EDITOR’S NOTE I’m a traditionalist, part of the seasonal ritual is lugging tattered boxes down from the attic to unpack generations’ worth of ornaments to cram onto the Christmas tree that we selected at the local tree farm the day after Thanksgiving. Design comes second to memories and sentiment. Each object has a meaning, like the personalized ornaments my children receive each year the day we decorate. At Southern Motherhood, we value tradition and creating memories you can pass down to your children and generations to come. No matter how you celebrate, we hope the ideas, gifts, and projects in these pages put a new twist on your holiday this year. Another ritual for my family is traveling to my brother’s home for breakfast on Christmas morning, and then moving the party to my parent’s house

for gift giving and dinner. Being a mom of 2 little boys that are 11-months a part, I can share many parents’ fears of traveling tantrums and some holidays the fear of those epic meltdowns nearly kept me from leaving the house. In this volume, I’ve shared some of my well-worn ideas to preventing your lovely children from turning into Gremlins during those long flights this winter. Along with traveling with little ones was the realization that not everyone we visited had a baby-proof home and my little guys would always find the exact things they shouldn’t, we have shared a checklist of some of the best safety tips you can pass along to your hostesses or if you are playing host yourself to friends and family with little ones this year, you might want to take a look and secure your home for those exploring little hands coming to visit.

HOLIDAY HOST SAFETY TIPS The holiday season is a time of wonder and awe for children but it can also be a recipe for meltdowns and safety disasters, as travel, jet lag and disrupted routines are combined with visits to homes that are not set up for babies and toddlers. If you are a parent traveling with little children this holiday season, or a host welcoming babies into your home, check out the following tips on how to create a safe environment and ease holiday stress. A few simple precautions — and a little bit of patience — can go a long way toward keeping little ones safe. The biggest dangers in a non-baby-proofed house are typically everyday things. From electrical wires, hanging window blind strings, steep stairs, small items that are choking hazards and home cleaning supplies are often left out within arm’s reach of little hands are some common dangers.

Holiday hosts can do a quick sweep of their home to fix common issues, • • • • • •

Protect against falls by blocking off stairs both indoors and outdoors. Cover outlets with inexpensive outlet plugs. Get any small objects out of reach. Choking hazards include small toys, balloons, magnets, coins and even pieces of dog food. Look out for snacks that are left out but might be within a young child’s reach, too — nuts, popcorn and hard small candy are among the holiday treats that are choking hazards. Make sure medications, cleaning supplies and other household toxins are out of reach. Tie up any cords and garlands that are longer than 12 inches (30 centimeters). Make sure windows are locked and can not be unlocked by little hands.

Asking hosts that you are visiting to baby-proof their homes doesn’t have to be a fraught conversation, “Say something like, ‘Oh, man, our 2-year-old is really into everything right now, putting things in their mouth and opening doors. Is there something I can do to help you prepare?’” he said.

PREVENTING HOLIDAY TRAVEL MELTDOWNS Fear of taking your child on holiday in case they have a ‘travel tantrum’ is actually really common amongst parents. It’s suggested that as many as 1 in 4 parents were too scared to take their children on a plane, for fears of being criticized by other passengers. However, you shouldn’t let the fear of your child throwing a fit ruin your family holiday dreams- check out our top tips for preventing and controlling a travel tantrum.

1. Keep to the routine, your child knows best Does your child depend on a consistent schedule of eating and sleeping? If yes, then please for both your child and your sanity, don’t decide to go through security during what would normally be nap time. Do strict schedules stress your child out and upset them further? If yes, then don’t try and force your little one to sleep or eat on a schedule during your trip. You know your child best, so stick with what is best for them even when travelling. 2. Prepare your Mary Poppins bag of magic The four biggest causes of travel tantrums are tiredness, hunger, boredom and hyperactivity. Equip yourself with a bag full of healthy low-sugar snacks and small surprise toys and games that you can bring out at different points during the flight (do NOT bring any toy that makes a loud noise). Make sure you keep some milk/water handy for take-off and landing, to help stop your child’s ears from popping, which might cause an upset. Take advantage of airport play areas and space by letting your little one burn off as much energy as possible before you board the plane, and avoid sugary snacks or naps before the flight, so that your child isn’t wound up or full of too much energy!


