Believe it or not, choosing locally made beer has a much greater impact on South Dakota than you might realize. Spirited Desserts I am not a huge dessert person. When I finish a meal, I would really rather have some kind of decadent cocktail then a wedge of cake. Don’t get me wrong, I would never ever turn down a Brooklyn Blackout from Queen City Bakery but also don’t judge me if I would rather drink than eat my calories! We’ve seen an increased interest in mouth-watering, dessert-style liqueurs of late and they are perfect après dinner treats in a glass. The current trend is peanut butter everything and I must admit that I’m shocked at how much Skrewball Peanut Butter Whiskey we sell. The customer favorite is to mix it with Godiva Chocolate Liqueur for a Reese’s PB Cup martini and I must admit it is very good. Personally, I’m more into a riff on a good old-fashioned peanut butter and jelly so equal parts Skrewball and Leopold Brothers Blackberry Whiskey does the trick. Leopold Bros. uses fresh fruit and there are no artificial preservatives in their liqueurs so one could argue that it is a very healthy spirit! The iconic Baileys known mostly for Irish Cream has entered the seasonal and limited release world and one of my favorites is Baileys Strawberries and Cream. For those of us that are a certain age it is incredibly reminiscent of Strawberry Quik powdered drink mix! Remember getting to the bottom of the glass and having a heaping pile of strawberry flavored sugar that hadn’t dissolved into the milk? Anyway, I digress. Pour it right out of the bottle over ice or blend it with ice and your favorite Coconut vodka or rum. Baileys also has a gluten free Irish Cream called Almandé made with almond milk for those folks with gluten allergies and it is very tasty.

On May 4, 1964, the United States Congress recognized bourbon as exclusively an American made product with strict production and aging standards. Bourbon’s mashbill must be at least 51% corn, it must be distilled to no higher than 160 proof (80% alcohol by volume), it must be aged in a new, charred oak barrel, and it cannot enter the barrel at higher than 125 proof (62.5% alcohol by volume). Each of these requirements, while specific, leave a little bit of ambiguity for distillers to play with. For example, while bourbon has to be at least 51% corn, there is no one specific corn varietal that needs to be used. There also are not any requirements about where the corn is grown, so distilleries today, especially smaller craft distilleries are experimenting with using different varieties of corn grown all over the world to create unique flavor profiles in their bourbon. Another interesting component is the barrels for aging. While they must be aged in new, charred oak barrels, there is no distinction that requires that it be aged in American oak barrels despite being an American made product. Oak is used because of its durability and decreased risk of leak-

age. With aging for any period of time, there is going to be some leaking and some evaporating that occurs in the barrel, but the goal of distilleries is always to get as much juice as possible from the barrel to the bottle, so minimizing those leaks is extremely important. American Oak is the most typical option, but Japanese Mizunara Oak, and French Oak are also used by distilleries, although most often they are used for finishing purposes. The other interesting requirement to look at is that the whiskey cannot enter the barrel at any higher than 125 proof. Many misconceptions exist that it is therefore not possible to have a bourbon that is higher than 125 proof. Legally, full proof whiskey is bottled at 125 proof, but because of differing rates of evaporation for alcohol and water, it is possible for a barrel strength whiskey to reach proofs as high as the upper 130s. Examples of such whiskies include Jack Daniel’s Single Barrel Barrel Proof, Booker’s Uncut and Unfiltered Bourbon, and Elijah Craig Barrel Proof releases. All of these whiskies habitually exceed the 126 proof mark, and can be quite overwhelming for consumers not prepared for a high heat, high spice offering. I typically recommend drinking these whiskies with some water or an ice cube so as not to singe the taste buds. The unique, and for me exciting, aspect of whiskies that are barrel strength is that we’re tasting it exactly as the Master Distillers and Master Blenders for these distilleries taste them. For me, it’s one of the purest forms of bourbon enjoyment possible. By Zac Johnson

