In celebration of SEADREAM YACHT CLUB’s 10th anniversary, I invite you to enjoy this issue of The SeaDreamer Club Newsletter. Within its pages you’ll be reminded of the beautiful destinations we take you, our attentive service, outstanding cuisine and our genuine desire to provide you a very special holiday. It is the crew onboard SEADREAM I and SEADREAM II who are the heart and soul of the company. I salute our devoted staff, many of whom have been with SEADREAM since the company was founded in 2001. You may know some of those who have served SEADREAM for a decade; Captain Smorawski; Captain Willassen; Exec. Hotel Manager, Christophe Cornu; Pastry Chef, Garfield Anderson; Maitre d’hôtel, Don Budraitis and Waiter, Werner Roy. There are more names to be mentioned, some are behind the scenes working as engineers, cooks and carpenters; each an important piece of our success. In the 10 years since our first SEADREAM voyage, we have welcomed guests from all over the world and garnered an impressive array of awards – including the distinction of being one of the highest rated vessels by the Berlitz Guide to Cruising & Cruise Ships for 10 consecutive years. Even more than our awards however, it is our repeat-guest rate near 50% on many voyages that makes us all proud. This issue is dedicated to our expanding family of new and returning guests, the people who inspire us to continually enhance the individualized service that makes SEADREAM YACHT CLUB so special.

The Hippocrates Health Institute was created over five decades ago. Over the years, it has developed the Life Transformation Program into the definitive blueprint for transitioning to a healthier lifestyle. The doors are wide open to guests with a wide array of intentions, whether it is curing themselves of devastating disease or simply learning to take their good health to an uplifted level. The Hippocrates Health Institute helps people radically change their health by teaching them how to trade nutrient-deficient, “dead” foods to a diet rich in antioxidants, vitamins, minerals, and plant-based proteins. The Hippocrates plan, replete with fresh sprout and vegetable juices, wheatgrass, colorful salads, nuts, seeds, and fruit, supplies the oxygen, enzymes, alkalinity, and bioelectrical charges vital to cellular and general health. SeaDream’s reputation for providing a stellar culinary experience remains of utmost importance to the company. “The raw food menu is an added option. If you come aboard to enjoy filet mignon and double chocolate mousse, by all means it’s on the menu” said Kishore. He added “Nobody else at sea is offering this style of cuisine and because we serve at most 112 guests, we can. One might assume raw food is boring or bland, but guests who chose to try it are in for a tasty surprise.”

SeaDream yacht club introduces the first of its kind at sea, a “Raw Food” menu option. A once-radical form of vegetarianism called the “raw foods” or “living foods” movement is creeping into mainstream. Now, gourmet raw food is offered in addition to the regular menu, aboard the luxurious twin mega-yachts, SeaDream I and SeaDream II.

SeaDream’s Chef shared several of the dishes being served from this optional, new raw food menu. Beverages such as Watercress Tang; a liquid mélange of watercress, Anjou pear, lime and pineapple; the Blood Apple Blaster; a blend of apple, ginger, red beet, lime juice and agave. Salad options include Asian style Cashew Curry Salad; crunchy and slightly spicy. An entrée such as Vegetable Lasagna uses pasta-like noodles made from spinach leaves and coconut meat, layered between a spicy cauliflower mash topped with a sun-dried tomato marinara.

“Raw” refers to a style of preparation in which all ingredients are raw, organic and vegan (no fish, meat, eggs or dairy), and nothing is heated above 118 degrees in order to retain all the healthy micro nutrients. SeaDream’s Norwegian owners, Linn and Atle Brynestad were excited by the health benefits they personally experienced while eating “raw”. After an extended stay at the Hippocrates Health Institute in West Palm Beach, Florida, the Brynestads asked the Executive Chef, Renate Waller to bring her talents to SeaDream’s galley. Renate, a “Raw Food Chef ” worked with SeaDream’s Corporate Chef, Sudesh Kishore to create a special, optional menu of delicious, gourmet raw food dishes. “Switching to a high percentage of raw, living plant based foods, enables people to reclaim feeling great and being well” says Hippocrates Chef, Renate.

Ingredients: 12 Cucumbers, peeled, seeded and roughly chopped 3 Jalapeno peppers, seeded and minced 2 Red Bell Peppers, cored and diced very small 1 bunch Mint leaves, cut into long, thin strips ½ Cup Tomato, chopped ½ Cup Lime Juice 1 Tsp Pink Peppercorn 1 Tsp Salt, or to taste

SeaDream’s Pastry Chef is on board with raw food desserts. There is a tempting Cashew Lemon Cheese Cake with a crust made from almonds and dates and the filling’s main ingredients are cashews, lemon juice, almond milk and coconut butter. For those who prefer sugar free, we make that available too. You really can have your cake and eat it too!

Cucumber, Tomato-Mint Gazpacho

Preparation: 1. Place half of the cucumbers and lime juice in a food processor, pulse to make it chopped. 2. Blend the other half of the cucumbers in blender to liquefy. 3. Add the two mixtures together and fold in the rest of the ingredients.

