Another successful Easter Sunday in the books! This year, we honored the holiday in Miami and Brooklyn with a la carte specials in addition to our signature brunch menu. Total sales in Miami increased by 24% ($28,620) and covers by 24% (585) from 2017. By comparison, Brooklyn had a strong first Easter with $28,618 in sales and 583 covers. Buzzfeed mentioned Brooklyn in their
“Where To Brunch Like An NYC Boss This Easter” article, stating: “Celebrate Easter with the whole family at SUGARCANE, the raw bar and grill situated along Dumbo’s historic waterfront.”
MOTHER’S DAY MIAMI | LAS VEGAS | BROOKLYN
SUGARCANE raw bar grill owned Mother’s Day brunch at all locations this year. While inclement weather may have interrupted seating outdoors in Miami and Brooklyn, the holiday yielded strong numbers in sales, covers and menu specials. Sales of brunch specials in Miami increased by 16% from 2017. Sales in Las Vegas increased by almost 46% and covers increased by 85%! With support from our PR agency, SUGARCANE raw bar grill received mentions in listicles recommending our location in Brooklyn to readers. NBC4 New York included us in their Mother’s Day listicle: “Enjoy live jazz by NYC brass band, the Hudson Horns, while you indulge on seasonal brunch specials.” They also included our kid’s menu, saying: “For the little ones, a brand new kids menu is also available.” Our Mother’s Day brunch celebration was also promoted via our website and social media (both organic and promoted), garnering very high engagement rates. FATHER’S DAY MIAMI | LAS VEGAS | BROOKLYN
Dads took their turn as well this year, with Miami, Las Vegas and Brooklyn offering a la carte specials to celebrate Father’s Day. A special focus on our open fire grill paid homage to the “traditional” Father’s Day barbecue! Miami offered a gochujang lamb rack with housemade cucumber kimchi; Las Vegas featured “pork can can” with summer peaches; Brooklyn served dongbei-style lamb ribs with toasted cumin, szechuan pepper and minted tabouleh. We promoted our offerings on social media, giving thanks to dads everywhere!
LGBTQ PRIDE BROOKLYN
To honor LGBTQ Pride Month in June, SUGARCANE raw bar grill Brooklyn offered a special nigiri plate by Executive Sushi Chef Koji Kagawa. The special was offered on New York City’s LGBTQ Pride Day — Sunday, June 24. The nigiri offerings were laid out on top of the rainbow flag underneath a glass plate, and each color pertaining to a different type of fish or vegetable. This dish received extensive media attention and social media buzz. NBC4 New York included it in their article: “13 Curious and Creative Celebrations of Pride Month Around the Tri-State”.
Fun fact: The dish was sold for $14 — a reference to the 14th Amendment, which guarantees everyone the right to “life, liberty and the pursuit of happiness” and was referenced in the Supreme Court decision legalizing same-sex marriage in 2015.

Events IRON CHEF GAUNTLET PREMIERE WATCH PARTY MIAMI
APRIL Chef Partner Timon Balloo returned to battle in the Iron Chef kitchen. This time, he went head-to-head against the country’s top culinary talent on Season two of Iron Chef Gauntlet. We kicked it off by hosting a watch party where it all began — at SUGARCANE raw bar grill in Miami! Chef Timon was joined by his family, local fans and friends, including managing partner Matt Johnson. Chef Timon went on to compete for five weeks on the show — and we couldn’t be more proud of our own ‘Iron Chef ’ contender!

APRIL SUGARCANE raw bar grill returned to South Florida’s Taste of the Nation for No Kid Hungry. For the past year, Chef Timon has been working with the organization as the Chef Chair for the South Florida branch. Attendees were treated to our tuna tartare — one of our specialties from our raw bar. 100% of proceeds from the event benefit Share Our Strength’s mission to fight and end childhood hunger. This year, over $189,000 was raised through local event proceeds and national partnerships. That’s over 1.8 million meals for kids!
CONDE NAST CAFETERIA WITH EXECUTIVE CHEF DAVID SEARS NEW YORK CITY

Executive Chef David Sears prepared, tasting portions of our cauliflower tahini for Condé Nast at their headquarters at One World Trade Center. Our own Marketing and PR Manager Marissa Finn was spotted rolling roti alongside Chef David!
VEGAS UNCORK’D BY BON APPETIT LAS VEGAS
MAY Chef Partner Timon Balloo was invited to return to the top culinary event in Sin City: Vegas Uncork’d by Bon Appetit. Chef Timon attended several events, including the kickoff party at The Venetian’s Rosina where he and Chef Buddy “The Cake Boss” Velastro welcomed members of the press from all over the world. Chef Timon and the team at SUGARCANE raw bar grill Las Vegas hosted an interactive grilling event, where we live-streamed the kitchen demonstration onto screens around the main dining room for guests to get an up-close and personal look at Chef Timon’s grilling hacks and techniques. The menu highlighted Chef Timon’s open fire grill offerings including skirt steak, beef short ribs, sweet corn and chicken wings.

Dining out for a cause! SUGARCANE raw bar grill participated in Las Vegas Restaurant Week again this year, supporting Three Square Food Bank in its fight to end hunger in Southern Nevada by donating a portion of the proceeds from every menu sold. The official Restaurant Week began June 18 and ended June 29. But along with other restaurants in The Venetian, SUGARCANE raw bar grill extended the promotion an additional week to further support the cause, offering special a familystyle dinner menu at $40 per person through July 6. Over 150 dinner menus were sold during this period!

To cater to the many families with children in the Dumbo neighborhood, our chefs curated a mini-menu for our youngest guests, featuring kid-friendly foodie jokes and dishes that put a SUGARCANE raw bar grill spin on the traditional kid’s menu offerings. Kids can choose from offerings such as delicious sliders (“one for each hand!”) and “samurai fuel” sushi bites by Chef Koji. Since launching in May, the menu has brought in over $12,000 in revenue and was featured on TravelChannel.com!

Get ready to RUM-ble … from Miami to Las Vegas to Brooklyn, we are proud to offer some of the most diverse premium rum selections in each city. At our home in Miami, the bar features a collection of over 80 rums from different regions, including the Caribbean, South America, Central America and North America. In May, we began sharing the rum love by making it easy for all our guests to enjoy some of the best selections on our list by offering tasting flights. We’re currently offering three rum flight tastings — each representing a different region or country: Puerto Rico (featuring Don Q), the Caribbean (featuring Brugal, Zacapa and Mount Gay) and Venezuela (featuring a variety of Diplomático offerings).

Earlier this year, the marketing team observed that Miami’s weekday lunch covers were beginning to trend downwards compared to last year. We quickly took action to work on an ongoing promoted social media campaign featuring our lunch offerings. The posts were strategically targeted to those who live or work in the surrounding neighborhoods. While the campaign was live, we saw an increase in weekday lunch covers – throughout the quarter, we saw an average 16% increase in lunch covers compared to the same period last year.

INFLUENCER DINNERS BROOKLYN
In June, we hosted top New York-based social media influencers for dinners on our outdoor patio. Guests were treated to signature cocktails, favorites from each of the three kitchens and of course – the breathtaking view of the Brooklyn Bridge. In addition to the extensive social buzz following these dinners, we also saw a 400% increase (vs. previous month) in traffic to our website from social media channels. We will be following up on the success of these two dinners with a final event for top Asian influencers in mid-July, as part of our ongoing efforts to tap into the Chinese tourism market in Brooklyn.
