All our herbs, spices, and teas are sealed in non-gas-permeable bags to preserve freshness, aroma, and potency. 95% of our powdered materials are sealed in FDA-approved foil bags. Oils are bottled in glass: cobalt blue bottles or amber boston rounds. Quantities ordered as 25 pounds or more of any one item may be packed into a single 25-pound unit.

Organic is the method of growing and processing that helps protect—not deplete—our natural resources. Organic foods are grown on land that has been free from the use of synthetic fertilizers, growth regulators, insecticides or herbicides for at least three years. By composting, crop rotation, and interplanting to control weeds and pests, organic farming replenishes the soil, and sustains the health of our planet.

Essential Oils:  All our essential oils are pure and 100% natural, undiluted with alcohol or any other substance. Essential oils are obtained through an expression, extraction, and/or a distillation of the plant’s volatile oils. Please use oils with caution, they are extremely concentrated. Fragrance Oils:  Fragrances are generally blends of synthetic oils. They are formulated for aromatic purposes only and are NOT for consumption. Carrier Oils:  These replenishing, plant-derived oils can be externally applied to the body to moisturize skin and improve overall tone and texture. They are NOT designed for consumption.

Cut & Sifted:  Herbs that are collected, dried, and sifted are called cut and sifted. This process retains only the desired part of the plant and produces a relatively fine consistency that is ready for use. Wild Crafted:  Wild crafted herbs are collected in their wild habitat, while leaving enough plant material so as to not compromise the abundance of the mother plant. Certified Organic:  Certification is your guarantee that the product has been grown and processed according to strict guidelines established in the Organic Foods Production Act of 1990. Before a product can be labeled Certified Organic, farmers and processors must meet the following requirements:

Black Tea:  Black tea is the most oxidized of all the teas, providing its deep color, rich flavor and high caffeine content. Oolong Tea:  A traditional Chinese tea with medium oxidation, Oolong’s color and flavor fall between those of black and green tea. Green Tea:  Green tea is processed just after plucking, which minimizes oxidation and delivers a pale green color and distinct earthy flavor. White Tea:  Derived from the young tea plant buds, white tea is the least processed giving it light color, sweet flavor and plenty of antioxidants. Herbals:  These soothing caffeine-free teas are made from various blends of flowers, roots, fruits, leaves or seeds, and are often used for medicinal purposes. Decaffeinated Tea Processes:  Our teas are decaffeinated using an organic carbon dioxide process, which safely draws out just the caffeine from the leaves. This process preserves the tea’s natural flavors and benefits better than any other method.

Our organic certification is by Quality Assurance International (QAI). Most of our products are kosher certified by Earth Kosher. We can provide copies of either certifcation and a list of products certified upon your request.

Cinnamon Cinnamomum cassia & Cinnamomum verum

Cinnamomum cassia refers to the spice harvested from any of four species of trees native to China and cultivated throughout Indonesia, which are collectively called Chinese cassia or Chinese cinnamon. As fellow members of the laurel family and the Cinnamomum genus, they are closely related to Ceylon cinnamon but differ in chemical and physical structure. Cassia cinnamon has a significantly higher coumarin content and the darker-colored sticks, or quills, are much harder and difficult to break or powder. Cassia also has a more pungent than sweet flavor and aroma than Ceylon cinnamon. Although Ceylon is considered the only true cinnamon and a finer grade of spice, the lesser expensive cassia is more commonly used for baking and even preferred in certain Indian dishes, including curries. Otherwise, both spices, whole and powdered, are generally used interchangeably.

Because the spice is obtained from the inner bark of an evergreen tree in the laurel family that is native to Sri Lanka, Ceylon cinnamon is also called Sri Lanka cinnamon. Ceylon cinnamon is, however, cultivated in many Asian countries, including Vietnam. Geographical and botanical origin aside, the primary differences between C. verum and other species of cinnamon is a more delicate texture and a sweeter flavor with clove-like undertones.

Darjeeling Tea

Tea flavor and character is affected by the way the leaves are processed, which determines the rate of oxidation. Technically speaking, because Darjeeling has a low level of oxidation the tea is actually an oolong variety, even though it’s typically marketed as a black tea. Flush is another factor, which is determined by the time of year the tea is harvested. First flush tea harvested in early spring yields a mild color and flavor, while mid-summer second flush produces a rich golden color and a full-bodied flavor reminiscent of muscatel grape with a spicysweet finish. The type of Darjeeling typically found in masala chai is harvested when monsoon season subsides and the dark amber brew with full body is the result of an autumn harvest.

