Sate Lilit

Warung Canggu

Homestyle Indonesian F amily-run Warung Canggu keeps it simple with a concept of fresh, high quality, MSG free Indonesian food. In the few short months since it opened the cafe has won a loyal following from ex pats and villa guests in the Berawa area – drawn to local food prepared in traditional home style. The setting is clean and bright, with recycled teak furnishings and an attractive terrace shaded by a bamboo ceiling dangling with bird cage lanterns.

Nasi Campur

Ayam Betutu

Produce is handpicked at the markets each morning and prepared into the daily Nasi Campur offerings which fill the display cabinet. The Ayam Betutu is rich and spicy, as is the hearty, slow cooked Beef Rendang. The Perkedel Tahu is made with tofu from Lombok, (chosen for its superior taste and quality), the sweet crunchy Tempe Manis made with soybean cake from Tabanan, while the softest eggplant has been steamed then grilled with hot tomato sauce. Rice is a choice of [beras merah] (a nutty and nutritional red rice), sweet flavoured yellow rice cooked with turmeric and coconut cream, and the ubiquitous steamed

Iced Mint Tea

white rice. In typical Indonesian style, spicy sambals range from hot, to very hot, to very very hot. A la carte highlights include Nasi Goreng cooked with crab; succulent Sate Lilit served with vegetables and rice; as well as Ayam Goreng, Gado Gado and Thai style soups, like Tom Yam Gong. Well-prepared western dishes include pastas, such as Carbonara and Tuna, Aglio Olio as well as salads such as Greek or Chicken Caesar and a range of sandwiches. We order Dadar for dessert, traditional pancakes coloured with pandan leaf and filled with a

tropical, sweet mix of grated coconut and palm sugar. Iced teas are refreshing and tasty, flavoured with mint, blackcurrant or lychee – which is thoughtfully served with a spoon for scooping out the delicous poached fruit. Freshly blended juices and the infamous coffee luwak are also offered. While Warung Canggu has the easy and unpretentious vibe of a traditional warung, it has a smarter and healthier style and I love the fact that the bungkus (take away) containers are made from cardboard and not polystyrene. \AB

The Multitasking Ingredient

ou can find bawang merah or shallots in every Indonesian kitchen. Shallots, like onion, garlic and leeks belong to the lily family which has more than 500 different sub-species. They were introduced into Europe around the 10th century when the crusaders brought them back from Asia. If you don’t like the strong flavors of garlic and onions but do not want to give them up completely, then shallots are the perfect substitute with their mild flavour and natural sugar content which makes them caramelize easily.

In Indonesia, shallots are predominantly small and round with a deep red color and are readily available in traditional markets and more modern supermarkets. Look for firm bulbs with crisp outer skins, which are heavy for their size. When the outer skin is removed, the inner skin should be pink. For storing, the salad box of the fridge is the ideal place for them and it’s best to wrap them in paper rather than a plastic bag so that the air can circulate and they don’t sprout. Peeled shallots can be kept in a fridge for a week in an airtight box. Like;

Bawang Merah

Thousands of hectares of shallots are grown in Indonesia, as they are tropical cultivars that grow easily with fewer hours

of daylight. Nasi Goreng / fried rice, fried chicken, stir fry vegetable / oseng-oseng, soups, soto, gulai and sambal are just some of the Indonesian dishes that use shallots as a base ingredient. Shallots also have plenty of non-culinary uses. When I was a child, my mother used chopped shallots to cure colds by rubbing it into my skin until I felt a tingling, hot sensation that made me sleep very well. Shallot or onion juice rubbed into the scalp is allegedly a remedy for baldness, and is used as a cosmetic to get rid of freckles, it can also be taken for pain relief and as a mild diuretic. \MA;

onions, shallots can make you cry when you chop them but if you want to avoid this, simply place them in the freezer for 30 minutes before chopping, peel them under running water and use a wet chopping board and a sharp knife. To be able to peel shallots easily, immerse them in boiling water for ten minutes as you would if you were peeling tomatoes and the skins will simply rub off.

We visit one of the newest outlets, with a convenient and strategic location on the Bypass Ngurah Rai on the way to Nusa Dua from the airport. Opened in late 2011 this Minimart provides all the comfort of a café. The ac interior design is trendy yet minimalist with retro style furniture, attractive display and big windows. You can choose your items quickly and continue your journey, or hang out for a while on the shady terrace, enjoy a meal, or perhaps relax with a magazine or newly purchased book in the cosy book corner. Most Minimart outlets are also equipped with ATMs and photocopiers, and you can also top up your phone credit on Indonesian prepaid mobile numbers.

