EZEMVELO KZN WILDLIFE
THE OCEANS OFF KZN SUSTAIN AN ASTONISHING DIVERSITY OF SEA-LIFE. AROUND 2500 SPECIES OF FISH HAVE BEEN RECORDED, BUT THESE ARE NOT THE ONLY INHABITANTS OF THESE WATERSÂ…
E N I R A M BIODIVERSITY by keeping our beaches
Invertebrates, such as shellfish and lobsters, reptiles (the leatherback turtle nests up near Cape Vidal), a large number of seabirds - even the mystical mammals of the deep - dolphins and whales, during their seasonal migration - contribute to the rich biodiversity. Sharks, often the most misunderstood of the sea creatures, also form an integral part of this intricate network of marine ecosystems. South Coast Reef Systems, Aliwal Shoal and Protea Banks, are famous for their prolific shark-life. Ezemvelo KZN Wildlife's Marine Division has a dedicated and highly-trained group of honorary officers (volunteers) that are stationed along our KZN's 620 kilometres of coastline. These Honorary Officers, which include commercial class 3 & 4 divers, supplement and support KZN Wildlife staff in carrying out their management goals and objectives, and play a role in developing and implementing awareness programmes aimed at promoting an understanding of the marine environment.
Pollution is extremely harmful to our abundant sealife. Did you know that plastic packet can take up to 12 years to degrade? A plastic container may take up to 80 years! Marine mammals are particularly susceptible, as they can swallow these manmade substances, even get caught entangled in them. Ezemvelo KZN Wildlife joined the International Coastal Cleanup for the first time in 1996. Volunteers from over 90 countries participate in this project, which is aimed at not only cleaning up beaches, but educating the public in adopting a "prevention is better than cure" approach to pollution, including litter. When you visit the beach again, make a point of leaving the beach a little cleaner than you found it. Set an example by refraining from littering. Instead, use the receptacles provided. If you would like to become involved in the next Beach Cleanup, e-mail Musa Mntambo firstname.lastname@example.org

When it comes to ordering off the menu, you may end up asking your waitron to give you a little more time. The selection includes staple European-style, seasonal signature dishes and daily chalkedin blackboard specials. The latter can be anything from a Crayfish Carnival Club Sandwich - layers of grilled crayfish, avocado, mozzarella and pancetta in toasted (homemade) rye, to an almost sinfully-delicious Chocolate Cheesecake. As far as possible the produce is organic and locally-sourced. Vicky, having just returned from an epicurean journey to France, has compiled her winter menu with distinctly (ooh-la-la) French flair. A steaming bowl of winter broth, such as Leek & Potato served with crusty homemade bread, will do the trick in warming your heart and soul on a chilly day. New additions will include Marrow on Toast, Coquilles St Jacques a la Parisienne (Scallops with mushrooms and cream), Sweet Pumpkin Omelette and a new take on an old favourite, Crepes Suzette. You will also get to taste an authentic, homemade le chocolat chaud (hot chocolate) - oh, how could we ever break off our love affair with chocolate? Aside from the new, old favourites such as the Moulin Rouge burger, have been given a new twist. The patties will now be made from organic ground beef and seasoned with coriander, lemon zest, garlic, fresh thyme and a dash of ouzo. "We are in the process of launching our new range of bottled goods, aptly labelled "Bliss". LET EXCITING PORTUGUESE FLAVOURS SPICE UP YOUR LIFE THIS WINTER!
taste Mac Banana Food Emporium explains that the secret to extracting authentic Portuguese flavours depends on the use of herbs and spices (tempero), especially a liberal touch of the magical piri-piri. With meat, chicken, seafood, salad or vegetables, the fragrance of these flavourings results in a truly sensory experience. Fresh, locally sourced ingredients are always desirable.
An important centrepiece of Portuguese Food is the salad so get creative with succulent tomatoes, fresh cucumber, crispest of lettuce, peppers, olives, and a touch of cheese. And last, but not least remember the bread!
Classic marinade used in Portuguese cuisine. It literally means Wine of Garlic.
Use this wonderfully versatile marinade to turn a meal into a marvel! 2 cups of dry white wine 1 cup white wine vinegar Juice of 2 lemons 1/3 cup olive oil 5-7 garlic cloves, crushed 1 onion, chopped 4 T parsley, chopped 2 bay leaves 2 T oregano 2 T chilli flakes 2 T paprika 2 T black pepper Mix all the ingredients in a glass container and enjoy! The smell is intoxicating!
Portuguese cuisine is inevitably linked to the sea, and the oceans bounty makes for a delicious mix of flavours. Fresh sardines cooked on the braai make a delicious appetiser and are also inexpensive. Marinade them in a flat glass dish and then braai them over hot coals for 5 to 7 minutes. To make turning the fish easier, insert a halved bamboo skewer into the mouth of each sardine. Serve the sardines with fresh white bread and a glorious fresh salad. If you are looking to elevate the experience, then replace these with butterflied prawns, which you continuously baste The Portuguese are the emperors of chicken culinaria so spice up a roast chicken with a dose of Portuguese flair by brushing a whole bird liberally with the marinade before roasting, basting again every 20 minutes. Enjoy a meaty favourite by creating a chicken or beef espetada. Marinate the chunks of meat for at least 2 hours and then thread onto skewers together with various vegetables, before grilling on the braai, basting regularly.
There is more to Portuguese cuisine than piri piri chicken and Prego rolls! Cook up a storm with the vast range of spicy speciality Portuguese sauces and ingredients. Select a bottle of traditional 039 319 1033 / 039 319 1454 Portuguese wine to complement your feast. GPS S30°5936 E30°1537 R61 Palm Beach All ingredients are available from MacBanana Food and Wine Emporium.
LARGEST VARIETY OF ENTERTAINMENT AND FOOD ON THE SOUTH COAST
HERITAGE The South Coast has a proud Portuguese heritage which can be experienced in many facets of this beautiful area. Portuguese cuisine is indeed indebted to those early intrepid adventurers of discovery where interesting flavours meld together to form a rich culture. It is this diversity that makes Portuguese gastronomy so unique. The Portuguese navigator Vasco De Gama sighted the coast along what is now Durban on Christmas Day in 1497, and named the country Terra Natalis, after the Portuguese word (Natal) for Christmas.
Port Edwards history collided with the wreckage of two cargo-laden galleons in 1552 (The Sao Joao) and 1554 (The Sao Bento), and it was here that the distinctive Portuguese influence first touched this beautiful subtropical stretch of South Africas coastline.

