After a flagship opening in Lodi that had everyone talking about Javier del Castillo’s handmade, authentic Mexican fare, the spotlight has now shifted to Revolución 1910’s new Lincoln Center location. The Lodi restaurant will become a more casual eatery, called Taqueria Oeste. Del Castillo himself is a wealth of knowledge about traditions and flavors (Did you know that vanilla and chocolate both came from Mexico?), and he also has quite a bit to say about tequila. “Authentic food from Mexico’s history and true tequilas seem to be misrepresented often here in America,” he says. To be called tequila, distillers are allowed to use up to 49 percent sugar from any origin, but Del Castillo explains that the mark of good tequila is when it’s made from 100 percent agave.
