FIREWORKS FILL THE NIGHT SKY BY HANNAH BURKE

T

he year was 1777. For the first time, fireworks soared into American skies to celebrate Independence Day. Once witnessed, a craze for sparks spread through the country and a new celebration staple was born. Centuries later, nighttime festivities still bring every color of the rainbow to our skies, proving that the American fascination with fireworks is alive and well. The Village of Baytowne Wharf is no stranger to the brilliance pyrotechnics produce. A peek at the Village’s calendar reveals that rockets run rampant year-round, from major holiday celebrations to the weekly display known as “Boomin’ Tuesday.” Although spectators may have seen countless fireworks shows, it’s likely that they didn’t put much thought into the logistics behind them. But before you even begin to contemplate all that goes into the creation of a fireworks show, it’s important to remember that aerial consumer fireworks are illegal in the state of Florida.

Despite being able to purchase fireworks like the Pistils, Spinners and Strobes that you’ll see at Baytowne, launching them requires a permit. That’s where Sammy Sanchez, fire marshal of the South Walton District, steps in. As fire marshal for the past 17 years, Sanchez is an expert on all things that launch, pop and boom. “My job consists of two things: issuing the permit and, more importantly, making sure everything is up to code. There are very specific guidelines within the National Fire Protection Association that sets the standard for firework displays,” Sanchez says. “These detail where you can set up, the amount of space required and what is needed from the shooters. We always request insurance, a site plan and a shell summary that tells us what is being launched and how large they are.” For Baytowne, there is a limited amount of space to set up each production, so the average length of shells that are used varies from about three to four inches.

Each shell is different in terms of shape and trajectory, creating a varying fallout radius. For every extra inch, a larger clearance from the audience is required. Four-inch shells travel at approximately 166 feet per second, reaching a maximum height of about 400 feet. To give you an idea of about how many shells are required per production, a five-minute show expends upwards of 1,000 shells, in total. Another one of Sanchez’s duties is inspecting the mortars in which shells are loaded. Powder is pre-packed within each mortar, so that upon the packing of a shell, an explosion ignites the fuse of the firework and sends it flying high into the starspangled sky. The stability of the site in which the mortar is placed, as well as its distance from the crowd, are two things that Sanchez looks for during his inspection. “Baytowne uses a professional, licensed contractor — meaning these shows aren’t just made by two guys who spent 500 bucks at a fireworks stand,” Sanchez says. “Our motto at the station is to ‘leave the shows to the pros.’ Of course, that’s Baytowne. Even though they’ve been doing this for a long time, we still make sure they have all the proper requirements, that the paperwork is in order and that their setup is still up to code.” Once a permit is obtained, the fun part begins. What is the trick to putting on a successful show? Perfectly executed choreography and a bangin’ soundtrack. This wouldn’t be possible without the close cooperation of firework technicians and the assisting Baytowne staff members. Julie Stuckey is the manager of events and marketing at Baytowne, responsible for planning and overseeing the displays. “We plan a mix of songs and tempos,” Stuckey explains. “For our Boomin’ Tuesdays, we have three separate shows and soundtracks. Music for our themed shows, like Halloween and Santa’s Arrival, are fun to select, as well.” According to Stuckey, shows are organized via radio transmission from the stage. These transmissions separate the sound between what the audience hears and the audio cues for pyro technicians. Most of the fireworks used are in pre-fused boxes that have been designed to last

about 30 seconds, with which the music will synchronize. Changing the effect of the pyrotechnics with each transition allows the public to see how each firework reflects the rhythm or lyrics of a song. Children also delight in the opportunity to join the pyro-technician crew! Upon entering their names in a drawing, select kids get to come up and push the “TNT” box to commence the show. After that, they assist technicians with countdowns and cues over the radio, giving them a behind-the-scenes look into how each show is performed. Seeing their reactions, along with those of other spectators, is what makes each event so special for Stuckey. “I love being close to the stage when the fireworks begin,” Stuckey muses. “I have a front row seat to our guests. When the sprinkler firework goes over — it’s always followed with, ‘Wow! That was beautiful!’ And it’s romantic when you see a couple dancing to their favorite song as the show continues in the background. There are families watching the sky in complete awe. I try to leave the radio on briefly, so the pyro techs can hear the enthusiastic applause from the crowd after each show.” One of the most anticipated shows of the year is the “Baytowne Countdown,” a roaring revelry that kicks off the New Year. Rather than watch a ball drop, you’ll want to turn your head up to the skies when midnight strikes. For the younger audience members, an earlier fireworks show begins at eight. 16