If you are WILD ABOUT NILE CROCODILES, you can visit the Crocodile Pen, where you can snap up the opportunity to meet Henry! This old croc may be over 100 years old (and weigh more than 750kg) but he still manages to smile his lazy, toothy smile, while he pretends to ignore your curious stares Educational talks take place daily at feeding times (11am and 3pm), except on out-of-season Mondays. Little boys (and some little girls) will love the SNAKE TUNNEL, where you can encounter 10 of SA's deadliest snakes, and the CRITTER ROOM with its creepy Tarantulas and Giant Bullfrogs.
The children's play area, animal farm, well-stocked curio shop, restaurant and wheelchair access makes this an extremely family-friendly place to visit. Southern Explorer Member Number: 106 Tour 1: Page 9 Call: 039 976 1103
ABOVE THE REST
The secret to producing spectacular Wildlife photographs is to be well-prepared. Follow these tips to ensure that your own photos of Mother Nature are out of this world 1. Do your research and be prepared. Dont feel like you need to venture to far off locations to capture visually arresting wildlife portraits. Nature is all around us, all the time. Investigate which local species frequent your area and get clicking! 2. Patience and persistence are the name of the game. Persevere through the boredom and remain patient that critical shot is just waiting for you! Remain alert and focused. 3. Remember your backgrounds. When telling a visual story, remember that your backdrop is just as important as the subject matter that you are shooting. The context of the image is crucial. 4. Follow the light. Lighting is an essential element that should never be discounted. The best opportunities tend to arise in the earliest and later hours of the day, when the sun is less severe. The right lighting provides atmosphere and a mystique to your composition. 5. Be as unobtrusive as possible. Dont interfere or be a distraction. Act quietly, blend in, and be aware of camera noises and flashes. The more inconspicuous you can be the better. 6. Get intimate with your subject use a telephoto lens. Capture those elusive details of the animal and portray a sense of their personality and essence. 7. Focus Manually. Animals are built to naturally blend into their environment, so take your camera off automatic mode to ensure that the sensor does not focus on the wrong subject. 8. Keep shooting! Dont miss the perfect shot by being stingy with your clicking. The beauty of digital photography is that images are easily deleted after the fact! 9. Compose yourself. Composition is the process of visually organising the essential elements of your image in a compelling and effective way. Dont be afraid to experiment with different perspectives, textures, colours and shapes to elevate your photo from the ordinary to the spectacular.

