contain starch, a source of sugars, which transform into alcohol and carbon dioxide through the brewing process. In the brewing vat water is mixed with malt and later with hops. The beer then travels from the vat into stainless steel tanks for primary fermentation. The last step of the beer making process is resting, or maturation, which can take from a few weeks to whole years. It is similar to the maturation of wine - real magic! The final key ingredient in the brewing process is the brewer - the master magician who endows the beer with its distinctive colour, strength, bitterness and taste. You can prove for yourself that the CLOCK brewery is run by true brewing masters, and how else but by savouring a pint of their fresh cold beer. You can sample from their tried and tested Czech classic – the unfiltered 10° named Hektor. During the summer you should try the wheat beer Goldie, which is very soft on the palate and carries the scent of cloves and bananas.
