As a self-proclaimed, esteemed home chef, this is personally one of my favorite issues as it is always fun to experiment with some of the recipes our Spotlight Chefs send in. This year we are excited to highlight chefs from some of our favorite properties including Beau Rivage Resort & Casino, Gold Strike Casino Resort, Pearl River Resorts and Ameristar Casino Vicksburg. As the football season approaches and we find out which teams will be contenders for Super Bowl LVI (56), we thought it would be fun to take a look at some of the biggest plays and moments in NFL history. This is an article that we published a few years back, but the plays still hold true today and we look forward to seeing the top plays that will unfold this season. TOP PLAYS IN NFL HISTORY: MAGNIFICENT MOMENTS by

As we brace for the upcoming NFL season, it is always respectful to pay tribute to the football Gods by remembering some of the few moments that have made the game what it is today. The names Joe Montana, John Elway, Franco Harris and Vince Lombardi ring a bell. Whether it is the first game of the season or the last, the big boys of the NFL come to play and after hearing about them spending the summer months honing their skills, it’s nice to finally witness some of the great plays throughout the season. In this article, we have highlighted some of our favorite and most memorable plays in NFL history.

10. Big Ben’s Drive Super Bowl XLIII

9. A Yard Short of a Super Bowl Victory - Super Bowl XXXIV

After losing the lead due to a safety and a 65-yard touchdown pass from Kurt Warner to Larry Fitzgerald, which all occurred in about a minute, it looked like it was over for the Pittsburgh Steelers. Ben Roethlisberger had other plans. Big Ben led the Steelers down the field and capped the drive off with an amazing pass to Santonio Holmes, in just two minutes. Ben Roethlisberger and the Pittsburgh Steelers beat the Arizona Cardinals 2723 and won their second Super Bowl in four seasons, and the sixth overall for the franchise.

While Titans fans won’t remember this one as a great moment, Rams fans will. Trailing 23-17 with under two minutes left and the ball on their own 10-yard line, Steve McNair and the Titans marched down the field. With the game about to end, the Titans had one last shot. Steve McNair threw a bullet to wide receiver Kevin Dyson who had only Mike Jones between him and the endzone. Mike Jones immediately tackled Dyson by the legs as he stretched as far as he could. Dyson ended up stretching the ball to the end-zone, but it was too late, his knee was down while the ball was at the one-yard line and the Rams won the game.


8. The Helmet Catch Super Bowl XLII In a David versus Goliath match-up, it was third down and five with just over a minute to go in the fourth quarter. Eli Manning and the New York Giants were trailing 14-10 and needed to come up with something big, and did they ever! Avoiding a sack, Eli Manning threw up a prayer to David Tyree who didn’t use two hands to catch the ball, but rather one hand and his helmet! Eli and company were able to keep the drive alive and would go on to score a touchdown, winning Super Bowl XLII and ensuring their spot in NFL history. 7. The Drive 1987 AFC Championship Game A relatively young John Elway and the rest of the Denver Broncos drove the ball 98 yards down the field and killed five minutes of game time while they were at it to score with just 39 seconds left in regulation. Elway took control as he marched down the field and threw for 64 yards and racked up another 12 yards rushing. He threw a five yard touchdown pass to Mark Jackson to send the game into overtime where the Bronco’s eventually beat the Cleveland Browns 23-20. “The Drive” is widely considered the most clutch performance in NFL history.

5. The Ice Bowl 1967 NFL Championship Game In a game that featured cold conditions even for Lambeau Field, the Green Bay Packers and the Dallas Cowboys met to play the 1967 NFL Championship. The game time temperature was -13 degrees Fahrenheit and the playing surface had virtually become a solid block of ice. The Referees couldn’t even blow their whistles because it would freeze their lips. With just seconds left in the fourth quarter and trailing by a score of 1714 to the Cowboys, Bart Starr asked

coach Vince Lombardi if he could run a quarterback sneak from the 1-yard line. Lombardi replied, “Well, run it and let’s get the hell out of here.” Starr did and the Packers won the game and went on to win the Super Bowl II. 4. Broadway Joe Guarantees Victory - Super Bowl III Even though the Baltimore Colts were heavily favored to win the Super Bowl over the New York Jets, that didn’t stop New York quarterback Joe Namath from putting his money where

6. The Perfect Season 1972 Miami Dolphins In 1972 the Miami Dolphins became the first team, and the only team to date, to finish an entire season without a blemish on their record. It wasn’t easy, after they went 12-0 in the regular season, they won all three of their playoff games by only a touchdown or less which includes the Super Bowl VII victory over the Washington Redskins. 3. The Greatest Game Ever Played - 1958 NFL Championship Game