“Our team sits down for the Baytowne Countdown show with a list of our favorite songs — oldies, country, rock, pop — anything goes for this first meeting,” Stuckey says. “It’s important to have a good mix for our guests, so we’ll ask, ‘What was the song of the summer?’ ‘What can’t we get out of our heads right now?’ I like to think it’s our responsibility to make sure we’re leading everyone into a new year with some fun sing-a-longs! We send a compilation of our choices for the kids’ and adults’ shows to Pyro Shows, and they make the magic happen with transitions and flow for the lineup.” Pyro Shows is the production company behind all shows at Baytowne Wharf. With its main office in Tennessee — and two more in Alabama and Texas — Pyro Shows dominates the Southeast as the area’s largest and most successful fireworks production company. Performances have been produced in Washington D.C., for Super Bowl XXXIX in Jacksonville, Florida, and even for overseas competitions. Owner Lansden Hill founded Pyro Shows back in 1969, when he was just a young man in Lafollette, Tennessee. “In the country, there were limited options of things to do to make money,” Hill recalls.

“It was rural Tennessee. As a bag boy, you could make a dollar an hour. Mowing yards, you could make maybe three dollars a yard. So, I started selling fireworks. People seemed to be a lot happier when I sold those as opposed to selling them vegetables or repairing their bicycles. It really just went from there.” Hill’s first show was at a small school, where he shot about 12 shells for $36. Thinking it was the easiest money he’d ever made, Hill was eager to turn away from his former occupations of physical labor and expand his business. By the time he graduated from college in 1974, he was running multiple shows each year. “A friend of mine and I bought a radio station a few years back in Panama City Beach,” Hill says. “We went down there and the show did very well; but I learned the city of Destin was having a hard time getting a good, reliable fireworks show on the Fourth. When we did a show there, I met Tom Rice who was on the city council at the time. When the Village opened in Sandestin, he introduced me to some people over there, and I pitched the idea of weekly fireworks.”

Thus, “Boomin’ Tuesdays” was born, and Baytowne became one of the first locations on the coast to incorporate a weekly fireworks show into their calendar. What originated as a prototype blossomed into a wildly successful event that draws a massive crowd each week. What makes Pyro Show’s products unique is their selection process? Once a year, in October, the company travels to China to visit around 12 different fireworks factories. “We look at what each factory claims are the latest and greatest,” Hill says, “then (we) try and determine the best of the best. We bring those back to the Village and incorporate those into our shows.” For Hill, seeing the newest fireworks is like comparing models of a car: There are minor improvements but nothing of extreme. No groundbreaking technology. That’s not to say that the recent years haven’t improved the quality of fireworks. In the last 10 years, the hues of fireworks have come a long way, especially among the pastel palette. Strobe shells — the blinking fireworks — are now able to flash for up to four seconds. Display shells are now able to create unique shapes, like smiley faces.

While fireworks are very much an art form, Hill believes that their quality relies heavily upon the science of making them. What captivates us most about fireworks? The Chinese created them to keep dragons at bay. Hill thinks that maybe we’re still trying to scare them away. Or, maybe the reason we love fireworks so much is that they combine many elements together, offering a little something for everyone. “Part of it is the noise, the power, seeing all the brilliant color,” Hill says. “But the other part is the mystery. It’s one of the few forms of entertainment left that’s rated G for general audiences. You can be eight years old or eighty years old and find yourself drawn to fireworks. In today’s world, to be able to seek out entertainment for your family without having to worry about what your children are seeing or hearing is a rare opportunity. “At The Village, visitors have the special experience of the area itself. You have the green; you have the water to complete the setting. I think that all of those things just come together with the shows to create a meaningful, special experience for anyone who comes.”

