With the intent to both honor and elevate the traditional retail and art gallery experiences, Curate will include collections from a diverse range of designers and makers across the globe. Locally owned and operated, Grayton Beer Co. just finished a staggering expansion to increase their current brewing capacity. The expansion boosts its production capacity with the addition of four 120-barrel fermenters and one 275-barrel brite tank. The new equipment takes the brewery’s capacity up over 1,000 barrels per month, roughly 29,000 gallons. Started in 2011, Grayton Beer Company has been successful throughout Florida. Kornelis Poelstra, MD, PhD Orthopedic and Neurological Spine Surgeon
During a cold 2009 winter in Baltimore, Kornelis Poelstra and his wife Lori decided to pack up the family, say goodbye to friends and colleagues, and embark on the adventure of a lifetime. The adventure? Moving to and living fulltime in Destin!
patients. The Spine Institute on the Emerald Coast was born. Others soon joined his team and offices in Destin, Ft. Walton and Crestview were established. Today, they have a total of seven providers and a multidisciplinary team that continues to grow.
Of course, this wasn’t a spontaneous move. With three children at the time and a prestigious career working as an Assistant Professor of Orthopedic Surgery at the University of Maryland, acting spontaneously was out of the question. Dr. Poelstra considered many options but after a trip to Destin he was moved by the natural beauty, the friendliness of the locals, the education system, the safe environment for his kids, and the quality of health care. He knew immediately that he was ready to start the next chapter of his life here.
Dr. Poelstra is an Orthopedic and Neurological Spine Surgeon with a PhD in Biomedical Engineering. His sole focus is spine surgery and he prides himself on his unique approach to patient care. He pairs the right treatment with the right patient and with his wealth of experience, he’s created an academic spine practice in a private setting. Three-fourths of his surgeries are correcting previous spine treatments from other practices and The Spine Institute boasts one of the lowest infection and remittance levels in the country.

In addition to operating from his home base at Sacred Heart Hospital in Destin, he travels globally to demonstrate different techniques and the use of robotics to aid in spinal surgery. When he’s not at work his hobbies include paddle boarding, boating, biking, motorcycling, cooking, and enjoying the outdoors. His slogan is “Motion is Lotion.” Dr. Poelstra enjoys getting up and moving around, which is also a mantra for his patients. With his wife they now have a total of four children who attend Destin Elementary and Destin Middle School. On the weekends they enjoy cycling to The Spine Institute and stopping by Candymaker on the way to the beach. Traveling and sharing his passion of spine treatments allows him to experience many locales, but nothing beats returning home. When asked about why he chooses to live in Destin he states, “The quality of people is fantastic here. I love the people. They are kind and are always looking out for each other. It’s an unbelievable place to live and an unbelievable secret. It’s hard to get here, but it’s even harder to leave.”

One might argue that Destin’s most treasured quality is its beautiful waters. Thankfully for those who live by and visit our shores, ecologically healthy waters are also economically healthy – working symbiotically to provide enjoyment to all and employment to a majority of the locals. These waters are an inseparable part of our rich heritage and woven delicately into the daily fabric of lives in our shared coastal community. Fortunately for us, there is a group tasked with the paramount job of protecting this – our prized and priceless resource – as well as the lives of those who hold it dear. SOUVENIR MAGAZINE

Standing proudly on the shores of Choctawhatchee Bay is Station Destin of the US Coast Guard. This is home to 32 full-time Active Duty guards, 12 Reservists and an Auxiliary Flotilla comprised of over 40 uniformed, skilled men and women whose sworn duty is to safeguard the lives of those who live, work and vacation on the Emerald Coast. Station Destin is well outfitted to carry out their missions, as they are equipped with two 45ft response boats, a 29ft Defender Class small response boat and a 24ft shallow water response boat. From 50 miles offshore into the Gulf of Mexico (bordered by Inlet Beach to the east and Navarre Bridge to

