as a challenge and see them as learning curve. What advice do you have for someone trying to get into your line of work? Skills will never fall from the trees – you’ve got to seek out learning if you want to progress. Where is your favourite part of the farm? The food garden. How do you make a positive difference to the environment? I never litter. I also encourage my team to sort the bins accordingly: we take recycling very seriously at the conference centre, with less than 2% of waste sent to the landfill: we’re currently on a mission to get this to 0%. What’s the best thing about Spier? It’s a very supportive environment where you’re really encouraged to reach your potential. The family owners are true custodians of the farm – they take a very long-term approach that prioritises value over profit.

INTRODUCING THE NEW FRANS K. SMIT WHITE BLEND A NEW ICON PAYS TRIBUTE TO A MASTER Since he joined Spier in 1996, our cellar master, Frans Smit, has harnessed more than three centuries of winemaking history. He has transformed Spier from a small cellar into a major, award-winning Stellenbosch producer. The Frans K. Smit red blend has been Spier’s flagship wine since 2006, paying tribute to this man’s great love of wine, his winemaking skill and his dedication to the process.

THIS YEAR, THE FIRST WHITE BLEND IN THE RANGE, CONSISTING OF SAUVIGNON BLANC AND SÉMILLON, HAS BEEN RELEASED. “This Bordeaux-style white offers balanced, subtly articulated flavours,” says Frans. “Soft and refined, it’s round at the edges and has traces of the unexpected ̶ like

fig leaves on the nose and a hint of elderflower. This complexity of flavours comes from very selective sourcing and attention to detail. The presence of oak is a barelythere sensation, on the nose rather than the palate. This stirs yet more complexity into its wonderful creaminess – a trait I like to call ‘white tannins.’” “The wine has a clean line of freshness, balanced acidity and complexity. This is the result of 14 months on the lees and the use of a very lightly toasted foudre barrel that brings tannin into the picture without any overwhelming vanilla presence. By the time juice met bottle, it was already beautifully integrated. There’s nothing too sharp or intrusive: it’s clean, fresh, refined and rounded,” he adds.

THE WINE’S HERBACEOUS NOSE GIVES WAY TO A TROPICAL PALATE OF CITRUS AND LIME. AFTER DECANTING, A TOUCH OF VANILLA RISES UP THROUGH THE LAYERS. With ageing, this vanilla is likely to fade into the background. Enjoy with fillet of cob, with butter and citrus or lemongrass; or steamed lobster with butter sauce. Although it already offers balance and subtly articulated flavours, the 2015 vintage promises to become increasingly layered over the next four to five years. Peak drinking is eight years after harvest.

The Spier Artisan Studio is a satellite of the Cape Town Spier Artisan Studio. Housed in the Cow Shed, the space allows guests to see the mosaic and bead artisans at work as they create artworks in collaborations with South African visual artists. Works will be on display and available for sale.

In 2007, Spier installed a pioneering centralised wastewater treatment plant which is the embodiment of our approach to waste management. It recycles 100% of our wastewater, treats it using only environmentally friendly methodology and the clean water is then used to irrigate the garden and grounds.

The country’s first permanent outdoor exhibition of mosaic features the works of 16 contemporary South African artists – all crafted by the Spier Arts Academy.

The Spier Farm Kitchen offers everything visitors need to make their own tasty farm picnics – as well as a delicious array of locally sourced and made produce to take home. Help yourself to nutritious, farm-inspired food and linger on the stoep overlooking the Werf with a glass of wine or relax nearby under one of the Werf’s giant oaks. The Spier Farm Kitchen is open 7 days a week, including public holidays, from 10.00 to 16.30 daily.

2. CRAFT MARKET

The Spier Artisan Studio welcomes guests to see mosaic and ceramic artisans at work as they create artworks in collaboration with South African fine artists.

The wood-fired oven and bakery kitchen, located in the historical Jonkershuis on the Werf, serves fresh bread, pastries and treats – which can also be pre-ordered 48 hours in advance. Chef PJ Vadas’s barbeque-focused lunch and dinner menu includes flavoursome grass-fed beef, pork, lamb and free-roaming chicken supplied by Spier’s Farmer Angus, perfectly paired with Spier wine or Hoghouse’s craft ales. The 1822 historic Manor House has been extensively restored and three different meeting rooms are available. The building features artworks from the Spier Collection - one of the largest collections of contemporary South African art in the country.

From fridge magnets to masterpieces, the Spier Craft Market, right next to our Tasting Room, offers a wide range of art and crafts, made with a diverse range of materials, including mosaic, beads, textiles and ceramics.

Eight is a farm-to-table eating experience in a beautiful setting next to the Eerste River. Like its name, the restaurant is an expression of balance, cycles, harmony, infinity and abundance. The produce used at Eight is either grown on the farm or sourced from nearby farmers. Natural and organic ingredients are preferred and combined to create nourishing, healthy, and delicious food. The 4-star Spier Hotel is next to the calming waters of the Eerste River. The rooms are situated in village-style buildings grouped around six private courtyards, each with its own swimming pool in a design reminiscent of the Bo-Kaap or Mediterranean villages where pedestrians have right of way.