The 1958 NFL Championship between the Baltimore Colts and the New York Giants. The Colts were up 14-3 at halftime but the Giants scored two touchdowns in the second half to take a 17-14 lead. 2. The Catch 1982 NFC Championship This was a play that started one of the NFL’s most prolific dynasties. Down 7-6 to the Raiders and facing fourth and ten on their own 40-yard line, the Steelers’ Terry Bradshaw hurled the ball towards John Fuqua only for it to bounce off of the helmet of Raiders safety Jack Tatum. Just when everyone thought the play was over, Franco Harris grabbed the ball about a foot before it hit the ground and ran it to the end-zone for a touchdown. The Steelers won the game and the Immaculate Reception went down as the greatest play in football history. So while some of these great moments are old and some seem like they were just yesterday, just don’t forget them as they are the moments that still excite the fans today. They’re the moments that we spend the entire off-season watching, just waiting for the upcoming season to start. Last but certainly not least, they’re the absolute greatest moments in NFL history.

Ingredients: 2 tablespoons vegetable oil, divided 1 pound beef tenderloin, cut into 1” chunks Salt and pepper to taste ½ red onion, sliced 2 roma tomatoes, wedged 2 cloves garlic, minced 1 tablespoon aji amarillo paste 2 tablespoons soy sauce 1 tablespoon white vinegar 1 tablespoon fresh cilantro, chopped 1 pound french fries, cooked, hot white rice, cooked, for serving Directions: Heat 1 tablespoon of oil in a large pan or wok over high heat. Add the filet mignon, season with salt and pepper, and cook until browned, 3-4 minutes. Remove from the pan.

Favorite cuisine to cook? Latin and South American. The cuisine is melded with so many cultures and has great ingredients.

Heat the remaining tablespoon of oil in the same pan, then add the red onion and cook for about 5 minutes, until softened and browned. Add the tomato, garlic, and aji amarillo paste, and cook for another 5-7 minutes, until the tomatoes have released some of their juices, but are still intact.

What do you love about being a chef? I love the everchanging cuisine landscape. I am always studying and educating myself on the history of different cultures and how cuisine became what it is in different regions of the world.

Add the steak, fries, and cilantro. Toss gently to coat the fries in the sauce.

What do you love about being a chef? The things I Like most about being a chef is that every day is different and that I get to work with some wonderful people.

Chef Brandstetter’s Recipe for you! CHICKEN SALAD Ingredients: 2 pounds poached chicken breasts 1 cup grapes cut in half 2 ribs of celery diced 1 cup mayo 3 tbsp Honey 1 tbsp chives 1 tbsp parsley chopped ½ tsp celery salt

Add shrimp and cook on high heat until shrimp are almost cooked through.

Directions: Poach Chicken and shred cool down, mix together grapes, diced celery, mayo, honey, chives, parsley, and celery salt.

Turn off the heat and add butter to thicken sauce. Make sure to stir constantly until butter is fully incorporated.

Then mix with shredded cooled chicken and season with salt and white pepper.

Sit back and enjoy the best peel and eat shrimp south Louisiana has to offer. Serve to your guests with a toasted piece of French bread, and a few ice-cold beers.

Serve with Ritz crackers (or cracker of choice)

Allow to reduce by half of the volume.

Place crab cake in the pan after the oil has been heated for a minute. Sear on the first side for a minute, then using a spatula flip over on the other side and sear for a minute on the other side. Drain the oil from the pan. Place the crab cakes in the pan or on a baking sheet and put into a 360-degree oven for six minutes or until internal temperature is 135 degrees. Serve with a remoulade or tartar sauce.

BLACKJACK: Playing the Deck One of the first things players hear about blackjack is that fewer decks mean a better game.

Player may double down on any first two cards vs. player may double down only on specific hands:

That leads to two questions once players have a little experience: Are fewer decks ALWAYS better? And why are fewer decks better when the proportions of card denominations is the same no matter how many decks are used?

It’s best for players to have more options as long as the players take their time to learn basic strategy and know how to use the options.