HAPPY RETURNS Full-time love for part-time living

T

here are numerous reasons that people purchase investment properties, from a desire to own a vacation home to a determination to break into the rental market and turn a profit. For the many individuals whose names grace the deeds of the impressive condos that make up the coastal community of Sandestin, the reasons to invest are endless. Endless, too, are Sandestin’s amenities and features — from nature preserves and beaches to resortquality facilities. Whatever the draw to this particular port of call may be, it’s undeniable that Sandestin is a dream destination for people from all over the world. From the quaint and serene neighborhoods to the high-rise beachfront towers, Sandestin has it all — which means that it also appeals to every type of renter. Here, “all-inclusive” isn’t just a throwaway description; it’s a literal one. It’s a nature-lover’s paradise to be sure; but it’s also the perfect place to play, shop, wine and dine. “It’s a total community with something for every age and every interest,” Wildstein continues. Like many owners at Sandestin, Wildstein and his wife have invested in multiple properties scattered throughout the area, increasing their gains exponentially, but also stacking the decks when it comes to appealing to a wide variety of vacationers scouting the market to find rentals. It’s the gift that keeps on giving, you might say, as many former renters become buyers who turn their own experiences here into reasons to invest. Some of them, like Birminghambased entrepreneur Steve Jager, are even part of a family tradition. “I started coming here in the late ’70s with my father,” Jager says. His longheld ties with the community inspired investments of his own in 2009, when he and his wife, Annalisa, purchased their first condo and then quickly followed up that initial investment with the addition of more condos in other buildings. Now with four units of their own, the Jagers have also been joined in the investment game by three of their grown sons, who love taking advantage of a shared condo on weekends throughout the year. “Our whole family has always loved coming here,” says Jager. “I’ve been all over the world, but nothing compares to what we have right here in Sandestin.” And topping it all is the view he and his wife enjoy on clear nights when they sit out on the balcony at Luau, a 14th floor

marina, and we’re in the perfect west-facing position to watch the sunset.” The view is a draw in itself and a perfect reason to never venture off-property. And if that were not enough, the sheer number of things to do at Sandestin means that leaving is never a necessity. “It’s a full vacation, all in one place,” says Wildstein, who now owns eight properties in Sandestin. “There’s golfing, tennis, hiking and running paths, places for water activities like boating or fishing both at the beach and on the bay, spas, restaurants, bars, shops and events throughout the year in The Village at Baytowne Wharf.” Such a stacked list of highlights serves Sandestin well in ensuring that even the “off-season” is never really and truly off. There are festivals and community events all throughout the year, from New Year’s to Christmas, and owners at Sandestin’s many condo developments take full advantage of those gatherings. “We make it a point to come down every year for the wine festival, and we always bring a lot of friends with us,” says Jager. “The first time my husband and I came to Sandestin, we had actually been planning to go to Myrtle Beach,” recalls Nashville resident Nancy Merk, who now owns several condos in the community with her husband, Rick. “At the time, we were living in California, and we wanted to come out to the east coast for vacation; but when we landed in Atlanta, they told us that Hurricane Hugo was about to hit that day.” With nature’s fury barring their way to one beach, they revisited their options and took the advice of an airport travel agent to head to another: Sandestin. “It seemed closer than the other suggestion they’d given us, so we drove down and tried to salvage our vacation.” 22

Rained out by the outer bands of the storm system, the Merks nevertheless found the destination of their dreams and the investment opportunities they’d been looking for. “We golfed in a lot of rain that week. On the last day, we decided to look at real estate and bought our first condo on the beach,” Merk recalls. Three decades later, the Merks keep their rentals well booked and their social calendar full when they come down for their own beach time. They’re hands-on owners, one might say, as Rick is active on several of the condo association boards. Rick has been on the Rental Advisory Committee (RAC) with Sandestin for over 20 years. “We often schedule our trips to Sandestin around the board meetings on the calendar,” says Nancy. It’s a guarantee of at least five visits per year — not that the Merks seem to mind in the least. “We really love coming here and getting to reconnect with the many friends we’ve made throughout the years. It’s such a nice community that seems to attract so many wonderful, good-hearted people.” The Merks continue to pass on this love of the area to their four children and eight grandchildren. Full-time resident Marie McKenna couldn’t agree more: “Sandestin is an extremely warm and welcoming resort community for families and tourists, and my children and grandchildren especially love coming during the holidays to spend time with me here at the beach. There’s so much to do and see, and so many fun opportunities to enjoy as a family.” For McKenna, who came to live here with her late husband, Ken, in 2003, owning properties in the