To serve, use a short juice glass with a mint sprig for garnish. Serves 12-14


My sister, Elki Jacobs moved to Israel over 30 years ago. Today, she is an international event designer flying to London to design Madonna’s party and 3-day wedding parties in Monte Carlo. Whenever she comes home for a family reunion or birthday, it’s wonderful but very hectic as she tries to spend quality time with our parents, relatives and friends in New York and Connecticut. Last summer, we decided to try something different. Instead of Elki coming to the United States for my parent’s 63rd wedding anniversary/sister’s birthday/ family reunion, we decided to spend the time together aboard SEADREAM II in the Greek Islands. This was the most precious time we ever remember, for our two generations to be together in one place unwinding, laughing, and reminiscing. Each one of us felt transformed by the end of the week. The tension and exhaustion of everyday life had lifted and we discovered true relaxation. The most extraordinary staff cared for my family. It was such an intimate experience, as if we were aboard our family’s private yacht and there were simply a few other folks along for the journey. Elki fell in love with the event possibilities for chartering SEADREAM for a wedding or birthday celebration and designing exclusive parties in different exotic ports. The mere mention of the word “SEADREAM” to any member of my family evokes an immediate smile, like a hypnotic trigger word.

This fall we began planning a milestone birthday party for my dad. One look at the guest list and I could see this was going to be an expensive event. I suggested an alternative, forget the party, and let’s take the family on another SEADREAM voyage. Instant family agreement! The world’s largest river (carrying more water to the sea than any other river) and richest ecosystem can now be explored by luxury mega-yacht. In 2012 and 2013 SEADREAM II offers voyages up the Amazon River. Because of SEADREAM’s smaller size and shallow draft, she may travel both the Lower Amazon in Brazil and the Upper Amazon, as far as Iquitos, Peru. The lush green forest of the Amazon River basin covers parts of eight South American countries, including Brazil, Peru, Bolivia, Colombia and Venezuela. Parts of the Amazon are still inhabited by local village communities that exist amid the dense greenery and difficult terrain. Traveling along the water remains the best way to experience this diverse region.

The river itself teems with life, including the Amazon dolphin, or boto. While the females are usually gray, the male botos are a distinct pink color. There are over 2,100 species of fish including the legendary, sharp-toothed piranhas and the strongly electric, electric eel. Living in these same waters are giant river otters and green anacondas. Amazingly, more than one-third of all species in the world live in the Amazon Rainforest. If you don’t spot a howler monkey, there’s a good chance you’ll hear their distinctive warning call. You’ll also note the whistles and chatter of the vibrant scarlet macaw. The jungle excitement is not limited to mammals and birds. Palms, vines, bromeliads, orchids and carnivorous plants make this region a botanist’s paradise.

Employee of the Month

Each year, SEADREAM I & II reposition in spring and fall between the Mediterranean and the Caribbean. These 11-day trans-Atlantic voyages are delightfully relaxing and have quite a following of guests who favor the uninterrupted days and the seemingly endless ocean.

Please join us in recognizing and congratulating the crew members selected as Employee of the Month for the past six months aboard SEADREAM I & II. There are many characteristics that identify excellent employees. SEADREAM YACHT CLUB appreciates their dedication, caring, commitment and integrity.

For exercise (combating the decadent SEADREAM dinning) a group of officers, crew and guests walk laps around Deck 6 daily. SEADREAM decided a few years ago to make it a walk for charity, whereby walkers could obtain sponsors or simply make donations, based upon the number of laps walked or the total number of miles walked. 16 laps around Deck 6 = 1 mile. SEADREAM’s “Steps for Charity” as it’s now referred to, has become a popular component to each trans-Atlantic voyage. In spring 2011, close to $5,000 was raised for the National Breast Cancer Foundation. In October 2011, the groups onboard both yachts walked to raise funds for The National September 11 Memorial & Museum at the World Trade Center Foundation, Inc.. SEADREAM YACHT CLUB as a company matched the dollars raised onboard bringing the total dollars raised to $1,650.

SEADREAM is According to the 2012 Berlitz Cruise Guide

The 2012 Berlitz Guide to Cruising & Cruise Ships released on October 1st, announced that the 112-guest mega yachts SeaDream I and SeaDream II achieved the top two ratings in the ‘Boutique Ships’ category (50 – 200 passengers). The Berlitz Guide, now in its 27th year, is researched and written by Douglas Ward, the world’s top authority on cruising and cruise ships. Having reviewed 285 cruise ships, Ward has named the top-rating ships for 2012, with the 10 most highly rated being officially ‘small’ or ‘boutique’. The SeaDream ships’ ratings out of a possible 2,000 points are: SeaDream II - 1,788 points and SeaDream I - 1,786 points.

The hard-hitting reviews independently expose the best and worst scoring cruise ships, using an internationally-accepted rating system devised by the author, Douglas Ward, the most feared critic in the business. Taken into account are 400 separate items based on personal cruises, visits and revisits to ships, as well as observations and comments from Ward’s team. Since SeaDream’s founding in 2001, it has been honored annually by the Berlitz Guide, SeaDream I and SeaDream II having been described as “Ultimately Exclusive Boutique Vessels”, and named as the tops in its Five Star Club, listing them as the “Crème de La Crème”.
