Dear Whitetail Club Members,
In typical fashion, we welcome a chilly white February. We have seen the entire country experience uncharacteristically cold temperatures and snow, but Idahoans just call that winter. And because it's a way of life here, we know how to make the most of the season with winter sports both inside and out. The winter amenities inside our gates include groomed trails open for Nordic skiing, fat tire biking, and hiking, and the sledding hill is open for downhill thrills. The ice has taken a little time to freeze, but our ice rink is now ready for a season of ice skating. A reminder that these conditions are updated weekly on the member portal, keeping you in the know about all things Whitetail Club.
February is full of club events and the annual McCall Winter Carnival. That typically coincides with the Winter Signature Event, which is not on our calendar this year. With past events, including magic shows, comedians, and an off-Broadway show, we are pausing this year to evaluate what the membership might benefit from the most. Look for this unforgettable event to return in 2026 around Winter Carnival weekend. In the meantime, we have some excellent wintertime events lined up, including a snowshoe excursion concluding with a dinner at the Yurt, a snowmobile trip at Brundage, and a Kids Cooking class, to name a few.
Even with snow on the ground, golf is still a top priority at the club. Represented by Head Golf Professional, Andrew Elaimy and members Brett Miller, Kevin O'Neil, and Brian Donaldson, Whitetail Club successfully participated in the Rocky Mountain PGA Pro-Am in Palm Springs in January. Read more on page 10 and congratulations to the team.
The new Member Guides arrived at doors last month. Inside, you'll find the events calendar, club information like hours of operation, the member directory, membership plan, rules and regulations, and fees. If you did not receive your copy, please let me know so I can get a copy sent out or held at the club for you.
We are continuing our search for a new Club Director, vetting qualified candidates to see who aligns with our values, lifestyle, and commitment to excellence. We will keep you informed with updates as they become available.
The real estate teams have seen members' continued interest in buying and building within Whitetail Club. With select homesites left in Phases 1 and 2, the opportunities in Legacy Ranch, and the last four homes in the Fairways neighborhood, now is the time to act. Contact an Agent or Executive Team member to answer questions, set up a tour, or have us reach out to a friend or family member who is interested.

SEAFOOD PAELLA
INGREDIENTS
1/2c. Olive Oil
1 Large Onion, Finely Diced
2 Garlic Cloves Minced
2 Medium Tomatoes, Peeled & Diced
1.5 tsp. Sweet Paprika Such As Pimenton De La Vera (Dulce)
1 Pinch Saffron Threads
2 Large Squid Cleaned And Sliced into 1/4-Inch Rings(Tentacles Not Used In This Dish)
DIRECTIONS
2 c. Short Grain Rice Such As Bomba Or Calasparra
1 c. White Wine
3 c. Seafood Stock
12 Prawns Or Jumbo Shrimp Shells
12 Mussels
1. In a large pot, bring seafood stock to a boil then lower to a light simmer. Add saffron threads to the stock. Keep hot and ready, close to Paellera (paella pan).
2. Add olive oil to the paella pan and bring up to medium high heat. Add onions and garlic and cook until translucent and aromatic.
3. Add squid and shrimp working in batches, if necessary to not overcrowd the pan. Remove proteins and set aside for later.
4. Deglaze pan with white wine. Scrape the bottom of the pan lightly to release some of the browning bits attached to the bottom. Add stock to the pan and bring to a boil.
5. Carefully add rice to the paella pan, spreading it evenly throughout the pan. Bring temperature down to a simmer.
6. It’s IMPORTANT to not move the rice much in order to develop the socarrat (crispy bottom rice).
7. In about 10 mins, start scattering squid and shrimp around the paella. Place them evenly around the pan. Try rice, it should have a bite to it but soft on the outside. If it’s still hard, add more stock or white wine to paella pan.
8. Scatter mussels around the paella pan and cover with foil. Manage temperature accordingly as to not burn the bottom.
9. Once rice is al dente, uncover the paella and proceed to decorate with asparagus spears, hard-boiled egg, pimiento piquillo and parsley leaves. Serve immediately while hot.

The Whitetail Club team successfully participated in the Rocky Mountain PGA Pro-Am in Palm Springs this January, represented by Head Golf Professional, Andrew Elaimy and distinguished members Brett Miller, Kevin O'Neil, and Brian Donaldson. The event proved to be both a competitive success and a valuable relationship-building opportunity for the club.
The Whitetail team demonstrated exceptional play throughout the tournament, securing an impressive second-place finish on day two and following up with a strong fourth place showing on day three. Individual achievements were highlighted by multiple skins victories from both Brett Miller and Kevin O'Neil, while Brian Donaldson contributed consistently strong play throughout the event. Congratulations to the team!