3. Stand up comedy Laughter keeps travel tantrums at bay and releases all those feel-good endorphins that keep kids all cute and chucky, so keep your little ones laughing for as long as possible. The good news is, it’s super easy to get a toddler to laugh. If your child won’t part with his favorite stuffed animal going through security then hold it and make it talk untill she laughs! If your child won’t walk any more, exclaim ‘Okay shall we just go on an adventure for dinosaurs in here?” take giant footsteps and ask them to look behind things and on walls for dinos. It’s worth looking stupid for a few minutes to get those all important laughs that keep the screams at bay. 4. Don’t awaken the monster A pretty much garunteed way of causing a toddler meltdown? Using the word ‘no’. Instead of saying no to your child, come up with ways to distract and engage your little one before the travel tantrum starts to brew. Where possible, offer options to your child so that they feel like they are in control. 5. Keep it calm If your little one is yelling, resist the urge to yell back. Instead, look them straight in the eyes and start talking very quietly and calmly. This will confuse your child who will realise that they need to quieten down to figure out what you’re saying. It’s a really effective technique, however be warned, it has an expiration date. There are only so many times you can use it before your little wild one catches on to what you’re doing! 6. Be realistic It’s also important to keep your expectations realistic.Yes, toddlers can and probably will get over-tired or over-excited during a flight, causing a travel tantrum, but it’s just what they do! And no, the flight is not going to be the best part of your holiday but once you’ve gotten through it, you have an amazing family holiday ahead of you!

AIR FRYER BAKED APPLE Ingredients: • 4 large gala apples • 2/3 cup chopped walnuts • ¼ teaspoon ground cardamom • ½ teaspoon ground cinnamon • ½ teaspoon ground nutmeg • 2 tablespoons maple syrup • 3 medjool dates, chopped To Top it Off: • ½ cup water • 2 tablespoons maple syrup

Directions: 1. Preheat oven to 375*F. 2. Start by rinsing off the apples and using a small knife to cut down at about a 30* angle in a circle around the stem. You want to try to get the seeds out here. If the seeds do not come out when you do your initial cutting of the stem, use a kitchen knife or a spoon and work them around in a circle inside the apple. What you want is to remove the seeds and also create enough room to stuff the apples. 3. Next, in a small bowl, mix together the nuts, spices, maple syrup, and dates, then fill this mixture into the apples as tightly packed as you can. 4. Take a brownie pan that can fit all 4 apples tightly, place them inside. I find it’s helpful to pour ½ cup water mixed with 2 tablespoons of maple syrup over the apples and onto the base of the pan to keep everything very moist. 5. You’re now ready to put everything in the oven! Cover the apples with tin foil and bake for 20 minutes, remove the foil and bake for an additional 10. Enjoy!

STAR-ANISE SPICED APPLE CIDER Ingredients: • 2 quarts fresh pressed apple cider • 6 whole star anise • 4 whole cinnamon sticks • 10 allspice berries • 1 orange cut into 1/4-inch thick slices

Directions: 1. Add all of your ingredients to a deep cooking pot. 2. Bring your mixture to a complete full boil, then reduce to a simmer and let cook 30 minutes. 3. When done, pour through a fine strainer or sieve. Offer guests a splash of bourbon or rum, if desired.

ROSE APPLE PIE TUTORIAL Ingredients: • 6 large (3 lbs.) firm red apples • (Ida Reds, Pink Lady, or Gala • work well) • 1 Tbs. lemon juice • 1/4 C. light brown sugar • 1/4 C. granulated sugar • 1 tsp. ground cinnamon • 1/8 tsp. ground nutmeg • 1 (9-inch) pie pastry • (prepared or homemade), • Sweetened whipped cream for serving, optional

