About our Events Our wine, spirits and beer tasting events entertain and enlighten enthusiasts of all levels. Held in our beautiful, Tuscan-inspired Tasting and Education Centre, each event is unique and presented in a fun and relaxing manner. Events usually run for one hour to 1½ hours, facilitated/ hosted by industry experts and our own sommelier team. Tastings include beverage samples that are typical of the region or topic of discussion, accompanied by a small plate of foods that enhance the samples and cleanse the palate.

Get ready for a fun night as we explore several wines and get you to guess which is the most expensive. Discover how wines of different values compare, if you can tell the difference in price and if the most expensive wine delivers the best experience.

Scotch for the Senses Saturday, January 14th, 7 PM to 9 PM $35 per person Explore the land of kilts and clans and test your knowledge of Scotland’s whisky regions. We will be tasting regional whiskys from Speyside, Campbeltown, Islay, the Islands, Highlands, Lowlands and one mystery whisky. This event will provide an opportunity to test your palate and challenge your senses, as we will reveal the products at the end of the tasting.

In Vino Veritas Thursday, January 19th, 6 PM to 9 PM $60 per person Boffins Public House at Innovation Place Join our sommeliers as the hosts of In Vino Veritas at Boffins Public House. This monthly event offers a delicious tasting menu paired with a wine to match each of the five courses. Tonight, Boffins’s culinary team will take you on a foodie’s tour of France, while Co-op’s sommelier team tells the stories of the vineyards and the wines.

Samuel Adams Utopias Exclusive Tasting Saturday, January 21st, 2 PM to 3 PM $30 per person Beer collectors and connoisseurs know Samuel Adams Utopias is unique among beers. Utopias is an un-carbonated blend of batches, some of which have been aged in different wood barrels for more than 22 years. The 2015 blend was aged in single-use bourbon casks from the award-winning Buffalo Trace Distillery. Enjoy a tasting of outstanding Samuel Adams beers, including the 2015 blend of Utopias. This is a rare opportunity!

Robbie Burns Day Scotch Tasting & Celebration Wednesday, January 25th, 7 PM to 9 PM $50 per person Join us for our third annual celebration of the spirit, honour and custom of Robert Burns – Scotland’s most famous poet. It has become tradition to toast Burns’s legacy with a glass of scotch. This evening, we’ll sample and discuss single-malt Scotch and then enjoy a wee taste of Robbie Burns Day food and traditions, including “Address to a Haggis” and recitation of Burns’s poetry. “Let us do or die!”

Cool Cocktails AMARULA OBSESSION

1 oz. Amarula Cream 1 oz. Disaronno Amaretto 1 oz. Crème de Menthe 1 oz. milk

1 oz. Drambuie 1⁄2 lemon 8 mint leaves Soda water

1½ oz. Dujardin VSOP Brandy 1 tbsp. cranberry sauce 1 oz. lemon juice 2 oz. cranberry juice cocktail 1 oz. cinnamon syrup

Preparation: Pour all ingredients into a cocktail shaker with ice and shake. Strain into a martini glass.

Preparation: Cut the lemon half into wedges. Then squeeze the juice into a highball glass and drop the wedges into it. Add the rest of the ingredients and stir. Garnish with a mint sprig.

Preparation: Add all ingredients into a cocktail shaker filled with ice. (To make cinnamon syrup, combine 1 cup sugar, 1 cup boiling water and 2 tbsp. cinnamon bark. Stir to dissolve and cool. Or you may substitute bottled cinnamon syrup). Shake and strain into a coupette glass and garnish with an orange twist.

2 oz. Goslings Gold Seal Rum 2 oz. fresh lemonade 2 oz. Goslings Stormy Ginger Beer Fresh mint sprig for garnish

8 eggs 2½ cups sugar 3 cups whole milk 2 cups whipping cream 3 bottles Innis & Gunn Original 1¼ cups bourbon 1 vanilla pod

1½ oz. Jägermeister Lime slices Fresh mint 1/2 oz. simple syrup Soda water

Preparation: Combine all ingredients but mint garnish in a tall glass filled with ice. Garnish with mint.