REDIRECTED BY HUGO Rick and Nancy Merk discovered Sandestin by accident. They had planned an east-coast vacation, but Hurricane Hugo disrupted their plans and they headed for the Gulf Coast instead. Before they left Sandestin, they had purchased their first condo.

Destin and Sandestin area was a long-held dream come true. “We always talked about living here when we retired,” she says. Newly transplanted Clay Gring and Delva Glick made the transition from vacationers to full-time residents after they’d spent years coming to the area from Arkansas and keeping their eyes open — first for a second vacation home and then for investment properties to put into Sandestin’s rental program. Both experts in real estate and resort development, Gring and Glick were able to put their business acumen into use as they studied the area; but all work and no play makes for a dull life, and financial gain wasn’t their only motivation for tapping the market. “This is the best-kept secret in the area; and with so much to do, it’s also a place where you have little need to go off-property,” says Gring. “We love it all, and we spend a lot of our time enjoying the trails and the beaches and enjoying the beauty of the resort.” Most of all, however, they enjoy an amenity no amount of money can buy: “Now that we actually live here, we’ve found that what we like best are the friends we’ve made.”

O

ctober is that special month on the Emerald Coast when summer’s intense humidity finally drifts away and autumn arrives, much to the delight of local golfers. In recent years, more and more collegiate linksters are discovering just how special our October can be, thanks to the Golfweek Division III Invitational at Sandestin Golf and Beach Golf Resort. For the eighth consecutive year, 18 men’s teams will be tested by Sandestin’s Raven Golf Course as will the 18 women’s teams taking on the challenges presented by the Baytowne Golf Course. “The Raven course is challenging, and the Baytowne course is very scenic,” said Golfweek’s Lance Ringler, the tournament director. “And they all enjoy it. It’s one of the

premier spots on the Division III schedule. It’s become the place to play in the fall.” For more than one reason. “There’s a lot to do, and the people there are easy to work with,” Ringler said. “It’s a nice spot to come to at that time of year with the great weather, no doubt about it. All the teams stay in the houses that line the golf courses, so that’s really a nice feature as well.” Rick Hileman, Sandestin Resort’s golf director since 2007, said there is great anticipation regarding the event. “From a golf standpoint, it’s absolutely one of our biggest events,” Hileman said. “When you consider we’re having 180 golfers competing over three days taking up two golf courses — this is about as big as it gets in terms of volume and prestige. Teams travel far and wide to compete in this event.” Raven, a par 71 layout, measures 6,900 yards while Baytowne measures 5,500 yards

accommodations and eating. I estimate the impact at easily over $150,000 to Sandestin and the surrounding area.” Hileman said that Sandestin has created quite a niche for collegiate golf. “There’s a lot to do for the families while they’re here, not just watch their boys and girls play golf,” Hileman said. “There’s shopping and the beach and dining. It’s become really a natural fit. The national championship and the Sun Belt championship worked well, and we’ve even hosted a local regional high school tournament. It just seems like we’ve found our calling with these young collegiate and junior events.” Hileman added, “We usually need to seek out 20 to 30 volunteers who help with scoring and shuttling the kids and we never have any trouble getting those people to step up and volunteer. They want to support collegiate golf, and they enjoy being out here with golf at such a high level. Who knows where some of these kids will wind up in five to 10 years with some of the abilities that they have?” Ringler agreed. “It’s a spot that all the teams enjoy. They are able to come and play in a quality golf tournament with great competition, and with the many things that there are to do, I’d say it’s one of the most traveled-to events as far as parents go.