Vietnamese/Sundanese Cuisine

Goi Cuon

t seems that the sleepy surf village of Berawa, Canggu has finally hit the restaurant radar with a stream of funky cafes springing up all over the place, Indotopia is one of them. ‘Indo’ represents both Indochina and Indonesia and the menu provides an interesting blend of Sundanese and Vietnamese cuisine. A simple building design is enhanced with an eye catching mint green feature wall and white, retro-style hand carved chairs. The open kitchen is a hive of activity with chefs grinding spices and preparing dishes from scratch in true slow food style; if you are in a hurry better go somewhere else. Popular with expats and villa guests in the area, a dining pavilion is now being added to the garden at the back to make more seating space.

restaurant business for generations, many of the Indonesian recipes coming from her grandmother’s recipes, and her Aunty Hani is the main chef. We start with Lumpia Ma Gue which translates as Mum’s spring rolls, which are deep fried, tasty and filled with sweet potato and carrot. The sweet chilli sambal on the side is a perfect accompaniment. In contrast, the Goi Cuon are fresh spring rolls, with an unmistakable Vietnamese blend of vermicelli, shrimp, chicken and vegetables flavoured with mint and coriander. We wash these down with a supremely refreshing, Ice Blend Mint created from huge handful of fresh picked mint blended into a lush dark green concoction.

Other Vietnamese favourites include The Pho which comes in a huge bowl and is justifiably popular with its thick beef noodle broth and slivers of beef. The bean sprouts, coriander, chillis and lime served on the side can be added for extra taste and texture. The Bun Bo Xao is equally generous, a salad of vermicelli with lettuce, onion, garlic peanuts and bean sprouts – with a dressing of sweet nuoc nam sauce – a Vietnamese essential. The daily special at Rp 19.000 is truly a great deal – usually a tuna dish served with rice, tofu, tempe and cassava. I really enjoy the Vietnamese coffee with a rich, full bodied and creamy taste, especially

the Ca Phe Sua Nong which is served hot with condensed milk. The homemade Lemongrass Tea is also strong on flavour, and both go well with desserts like Mango Sticky Rice, Saigon Crepe and Dadar Gulung – mini pandan leaf crepes cooked in brown Javanese sugar. A second Indotoptia will be opening in Ubud soon. \AB

Meads Beach Bar and Grill

Cranberry Punch

he once sleepy fishing village of Tanjung Benoa has become a magnet for water sports enthusiasts, but the mellow vibe and pristine beaches remain. The newly opened Meads Beach Bar and Grill situated at the tip of the peninsula is a perfect fit and offers glimpses of the sparkling sea and colourful outriggers bobbing in the water. An open-sided pavilion creates a fresh and breezy setting with simple wooden tables, all weather rattan furniture and chequered cushions. With a casual ambience reminiscent of a beach side Australian eatery, it comes as no surprise to learn the owner is Warren Mead, a well known restaurateur from Perth. Mead prides himself on providing the freshest seafood, handpicked at the Jimbaran fish markets each morning. Meals are generous and simply prepared with an emphasis on the natural flavours of premium seafood, enhanced with a drizzle of olive oil, a touch of lemon and a pinch of salt.

Asparagus with Smoked Salmon

Vegetarian Pizza

We finish with a Bread and Butter Pudding – something I don’t see so often in Bali, and it is excellent, with a creamy citrus flavour, crunchy top, and segments of fresh orange on the side. Our round of mocktails are also really enjoyable; there is a lush, creamy Virgin Colada, a fragrant Cranberry Punch and a very good Chocolate Milkshake. For those looking for something a little stronger, the beverage list offers reasonably priced wines, top shelf spirits and a selection of classic cocktails.

Fresh Snapper and Chips

We start with Asparagus with Smoked Salmon – tender asparagus spears wrapped in slivers of salmon and lightly drizzled with a sweet and spicy honey mustard dressing. Also recommended, the rich and hearty Seafood Chowder, and Garlic King Prawns Cutlets prepared with chili and fresh herbs. Mains include Grilled Chicken Baguette, Australian Tenderloin, Mahi Mahi Fillets, and generous individual Homemade Pies with golden puff pastry crust, mashed potato topping and a variety of fillings. We opt for the Fresh Snapper and Chips, with three large, flaky fish fillets fried to crispiness in a light beer batter. A squeeze of fresh lemon brings out the flavour beautifully, while crunchy French fries and a side salad round out the dish. Pizzas are great to share as a snack (or eat alone), with a thin crispy base and range of toppings such as Seafood, Vegetarian, Italian Volcano, and perennial Aussie favourite Hawaian with ham and pineapple.

