ith winter’s icy embrace once again upon us, thoughts turn to the fireside swilling of red wine, comfort foods and hunkering down and entering a state of torpor until the first blazing yellow daffodil heads burst through the earth and announce spring’s arrival. At Cityscape we’re all about red wine and comfort food, but torpor? Yeah, not so much! We’d rather get creative and upskill, and with that in mind, have been doing some sleuthing to find out how you can seriously up your kitchen game (should a ‘friendly’ neighbourhood round of My Kitchen Rules catch you unawares) with our ‘At Home Gourmet’ feature (p17). Christchurch beer barons Belgian Beer Café Torenhof are set to take your tastebuds on a gastronomic odyssey with the introduction of their Winemaker’s Dinner Series, starting with Martinborough Vineyard in June. Each of the delectable monthly dining experiences to September will combine a specially-created four-course menu perfectly paired to a flight of fantastic wines from some of the country’s (and Australia’s!) best wineries – including national favourites Pegasus Bay Winery, Marisco Vineyards and Wither Hills – for just $85 per person (or $75 earlybird). www.belgianbeercafe.net.nz

xpanding on their seaside staple, the team at Indian Sumner have entered the inner city with Indian Sumner CBD on Manchester Street. Over on Victoria Street, The Beam Gallery is an exclusive function venue showcasing a cornucopia of Jim Beam collectibles, curios and rarities. Putting some swing back into the city, O.G.B Bar & Café is rocking some speakeasy cool Square-side in the Old Government Building. The venue formerly known as Dux Live is still keeping toes tapping as Dim 7th, a killer live jazz and whisky bar, and former post-quake party palace The Monday Room has also had a rebirth with a new, seasonallydriven food focus. The flavours of South America have arrived at Boteco Café & Bar on Kilmore Street and all-you-can-eat BBQ Brazil Churrasco on Papanui Road. Up the road, The Flying Burrito Brothers is now hip cocktail bar and restaurant Cooks & Cocktails, while multi-tasking triple threat Lone Wolf combines a cutting-edge salon with fashion and coffee. Bishop Brothers Public House is bringing primo gastro pub fare to Bishopdale, while Magnitude Café & Roastery (Tuam Street), Table at Monks (Armagh Street) and Rice and Paper (St Asaph Street) were gearing up to open as we went to print. It was last drinks for CBD, Porthole Bar, and Nucleus, while sonic gallery Auricle has moved out of New Regent Street and is seeking funding and new digs – God speed!

Flicks Deluxe A night at the movies just got a whole lot classier with the opening of the new Alice Deluxe Cinemas at The Tannery from the brains trust behind Alice Cinematheque.

ALL THAT JAZZ Smooth, sophisticated and with that air of jazz-cool, the new Dim 7th is a moody rebirth of the old Dux Live on Addington Road. With frequent live jazz downstairs and a brand-new specialty whisky bar installed upstairs on the mezzanine, it’s perfect for listening to some tunes, hitting up the sharable goodies on the Asian-inspired menu and appreciating an exotic whisky, or specialty whisky cocktail. www.dim7th.co.nz

Asiatique Fantastique New-look The Asiatique, formerly Fusion @ The Asiatique, have switched up their menu and décor, narrowing their once diverse offering to focus on tricked-up Malay and Thai (with a nod to Vietnam via their fresh rolls). You’ll note the retro French-Asian aesthetic, but the first thing that really hits you when you walk in is the mouthwatering, complex aroma of made-from-scratch Thai and Peranakan Malaysian Nyonya street food. The Iconic:

The Cathedral

W

hether you’re pro-restoration or keen to see something new up in its place, it’s hard to go past the currently de-consecrated church when handing out awards for the city’s most prominent landmark, well known building, and most enduring symbol. Knocked up over forty years (40!) between 1864 and 1904, it was the initial brainchild of the earnest colonial gentlemen of the Canterbury Association, and designed by the prolific British architect George Gilbert Scott (who never actually set foot in the city). Local legend Benjamin Mountfort also did some tinkering when he began supervising the project in 1873. Earthquakes are nothing new for the building – they took multiple damaging swings at it in 1881, 1888, 1901, 1922 and of course, September 2010, and although the building lost the top of its steeple a couple of times, it soldiered on as a symbol of the city’s English/ Anglican heritage, postcard darling and place of worship, all the while drawing countless thousands of visitors as a crown jewel in the city’s collection of Gothic revival architecture. Here’s hoping the city can soon find a collective solution to the building’s current state and treats this most Christchurch-y (it’s even in the name!) of symbols with the dignity it deserves.