Rudy Navarrete's Tex-Mexican My Grandmother Eulalia Navarrete moved to Sioux City, Iowa from Arlington, Texas in the 1960’s. She was widowed at a very young age with 8z children. She began cooking Tex-Mex meals and opened a restaurant in the early 1970s sticking to traditional and familiar foods, it started with ground beef, rice, beans, and sauces to keep it not so foreign to the public. It was a different time back then and with some items not being available in the Siouxland area, she had to go to bigger cities to get regular Mexican food items such as jalapeño’s, avocados, etc. My grandmother retired in 1980 and my aunt Adella took her place. I grew up learning how to cook and work in restaurants with my father Rudy Navarette Sr., helping him cater food to local towns. I started my journey grating cheese when I was 8, moving up to dishes when I was 10, and helped run his catering service when I was 16. Around that time I realized I wasn't going to be a pro football player, and I enjoyed restaurant work so I decided then and there what I was going to do for my future. I noticed how everywhere we went people enjoyed our family recipes so much, so I decided that I wanted to eventually have a restaurant. I kept learning and in 2003 my aunt Alicia and I started a restaurant in North Sioux City, South Dakota. After a year my father took her place and in 2005 we moved about a half a mile over the bridge to Riverside in Sioux City, IA. where my father currently remains operating Rudy Navarrete’s. I loved being able to help people in Sioux City and hope to keep doing the same here in Sioux Falls. I strive every day to make my grandmother and all who have helped me on the way proud. I truly hope you enjoy your meals that my grandmother handed down to my father, and my father passed on to me, thank you for coming to Rudy M, Navarretes.

Few foods can make people feel as if they’re being indulgent as well as chocolate. Perhaps that’s what makes chocolate such a great fit for Valentine’s Day. When giving that special someone some chocolate on February 14, you’re not just giving them something delicious, but also a chance to indulge in a forbidden fruit. But chocolate desserts can be more than merely decadent. In fact, this recipe for “Pasticcio di Cioccolato con Lampone (Individual Chocolate Cakes With Fresh Raspberries)” from Michael White and Joanna Pruess’ “Fiamma: The Essence of Contemporary Italian Cooking” (Wiley) is both decadent and, thanks to the fresh raspberries, refreshing. The individual cake is an ideal Valentine’s Day gift, as it serves to emphasize how that special someone is the only one for you.

Pasticcino di Cioccolato con Lampone

(Individual Chocolate Cakes With Fresh Raspberries) - Yield 8 • 1 1⁄3 c. cake flour, sifted • 1⁄3 c. plus 2 Tbsp. cocoa powder, sifted • 1⁄4 tsp. baking soda • 6 Tbsp. unsalted butter • 6 large eggs • 1 c. granulated sugar • 1 tsp. vanilla extract • 1 c. heavy cream • 1⁄4 c. confectioners’ sugar, sifted • 1 pint fresh raspberries • Vegetable cooking spray • Pinch of sea salt Preheat the oven to 325º. Spray muffin tin with nonstick spray or use paper or foil liners. Sift flour, 1⁄3 c. of cocoa, salt, & baking soda into bowl; set aside. Melt butter in small saucepan; set aside. Combine

eggs & sugar in bowl of electric mixer fitted with whisk. Set bowl over a pan partially filled with simmering water. Water should not touch bowl. Using whisk, beat egg-sugar mixture until warm to the touch sugar has dissolved. Immediately remove bowl from heat; transfer to electric mixer. Whip the egg-sugar mixture on med. speed for 3-4 min. until tripled in volume and is very thick & light colored. Add vanilla, whip 2-3 sec. to blend. Remove bowl; gently fold in flour-cocoa mixture. Place about 11⁄2 c. of batter in separate bowl; gently fold in melted butter. Fold into remaining batter. Divide batter evenly among cupcake tins. Bake in center of oven for 20-25 min., or toothpick comes out clean. Remove cool completely on rack. While cooling, combine heavy cream with confectioners’ sugar & 2 Tbsp. of cocoa, beat into soft peak; set aside. Remove from tin; place on dessert plates. Spoon whipped cream on top, divide raspberries among plates; serve.