Darjeeling tea is named after its place of origin – a town in the state of West Bengal situated in the foothills of the Himalayan Mountains of eastern India. Also known as Queen of the Hills, the Darjeeling region is landscaped by acres of plantations referred to as “tea estates.” Just like French champagne and Italian prosciutto, authentic Darjeeling tea is protected by a Geographical Indications of Goods registration, which means its cultivation is limited to these estates and produced under very specific conditions.

Brightly colored and wildly fragrant, exotic spices have helped the world go from flat to flavorful in more ways than one. The high demand and pursuit of Indian spices have not only fostered international trade but also the integration of eastern and western cultures over the centuries, not to mention help fashion a new global map. To the enterprising sailing merchants of the ancient past, these spices were literally worth their weight in gold. While you may not be able to satisfy your mortgage or car loan with a pound of spice today, their value to anyone with taste buds hasn’t diminished with time. By Land and By Sea For most of us, putting some spice in our food takes no more effort than reaching for the kitchen spice rack. But “back in the day,” and for at least 5,000 years, Arabs dominated the spice trade simply because they controlled the lands that lay between the standard routes of travel to top spice-producing regions, namely India. This monopoly was challenged, however, at around A.D. 40 when a Greek merchant named Hippalus proposed a faster way of reaching India than the customary method of following the coastline—by crossing the Indian Ocean. He suggested that by using the prevailing winds driven by the semi-annual monsoons, the usual two-year trek could be reduced to only 12 months. The southwesterly monsoon winds made sailing feasible across the Indian Ocean from Egypt from April through October, and the subsequent northeasterly monsoon facilitated the return trip between October and the following April.


The Spices of Life – and Science As the spice trade continued to flourish, knowledge of the use of herbs and spices in medicine also spread from the east throughout the Mediterranean. This is evidenced by numerous references to the Indian medical system, or Ayurveda, made by the Greek physician and botanist Pedanius Dioscorides, who compiled a 5-volume herbal in the 1st century A.D. called De Materia Medica. This body of work not only dominated the medical literature of the author’s time, but it persisted in circulation until the middle ages and is still regarded as the forerunner of all modern pharmacopeias. More than 500 plants are described in the text, a number of them indigenous to India.

The Vedas, which some historians date to 10,000 BC, depict an elite group of healers who cured disease, performed surgeries, amputations and cauterizations, constructed artificial limbs and produced anesthesia and other medicines from local plants. Because some of these texts have not survived time and the elements, the knowledge they contained was passed down by oral tradition. Other texts have been preserved via reconstruction. The Rigveda, composed between 1700 BC and 1100 BC, lists more than 1,000 medicinal plants,

Spiced Lemons

6 organic lemons, washed 6 tbsps sea salt pg 20 2 tbsps whole black peppercorns (or mixed is fine) pg 17 3 whole bay leaves pg 6 6 whole cardamom pods, split pg 7 1 whole cinnamon stick pg 8, 9 Sunflower oil Cut lemons into quarters and layer them in a strainer positioned over a bowl. Sprinkle lemons evenly with salt. Cover the bowl with a tea towel and set aside for 2 days. Packed drained lemon quarters into a large (or two smaller) glass-preserving jar. Add just enough sunflower oil to cover the lemons and spices. Add peppercorns, bay, cardamoms and cinnamon. Store in a cool place for one month before using, giving the jar a turn once each day. Add to couscous, dhal or vegetable and chicken dishes. while the Charaka Samhita, which is dedicated to internal medicine and dates to the 2nd century BCE, describes at least 500 herbal medicines. Incidentally, the modern oath that nursing students in the western world take today upon graduation is modeled after the description of duties given in Volume I, Section XV of this ancient tome.

