Favorite tacos include the vegetarian Holy Cauliflower with crispy cauliflower tossed with furikake, Mexican slaw, mango sauce, and Santos aioli. Crunch into a crispy taco with braised beef, chicken tinga, or potato, topped with lettuce, salsa, pico, crema, and cotija cheese. The offerings from behind the bar pair seamlessly with the fare served by the kitchen. Michael Carlisi, the restaurant’s general manager and long-time mixologist gained an extensive knowledge and expertise on mezcal while working in Oaxaca. Drinks are enhanced with housemade salts that add a twist to the flavor while balancing acidity. Try the Downtown Paloma,
with grapefruit, dried chili, and hibiscus salt. The classic margarita gets elevated with touches of dehydrated lime peel salt paired with lime, orange, and earthy tequila flavors. Cordova explains that Carlisi, recognized for having created the best margarita in the Bay Area where he worked at The Douglas Room, adds to the enthusiasm of Guisado’s bar program. Carlisi embraces creativity and will continue to expand the cocktail offerings. The eatery’s interior design draws inspiration from Mexican churches. Traditional and contemporary Mexican saints and angel décor are illuminated by the playful celebrity saint candles surrounding diners.
