Back when I started Seasonal Living, 17 years ago, I had just left Discovery Communications and the world of corporate America. I had been working in the luxury hospitality, retail and travel industries which gave me the opportunity to travel the world and eventually split my time between Asia, America, and Europe, where I fell in love with the artisan culture that exists in other parts of the world. Because of the connections I made in my travels, I was in a unique position to support these small, artisan factories. I realized that so many handcraft skills are in decline as we expand more and more into a truly globalized world. Seasonal Living provided a great opportunity to showcase and find ways to work with these grass-roots artisan communities and bring their products into the US market, which helped keep their generational, artisanal craftsmanship traditions alive. I want to say thank you to all of you for supporting Seasonal Living, the furniture brand. It's because of your support that these artisans are still able to make a living and contribute to their families in the time of the pandemic. I want to also say thank you to each of you that have subscribed to Seasonal Living Magazine. This is our 10th issue, and because of your support, the magazine lives on. In line with this significant 10th edition milestone, we are celebrating with an exciting new initiative, the launch of the world's first Luxury Virtual Designer Showhouse, focused on wellness and sustainability [ #SLDS21], a collaboration between 15 sponsoring brands and 11 participating designers. basic stuffing If you don't have leftovers, make this basic stuffing recipe to use for your pot pies. makes 3- 4 cups

The ingredients:

• 1/2 small onion, minced • 1 clove garlic • 1 celery stalk, minced • 1½ tablespoons butter • ⅛ teaspoon dried sage • salt • pepper • 3 cups dried bread cubes • 1 cup chicken stock • 2 teaspoons fresh parsley • 1/2 teaspoon dried thyme • 1/2 teaspoon dried rosemary

The instructions:

1. Preheat oven to 350°F. 2. Add butter, onion, garlic, celery, and sage to skillet over medium-low heat. Cover lightly with salt. Cook for 8-10 minutes or until onions are soft and translucent. Do not brown onions. 3. Place bread cubes, parsley, thyme, and rosemary in a bowl. Add cooked onion and celery mixture and stir to fully incorporate. Add chicken stock and toss to fully coat mixture. Season with salt and pepper to taste. 4. Add mixture to a small baking dish. Cover with foil and bake for 30 minutes. Remove foil and bake for 10-12 additional minutes. Cool slightly before serving.

YIELDS: 6 PREP TIME: 40 MIN TOTAL TIME: 1 HR 20 MIN

THANKSGIVING POT PIE The ingredients:

• 2 tablespoons unsalted butter • 2 leeks, finely chopped • 2 cups sliced fresh mushrooms • 1 cup cooked ham, cubed • 3 tablespoons all purpose flour • 2 cups chicken stock • ⅔ cup sour cream • 3 cups roasted turkey, shredded • salt and pepper to taste • 2 tablespoons fresh parsley, finely chopped • ¾ cup frozen peas • ¾ frozen carrots, diced • ½ cup chopped pecans • 2 cups basic stuffing (see recipe at left) • two sheets puff pastry • 1 egg, beaten

The instructions: 1. Melt butter in a large skillet over medium heat. Add leeks and cook until softened (about 5 minutes). Remove the leeks and set aside.

2. Add mushrooms to pan over medium heat. Add a pinch of salt and cook until tender (5-7 minutes). Add ham and flour and stir to fully incorporate, moisten flour, and remove any lumps. 3. Add chicken stock and bring to a boil. Add sour cream and reduce heat to simmer and cook until sauce thickens (3-5 minutes). Remove from the heat and add in turkey, parsley, peas, carrots, and pecans. 4. Preheat oven to 400˚F. 5. Roll the two sheets of puff pastry together to create one thicker sheet. Use the top of a cocotte or ramekin to cut out circles for the top crusts with the point of a paring knife. Cut a small circle in the center of each of the top crusts to allow the steam to escape during baking. Cut 6 long strips (about ½ inch wide) from the

For the soufflé: • ⅔ cup egg whites, (4-5 eggs) • 1 cup apple puree • ⅓ cup sugar • crumble topping For the apple puree: • 5 gala apples, cored, peeled and thinly sliced • 1 cup sugar For the crumble topping: • 3/4 cup plain flour • 4 tablespoons unsalted butter • ⅓ cup granulated sugar • ½ teaspoon cinnamon

For the compote: • 2 granny smith apples, diced small • 3 cups water • juice of one lemon • ½ cup sugar

processor or blender. Blitz until smooth. 3. Pass purée through a fine mesh strainer, cover and set aside or refrigerate if you are doing the preparation in advance.

