The selection “Il Cavaliere”, is produced in the heart of the denomination DOC Valpolicella classico, in the village Pedemonte. The family that create it, sinks deep roots, into the knowledge of the vine growing and the experience of the wine making’. The position of their vineyards, the components typical of this land, the favourable climatic conditions, the quality of the age-old vineyards, and passion, combine with the experience and the passion of the founder, and the whole family. The Wine produced , demonstrate the own importance, deserving the best awards, also in the competitions organized outside Verona. The extension of the Vineyards is five hectares, and are located in three areas: in the district of Quar, in Cengia and in Valgatara, all raised with the system of the pergola Veronese. It is from the vineyards of Valgatara, the oldest of the place planted in early 1900s, that born the wines Recioto and the Amarone, products of Prestige of this selection. The Grapes of Recioto and Amarone, picked up and selected in the Vineyard, are placed on special dry-rack located into suitable rooms, well aerated and dry (i.e. with a very low level of humidity). The grapes remain here until January and then are pressed by hand. This period, particularly cold. allows the proper fermentation that lasts beyond March. Note that from the ageing of Recioto, Amarone and Passito, are obtained valuable and refined wines, which can also boast curative properties.
La Selezione “Il Cavaliere” è prodotta nel cuore della denominazione DOC "Valpolicella Classico" in località Pedemeonte. La famiglia che la crea, affonda radici ben profonde nella conoscenza della coltivazione della vite e nell’esperienza nella vinificazione. La buona posizione dei propri vigneti, i componenti tipici del terreno che li ospita, le favorevoli condizioni climatiche, la qualità delle vigne secolari, si uniscono all'esperienza, e alla passione del fondatore e della famiglia tutta. I vini prodotti dimostrano la propria importanza, meritando i migliori premi anche in concorsi organizzati fuori Verona. I vigneti (5 ettari) sono collocati in tre zone: in località Quar, a Cengia e a Valgatara, allevati con il sistema a pergola veronese. E' dai vigneti di Valgatara, i più antichi del luogo, piantati agli inizi del '900, che nascono il Recioto e L'Amarone i prodotti di prestigio di questa selezione. Le uve del Recioto e dell'Amarone, raccolte e selezionate nel vigneto, vengono poste sui graticci in appositi locali ben areati e asciutti. Nel fruttaio le uve rimangono fino a gennaio e vengono pigiate a mano. Questo periodo particolarmente freddo permette una fermentazione che si protrae anche oltre il mese di marzo. Da notare che nell'invecchiamento del Recioto, dell'Amarone e del Passito si ottengono vini pregiati e raffinati con potenzialità anche curative.