CANDICE NEETHLING HAS A SINGLE-TRACK MIND!

CANDICE NEETHLING WAS CHOSEN AS THE SOUTH COAST STYLE COVER-GIRL
HER DOWN-TO-EARTH NATURE! SHE TAKES EVERYTHING IN HER STRIDE SHE THINKS BIG! NO CHALLENGE IS TOO INTIMIDATING HER ENTHUSIASM! SHE IS AN ICON FOR SOUTH AFRICAN WOMEN AND BEING CHOSEN TO COMPETE IN THE 2012 OLYMPICS IS AN EXTRA FEATHER IN HER CAP!
PLAY The South Coast's very own MTB Betty, Candice Neethling, is doing us proud! Currently participating in the UCI Mountain Bike World Cup series, South Coast Style's determined cover-girl is geared up for the challenge. Candice may be pretty as a petal, but in the saddle, she's made of metal! Having celebrated her 20th birthday earlier this year, she is now competing in a new age group (U23). This means stiffer competition, more technical riding and more laps to add to the pressure, Candice has had a highly successful track record in her previous age group, including winning the title of 2010 SA Cross Country Champion in her age group. This is quite a reputation to live up to, but her positive attitude and diehard determination make her a force to be reckoned with. She got off to a great start this year by winning the first place position in her very first U23 race - the opening race in the Cross Country national series, which took place in Cape Town early this year. Then, in mid-March, the UCI Mountain Bike World Cup slid off to a very muddy start in Pietermaritzburg. The conditions were treacherous, and Candice experienced a number of falls. " I came in 11th, just outside the top 10, but was happy to be in one piece!" she wrote in her blog. In May Candice secured a 5th place position in Nové Mesto na Moravé (Czech Republic) and an impressive 4th position in La Bresse (France). A number of World Cup events still lie ahead, but that has not stopped Candice from competing in other races in between, highlights being the Mr Price Karkloof Classic and African Continental Championships in Mauritius, both of which she won! Candice's legs just never seem to stop moving! " since the 27th January, apart from one weekend, I have raced every single weekend!" she smiled over milo at Mac Banana's, after wrapping our photo shoot at the Mpenjati Nature Reserve. She had decided to take some time out to rejuvenate and spend with her family, before returning to the World Cup scene for the next event, which will take place in Canada at the end of June.
CANDICE NEETHLING SHARES HER THOUGHTS... ON SOUTH AFRICANS...? They are special! In Europe strangers don't even talk to each other. When you arrive in OR Tambo, people are laughing, chatting South Africans are really friendly.
ON MANAGING YOUR OWN TRAINING ROUTINE... I know myself! I can feel what works, what doesn't work. It is quite intimidating, though, to arrive alone at a new course, when the other competitors have a whole team, including a technical advisor, to advise them
ARE THERE PRIMA DONNAS IN YOUR AGE GROUP? (Laughing) Like in the movies, you will always find that one person who shouts at their manager!
ON HOW MOMS COPE WITH COMPETITIVE DAUGHTERS... I think it's hard for moms. This is a dangerous sport and they worry.
Having grown up on a sugarcane farm in Oribi Gorge, Candice knows every hill and valley in the area. When driving up the steep, winding road to Oribi Flats, one will often see a lone cyclist peddling with determination up the inclines of Oribi Gorge. Her regime requires her to be in the saddle between 15 and 20 hours per week. Before a priority race, she will taper off the training towards the end, to prepare her body for the challenge. "Working out a training programme is very tricky" she explains. In addition to time in the saddle, Candice does gym 2 to 3 times a week, for core strength training. She also jogs once or twice a week. "Dad and I started together for fun" Candice smiles. "Then it slowly became more competitive". Candice's dad, mom and 17-yr old sister are extremely supportive. Candice travels a great deal, as the finish line in one race means the imminent starting line in the next. But she loves to come home to South Africa, and indeed to the South Coast. She loves the relaxed atmosphere, the people and the beautiful beaches. "The South Coast is so cool" says Candice. CANDICE IS SPONSORED BY BMC SA. www.southcoaststyle.co.za