Seared Ginger Salmon

ntering Balique Restaurant is like stepping back into another era, with its charming rooms adorned in retro artwork and antique furniture. Dimmed chandeliers, hanging lanterns with beautiful floral patterns, soft purple linen-dressed tables, and oldfashion furniture contribute to the character and charm of this large and airy restaurant. Every little detail, including the gift shop is a pleasant distraction while waiting for your meal. The restaurant offers Mediterranean cuisine specially crafted by talented Chef Yehudi Van Meckeren. Today he has prepared an impressive appetiser of Tuna Tartar – a plate of freshly sliced tuna and avocado served with wasabi, soy sauce and wakame seaweed, garnished with lemon, sesame seeds, cherry tomato and crispy thin sliced bread. The hint of ginger on our palates perfectly stimulates our appetites. Parma Ham Pizette, made with fresh tomato, red onion, mozzarella and prosciutto crudo; and Salad with Gratinated Goat’s Cheese, comprised of crottin de chauvignol, dried figs, walnuts, and walnut raisin bread are among dozens of other hors d’oeuvres also listed on the menu. In addition, Balique offers a children’s menu with dishes named after all-time favourite characters, including Tweety’s Cheese Burger, Tom & Jerry’s Chicken Nugget, Mickey’s Spaghetti Bolognese and Sponge Bob’s Fish Fingers. Our impressive appetiser is followed by Seared Ginger Salmon served with coriander rice, a tasty cucumber salad, and ginger beurre blanc. It’s a delightful, simply seasoned salmon dish, crispy on the outer layer and juicy on the inside. A plate of Double Chocolate Fudge Brownie follows. The taste is impeccable – a perfect balance of dark chocolate and sweetness, garnished with chocolate ganache, roasted sliced almonds and a soft icy treat of hazelnut gelato. We also try the Dame Blanche, two scoops of vanilla gelato with roasted almonds, hot chocolate sauce and a Ginger Crème Brulée – ginger custard caramelised with brown sugar. A decadent dessert need to be paired with a suitable companion, in this case, a Passion Star Martini served from the antique-style bar, which also offers an impressive wine selections, sparkling cocktails, beer, coffee and tea.

Banyan Tree Ungasan

A Glitte ring Gem T

ranslated in Arabic as white pearl, Ju Ma Na clings to the majestic limestone cliffs on the southern most tip of Bali – a glistening white feat of modern architecture with bird’s eye views of the sparkling sea far below. The ocean provides a constant theme, with an abundance of fresh seafood on the menu, gleaming lanterns adorned in mother of pearl, shell-shaped plates and coral-like sculptured lamps. The Arabic influence is also apparent in the stark white walls, elaborate shisha (water pipes), and a Moroccan inspired hand washing ritual that precedes each meal, with hands immersed in a golden bowl filled with fragrant rosewater, fresh orange, frangipani and rose petals.

1001 Nights

Organic Ubud Beet Salad

The Ju Ma Na Signature Cocktail Set also has an Arabian influence, with two cocktails served with seafood canapÊs; Rock the Kasbah is a lovely concoction of vanilla infused vodka, Kirsch, fresh strawberries and crushed mint; while the Blue Atlas is similar to a Pina Colada, with the addition of Blue Curacao adding sweetness and a green tinge. I also feel compelled to try 1001 Nights, a thoughtful concoction with the initial fruity flavour of vodka melon, peach and lime juice, giving way to a lingering minty aftertaste from the dash of Crème de Menthe. Ju Ma Na also provides my first experience with molecular cocktails which blend science with the art of cocktail mixing, resulting in a very good Gin & Tonic floating with flavourful, caviar-like molecules of Blue Curacao. Contemporary cuisine mixes French style cooking techniques with Japanese influenced ingredients, and recent accolades for the Banyan Tree team include three gold and two silver medals at the prestigious Bali Salon Culinaire 2012 competition. The grilled Miyazaki Wagyu Striploin is a house special – prestigious Japanese wagyu renowned for its tender marbled texture. The Lemon Parfait de Citron is composed from lemon verbena and coconut gateau which proves to be a superb combination.