Q: Can you explain why my infant daughter started screaming when my great-aunt dropped by last weekend and wanted to hold her? In the past the baby has always had a smile for everyone, but this time she just went ballistic! What do you think happened? Danny Huerta, Vice President, Parenting and Youth: It sounds like you're dealing with a normal case of stranger anxiety. As early as six months of age, a new phase develops in which a child who formerly seemed comfortable around everyone will begin showing anxiety among unfamiliar people. The approach of someone new -- or someone she hasn't seen for a while -- will provoke a wide-eyed stare, usually

followed by wailing and clinging to you for protection. Fear of strangers is virtually universal as the first birthday approaches and usually continues well into the second year. So, you (and your great-aunt) can relax about it. In fact, a simple strategy may help her and your baby get acquainted. First, it's less stressful for the baby if someone new doesn't try to touch, kiss or hold her right away. In fact, even a direct return of your baby's stare may set off a healthy cry. Instead, chat with this new person as if nothing else is going on. Let the baby see this is someone you're comfortable with. Give her time to observe and get used to the sight of this individual. After a while, some simple exchanges of looks, touches and eventually play will begin naturally as your great-aunt becomes one of the gang. Note that other factors may also be at play. Your child might be feeling hungry and/or tired. She might have been startled by something your great-aunt did or was wearing at the time. Babies can get especially stressed if they wake up and first see an unfamiliar face. The first few years of your child's life provide an amazing opportunity to learn about how she is uniquely created -including her personality, likes/dislikes and responses to what she encounters. It's a great season in your parenting journey.

Our mortgage payment is 35 percent of our take home pay each month. We have two young children, so we eat out a lot, but we have no debt other than our house. You can’t tighten up your budget enough to save up an emergency fund? Stay out of restaurants, dude! There’s no law stating you have to eat out a lot just because there are kids in the house. emergency fund. That’s a pretty basic thing. You guys need to get on a written, detailed plan, and start hitting your goals. I’m talking about a strict, monthly budget. Now, I’ll admit your mortgage payment isn’t exactly what I would’ve signed you up for.

Your house payments, or rent, should be no more than 25 percent of your monthly take home pay. But your house payment isn’t what’s holding you two back. What’s holding you two back is the fact that you haven’t been willing to tighten up the finances in other areas of your life to offset biting off more than you could chew in terms of a home. No, I wouldn’t refinance. You’re fairly close where the mortgage payments are concerned, so I think you can make it through this by looking at ways to increase your income and selling stuff you don’t need to build an emergency fund. You two have been smarter than some, but you’re really going to have to buckle down and rearrange your priorities to make this happen! —Dave

Q: I think my family is pretty healthy overall, even though we've faced some challenges. But somehow we seem to have lost our joy in day-to-day life. What do you suggest? Jim: If laughter is rare at your house, your family is probably feeling the effects. The good news is that you can change the atmosphere in your home today. No matter what we're facing, we choose how to respond. While some scenarios are serious and call for a sober reaction, every day brings opportunities to show our children how to enjoy life. In fact, that skill may be most important in the midst of struggles. If we can continue to choose joy when we're tempted to be discouraged, we'll be modeling a lifechanging habit for our kids. Practically speaking, one way to nurture fun and joy seems almost too simple: Relearn to play! Set aside your to-do list occasionally and join your children in play. You'll immediately see a difference in your family's overall mood. Second, remember that serving others can work wonders for our state of mind. When we take the focus off our own problems by helping someone else, we'll find that gratitude and joy follow. And finally, don't cry over spilled milk. We all make mistakes. But if we allow mishaps to ruin our day, our kids will find it difficult to extend grace to themselves and others. Rather than shaming our children for honest mistakes, we can put

DIRECTIONS Preheat oven to 425°F. Cut a lengthwise slit in each pork tenderloin, cutting to but not through the other side. Set pork aside. Melt butter in large saucepan over medium heat. Add mushrooms and green onions; cook until tender. remove from heat. Stir in cooked long grain and wild rice mix, pecans and parsley. Set aside 3/4 cup of the rice mixture. Spoon remaining rice mixture into 1 1/2-quart casserole; cover and set aside. Divide 3/4 cup rice mixture between slits in pork tenderloins, spreading evenly in slits. Close slits; secure with toothpicks. Stir together Italian seasoning and salt in small bowl. Sprinkle evenly over top of pork tenderloins. Place pork tenderloins on rack in shallow roasting pan. Roast tenderloins, uncovered, for 25-27 minutes until internal temperature is 145°F, followed by a 5 minute rest time. Bake casserole of rice mixture alongside tenderloins.