THERE'S MORE TO SOUTH COAST BUSINESSMAN, JAY MAHARAJ, THAN MEETS THE EYE!
Since his childhood, Jay's deep compassion for others instilled in him a yearning to seek answers to the many unanswered questions surrounding the treatment of pain and illness. In adulthood he attended a diversity of seminars in his quest for knowledge. The various treatments he learned about offered only temporary relief, and required long-term administration. It is only when natural healer, Jay, studied Ayurveda that he came to witness lasting results. Ayurveda is the ancient science of healing -a philosophy of life, that dates back over five thousand years. The Sanskrit words "Ayus" meaning life, and "Veda" meaning knowledge, gives insight into the very nature of Ayurveda. It does not focus solely on physical health, but on treating one's whole being.
Jay uses other techniques, besides Ayurveda, such as breathing exercises, meditation, hypnosis, massage and yoga, to allow the body to heal naturally and easily. We have experienced much success with the Healing Pen, says Jay...

ALLOW YOURSELF TO BE TRANSPORTED THROUGH A SENSORY EXPERIENCE THAT CREATES A FEELING OF TOTAL RELAXATION AND SERENITY. HOW DID YOU GET STARTED IN THE BEAUTY INDUSTRY? As is natural with all young ladies, I had an interest in beauty, make-up and natural therapies. I was also interested in working with people and helping them to feel good about themselves. I was lucky when leaving school; to find an industry and career in which I could do both! WHAT TRAINING AND EXPERIENCE DO YOU HAVE? I studied with Camelot International in Durban for 3 years and worked for the company at one of their spa outlets. I was then recruited to work for Disney Cruise Liner. After training in London for 3 weeks at the Steiner College, I joined the Cruise Liner as their head therapist. After completing my year abroad, I came home to start Sensasia Day Spa. WHAT DO YOU ENJOY MOST ABOUT WHAT YOU DO? There are so many factors of the beauty industry that I love. If I had to pick only one thing, it would be the close relationships which we form with our clients. WHAT DO YOU THINK SEPARATES YOUR SPA FROM YOUR COMPETITORS? Here at Sensasia Day Spa we aim to give you the personal touch
and individual attention. Our location and our therapists are of the highest standard and are all internationally qualified. I'VE HEARD THAT YOU HAVE CREATED YOUR OWN SIGNATURE TREATMENT PLEASE TELL US MORE ABOUT THIS! Yes we have and we are very excited to introduce the Sensasia Experience. It is a 90min hot and cold stone massage. The benefits are amazing. The hot stones are soothing and relaxing to the nervous system and then when we add the cold stones it livens and invigorates the body. Temperature therapy is a wonderful way to relax and alleviate stress. WHAT CAN CLIENTS LOOK FORWARD TO WHEN VISITING YOUR GORGEOUS SPA? From the moment our client walks through the door, we want them to feel pampered - from a warm and professional greeting, to comfortable and beautiful treatment rooms, to top quality products and treatments. At Sensasia Day Spa we are all about quality and being the best in the industry which is why we have partnered with Dermalogica, Gatineau, Elemis and OPI to offer our clients the best quality.
WHAT ARE SOME OF YOUR MORE POPULAR BEAUTY TREATMENTS? We have many popular treatments at Sensasia Day Spa. To truly indulge in the Sensasia experience it is best to join us for the day with one of our day packages, which include healthy lunches. We do pride ourselves on our fantastic Deluxe Pedicures which are done in our specialised massaging pedicure chair. We also have fantastic facials which include complimentary hand and scalp massages as well as our wonderful Elemis massages. DUE TO THE FRANTIC PACE OF OUR MODERN LIFESTYLES, DO YOU FEEL THAT SPA TREATMENTS ARE A LUXURY OR A NECESSITY? Spa treatments are absolutely a necessity! With the pace of our lives today it is more important now than ever to look after your body. With all the links that have been made between stress and diseases such as cancer, strokes and heart disease, it is therefore very important to have stress relief that spa therapies can offer. We live in a society today that no longer takes the time to connect on a personal level. If we look after ourselves correctly we will therefore be able to cope and look after our families better.

WHAT IS FLAIR? AND HOW DO YOU KNOW YOU HAVE IT? I believe that one does not have to to be rich to possess flair, and one does not have to be beautiful to have it.Wearing the most stylish dress or the most expensive suit is not enough to give you flair.
Flair is the ability to sense the subtle ways of fashion. It is a beautiful nature of good sense, simplicity and self discipline. A BRAND IS MORE THAN JUST A LOGO! ITIS A LIFESTYLE Focus your energy on the positive aspects of your brand. What makes your product or service different to your competitors? Be innovative and create a platform for customers to give you feedback. In an age of numbers it is vital to appreciate your customers individual needs. Always remember to be authentic as the public can sense insincerity a mile away. And lastly, never give less than what you as a consumer expect! Maintain your standards and ethics above all else.
Customers identify with people. Thats why Internationally-acclaimed companies choose individuals to represent them as the face of their brand. Other companies employ Public Relations staff to be the link between their product and the public. As a small business you can achieve great results by simply being your brand. The first step is to start loving your brand. Never compromise on the fundamentals, like good business ethics, integrity, empathy and sincerity. Believe in what you do and the rest will follow. The simple truth is that passion sells!