“And there’s the fact that we spread the tournament out,” he added, “and there’s a lot of down time. They get to enjoy the Destin area. There’s going out to dinner, going to the beach or just the attractions. They get to spend a little more time, so that’s what makes it very attractive.”

and also plays to par of 71. The tournament features both individual and team play. There are five players on each team, and the best four scores from these are counted in the daily total. Hileman said that the average winning scores for individuals over three days and 54 holes would be 210 for the men and 218 for the women. “In 2013, Sandestin was selected to host the NCAA Men’s and Women’s Division III National Championship as a result of our success in hosting this fall invitational,” Hileman said. “We currently also host the Sun Belt Men’s Conference Championship in April each year on the Raven. That course also hosted the Champions Tour in 2006 and 2007.” Ringler said that this year on the men’s side all 18 teams finished in the Top 30 nationwide last year. “So it’s a very, very strong field,” he said. Economic impact from this event is considerable. “It’s hard to put a number on it, but the teams are here for four-plus days staying and eating,” Hileman said. “Five players plus a coach times 36 is 216 people. Then add in families that attend. I would say 60 to 75 percent of the players have family members that attend. This is another 150 to 200 people in the area for four nights of

A SWIRL TIME At the Sandestin Wine Festival, the fashions are flamboyant, the pours are generous and the activities, including chef dinners and champagne lunches, are numerous.

ne of the most anticipated spring events on the Northwest Florida Gulf Coast, Sandestin Wine Festival pours on plenty of opportunity to sip, savor … and sparkle. For four festive days throughout The Village of Baytowne Wharf, wine lovers can bask in daily wine-themed experiences ranging from intimate celebrity chef wine dinners to informative wine seminars and from luxury champagne lunch cruises to yoga on the beach! Oh, and two days of sipping, swirling and tasting hundreds of domestic and imported wines in between. Wine lovers from novice to aficionado converge at the premier resort in the South to taste, learn about and purchase their favorite wine varietals from all over the globe. But wine isn’t the only mood-enhancing elixir to be had. The delicious culinary creations from the best chefs along the coast and nearly continuous live music including some of Nashville’s brightest stars — all set against the beautiful backdrop of the vibrant Village — is in itself intoxicating. As delicious as the wine, food and music is, it is perhaps the wine lovers themselves who most make the festival what it is. Thousands travel with family and friends to uncork adventure … and memories … at this must-not-miss spring fête. We had the pleasure of meeting a few when we joined the event in progress. Just after noon on Friday of the festival’s effervescent gathering of friends old and new, longtime lovers and reuniting families boarded the elegant Solaris yacht to set sail on a sparkling culinary adventure. After delicate hors d’oeuvres and creative champagne cocktails crafted by mixologist Megan Cooper, Chef Cody Chapman wowed the crowd SANDESTIN.COM

with a stunning and delectable four-course seafood luncheon paired with champagne and sparkling wines. This first-class cruise was a relaxing and festive way to kick off the weekend. From there, we headed to the Discovery Center in The Village of Baytowne Wharf, which turned out to be aptly named. Here we met Lisa Gianneschi of Atlanta. She was looking for something creative for a girl’s getaway when her sister-in-law from Chicago suggested the Sandestin Wine Festival. “Instead of just doing the beach-poolrestaurant thing, we wanted to do something fun and different, so we came here and we are having a great time,” Gianneschi enthused. She and the other members of a fun-loving foursome gladly soaked in the Florida sunshine while taking in a Friday afternoon seminar given by winemaker Johan Malan, the owner of Simonsig Estate in Stellenbosch, South Africa. Malan, who was making his Northwest Florida debut, charmed an intimate crowd seated at linen draped tables on a deck overlooking the languid Village Lagoon. Malan poured four wines — Kaapse Vonkel Brut (Simonsig’s South African take on champagne), a chenin blanc, cabernet sauvignon shiraz and a pinotage. Each were perfectly paired with flavorful dishes finished on-site with flair by Chef Christopher Holbook of 30A Signature Catering. 36