If all other rules are equal, house edges are lower when fewer decks are in play. A single-deck game has an edge roughly half a percent lower than a six-deck game, with a two-deck game standing in between at about two-tenths of a percent better than a six-deck game. But other rules are not always equal. Sometimes the dealer hits soft 17, sometimes the dealer stands. Sometimes you can double down on any first two cards, sometimes doubles are restricted to a few two-card totals. Experienced players know there are many more optional rules, and it’s up to the casino to decide which to offer. The house edge on a blackjack game is a product of all those options taken together. Check out these major rules options and their effect on the game and its house edge against basic strategy players. Blackjack pays 3-2 vs. blackjack pays 6-5: At most tables, if you bet $10 and are dealt a blackjack -- an Ace and a 10-value card -- you’re paid $15 for 3-2 odds. Beware of tables that pay 6-5 odds, meaning a $10 bet pays only $12. That adds 1.4 percent to the house edge -- more than the entire house edge based on other rules at most games. Number of decks: Six-deck games are the most common, but it’s possible to find one, two- and eight deck games. Some games with automatic shufflers even use four or six decks. As mentioned above, If all other rules are equal, a single-deck game has a house edge about half a percent lower than a six-deck game. Dealer hits or stands on soft 17: It’s better for players if the dealer stands on soft 17. If the dealer hits, he can’t bust soft 17 in one card and he gets a chance to beat your 17 or better. Hitting soft 17 increases the house edge by about two-tenths of a percent. 16

If the casino permits double downs only on hard totals of 9, 10 or 11, that increases the house edge by about a tenth of a percent. If it restricts doubles to hard 10 or 11 -- eliminating the 9 as well as all soft totals -- it increases the house edge by twotenths of a percent. Player may or may not double down after splitting pairs. After you split a pair, if the draw gives you a two-card total of 11, or sometimes 10 or 9, you want the option to double down. If the casino doesn’t permit that play, the house edge increases by .14 percent. Players may split pairs, once, twice or three times: If you split a pair of 8s and then draw a third 8, creating another 8-8 hand, your best play is to split again. If the casino doesn’t allow resplits, it increases the house edge. In the best games, you can split up to three times to make a total of four hands. If you can split only twice, it adds one-hundredth of a percent to the edge. If you can split only once, it adds a tenth of a percent, and if splits aren’t allowed at all it adds six-tenths of a percent. It’s not hard to put together a combination of rules in which a game with more decks has a lower edge. For one thing, blackjack payoffs have a bigger effect than the number of decks. If you know nothing else about the games but know a singledeck game pays 6-5 on blackjacks while a six-deck games pays 3-2, you’re better off at the six-deck game. Even with 3-2 pays on both games, the six-deck game can be better if it has better auxiliary rules. Let’s say a single-deck game has the dealer hit. soft 17. You can double down only on hard 10 or 11, may not double after splits, and may split pairs only once. The house edge against a basic strategy player is 0.45 percent. Be sure to remember these tips on your next blackjack outing and good luck at the tables!

CRAPS: Female Crapshooters - Part Two It is no longer the 1950s or 60s or 70s or 80s. We are in a new century now. It is truly the modern age. But is it the modern age in the game of craps? Have women broken the stranglehold that men have had on that game since forever? Is craps still a male domain?

Indeed, it still is but, as Bob Dylan wrote long ago, “The times they are a-changin.” He should have just added the word “slowly.” Maybe, very slowly. Yes, it has been slow progress but it has been progress nevertheless. One such female craps player is Cindy, a 65-year-old product of New Jersey who “cut her teeth” (as she says) in Atlantic City in “the early days.” I’ll let her tell her story: CINDY: “When I first went to the casinos, it was Resorts, and you actually had to wait in line to play. I was a kid and this would be my first trips to the casino. My mother and father thought I was making a big mistake.

“I guess like any novice I went to the slot machines. They were the easiest to play and it didn’t take any knowledge to put your coins in and spin the reels. But I got bored with the slots; there was no strategy and it became somewhat humdrum. What next? “I tried blackjack and I liked it but still, it was missing something. I tried roulette too. I just wasn’t getting the thrill I thought the casino games should give me. “Look, I know other players loved all these games and they satisfied many of them. Not me. I always heard cheering and moaning coming from the craps tables – all male voices by the way. What was it about that game that thrilled all those guys? Or made them miserable? Loud miserable too. I didn’t hear any massive cheering at blackjack or roulette. Maybe one voice at a slot machine. “At craps it could be the whole table!

“I strolled by the craps tables one evening and watched the game. The layout looked imposing. There were so many bets I couldn’t keep track of them. I had just started my career as a teacher and I had a little money, very little. The minimum for the table was five dollars. I could afford that if I decided to play.