NATURALLY CREATIVE SPONTANEOUS PHOTOGRAPHY
H C A WEDDINGS E B
My passion has always been for Beach weddings. There is something about getting married on a beach that truly makes a statement as to how you plan on living your lives together.
James Carlsen is one of the most naturally talented photographers, who consistently manages to deftly produce wedding photography portraits which are stylish, contemporary and breathtaking.
While there is a time and place for posed photographs at every wedding, the natural images are the ones that will bring a real smile to your face, as they capture true emotions and actual moments, rather than elaborately contrived poses.
STRETCH TENTS FOR ALL WEATHER & SEASONS
James' company Hairy Munster Productions offers complete eventing solutions and his artistic flair is evident in every facet of his work. He specializes in beach wedding ceremonies and will be able to facilitate every facet and requirement that anybody could possibly desire. One can trust his many years of practical experience and he will ensure that your wedding day will be the most extraordinary day of your life.
Why deal with five different companies when you only need to deal with one? An exciting new facet to James' portfolio is the introduction of his stretch tents. A huge factor when organising an outdoor event is that one always needs to consider the fickleness of the weather. The solution needs not be a conventional marquee - why not opt for the more aesthetically pleasing option of the stretch tents? They are made from extremely strong, flexible and 100% waterproof material which provides excellent weather protection in a versatile manner. LEADERS NPC-CIMPOR Building Relationships
AND WORKING TOWARDS A SUSTAINABLE FUTURE The NPC-CIMPOR factory at Simuma Farm near Port Shepstone produces the majority of the cement required in Kwa Zulu Natal, enabling much needed infrastructure, housing and other developments.
THE MAGNIFICENCE OF THE KZN SOUTH COAST IS ENRICHED WITH THE ONLY LIMESTONE DEPOSIT IN KWA ZULU NATAL...
PAVING THE WAY TO A
GREENER FUTURE The cement production process utilizes significant amounts of fuel to cause the limestone rich raw materials to form cement minerals. An important sustainable development project by NPC-CIMPOR is the substitution of part of the coal used with waste tyres that would otherwise be destined for waste landfill sites. Specialist studies and an environmental impact assessment have shown that this switch of part of the traditional coal fuel has many environmental benefits such as: A REDUCTION IN UTILIZATION OF NONRENEWABLE COAL RESOURCES LOWER CONTRIBUTION TO GREENHOUSE GASES
Situated in the Orbi Gorge area, this calcite geological deposit dates back millions of years. Limestone is a key ingredient in cement manufacture and has lead to the establishment of a cement production facility alongside the deposit by NPC-CIMPOR, a global cement producer. Being the only South African cement producer with cement kilns in Kwa Zulu Natal, NPC-CIMPOR will play a crucial role in solving the problem of waste, such as used tyres, not just on the South Coast but also the greater Kwa Zulu Natal region. The necessary regulatory legislative processes have been followed and the required air permit from the Ugu District Municipality and waste permit from the Department of Agriculture, Environmental Affairs & Rural Development is eagerly awaited. It will thereafter not be long before waste tyres can responsibly roll into NPC-CIMPORS cement kilns as an energy source rather than rolling into valuable landfill space.
Ezinqoleni Tourism Office opposite the npc-cimpor factory
This impressive facility serves as a monument to NPC-CIMPORS commitment to the advancement of tourism in the region, thereby benefiting the local rural communities. Built in the Simuma Conservancy, it serves dually as a bustling Tourist Information Centre (manned by an Ugu South Coast Tourism Information Officer) and a venue for local artists and crafters to display and sell their wares.

Thier members are able to cater to a variety of needs, from the most discerning of guests in a luxurious B&B establishment to the more budget conscious family in a selfcatering unit. All the accommodation has been independently graded or assessed. Members display the Approved & Accredited B&B South Coast Network logo on their establishments. At all times they assure an excellent standard of customer service and cleanliness.