You’d think the changing room at the pool or gym and its prospect of nakedness in front of strangers would automatically demand certain standards of civilised behaviour. But no; too many public changing room occupants tend to act like they’re all alone in their own bathroom, or worse, a hotel bathroom. Let’s be keeping your business your business; don’t be waving your junk or trunk up in anyone’s grill. Don’t be brazenly strollin’ and or lollin’ about all nekkid either – you’re not Ryan Gosling/Elizabeth Berkley and you’re not on the set of Crazy, Stupid, Love/Showgirls (edit as applicable). Now, this is a biggy: do not bend over while your downstairs operation is in commando mode. Either wait until you’re suitably attired or, if you really have to pick it up immediately (i.e. to retrieve heart pills during an actual heart attack), bend at the knees – these are fruitbowl free zones, people. Do not even think about touching your phone! Pretend you’re back in the carefree 80s and they don’t even exist yet. You’ll also wanna keep grooming to a minimum – nothing should be getting clipped, trimmed, peeled, plucked, picked or squeezed! Aim for a stealth inand-out operation. And above all else (do we need to say it?): Do. Not. Pee. In. The. Shower.

Cityscape catches up with our first bar tsar in this new feature where we tap into the genius of the city’s best barkeeps. First cab off the rank is Jimmy Summerfield, Stealth Hospitality’s new Group Bar Operations Manager.

aving recently moved on from his Flying Burrito Brothers partnership, and with a pedigree that spans Christchurch greats Sticky Fingers, XO Lounge, Barfly Cocktail Lounge, opening a T.G.I. Friday’s in London and a Hard Rock Café in Sydney and having 4 national bar flair titles under his belt, it’s no wonder the Stealth team snapped Jimmy up to help helm their burgeoning empire. What’s your signature cocktail? Pineapple Bellini with Elderflower Foam – this new addition to Chinwag is the forgotten champagne cocktail. It’s visually stunning and you get three hits in the mouth: fresh pineapple, smooth champagne and the creamy elderflower foam. Christchurch’s hidden gem? I’m addicted to Aorangi Bakery’s sandwiches! They’re really simple, good old-fashioned sandwiches from a good old-fashioned bakery packed-full of flavour and at a reasonable price. Fave casual eats? Burgers and Beers – exceptional burgers made by a very good chef using great local produce. My kids love the chips and gravy! What can we expect from the upcoming Stealth ventures? To feel so comfortable that you’ll feel like you’re in your own home.

Go Big or Go Home

The CSO are set to go titanic in collaboration with the Melbourne Youth Orchestra in their programme this year, following up 2014’s popular performance of Mahler’s Symphony No. 2 "The Resurrection" with the young Aussies with more Mahler on July 8. The two orchestras will present Mahler’s Symphony No.1 "The Titan" – a hymn to humanity and the world around us. CSO principal clarinet Ellen Deverall will also lead a trans-Tasman trio of clarinets through Eve de Castro Robinson’s Triple Clarinet Concerto, and with Leonard Bernstein’s Overture to Candide kicking off the programme, it’s looking like an appropriately big night. www.cso.co.nz

The bright lights of Hollywood have shone on Ferrymead Heritage Park, where its Edwardian township set the scene for gold rush-era western The Stolen. The $4 millionbudget period film from Christchurch-born producer Emily Corcoran features the international star power of Alice Eve (Star Trek Into Darkness), Jack Davenport (the Pirates of the Caribbean series) and Kiwi crooner Stan Walker, and is expected to hit cinemas in 2017.