Select Spices of India - Turmeric Turmeric Traditions According to Hindu tradition, turmeric is associated with invoking fertility. Brides are adorned around the neck with a special thread coated with a paste made from turmeric as marriage vows are made. A traditional wedding is often preceded by a celebration called Gaye holud in which family and friends paint elaborate designs on the bodies of the couple using turmeric paste. This ritual, so named because it literally means “yellow on the body,” illuminates the skin of the bride and groom with a beautiful golden stain for two to three days before the nuptials take place. Turmeric is also used to lend color to the robes of Buddhist monks and doubles as Natural Yellow No. 3 in the commercial production of mustard, butter, orange juice and processed cheese. A Bit of Turmeric Botany As a member of the Zingiberaceae family, turmeric is related to ginger. It is also known as Indian saffron because it is similar in character but a more economical alternative to the real thing. India is the largest producer of turmeric, which takes nine months to cultivate before the rhizome can be lifted for harvest. The roots are then boiled, peeled and dried in the sun for a week before they are separated by grade, with “fingers” representing the best in quality and lesser candidates labeled as “rounds” or “splits.” The spice is most often purchased and used as a ground powder, although it can be obtained fresh from specialty markets. Culinary Uses of Turmeric Whether chopped, sliced, grated or ground, turmeric provides bright color and imparts a robust, peppery flavor and aroma with a hint of aged wood. It provides the characteristic golden color of curries and dhal, a type of stew made from hulled, split lentils or peas. Turmeric is also featured in Indian chutney, piccalilli and kedgeree (pickles), as well as in rice, vegetable and seafood dishes.

Select Spices of India - Cardamom Culinary Uses of Cardamom Cardamom is a member of the ginger family known for its unique flavor and aroma, which can be described as smoky, floral, citrus and sweet—all at the same time. Common cardamom, or Elettaria cardamomum, ranges from green to yellowgray in color. The fruit of other species, however, may be brown, black, red or even white. The flavor of all cardamoms is best preserved when stored as whole pods since the seeds remain intact, although the pods are also ground into a spice. You can also purchase the seeds, which are sold as “decorticated cardamom.” Many traditional Indian dishes feature different varieties of cardamom. Elettaria, or green cardamom, is combined with condensed milk and sugar to make sweets collectively referred to as mithai. Green cardamom is also used to flavor coffee and teas, most notably masala chai. Since culinary connoisseurs consider green cardamon the premium variety, it is commonly used to flavor meats, poultry, seafood, vegetable dishes, soups and sauces. In contrast, Amomum, or black cardamom, imparts a slightly mint-like flavor and is an ingredient in garam masala, a seasoning blend used to flavor curries and rice dishes. Three Cups of Coffee The spice is also a constituent in kahwa, a festive coffee blend that has become recognized as a symbol of hospitality in Indian households. Should you find yourself fortunate enough to be offered this treat, be aware that it is considered rude to refuse anything less than three cups. Cardamom Farming and Processing Cardamom is a native of India and Malaysia. It is harvested in October—the whole pods are dried in the sun or in curing houses and then sorted according to color.


Select Spices of India - Coriander Culinary Uses of Coriander Coriander is a staple in Indian cuisine. It is added whole or ground to chutneys, pickling spice mixtures and is frequently used to season chicken and pork. Often, coriander seeds are combined with cumin seeds and fried “dry” before being powdered. This spice gets its name from koris, the Greek word for bed bug Reputedly, this is because the pest gives off an aroma similar to the leaves of the mother plant from which the spice is harvested—cilantro. Though coriander is the dried, brown seeds of the cilantro plant it doesn’t taste anything like the herb. In fact, the seeds taste like burnt orange when toasted but are mildly sweet when ground as a spice.

Lemongrass and its Citronella Cousin The ancient Greeks, Romans and Egyptians used lemongrass to make medicines and cosmetics. The herb also has applications in aromatherapy and perfumery. Cymbopogon citratus is the species most often used in cooking, although lemongrass shares similar insect-repelling properties with many of its botanical cousins, including C. nardus, more commonly known as citronella. Both species are used in the production of candles and soaps formulated to keep mosquitoes at bay.

Coriander should be added late in cooking—just minutes before your dish is completed—since prolonged cooking will cause the flavor to dissipate. Coriander can help provide flavorful balance between sweet and pungent tastes. Since coriander can be used in great quantity it can save your homemade spice blends wherein you might have been too generous with a pungent item. To rescue your mix you can simply add double the amount of coriander as done with the opposing spice to regain balance.