Directions: 1. Wash the apples and pat them dry. Slice each apple in half lengthwise, and then remove the core and seeds. Slice the apple halves lengthwise to 1/8-inch thick pieces. Place the apple slices into a large bowl. Sprinkle both sugars and cinnamon over the apples. Gently stir to coat. Let apples stand alone for 10 minutes. 2. Move the apples to a large skillet set over low heat. Simmer the apples, gently stirring every couple minutes, to soften to the point that the slices are easily bent, but not soft to the point of breaking down—between 8 to 10 minutes. Transfer the apples and all juices from the pan back to the large bowl to cool. Let cool! 3. Preheat the oven to 425 degrees F. 4. Once the apples are cool, begin to arrange the slices, cut side down, into the pastry lined pie plate. Working from the outer edge of the interior, arrange individual apple slices, skin side up, along the perimeter of the pie, positioning each new slice to cover about one-third of the apple slice immediately proceeding it. 5. After that first row is complete around the interior, continue on with the next row around, overlapping slices as in the first row, and nesting each slice snugly against the row preceding it. Work toward the center of the pie with each subsequent row. Apple slices should be arranged in as dense a pattern as possible. 6. After the rows of apple slices have filled all but the center inch or so of the pie, prepare the center of the rose bud by tightly rolling one slice into a spiral. Wind another slice around that spiral, and continue with additional apple slices until the “rose bud” is large enough to fill the small gap of fruit in the very center of the pie. Carefully nestle the “rose bud” cut side down into the center of the pie. 7. Cover and reserve the juicy AMAZING syrup remaining in the bowl from the apples; set the syrup aside. (Should be around 1/4 C. syrup.) 8. Bake at 425 degrees F for 20 minutes. Reduce the heat to 375 degrees and continue baking for 30 to 40 minutes or until apples are soft and crust is evenly light browned. Remove the pie from the oven, setting it on a wire rack to cool. 9. Immediately brush all of the reserved syrup over the hot apple slices. 10. Let the pie stand to completely cool before slicing to serve.


ALL-FRUIT MINCEMEAT Ingredients: • 2 apples, coarsely grated • 1-2 pears, finely chopped • grated zest and juice of 1 lemon • grated zest and juice of 1 orange • 1 cup raisins • 1 cup golden raisins • 1 cup currants • 1/2 cup candied citron or peel • 1 1/2 cups dark brown sugar • 1/4 cup butter • 1-2 cinnamon sticks • 1 tsp. pumpkin pie spice (or some cinnamon, allspice and nutmeg) • pinch salt • 1/2 cup chopped walnuts or • pecans, toasted (optional)

Directions: 1. In a large saucepan, combine all the ingredients except the walnuts or pecans (if you’re using them). 2. Bring your combination to a simmer and cook, stirring often, for 2030 minutes, until dark golden and thick. 3. Remove your mix from the heat and let cool; stir in the nuts, if you’re using them. 4. Store in a sealed container or jars in the fridge for up to 2 weeks, or freeze for 6 months.


EASY APPLE STRUDEL Ingredients: • 1 package of puff pastry (2 sheets), thawed in room temperature • 2-3 baking apples (I use golden delicious and cortland) • 1/2tsp cinnamon • 2Tb white sugar • 2Tb flour • 1/2C chopped or ground nuts, walnut or almond • 3Tb light brown sugar • 2Tb white sugar • 2Tb bread crumbs • 1 egg with 1tsp water beaten for brushing

Directions: 1. Preheat your oven to 375ºF. 2. Peel, core, and chop apples into 1/2” cubes. You will need total 2 cups of chopped apples. 3. Place them in a bowl and stir in cinnamon, white sugar, and flour. Set aside for 20 minutes so they can release the juices. 4. In another bowl combine nuts, sugars, and bread crumbs. Set aside. 5. Roll out one sheet of pastry into about 10”x12”. Sprinkle 1/2 of nut mixture on the pastry covering halfway and place 1/2 of apples on top. Lift up the front side of pastry and cover the apple and start rolling all the way. Finish the other sheet in the same method. 6. Pinch the ends of each logs and tuck under. Transfer them on to baking sheet with parchment paper on it, seam side down. 7. Brush the top with egg wash. Make a few slits on top for the steam to escape. 8. Bake at 375F for 40-45 minutes until the crust gets nicely golden brown, remove from oven and sprinkle with sugar. 9. Serve warm with vanilla ice cream and/or whipped cream. Enjoy!