Preparation: Whisk eggs with half of the sugar until sugar dissolves. Slowly add milk, cream and remaining sugar. Add beer and bourbon. Scrape the seeds from the vanilla pod and mix into the eggnog. Serve chilled.

Preparation: Squeeze the lime slices into a long drink glass. Add fresh mint and a hint of simple syrup. Fill with ice cubes. Pour in the Jägermeister. Add soda water and stir gently.

WINE & SPIRIT EDUCATION TRUST Level 1 Award in Wines Saturday, March 11th and Sunday, March 12th 10:00 AM to 4:00 PM both days $399 per person The Wine & Spirit Education Trust (WSET) was founded in 1969 to provide high-quality education and training in wines and spirits. Since then, WSET has grown into the foremost international body in the field of wine and spirits education, with a suite of sought-after qualifications. In addition to courses and qualifications for those in the trade, WSET has an increasing number of consumers and enthusiasts who attend courses. WSET educates through a network of Approved Program Providers throughout the world, including Co-op Wine, Spirits and Beer. Providers are checked rigorously to ensure that they deliver the high standard of instruction required to enable students to receive their qualification. This is a beginner-level introduction to wine, suitable for those starting a wine career or pursuing an interest in wine. For individuals new to wine study, this qualification provides a hands-on introduction to the world of wine. You’ll explore the main types and styles of wine through sight, smell and taste, while also gaining the basic skills to describe wines accurately and make food and wine pairings. Upon successful completion, you will receive a WSET certificate and lapel pin. Course includes textbooks, tastings and examination.


ÉIRINN GO BRÁCH, IRELAND FOREVER! The Emerald Isle has been producing high-quality, world-class whiskey longer than any other country. Ireland is the motherland, the birthplace of whiskey. Monks brought distillation to Ireland before 900 AD. They had discovered the technique on pilgrimages throughout the Mediterranean where it was observed in medicinal use and perfume making. By the 15th century, distillation was modified to produce a drinkable, intoxicating spirit, fittingly coined Uisce Beatha, the water of life. For generations, distillation was a family affair, with nearly every farm distilling its own whiskey. In efforts to raise funds for the English Civil War, King Charles II of England imposed taxation and licensing laws. By the late 1700s, private distillation was illegal, which left the country with 250 licensed and almost 20,000 unlicensed distillers. Exisemen, tasked to collect taxes and impose distillation laws, eventually destroyed over 20,000 illegal stills. This moved distillation to the cities where style and production methods were streamlined and refined. Through innovation, tradition and craftsmanship, Irish whiskey became known as the world’s finest whiskey, treasured especially by Americans and the British for its constant smooth character. By the late 19th century, whiskey production in Ireland swelled to an output of over 5 million gallons per year from 28 licensed distilleries, a stark contrast to the 100,000 gallons of lower-quality, rustic whisky produced in Scotland. Dublin was the hub for trade and production and housed the four major producers of Irish whiskey: John Jameson & Son, John Power & Son, George Roe & Co., and William Jameson & Co. who produced the bulk of whiskey exported abroad to the United States and England.

At the beginning of the 20th century, Irish whiskey experienced multiple setbacks from which it would never recover. The Irish whiskey industry suffered the temperance and Total Abstinence movements in Ireland, the Anglo-Irish Trade Wars, rationing of barley during World War I and the final knockout blow - American Prohibition. By the mid-1970s, only two distilleries remained, and the legacy of Irish whiskey was all but a memory, with Ireland producing only a fraction of what it had in its prime. But the world has seen a resurgence in Irish whiskey. Every year for the last 20, Irish whiskey has been the fastest growing category of spirits. The smooth flavour and creamy texture that is typical of Irish pot still whiskey (made with malted and un-malted barley) has garnered respect from connoisseurs and is capturing a whole new breed of whiskey lovers. Much like Scotch whisky, Irish whiskey boasts a variety of styles that provides a unique experience, but often with a softer, smoother profile for those who find the bold flavours of scotch just too heavy. Whether the whiskey is single malt or blended, peated or un-peated, or distilled twice or more traditionally three times, Irish whiskey masters are exploring new ways to excite the growing whiskey market.