For assembly (optional): • caramel sauce • vanilla ice cream

The instructions:

For the apple puree: 1. Place apples and sugar in a medium saucepan. Cook over medium-low heat until the apples are soft (about 15 minutes). 2. Cool to room temperature, then place cooked apples in a food

For the crumble topping: 1. Preheat oven to 350˚F. 2. Place flour, butter, sugar, and cinnamon in a medium bowl. Using a fork or pastry cutter, press the ingredients together to coat butter with flour to a coarse sand consistency. 3. Pour the crumbs onto a parchment lined baking sheet in a thin layer. Bake for 15 minutes. Cool completely

d This recipe is actually quite simple to make, but the success depends on understanding a few key components. The apples matter. Gala apples are sweeter and softer. They are the perfect candidate for the purée, although another soft, sweet apple could work. Granny Smith apples, on the other hand, are more tart and crunchy. These are a better option for the compote as they will be more sturdy for blanching and will offer some contrast to the sweetness of the soufflé.

outdoor fire safety tips Everyone loves gathering by the fire. Not only do fires add warmth, but also a warm glow to the conversation. To make the most of SEASONAL LIVING in cooler months, a fire feature is almost essential. For some, that means a fuel burning fire feature, like one from our INGOT collection. If a wood fire is more your thing, there are some additional concerns to consider. Either way, check out our tips below for making sure your cozy evening is safe for everyone.

WATCH THE WEATHER

Be sure to check wind conditions and do not light a fire on especially windy days when sparks and embers can easily spread to trees, your home, and other flammable items. Even with slight wind, be sure to understand the direction of the wind so you can advise guests to sit upwind to avoid smoke and stray sparks.

WIDE OPEN SPACES

Ensure that your fire pit is not within 15 feet of a tree or the overhang of a building. Keep the area around the fire free from flammable debris. Keep a vigilant eye on sparks that blow out of the fire.

STICK TO WOOD

SINGLE SERVING

Holiday gatherings are going to be a little different this year. With social distancing guidelines in place, it will be necessary to rethink how we entertain. Never fear, a solution is near. Passing around platters of food that everyone touches or setting up a buffet style meal may not be the best practice, but you can still ‘wow’ your guests with a little ingenuity. The solution? individual portions. This may take a bit more work and planning, but it’s worth it to have everyone together and know that everyone is comfortable and safe. THE MENU First things first… decide on the menu. Think in normal terms at first, then work on how that translates to single serve. Use smaller, individual serving containers to portion out the larger casserole type dishes you will be cooking in advance. For example, make a big pan of your famous macaroni and cheese, but portion it out into cute paper takeout boxes before everyone arrives. Also consider making some dishes in smaller portions from the start. You might want to finally try stuffins… or stuffing made in muffin tins. You can use cupcake papers to line the muffin tins and then everyone has their own, individual serving to ‘grab and go’.

THE SERVICE Put condiments, sauces, and snacks like nuts and olives in individual cups. Paper soufflé cups are a great option for this. You can find them at restaurant supply stores and many supermarkets. They even come in black and kraft paper. While you are there, check out some takeout containers. You can dress them up with a bit of twine, ribbon, or other decoration to maintain a bit of style. Best of all, if you use these and other disposable containers, clean up will be a snap. Think outside the bowl for containers. You will likely need many different single serve vessels if you have several things to serve. To make sure you have enough different options, it may be necessary to get creative. Check the list on the right for tools to use to serve individually. Get creative with drinks. Make a signature cocktail in advance and put them in small mason jars. Set them up

individually with an instruction card telling guests how to prepare (add to ice, stir, etc.) Not only will you be off the hook for playing bartender, but it will also be an interactive affair. Serve wine in small, individual carafes or buy small bottles. These are available from many winemakers now for wine and champagne. Make finger foods that are easy to take without having to touch anything else. Put out small rolled rim baking sheets (also available at restaurant supply stores) and let guests pick out the finger foods of their choice. You might even consider a small set of tongs for each guest. Lastly, stick to single serve desserts like cookies, cupcakes, and bars. They can still be decadent and even over the top… just on a small scale.

LET IT OUT

Sit comfortably, lengthen your spine and lace your fingers together and rest them on your belly. Close your eyes and mouth.

Take a slow, deep breath through your nose, sending your breath into your belly. Feel your belly expanding through your hands.

Breathe out slowly and deeply through the nose. Feel your hands drawing towards you and your belly contracting.