Sandestin Wine Festival may have marked 31 this year, but 2017 appeared to be a first for many, including a large contingency of friends and neighbors who caravanned from Baton Rouge, Louisiana. We met Dale and Allison Thornton, Nicole and Travis Telhiard, and Amanda Jean and Thor Fabio who were enjoying their first glasses of wine. Dale held up his stem and proclaimed, “This is the Catalina of wine mixers!” Everyone laughed, but no one disagreed. Nestled under the shady live oaks and Cypress pine on the south side of the Village, Meiomi Wines almost appeared to have built a winery on-site — complete with lighting, seating and, of course, a large wine bar tended by friendly Meiomi wine mavens. No one was more excited to see this than Debbie Crutchfield from Boaz, Alabama. “I think I hit the jackpot!” she exclaimed. “It’s all I buy, it’s all I drink … I’m a diehard and when I heard Meiomi would be here, I said ‘I’m there.’” She and daughter Kacee Sims, who lives in Birmingham, Alabama, were excited to try the new California Rosé. The verdict? “It’s light, bright and very good,” she said. As for Sims, she thought it paired perfectly with her company. “This is amazing, and there is nobody I’d rather be here with.” To that they smiled, toasted each other and took another sip.

You might say that local restaurateur and franchisor Ron Green, owner of The Beach House and founder of Another Broken Egg of America, Inc., literally engineered his way to the table. Before diving into the restaurant business at 43 years old, Green enjoyed a successful career as an engineer, building and dismantling big-ticket, high-level facility design projects for the government. In 1996, he was working as a contractor on a project in Hammond, Louisiana and living in Mandeville, Louisiana. After the project ended, he was at a crossroads in his career. They say that necessity is the mother of invention. Well, Green noticed that there were few breakfast-focused restaurants in rural Mandeville, so he decided to put his engineering prowess to work to build his own. And in doing so he realized his longtime dream: to create a restaurant concept that offered a great experience. Green bought a 1908 Creole cottage, figuring, “Women loved to look at old houses.� After two years,

the Broken Egg Café opened … with a line out the door. Not long afterward, he moved to the Emerald Coast and brought his concept to the beach. He built another and then another, changing the name accordingly. The concept was so successful, that in 2004, he established Another Broken Egg as a franchise concept. Today, the growing brand — headquartered in Grand Boulevard at Sandestin — has 65 locations nationwide with four planned before the end of the year. In April of 2015, he dove into another dream project: owning a beachfront restaurant that delivered a great experience. “I’ve always loved living by the water,” Green says, his dark eyes shining. “When I’m not near it, I get antsy. And I believe most people are at their best when they are near the water.” Today, The Beach House, a noted beachfront restaurant at the resort, is living up to its name, giving locals and visitors alike a beautiful, laidback, family-friendly beachfront hangout. The menu features delicious, unpretentious coastal-comfort dishes, a slew of creative cocktails (such as Shipwrecked and Goin’-to-the-BeachMargarita) and even cute, keepsake coconut “mocktail” cups for kids — not to mention views that are every bit as tantalizing as the menu.

“I’m in this to make people happy,” Green says. “We have created a comeas-you-are casual place, serving good, wholesome, fresh food, located on a resort with an amazing Gulf-front water view.” When designing The Beach House, Green was inspired to embrace the beauty, tranquility … and bounty of the Gulf-front location. “I wanted to capture the colors of our Gulf beaches: turquoise, dark blues and sky blues — even the sandy sea oats,” he says. “And being located on the Gulf, it makes sense that we feature fresh local seafood on the menu, too.” There are other beachfront restaurants on the Emerald Coast, to be sure. But Green is quick to point out one cool difference: “None of them have a pool attached!” He adds, “Here, you can eat, drink, go to the beach, and Sandestin residents may hit the pool, too.” The beach-y design motif is carried throughout the space, with seashells embedded in the concrete bar, handcrafted, whitewashed wood shutters