Rise of the Empire With entry via off-the-hook samurai sword door handles, you just know that what’s behind Empire’s doors is going to be on the razor’s edge of cool. Completing their trifecta of St Asaph Street hotspots, the team behind Baretta and The Cuban offer up a classic, regal taste of Japanese precision pimped with Geisha elegance. Dark and cavernous, the room makes a nod to Japanese refinement through well-appointed artefacts, while a series of intimate booths flank the wall, jewelled with an inferno of glistening red tiles. DON’T GIVE UP YOUR DAY JOB The sausage is flying across my palm in a continuous jet of encased meat, hitting the bench and boiling in an ever-growing serpentine coil. I ease my thigh off the hydraulic sausage filler’s control pedal as I come to the end of the ‘natural pork casing’; the meat jet slows and the 3-metre long sausage slackens. It’s my first Sausage Day at Cashmere Cuisine, and I’m going to have to pick up the pace if we’re going to get through the 3,450 sausages owner Kurt and sausage maestro Fergus will turn out today (along with making salami and smoking numerous small goods on the side). Destined to join their endless blue-ribbon procession of award-winning snags, their Pork and Apple Cider sausage combines visually lean (or VL to those in the industry) minced South Canterbury free-farm pork, diced apple, two bottles of cider, New York pepper, a rice-based binder and a selection of trade secret seasonings and ingredients. With all the ingredients mixed and re-minced, I’m tasked with magicing the first of 15 20-kilogram buckets of CC’s killer sausage mix into 230 sausages. While washing and filling the casing is relatively easy (once you get used to it), picking up the crochet-like linking process is proving a little trickier. I battle burst bangers and some scrawny earlier efforts, but eventually, they’re not looking too shabby strung up. But with 3,427 sausages still left to go, there’s little time to admire my handiwork!

Road Trips Sure, you might blissfully recall the trip through the golden glow of nostalgia from a rocking chair at Shady Oaks Retirement Village, but relationships could also be trashed quicker than a used Kleenex. Luckily Cityscape is on hand to ensure your time on the road is more Jack Kerouac and less Cormac McCarthy.

practices. As well as being good to the planet, they’re also innovators in fashion technology. Their unique Ecopossum blend of Merino, Brushtail possum and silk was the first textile to add a new natural fibre in over 200 years(!) when they developed it in 1992 (and also helps us to get rid of a few more pesky tree-and-bird destroying pests!). You might, like The Boomtown Rats, not be too fond of Mondays, but (trust us) you’re gonna love the all-new, revamped The Monday Room. The former post-quake party palace which endeared itself to the city after seeing Christchurch through some dark times has undergone a remarkable transformation. Fittingly, and reflecting the city’s own spirits, the mood has been lifted with a brighter, earthier makeover in line with its new, seasonally-driven food focus. Thankfully, the slick cocktail aesthetic remains: pressed ceiling, exposed brick and encyclopaedia-lined bar (hey, if it ain’t broke!). It’s all anchored by a stunning menu from local chef Shawn McGowan, on which everything from breads and sauces to pickles and preserves are made in-house. MADDISON’S RESTAURANT

T

he butter-poached free-range egg sits atop the thick, lightly-caramelised slices of dry-aged sirloin, its startlingly orange yolk glistening like a rare jewel. Yielding under the knife before breaking, its molten gold contents spill over the steak and cascade down the deep crevices of tender, rare beef in a display of next-level gastro porn. It’s a sight likely to elicit a signature gasp and saucy superlative from domestic goddess/ temptress Nigella Lawson, but it has me hurriedly reaching for the chunky, hand-cut golden fries to mop up the sprawling goodness. Ensconced in the swank of the Heritage Christchurch Hotel’s Old Government Building, the culinary maestros at Continental have

breathed new life into Maddison’s Restaurant. Sustainable, locallysourced and in-season fare is the order of the day, in alignment with the hotel chain’s Good Food Project. The décor is slick, there’s white linen under the designer crockery, and a fresh oyster bar at night. A mezzanine floor, accessed via the kitchen, adds not only a peek into the gastronomic alchemy taking place in the culinary nerve centre, but also a private and intimate space presiding over the restaurant. But back to the steak! Organic Cheviot Beef, it was delivered as a whole carcass, broken down and dry-aged on site. It sounds like a lot of work, but it’s all part of the premier caterer’s flagship dining experience and a sign of the

dedication of head chef Scott Gibbs who, along with his team, makes pretty much everything in house. It goes without saying that the steak is boss, ticking all the boxes (it even adds a few new boxes to the mix and ticks those too) and, as the rich, tender beef melts in my mouth I eye up my companions’ lunches: braised lamb pappardelle, the Simo-inspired flatbread with spiced lamb, hummus and feta and the epic, two-handed behemoth that is a Maddison’s burger, all succulent meat patty and piquant housepreserved pickles, and make a mental note to take advantage of its killer location for pre and post show drinks and eats the next time we’re at the Isaac Theatre Royal. www.maddisonsrestaurant.nz