Repeat two or three times, then: • With your next breaths, lengthen your inhalation to a count of five and then exhale for a count of ten. • Repeat this nine more times, inhaling for five seconds, exhaling for ten. • When you’re finished, release your hands and return to natural belly breathing. Feel the peaceful energy flowing through your body.

ITH ONE LOOK AT THE DESIGN WORK OF AUSTIN-BASED INTERIOR DESIGNER, MARK CRAVOTTA, YOU UNDERSTAND

TWO THINGS. FIRST, THERE IS BALANCE. MARK MANAGES TO COMBINE SCALE, PROPORTION, AND COLOR IN A WAY WHERE EVERYTHING IS IMPORTANT AND INTENTIONAL, BUT NO ELEMENT COMPETES FOR THE SPOTLIGHT. SECONDLY, DETAILS AND QUALITY MATTER. THIS ISN’T A QUESTION OF THE MOST LUXURIOUS OR EXPENSIVE PIECES, BUT INSTEAD, A QUESTION OF WELL-MADE PIECES THAT WILL STAND THE TEST OF TIME, PHYSICALLY AND STYLISTICALLY. WITH A BACKGROUND IN VISUAL ARTS AND THEN AN EARLY DETOUR INTO BUSINESS, MARK LAID THE FOUNDATION EARLY ON FOR A FUTURE CREATING STUNNING SPACES FOR CLIENTS AROUND THE WORLD. AFTER CHANGING HIS COLLEGE MAJOR TO BUSINESS, MARK WENT TO WORK FOR A TECH COMPANY AND LATER OPENED A DRAPERY BUSINESS WITH HIS THEN WIFE. AFTER THEIR DIVORCE, MARK CONTINUED WITH THE BUSINESS AND RETURNED TO HIS VISUAL ARTS BACKGROUND, PRODUCING COUTURE LEVEL DRAPERY FOR PROJECTS AROUND THE COUNTRY. THIS IS HOW HE MET DESIGNER, TERRI LEE BARBER, AND ULTIMATELY BECAME HER DESIGN ASSISTANT. SEVERAL YEARS LATER, TERRI DIED TRAGICALLY IN AN AUTO ACCIDENT AND MARK WAS LEFT TO DECIDE HOW TO MOVE FORWARD. HE COMPLETED PROJECTS FOR MANY OF THE EXISTING CLIENTS AND THEN DECIDED TO CONTINUE ON HIS OWN WITH THE BIRTH OF CRAVOTTA INTERIORS. MARK SAYS IT HAS ALL BEEN A JOURNEY OF DISCOVERY. EACH OF THESE UNIQUE EXPERIENCES HAS LED TO HIS BALANCED APPROACH TO BUSINESS, NEGOTIATION, AND, OF COURSE, DESIGN. AT THE

HEART OF ALL OF IT, HOWEVER, REMAINS HIS COMMITMENT TO THE CLIENT. ACCORDING TO MARK, "FUNDAMENTALLY, IT’S IMPORTANT TO ME THAT THE HOMES WE DESIGN REFLECT THE PEOPLE LIVING THERE. I REALLY TRY TO GET AN ACCURATE PICTURE OF WHO MY CLIENTS ARE AND HOW THEY SHOULD BEST BE EXPRESSED IN THEIR HOME ENVIRONMENT." ABOVE: Goal... have a traditional feel at home, but also have it feel up to date... timeless aesthetic. Floor to ceiling drapes were used to create softness, drama and sound absorption. The sofa table to the left was antique but was too short, so Mark designed a base to make it work and read as one piece. The chandelier is handmade of folded sheet metal. The linen-covered coffee table is from Holly Hunt.

MAINTAINING THIS CLIENT COMMITMENT, WHILE INFUSING HIS OWN DESIGN AESTHETIC REQUIRES STAYING TRUE TO WHAT IS IMPORTANT TO HIM. "I CARE ABOUT THE DESIGN, THE MATERIALS, THE CRAFTSMANSHIP AND FINISHES. THESE ARE NOT QUALITIES THAT EVERYBODY NOTICES RIGHT AWAY. BUT TAKEN TOGETHER, THERE IS A PALPABLE SENSE OF SPACE THAT PEOPLE TEND TO FEEL, EVEN IF THEY CAN’T PUT THEIR FINGER ON WHY."