and beach-themed artwork, sprayed with whimsical sayings, such as, “Seas Every Opportunity,” “Don’t Be Shellfish” and “Bet on a Shore Thing.” The result is an easy, inviting, airy oasis that silently encourages one to linger. Long before The Beach House came to life, this prime beach location was home to Elephant Walk restaurant, a beloved local haunt. The spirit and memories of E-Walk, as local homeowners called it, lives on in The Beach House’s handrails, which are fitted with metal from the original E-Walk wine racks, and the exposed red brick that peeks out from the walls here and there. The casual menu is fitting and just as tasty as the Gulf-front view. Favorites are the Fish Tacos (served grilled, fried or blackened), the Beach House Burger and the Baked Chicken Wings — which Green claims beat out 17 competitors at the resort’s Gumbo Cook-off. The Cilantro and Shrimp Salad offers a light choice, the Grouper & Shrimp Combo is a great “seafood fix” and the Short Rib Roast entrée more than satisfies. With 13,500 square feet showcasing gorgeous Gulf-front views, The Beach House seats 300 for indoor and outdoor dining daily, from 11 a.m., and offers versatile venue options, such as the aptly named Sky Room, which is perfect for private parties, special occasions and catered events. After 21 years in the restaurant business, Green says his gaze is beginning to look toward what lies beyond the horizon. One day, he envisions setting sail on the Emerald waters he has “served up” to so many … but not quite yet. There is plenty of time to engineer that dream, too.

Sunsets may be synonymous with the perfect ending, but the magic of the dining experience at Sunset Bay Café, located within Linkside Conference Center on the bayside of the resort, is all about fueling up with comforting food for the adventure each new day brings. Soft blue hues and sandy tones on walls dotted with vintage oars and aged wood decor create a casual, nautical-inspired atmosphere for this restaurant, the inside of which seats about 150. From Memorial Day through Labor Day, up to 50 guests can sit outside, around the pool deck that overlooks the scenic Choctawhatchee Bay, and enjoy cocktails, live music and a stunning sunset. Owned and operated by 37-yearold restaurateur Bryce Jarvis of Destin, Sunset Bay Café serves up classic American cuisine with a Southern, “Old Florida” coastal twist for breakfast and lunch daily, from 7 a.m. to 2 p.m. With nearly two decades of experience in the hospitality industry, Jarvis is passionate about one rule: Give guests what they want. “If you want a cheeseburger at 7 a.m., or if you want breakfast at 2 o’clock, we’ve got you covered,” he says with a warm smile. the local commercial fishing industry — his father, Gary, has been a local charter boat captain for 40 years and Tyler, one of his two younger brothers, also owns successful seafood restaurants on the Emerald Coast — fresh local seafood harvested straight from the Gulf is a given. “We have wahoo, red snapper, grouper, shrimp, sometimes swordfish — all from the Gulf,” Jarvis says. In developing Sunset Bay Café’s mouthwatering menu, Jarvis got his list down to 130 dishes and used a simple rule to decide what would be served to his guests: “The way we graded the final selections was not is it good for you, or not for you, we said,

‘Is it good?’ And if it wasn’t great, it didn’t make the menu,” he says. “I am in love with the menu,” Jarvis continues. “There’s really nothing on it I don’t like. We’ve got everything from pancakes and waffles to fried or grilled fish sandwiches, as well as fresh salads. My tops are going to be the Hillbilly Benedict, the Chicken & Waffles, Shrimp & Grits and the newly added Blackened Chicken Mac & Cheese.” Jarvis is the type of guy who has never met a stranger. And he’s no stranger to customer service. His first job was working on board a charter boat with his father, and in high school, Jarvis worked in banquets for a local resort and continued to hone his skills and build his career one hands-on job at a time. “I’ve done it all: busing tables, washing dishes, serving food, polishing glasses, picking spinach, shucking corn … anything you can do inside a restaurant, I have probably done it,” he says with a chuckle. It’s a labor of love that has Jarvis bounding out of bed before sunrise to open at 7 a.m. each day. “I genuinely love taking care of people and making them happy,” he says. SANDESTIN.COM

Emerald Coast Blue Marlin Classic

Sandestin Golf and Beach Resort hosted one of the largest sport fishing tournaments on the Gulf Coast June 21–25. Hundreds turned out to see who could bring in the largest blue marlin, tuna and wahoo.

Red, White & Baytowne Families enjoyed a spectacular fourth of July at The Village of Baytowne Wharf. The Village had fun activities for the whole family including face painting, balloon sculpting and live music. They then lit up the sky with a fireworks celebration.