The tasty, French influenced Beetroot and Brie Salad comes with mixed greens, avocado, apple, beetroot and is sprinkled with a slighty spicy Italian style vinaigrette; the brie comes on the side – atop a thick slice of wholewheat toast. A rich Chocolate Orange Cake is perfect with a homemade, aromatic Masala Tea (made with local spices). Tea lovers will enjoy the extensive range on offer, from organic imported teas, like Bio Liquorice and Bio Rooibos to herbal blends of Digestive or Lemon Verbena. I am easily seduced by the espresso selection, which include Colombian, Ethiopian, and my choice, a rich Guatemalan blend that has hints of spice and chocolate and keeps me fuelled for the rest of the afternoon. Chef I Made Bagus Windhyantara Creative Western Cuisine Beef Tenderloin

Made Bagus Windhyantara was headed to a life in the culinary world from a very young age. He was born in Singaraja, on the north coast of Bali, to a family and community with a strong food culture. “In every religious and traditional ceremony, my family and I were involved with the local community in preparing a big feast,” says Chef Bagus. His profound love of food led him to attend the Hotel and Tourism Training Institute Nusa Dua, specialising in Culinary Art. After graduating from college, he took the position of cook helper at Intan Resort, and never looked back. A two-year stint in cruise lines followed as he traveled through Europe and the Caribbean Islands. From there he continued his culinary journey to Celebes Island, working as a Chef de Partie for Novotel Manado for two years before returning home to Bali. He was assigned as chef butcher at the Club Med Bali and, the following year, joined Mercure Kuta as sous chef.

Today, he is the appointed Executive Chef of The Royal Beach Seminyak Bali, controlling three restaurants under his radar; Capris Beachfront Bar & Restaurant, Husk, and Teppanyaki. For Husk he creates western cuisine that is simple, flavourful and beautifully presented. Chef Will Meyrick

An Asian Story

ailing from London, Chef Will Meyrick visited Asia on his way to Australia in the late 90’s. His travels led him on a culinary journey across Hongkong, Thailand, and Indonesia, exploring Asian cuisine from its origin. It was a profound experience that transformed what had previously been “just a job” into a true passion. “I wasn’t good at many other things. So I ended-up cooking,” Meyrick confesses. With no formal training, he began his career at the age of 18, working at western-style restaurants in the U.K, starting from the very bottom – picking herbs. Determined to fully explore the restaurant business, he found his way to Michelin-Star restaurants, where he polished his skills as a cook by creating precise and wellexecuted dishes. After seven years, he decided to spread his culinary wings and fly to Australia, making a stop in Asia on the way, in order to learn the secrets of Asian cookery. He quickly discovered a passion for this aromatic spicy cuisine, and would spend the next eight years building a solid career in Australia as an Asian chef.

Chicken and Prawn Eggnett

In 2005, he arrived in Bali and admits that he has no intention of ever leaving. His first restaurant on the island, Sarong, has enjoyed phenomenal success with its Asian fine dining experience. MAMA San opened late last year and embodies the concept of “Asian street food” with an emphasis on authentic flavours created by the freshest, highest quality ingredients. Menu highlights include Chicken and Prawn Eggnett with caramelised coconut , mint leaves, bean sprouts, cucumber pickles, peanut and lemon, Steamed Duck Shitaki Bun with Chilli Oil, Char Sui Pork with Five Spiced Sauce, and Lamb and Pumpkin Pot Stickers with Chilli oil and Black Vinegar. Meyrick frequently travels within the country and abroad, to quench his constant thirst for Asian and Indonesian culinary knowledge. He is passionate about Indonesian food, claiming, “My goal is to promote Indonesian food, to get Indonesian people to believe in their own food." Authentic, mouthwatering recipes from the islands of Indonesia can be found in his latest project, the 'Sarong Inspirations Cookbook,' alongside recipes he has gathered from his travels throughout Thailand, Vietnam, India and Malaysia. "My story is Asian, but I’ve gone deeper,” he says. \AM Will Meyrick Executive Chef MAMA San Jalan Raya Kerobokan 135 Banjar Taman Ph +62 361 730 436 0817 975 9395 Seminyak Map B - 3

Watermelon Mint Martini

The BTS mixes Grand Marnier, Baileys, hazelnut liqueur and coffee liqueur with whipped cream and a red cherry, making it a sweet and creamy after dinner cocktail.

