TOMATO SOUP

A hearty tomato soup is a cold weather classic, and a light red wine will pair best. Go for a barbera—an Italian red high in acid but low in tannins—or a Grenache—a sweet, red dessert wine that will balance the salt in your soup. HOW TO MAKE IT BEST: Keep it simple. Tomato soup only needs a handful of ingredients to taste its best. Don’t go overboard on the flavor or it can become too complex.

APPLE PIE

It doesn’t get more American than apple pie. The spicy-sweet combination (think warm, gooey apples cooked with nutmeg and cinnamon) pairs well with a late-harvest Gewurztraminer. It’s a rare opportunity to couple dessert with an aromatic sweet wine—but it works! For a more readily available vino, select a moscato, a sweet, fizzy wine from Italy. HOW TO MAKE IT BEST: Go hands on. While making the dough, cut the butter and flour together using your hands.

MASHED POTATOES & GRAVY

Full-bodied white wines are key. You need something that won’t be overwhelmed by the heavy dish. Select an oaky California chardonnay; the smoothness of the wine will perform nicely with the buttery potatoes and thick gravy, while the toasted quality helps it stand up against the multitude of flavors. HOW TO MAKE IT BEST: This is no time to count calories. Load your mashed potatoes with sour cream, cream cheese, and plenty of milk. The heavier the better. 76

CHILI

To offset the spicy flavor opt for a juicy, fruit-forward wine (think a Chilean cabernet sauvignon), something full-bodied but low in tannins. Some experts even suggest chilling red wine ever so slightly to attain a better balance with the hot, complex dish. It’ll offer a refreshing quality often achieved with off dry Rieslings (another option). Impress dinner guests with a bottle of Beaujolais—a low tannin French wine. HOW TO MAKE IT BEST: Only cook with high quality meats regardless of what varieties are present in your recipe. When using beef, go for an 80:20 meat-to-fat ratio to maximize flavor.