Lemongrass is used fresh or dried to flavor curries, stir-fries, pickles, soups, stews and salads. The plant is also prepared as tea, either alone or in combination with other herbs. In fact, in the Malabar coastal area of southern India, lemongrass tea is locally known as Chukku Kaapi, which means, “dried ginger coffee.” It is also commonly used to season coconut milk in which chicken or fish is poached. Dried and ground lemongrass is a seasoning commonly referred to in some parts of India as Sereh powder.

A PEPPERING OF SPICE TRADE HISTORY based on an exerpt from our Nov ‘11 newsletter

Gaining a Fortunate Foodhold Most Americans think of faraway, exotic lands when it comes to the spice trade. In fact, the U.S. didn’t become a player until the late 17th century when Boston native Elihu Yale, a 20-year veteran of the British East India Company, earned his fortune from his own business based on clandestine trade contracts with the company’s foreign merchants. (Some of his prosperity would benefit a small school in New Haven, Connecticut that would later become Yale University.) Taking a cue from Yale to eliminate the middle man, Captain Jonathan Carnes made Salem, Massachusetts the epicenter of spice trade in North America with a large payload of pepper from Indonesia in the late 1700s. But the real story of the spice trade is told in clay pot remnants that clutch carbonized scraps of cooked fish and game seasoned with ground cumin, coriander and garlic mustard seeds. Back in the Day Based on archeological findings dating to the Neolithic era, or the Late Stone Age, humans first used spices as articles of trade as early as the 10th millennium BC. The earliest written record is credited to the ancient Egyptians, who imported ivory, gold and aromatic resins in exchange for spices with a neighboring region that now encompasses northern Somalia, Ethiopia and Sudan. The Roman Empire would expand existing trade routes in the Arabian Peninsula, eventually making the sea port of Alexandria the spice trade capital of the Greco-Roman world. While the Romans further developed trade with Arabia and India via the Incense Road of Antiquity in the Mediterranean, China controlled the Silk Road, an overland route from India. By the 7th century, Arabian merchants would dominate trade routes in the Indian Ocean and eastern Mediterranean. They also opened trade with Southeast Asia, creating a bridge to the remote islands of Molucca and

Banda, which became known as the Spice Islands. To safeguard their territories, the Arabs spread rumors that spice-bearing plants and trees were guarded by winged creatures and venomous snakes. Although many lives


By the mid-15th century, Venice became the major player in the spice trade, largely owing to twenty-five years of global travel by Marco Polo. However, the discovery of an alternate route to India by Vasco da Gama in 1498 would shift industry dominance to Portugal that would last through the 1500s. In addition to venturing to India and Ceylon (now Sri Lanka), Portugal imported black pepper from India -- a spice fit for royalty because it required a king’s ransom to afford. In fact, because peppercorns were considered equivalent to currency, some Europeans elected to pay rent and taxes with it. To this day, peppercorn is a legal term in English law that represents a small payment or fee simple. The Freemasons of St. George’s have paid “peppercorn rent” to use the old Bermuda state meeting house each spring for more than 200 years. The price? A single peppercorn resting atop a velvet cushion, presented to the Governor on a silver platter.

India remains the leading exporter of spices today, providing more than 85% of the world’s supply. The country no longer trades with other nations, however, but distributes to wholesalers, retailers and distributers directly instead. This puts once rare and coveted spices within easy reach for consumers from all over the globe. More importantly, the practice ensures that peace will not be broken over the price of pepper.

Green Tomato Chutney Recipe

2 green tomatoes 1 small red onion 1 green chili pepper, seeded and chopped 3 tablespoons fresh cilantro, chopped 1 lime (juice of) ½ teaspoon sea salt p20 ½ teaspoon paprika p17 ½ teaspoon cayenne powder p8 ½ teaspoon cumin seeds p10 ½ teaspoon coriander seeds p9,10 Toast the seeds in a dry pan over medium heat for 1 to 2 minutes, or just until fragrant. Remove from heat and let cool, then grind seeds into a powder. Dice tomatoes and red onion and place in a bowl. Add the chopped chili pepper, cilantro, lime juice, salt, paprika, cayenne, ground cumin and coriander. Stir to combine and serve. Dollop some on your nan!

As part of the Dutch East India Company, they had full control over cinnamon exports in Ceylon and pepper imports from the Malabar Coast and India. England began competing with Holland, which contributed to the launch of the Fourth Anglo-Dutch War in 1780. In a demonstration of persistence paying off, England invested another 20 years to gain control of the majority of Dutch colonies and Indian pepper ports.