the west) and inland (covering the Bay, all bayous and the Intracoastal Waterway), these stewards of the Gulf stand evervigilant keeping us safe from danger, from storms and sometimes even from ourselves. As commerce and recreation have evolved on the waterways over the centuries, so too has the Guard. The US Coast Guard is the oldest continuous seagoing service and has a proud history. Founded in 1790 as part of the Department of the Treasury, they were tasked by Congress to protect Florida Live Oak trees (trees deemed critical to the security of our newlyformed nation as they provided the best wood for shipbuilding).
As the exploration of the Nation’s valuable marine resources (including whales, fur-bearing animals and fish) increased, the duties of the Coast Guard expanded. Today, US waters are one of the most valuable resources on Earth. They support commercial and recreational fisheries worth more than $30 billion annually. The duties of the modern Coast Guard are vast and varied. However, the mission with which their name is nearly synonymous is Search and Rescue. The focus of these missions is to minimize loss of life, injury and property damage and to aid persons in distress. Not only do they coordinate these
efforts, but usually conduct the missions as well. The US Coast Guard has pioneered many life-saving tactics and is a world leader in the field of Search and Rescue. While many of their duties involve life and death, some actions are thankfully far less dramatic – but by no means less important. One such added service is Recreational and Commercial Boat Safety. These efforts that we are most familiar consist primarily of education and prevention. The same tenets that apply to their life saving efforts also govern their outreach to boaters with regard to improving their knowledge, skills and abilities on the waterways to hopefully prevent loss of life, injuries and property damage.

The Guard places value on all life on and in the water and as such, are dedicated maritime stewards. They focus on Maine Environmental Protection by safeguarding sensitive aquatic habitats, mammals and endangered species by enforcing laws to protect our waters from the discharge of oil, hazardous substances and the removal of non-indigenous invasive species. Working with other federal and state agencies, they also enforce marine resource management and conservation efforts to preserve healthy stocks of fish and other aquatic resources for future generations to respect and enjoy.

Should you find yourself in the unenviable position of being 40 miles offshore with no fuel or communication, the red stripe of the Coast Guard is most welcome. Evolving as they are needed, in 2003 the US Coast Guard was incorporated into the Department of Homeland Security. It’s a military service intentionally assigned to a civilian department as this allows them to board vessels including warships of other nations. This action is considered a police action, instead of a hostile act of war. They also provide mission-critical command and control support for forces responding to environmental disasters in the maritime domain.
Whether you’re stranded, injured, sick or lost – you can rely on these extraordinary individuals who are as vested in the health and well-being of you and your family as they are in the waters they protect. Their commitment to preserving our coasts and waterways is humbling and we are thankful for the vigilance with which they guard the Emerald Coast. Sitting with a taut-line in the water, soaking in the warm rays of the sun and sharing stories with friends and family are the foundations which my fondest childhood memories are built upon. As we didn’t have access to the Gulf of Mexico, we’d load up the station wagon with an abundance of gear and venture far in search of a river or a lake. We considered ourselves mighty hunter-gatherers and our mission was to locate trout & victoriously bring home dinner.
FISHING FOR MEMORIES
Many times we returned with only sunburns and an exhausted arsenal of bait. Sure, we’d occasionally bring in a haul, but it was the experience itself that I cherished most. As a kid, fishing meant it was okay to get sandy, to splash in the water and a chance to putt around in a Jon boat. We’d eat Oscar Mayer bologna sandwiches (as if there are any other kind) and drink way too much Barq’s Root Beer. These memories and moments are like rooms in my mind and I move from one to the next with greater and greater affection as I prepare to head south to Destin . Many years have passed and as I acknowledge to myself the affection I have for those days now long gone, I realize I haven’t spent nearly enough time fishing. Sure, we have some neglected dusty poles in our garage but heading to the World’s Luckiest Fishing Village has heightened my desire to share this experience with my own kids…