CHICKEN, CHORIZO & PRAWN PAELLA (SERVES 4 – 6) Shopping List 2 cloves of garlic (peeled and finely diced) 1 onion (peeled and finely diced) 70g Spanish-style chorizo (sliced) 100g pancetta (thinly sliced) 2 skinless, boneless free-range chicken thighs (cubed) 100g prawns 100ml olive oil 1 tspn sweet smoked paprika Pinch of saffron 1 red capsicum (deseeded and roughly chopped) 6 green beans (sliced) 6 cherry tomatoes (halved) 1/2 broccoli head (cut into 1cm pieces) 150ml tomato purée 1.1L chicken stock (hot) 300g paella rice Fresh flat-leaf parsley (roughly chopped) 1 lemon

Making It Happen In a separate saucepan heat the chicken stock. Pour oil into a paella pan on a medium heat, add the garlic, onion, chorizo, chicken, prawns and paprika, and fry for around 5 minutes, stirring regularly. As the chorizo, chicken and prawns reach the point of just being cooked through, remove and place on a tray or plate until the final stages of finishing the dish. Stir through the tomato purée, saffron, diced capsicums and 300ml of the stock in the paella pan, then add the rice and stir for a couple of minutes so it starts to absorb the flavour. Pour in another 300ml of stock and bring to a simmer, then turn the heat to low and stirring from the outside in, and from the inside out, add stock to top up if needed. Continue to cook for around 20 – 30 minutes or until the rice is just cooked through, topping up with stock as required. In the final stages of cooking the paella rice add the beans, broccoli and cherry tomatoes. After 2 – 3 minutes return the chorizo, chicken and prawns to reheat through in the mix. Season to taste and scatter parsley over the top. Serve with lemon wedges.

Winter is the season for going inward and nourishing ourselves, and yoga supports finding balance and our inner wellbeing. Vinyasa is a Sanskrit term often employed to describe a broad range of yoga styles. Vinyasa can be decoded from its root words Nyasa, ‘to place’ and Vi, denoting ‘in a special way’. It symbolises a flowing, dynamic form of yoga where poses are linked together using breath. At Flow, a

typical Vinyasa class features a balance of asanas (poses) that the whole body will flow through with breath to build restoration and harmony. For example, you might start off with a strong heat building sequence with poses such as Warrior 1, 2 and Half Moon before moving into more twists and folding poses to detox and cleanse the internal organs, and then directing attention to the lower body, hips, knees and feet as the class moves to the floor, calming the energy and blood flow down for rest and meditation. According to Ayurveda, the immune system serves as the

other Earth has a clever way of providing us with what we need most at each time of the year. Vitamin C and zinc are essential for strong immune function and are more abundant in winter produce. Vitamin C is used to signal the production of white blood cells to protect us when foreign bacteria or viruses enter the body. It is also present in the fluid lining in our lungs and mucous membranes, where the antioxidant activity helps prevent inflammation and damage by bacteria and viruses, and is crucial for collagen production in the skin – something we also want to support over the winter months. Vitamin C cannot be stored in the body, so we need to consume it every day. Eat a piece of fruit or add lemon, orange or grapefruit to your morning juice. Incorporating leafy greens and broccoli into stir fries is another great way to boost your daily intake of vitamin C. Heat, light

and the length of time since a food was harvested decreases vitamin C levels, so grab what you can from your local farmers' market. Vitamin D is an important nutrient for bone health, immunity, cancer prevention and mood regulation. Its role in bone health is to support the uptake of calcium and phosphate, which are bone-strengthening minerals. As the sun’s action on the cholesterol in our skin is our major source of vitamin D, it is important to both spend a little time each day exposed to the sun and to increase our food sources of vitamin D. These include some oily fish, organic butter, and eggs (vitamin D is found in the yolks). Zinc is a superstar nutrient when it comes to immunity. This mineral is critical for a large number of processes, including appropriate immune responses. Too many people today don’t consume

