The flourishing craft beer movement has made it chic to choose beer as the social drink of choice. And the rise of microbreweries in towns across the globe has led to an array of beers crafted with unique production techniques, resulting in beverages with unique aromas and nuanced flavors. To further enhance the beer-drinking experience, enthusiasts may give more thought to the glasses their beers are in. The concept behind beer glasses is that the dimensions of the vessel can impact how the beer is experienced via the senses. The right glassware can highlight the notable aspects of certain varieties of beer. For example, Henry Lau and Rik Sargent of Physics.org’s Cheers Physics explained that, with fizzy beers, a thin, pilsner-style glass can be ideal. Such a glass will cause less liquid to come in contact with the bottom of the glass, causing a smaller head. In other instances, glasses with a tapered top will control how bubbles burst in the head of beer, concentrating the aroma and forcing the drinker’s nose closer to the beer. Spiegelau’s IPA glass has a ridged base that helps agitate hops back into suspension. Its barrel-aged glass features a tulip bowl that focuses complex flavors similar to a wine glass. Another glass innovator, the Rastal brand developed a universal beer glass called the TeKu that is inspired by wine glasses but features sharper contours and a flared lip.

The style is designed to focus aromas, with the rim increasing turbidity as the beer flows to the lips and forces out the carbonation. There are no rules governing which glasses to use when serving beer, but there’s certainly a movement for speciality beer glassware. This week’s main focus is continuing our Home Bar Building Series with heavily peated Scotches. As we discussed last week, the amount of peat moss that is burned during the drying process of the malted barley largely determines how rich the “smoky” flavor of the Scotch is perceived. The whiskies we will discuss today have some of the highest levels of phenol parts per million as they have had a great deal of peat used to dry the grain. These single malt expressions capitalize on the deep complexities possible when using extreme levels of peat moss, as well as unique cask aging to create bold, convoluted sippers that are revered all over the world. Leading off our group is Ardbeg 10 Year Single Malt, an Islay (Eeh-la) single malt that is bottled without chill-filtration, allowing the fatty acids of the whisky to remain in the finished product. Slightly oily, this whisky has incredible balance between vanilla, caramel, smoke, and sea saltiness that provides a mouth coating feeling with a lingering finish that invites you back for another sip. Priced at $57.99, this is a whisky that truly shows the incredible delicateness attainable by a highly peated single malt. At $75.99, Highland Park’s Valkyrie is the first in their Viking Legend series. 50% of this whisky is peated, with the other 50% being unpeated

malt that allows for the rich dried fruit notes on the nose and palate to shine before the heather smoke sweeps in on the back palate and finish. With hints of chocolate on the finish, enjoy this whisky near a fire this cold winter season. Next comes Lagavulin 16 Year. In general, I am a really big fan of Lagavulin’s stuff. They’ve recently launched an 11 Year expression that pays honor to Nick Offerman who I loved in the tv show Parks and Rec, but their flagship 16 Year reigns supreme. The nose on this whisky is undeniably strong, loaded with peat smoke. On the tongue, there is a great deal of malt characteristic, balanced with sweet sherry notes, and a touch of dryness not found in our other whiskies of emphasis. Priced very reasonably at $79.99, this is a whisky that will impress on your home bar. A personal favorite of mine is highlighted in Balvenie’s 14 Year Peat Week. Since 2002, Balvenie has dedicated one entire week to distilling whisky that is made from 100% peated barley. Lighter in complexity that the Lagavulin, this whisky carries more honey sweetness and lighter mouthfeel, finished with earthy notes that are best enjoyed neat. Snag one of these limited bottles for $99.99. This is a great whisky to collect verticals for and compare from year to year. Finally, Laphroaig Lore is the richest peat bomb that has ever been produced by Laphroaig. With whisky that ranges from 7 years to 21 years, and several different cask finishes all represented, this whisky is truly a gem of that displays the incredible attention to detail that makes for a fantastic single malt. Rich smoke up front, with a soft, sweet after taste, enjoy this bottle for $109.99 with smoked meats or a charcuterie board by yourself, or with a good friend. By Zac Johnson

Holiday Wine & Food Pairings By Heather Taylor

I recently saw a meme on Facebook that said we all need to set our scale back 15lbs for the upcoming holiday season and I can certainly get behind that! Between roasted prime rib, decadent seafood, rich hearty soups and so much more I have visions of food dancing in my head throughout the month of December. The best job I have in December is helping find the perfect wine pairing with whatever holiday fare is being served. A wine in harmony with its food partner elevates the entire tasting experience and creates a memorable rather than a mediocre event. My best example of that “ah ha” food and wine moment is the very first time I had Darioush Napa Valley Cabernet Sauvignon and it was paired with Queen City Bakery’s Brooklyn Blackout layer cake. I think Angels wept during that first bite and sip. Obviously, this has stayed with me since it happened shortly after the bakery opened over a decade ago. Prime rib or any kind of beef pairs best with red wine but the cut

and preparation will dictate the finer nuances of a pairing. Beef tenderloin is very delicate and can be paired with a lighter style red such as a Pinot Noir, Beaujolais or Barbera. Robust prime rib calls for a robust red such as Cabernet Sauvignon, Barolo or a hearty red blend. Albariño from Spain and Brut and Brut Rosé are three of my alltime favorites with crab and lobster. The richness of the meat is balanced by the acidity of the Albarinõ and the bubbles from the sparkling wine. And bubbles just make everything better! Even seafood drenched in a rich cream sauce will stand with these wines, but you could add a nice creamy buttery chardonnay if the sauce is present. Marry butternut squash soup with a dry Riesling and a zingy beef chili with a spicy red Zinfandel. A beautiful cut of herb-roasted lamb is just asking for a Côtes du Rhône or Gigondas. And don’t forget Rosé! A cheese and charcuterie platter is the perfect combo for my pink friend. Above all, enjoy and Salut!