It’s not my first time to Destin. In fact, this is our go-to summer vacation spot. We love the beach! On our last visit, a few of us pitched in and chartered a deep-sea fishing boat. The catch was phenomenal and so was the ride! The roaring diesel engines, the tumbling waves and the giant grouper were all we talked about for months. However, this was an adventure I shared with friends. This time I wanted to share the experience with my whole family. Now I am back at the Harbor with the family in tow. The scent, the sights and the sounds work in concert to cast a magical nautical spell. We meet our captain and board the boat we’ve chartered, the aptly titled Reel Lucky. They’ve assured us calm water fishing and the little ones are relieved and ecstatic in equal measure. The engine roars to life and before we know it, we are trolling. Within minutes, we are reeling in our first catch of the day! The fun continues for some time and after some quick site seeing (the harbor is lined with some remarkable waterfront homes), we head to our next spot.
We pass under the Destin Bridge and float by Crab Island. After we depart the no wake zone, we really feel the wind in our hair. It’s a smooth ride but still plenty of fun. We arrive at what I believe is an inlet, but I’m uncertain if it’s actually a bayou? This isn’t a part of Destin I am familiar with. There are homes and docks nearby, but more importantly – an abundance of fish! Our captain baits the hooks for the children old enough to cast and for our littlest one, he gracefully tosses a line out. Moments later, we’re reeling in some reds. It’s fun and exciting and all at once (for me), everything stops – a moment frozen in time – my wife laughs. The kids smile up at me. I realize I’m here now, creating this indelible memory with them while simultaneously reliving the joys of my youth and maybe – just maybe – carving out a moment in the future when my children bring me back to a ship’s deck, swimming in golden Gulf sun – forever the man I am now. Forever ‘Dad’. We are gliding across the smooth Choctawhatchee Bay back to the docks. Everyone is smiling from ear to ear and we’re not sure if we could’ve possibly had more fun. As if the Universe was listening, a dolphin breaks the surface of the water and is quickly followed by several more. There’s even a baby dolphin! The captain slows the boat and we enjoy a little more unscheduled excitement before heading back in. Later that evening, as my wife and I clean up after a dinner of freshly caught fish, we take an account of our day as a family, careful to note that it is special and unique. In a sea of ordinary days, of busy days, of taxing days – this is one we’ll remember and (more importantly) they’ll remember – our family tradition of fishing in Destin.

In an effort to build awareness, in early 2012 local artist Aaron Sutton launched the Artists of 30A website (artistsof30a. com) highlighting the artists and art galleries in South Walton. Now, four years later, the site represents 35+ artists and 15+ galleries. Aaron’s goal is to include all local artists and galleries. So, as the artistic community grows, so does the website. In addition to the site, he also produces a map annually. This map can be found at over 100 local businesses. DISH’N IT OUT Crabby Mac & Cheese
1.5 cups of dry macaroni 6 oz claw crab meat (pick out shells) 3 Tbs. butter 2 Tbs. flour .125 cup onion, chopped finely 1.5 cups milk 3 oz Parmesan cheese 8 oz sharp white cheddar cheese Salt and pepper (to taste) .25 cup bread crumbs or panko
Preheat the oven to 350 and lightly grease a casserole dish. Cook the macaroni according to the box instructions, drain well. Add the crab meat, set aside. In a sauce pot, melt the butter on medium heat and add onion. Saute until fragrant. Sprinkle the flour over the onion, mix well. Slowly pour in the milk while constantly stirring with a whisk. The mixture will start thickening. Grate the white cheddar into the milk mixture. Add salt and pepper and keep stirring, slowly, until the cheese is melted. Pour the cheese mixture into the macaroni and crab. Add half of the grated Parmesan cheese. Stir well, until all combined. Transfer into a baking casserole dish. Sprinkle with bread crumbs /panko and remainder of grated Parmesan cheese. Bake for 25-30 minutes..

There are over 400 species of Grouper. The most abundant is Red Grouper, but others such as the Snowy Grouper can be found on select menus. When the school expanded and needed the space, one of their volunteer DJs, Mike Ragsdale, elected to keep the station going. For those of you not acquainted with Mr. Ragsdale, he’s the creative mind behind the 30A brand. With an eye towards the future, Mike brought in a 20year radio veteran to head up the station. Cory Davis is now the General Manager of 30A Radio and he has done an outstanding job of rounding out this successful concept. He’s the voice of 30A Radio and the programing insider who crafts the unique blend of beach music, southern rock, country, reggae, and original tunes by local musicians.