“Did I want to just push my way into the game without knowing anything about it? I’d be pushing a bunch of men back. I decided that the better part of bravery was caution. I just spent that evening watching a few tables. “What does a teacher do when confronted with a mystery and craps was a mystery. I bought several books from the Gamblers Book Club in Las Vegas. These were elementary books that explained the game and the various betting choices players could make. Those betting choices were huge. “I made a very simple plan. I would make the best bets at the table, the Pass and the Come and put double odds on them. I’d go up on three numbers and cross my fingers. “I did know that the game was dominated by men. I had not seen a single woman playing it when I spent that evening watching it. Would the men mind a woman entering their game? Well, I was going to play it no matter what. I can be stubborn and I was a feminist. No male world was closed to me. I hoped I was as strong as I pretended to be! “I guessed I’d have two thrills. One would be playing the game and the other would be how I would be treated when I played the game. Okay, my next trip would let me know if I could handle it all. “My parents asked me if I really wanted to go to the casino this often. It was once a month. It wasn’t a long drive from our house. My sister Abby, who was in law school during this time, came with me many times in the future but my first trip to the craps table to play meant I was all alone. “I cashed in for a hundred dollars and I heard it right away. One older guy shook his head and said loudly, ‘Oh, look who is here!’ I guess that was supposed to scare me. “I got my chips and I placed a come bet. ‘Stupid bet,’ he said. Evidently, he hadn’t read the two books I had read. When my bet went on the number, I placed two times odds on it. “Most of the men just ignored me. One guy told me not to worry about ‘the idiot’ who was making remarks. Have fun playing. That’s why we were all here. I can remember being given the choice between the “old” system and the “new” when I retired from teaching. My colleagues in the math department simply crunched the numbers and, as expected, the old system was infinitely better. There’s a reason that people with seniority in a system, not just in education, can choose but those without it are forced to accept the “wonderful” adjusted rules. Nowadays many casinos, like retirement systems, are also changing their policies for cash, comps and even promotions. Like everybody else, they make the new system sound like an amazing deal for patrons, but if you buy that you’ll also consider ocean front property in Arizona, especially if they throw the Golden Gate in free. Instead of naively believing the hype and cleaver sales pitch you should do your own comparative analysis. I tried, for example, clarifying a casino’s VIP policies at a local casino, ironically in Arizona, and got a response that would have confused Confucius. Here are some tips to help you decipher the house’s rewards system. Benefits: Not everyone values the same perks so you must focus on what’s most important to you. For me it’s cash drawings (both VIP and open to all players), comped rooms, bounceback cash and extra drawing tickets. You, for example, may place a high value on comped meals and show tickets. Study the rewards at each card level along with the requirements. Earned: The benefits that are in black and white are crystal clear and you’ll find them on card-level descriptions. You should read all mailers from your casino carefully and make sure you slide your player’s card as soon as you get to the casino. Discretionary: Some of the best perks are unadvertised and if you don’t ask, you’ll never even know they exist. In fact, the best rationale for earning the highest-level card without busting the bank is to have access to these bonuses. Examples are spa days, gourmet meals, shopping 18

sprees, luxury suites and invitations to special cash drawings. You may think the invites are automatic depending entirely on your play, but you’d be wrong. If you’re a frequent player with a high-level card, then wrap around the grapevine’s trellis to find out about unadvertised “special events”. Other players, especially high rollers, will give you an unfiltered assessment of what’s going on at your local gaming hall. Hosts: The real key to being included in coveted bashes and drawings often lies with your host. The caveat is that hosts do not treat all their players equally, especially if they have a limited number of slots and are responsible for selecting the invitees. Drawings: I mentioned two types of drawings, those open to all players and those for “invited guests” only, and not necessarily based on your card level. Invitation Only: The prizes for these drawings tend to be higher than those open to everyone and there is more equity for players due to fewer participants. Open: I’ve noticed a recent downgrading in both the number and value of prizes. If the casino only draws one or two names every hour, then there is not much incentive to participate. I think every drawing should include at least three names per hour and if winners aren’t present there should always be replacements. Final Thoughts: Many casinos are changing their cash and comp policies to new ones promoted as sensational for players. Sometimes, like ocean front property in Arizona, the pitch doesn’t match the product. Carefully examine the amount of cash awarded for coin-in between the old and new systems along with all other benefits. If you’re confused with hocus pocus answers by casino staff try finding the wisest high rollers and ask them. With major downgrading of both felt games (rules and rakes) and slot choices (unseen slot chips and visibly downgraded VP pay tables) it’s important to see through the smoke and mirrors to choose your best casino and maximize their perks.