SEASONAL design ON INSPIRATION

What inspires you? Without a doubt, travel is my biggest inspiration. I love to see how other people live, how they socialize, dine, make their homes and public spaces. I love to see the way history and the land shape the way people have evolved and the art they produce. What is the one spot where you would love to live outside of the US? It sounds cliche, but I’d love to try Paris- probably just because, to date, I haven’t been able to get enough. The way the city is laid out is like a piece of living art in itself. The architecture is inspiring, the art and culture, the food, the lifestyle. What feeds your creative vision? I’m an insatiably curious person. It’s entertaining to me to explore, whether while traveling (museums and galleries, artisanal workshops, architecture, restaurants), talking with other creatives (in interior design, architecture, graphic design, visual or performing artists), or surfing the vast supply of inspiration available from my computer. COVER STORY A beautiful office in the heart of Austin. Warm woods are punctuated by light and graphic patterns in the drapes and rug. Collections of the homeowners items reflect their personality in the room.

In this 20's home, Mark was tasked with creating impact and drama, within a minimal budget. Stairs are white oak with blackened steel for the hand rail.

A collaboration with Sanders Architecture led to a Mondrian pattern with high gloss auto paint ceiling solution that allowed access points for HVAC and lighting.. Urban Electric light fixtures.

Cladding the walls with pre-finished Baltic birch and finding quality furniture from retail sources allowed for a stunning, budget friendly design.

VANITY FAIR LEFT TO RIGHT: 1 - The goal in this powder room was to add drama. Floor: blue marble. Wallpaper: handmade plaster paper. Lighting: Antique French light fixtures rewired from dealer in France. Mirror: Antique of English origin. 2 - Making this bathroom for Juniper restaurant ADA compliant was Mark's biggest challenge. He designed the custom vanity with its black and steel base and honed black granite top. He added economical, commercially rated vinyl wallpaper that emulated eel skin. The inexpensive, darkened steel mirror was the final touch. Lights are from Studio Dunn. 3 - For this restaurant project, the client requested all 4 bathrooms to be individual and unique. His goal was to create impact and fun in a small space. The handmade blue green tiles are not only beautiful, but also practical and easy to clean. The large scale banana leaf wallpaper adds punch. The mirror is unlacquered brass and the light fixtures are from Circa Lighting.

4 - In this very small residential powder room, Mark created a dramatic jewel box with two simple moves, a stunning horizontal wallpaper from Philip Jeffries and tall narrow sconces from Urban Electric.

remaining pastry dough. Wrap one strip around the edge of each of the cocottes, folding it over the rim. 6. Fill each of the cocottes or ramekins to ½ inch below the rim. Add a layer of stuffing to the mixture, making it slightly rounded at the center. 7. Brush each of the wrapped rims with beaten egg. Press the top crusts to the wrapped rims and crimp with a fork to seal. Use a paring knife to cut away excess dough. Brush the tops of the pastry dough with beaten egg, taking care to avoid the cut edges. 8. Place the cocottes on a baking sheet and bake until the crusts have risen and are golden brown (35-40 minutes).

mixture. Add 1 teaspoon of apple purée, then continue to fill with soufflé mixture to the top. Tap the bottom of the ramekins gently on the counter to settle the batter. Use the back of a knife to level the top of the soufflé mix with the top of the ramekin. Add another teaspoon of purée and gently spread it evenly over the surface of the soufflé mix. 6. Add a generous amount of crumble to the top of the soufflés. Use your finger and thumb to clean around the edge of the ramekin, making a small gap between the soufflé mix and the side of the ramekin at the top. This will allow the batter to rise. 7. Place all of the ramekins on a baking sheet. Bake for 10-12 minutes or until soufflé rises 1 to 1½ inches. 8. While the soufflés bake, prepare plates with a smear of caramel sauce, some apple compote, and a scoop of vanilla ice cream. When the soufflés are ready, place them on the plate and serve immediately.

before placing crumble in an airtight container until ready for use. For the compote: 1. Add water, sugar, and lemon juice to a medium saucepan. Bring to a boil. 2. Add diced apple and blanche for 30 seconds. Remove immediately and cool. Set aside or refrigerate in an airtight container if preparing in advance. For the soufflé: 1. Preheat oven to 350˚F. 2. Coat six small ramekins with butter. Add a couple tablespoons of sugar and turn the ramekin to completely coat the butter with sugar. Pour the excess sugar into the next ramekin and repeat until all of the ramekins have been coated with butter and sugar. Set aside. 3. With a hand or stand mixer, whisk egg whites to soft peak stage. Slowly add sugar and continue whisking just until sugar is fully incorporated. 4. Add 1 cup of the apple purée to a clean bowl. Add 1/3 of the egg whites and mix them together. Add the remaining egg whites and gently fold them into the purée until fully incorporated. Place the mixture in a piping bag. 5. Fill the ramekins half way with the soufflé