Assorted Mezze Platter

t’s hard not to notice Nero as you stroll down Legian street, especially at night, with all the candles on the tables, and the black mysterious background adding a romantic ambience. Although seating is inside, you get the feeling of being outside, thanks to the clear roof panels and the fresh breeze through the open doors. A black and white colour scheme dominates the décor, and glass covers almost every corner of the restaurant. Open since 1999, Nero is quite an institution in Legian, and offers tasty Mediterranean cuisine and an extensive list of exotic cocktails. Happy Hour from 4pm – 8pm is justifiably popular with ‘buy two get one free’ on frozen cocktails. The Watermelon Mint Martini is a perfect aperitif, with its combination of fresh revitalizing flavours. If you fancy long drinks, we recommend the tasty Mellow Yellow

Mellow Yellow Bird

Bird imbued with the refreshing taste of Galliano. Another colourful long drink is Bay Breeze, perfect for enjoying at sunset with its fruity blend of vodka, pineapple juice, and cranberry juice creating a vivid red layer. The Better Than Sex, known as BTS, is popular with women for its sweet creamy taste. The mix of Grand Marnier, Baileys, hazelnut liqueur, coffee liqueur topped with whipped cream and red cherry makes it a good after dinner cocktail. Enjoy your drinks at Nero with an Assorted Mezze Plate, a Mediterranean sampler for two, consisting of small dishes of grilled mushroom, zucchini and eggplant tempura, cuttle fish, octopus, oriental kebab and salsa, garlic bread and grilled ham. These samplers are served with three kinds of dips; tzatziki, eggplant and hot cheese, allowing you to combine dishes and dips

according to preference. The tapas menu is available from 6pm, and afternoon cocktails can easily lead on to casual dinners, which are accompanied by live acoustic music on Tuesdays, Thursdays, and Saturdays. Check the featured menu written on the small boards to know the house favourites and the chef’s daily specials. So, drink up, lay back, enjoy the Legian scene from a comfortable sofa and don’t let the world pass by without ordering another wonderful cocktail from the bartenders at Nero. \MA

The One and Only Hatten Wines

efying the popular notion that growing grapes and producing quality wine in the Asian tropics is near impossible, Hatten Wines has managed to establish a successful wine trade while gathering steady international recognition. Founded in 1994 by Ida Bagus Rai Budarsa, Hatten Wines is the first and only true Balinese winery and brings the taste of Bali to hotels and restaurants all over Indonesia. From its inception Hatten Wines has been recognised as a pioneer in winemaking and viticulture and has been voted in the top 10 for fastest improving producers in Asia.

Hatten Wines uses locally grown black Alphonse Lavallée French table grapes, as well as white grape varieties (Belgia and Chasselas Loulou,) to produce wines from its own vineyards on the north coast of Bali. It is at the winery in Sanur where the knowledge and experience of Australian consulting winemakers come into play. Hatten Wines is committed to international standards of quality and taste, with many international awards under its belt. In 2003, it’s acclaimed Alexandria – a semi sweet Muscat brought home a bronze medal from the prestigious London International Wine & Spirits Competition. During the same year Hatten also received a commendation for it’s Rosé, in the Portuguese Rosé competition (amongst highly acclaimed Portuguese and Spanish Rosé wines.) In 2011, at the Singapore Wine Style Asia Awards, Hatten Wines won silver and bronze medals respectively – again for Alexandria, and also for Pino de Bali. This year, silver was awarded for the dry white Aga wine at the Wine & Spirits Asia Wine Challenge in Singapore.

Aside from the famous semi-dry Rosé, dry Aga White, light Aga Red and the awardwinning, Alexandria; the Hatten range also includes a white and a rosé sparkling – Tunjung and Jepun, named after Bali’s beautiful water lily and frangipani flowers; and the sweet dessert wine, Pino de Bali. In recent years, Hatten Wines has embarked on another venture, introducing Australian wines, by importing juices that are vinified in Bali. The brand Two Islands is reminiscent of the relationship between Bali and Australia, and the assortment includes a lively and fresh Chardonnay, a floral and fruity Riesling, a ruby red peppery Shiraz and a full bodied, fruity flavoured Cabernet Merlot. As a proudly Balinese company, Hatten Wines recently re-introduced the symbols of Bali on its new look. Those interested in wine tasting can visit the Cellardoor, which is now available in Jakarta.