adequate dietary zinc, while others consume a diet that is too high in substances that interfere with the absorption of this vital mineral. Poor zinc status can lead to poor resistance to infection. Oysters, beef and lamb are good sources of zinc. In the plant family, seeds contain zinc; however, a much smaller amount is present. If you take a zinc supplement, it is best taken before bed to support great absorption. Your grandma was right about chicken soup – bone broths contain calcium, magnesium, phosphorus and amino acids, which are all nutrients that support adrenal health as well as the immune system. CoCA is exhibiting two mesmerising major video artworks that reflect man’s relationship with land and sea with three-screen installation Vertigo Sea and Bridget Reweti’s Tirohanga. Commissioned from Ghanian-born artist and filmmaker John Akomfrah for the 2015 Venice Biennale, Vertigo Sea is a cinematic exploration of the migration of refugees that makes use of awe-inspiring imagery. Meditating on the nature of man’s relationship with the sea and exploring its role in the history of slavery, migration, and conflict, the film was shot (spectacularly) on the Isle of Skye, the Faroe Islands and in the Northern regions of Norway with the BBC’s Bristol-based Natural History Unit. In Tirohanga, Reweti explores our understanding of the land and landscape of Aotearoa, challenging ideas about the wild, untamed, sublime New Zealand landscape. To 7 August www.coca.org.nz

GISELLE-belle Cityscape caught up with RNZB’s Lucy Green ahead of her reprisal of the iconic role of Giselle – her favourite of all classical ballet roles.

Tell us about Giselle’s descent into madness and death – what can we expect performance-wise? The mad scene is my absolute favourite part of the ballet. Up until this scene Giselle is quite naive. She doesn’t believe anyone could ever lie or mean her harm. When she discovers Albrecht’s deception her head and heart can’t take it and she spirals into madness and eventually death. The scene can be played in many ways, but I think the challenge is to find the balance between subtlety and believability so as not to become melodramatic. I love this scene because you can lose yourself completely. I’ve never felt so many emotions on stage as I do in this scene, but I’ve also never had so much fun. Describe Giselle in 5 words. Act 1: Giselle is vivacious, hopeful, pure of heart, innocent and a bit of a daydreamer. In Act 2: Giselle is a spirit who has learnt the realities of life, love and heartbreak. She’s now strong-willed and mature, but also forgiving and loving.

What’s the hardest part of your routine? Physically the hardest part of the ballet is in Act 2. As a spirit the steps must look weightless and ethereal. To dance as a non-human you must not appear to have joints or muscles or effort in the movements. The ballet is 175 years old this year – why do think it’s still so well loved? Despite the ballet being so old it’s one that I believe everyone can relate to. The themes of love, heartbreak, deception, and forgiveness are relevant to all, no matter which generation is watching. I love that in Act 1 you can be very real, human and natural in your emotions and acting rather than using typical ‘ballet mime’. It never feels forced and I think this makes it more believable and relatable to audiences. I also think the pure classicism of the white act (Act 2) is incredibly beautiful for audiences. H

ow do you prepare for a role like Giselle? The role of Giselle is one I’ve danced many times before. When I first performed it, to find an accurate way of dancing the role that felt true to myself, I spent a lot of time pondering the story, watching other dancers’ interpretations and thinking through how I’d like to portray the character and story. Now that I know the ballet inside out I really enjoy being a bit more spontaneous on stage. It’s a role that’s very easy to get lost in and once you’re in that place each scene and moment feels incredibly natural and real. Physically, however, no matter how many times you’ve performed the role, the preparation is incredibly rigorous. Practice, practice, practice! RNZB’s previous production toured the world and was made into a feature film; what sort of pressure does this add to the production? I think the success of all our recent international Giselle tours goes to show how brilliant a production this is. The whole company knows the ballet incredibly well now and each time we perform it, it grows and evolves into something more nuanced, more real and more polished. The pressure, as always, is on, but this is a production that the company dance with incredible confidence and finesse.
