SUGARCANE raw bar grill makes a splash on the Brooklyn waterfront On Monday, September 18, SUGARCANE raw bar grill opened its doors to the public. The restaurant is located in Empire Stores, the iconic 150-year-old warehouse set between the Brooklyn and Manhattan Bridges and steps away from Jane’s Carousel. Since opening, patrons and press alike have raved about Brooklyn’s newest hot spot. The restaurant has been a mainstay on Eater’s famed Heatmaps including “The Hottest Restaurants in Brooklyn,” featured as one of the “Hottest Spots to Dine in New York” by Guest of a Guest, and “Best New Restaurants” by Time Out New York.

ENING CELEBR ATION Spotlight on THE GR AND OP In early November, the SUGARCANE raw bar grill team came together for an unforgettable Grand Opening Party to celebrate the third location of the beloved brand. From the scrumptious bites to our signature cocktail samplings to our celebrity DJs and live entertainment, the 300+ guests left the evening imbued with the SUGARCANE raw bar grill celebratory spirit. MIAMI Starting in the spring, SUGARCANE raw bar grill Miami

launched bottomless mojitos and sangria at $25 per person every Saturday during brunch hours. The festive brunch also features live entertainment by “Los Clasicos de Cuba.” The brunch has grown in popularity each weekend, garnering the attention of local media and influencers. In late June, we hosted our first “Bottoms Up Brunch” salsa dancing competition. We awarded the couple with the best moves on the dance f loor “Brunch for Two,” and live streamed the event on SUGARCANE raw bar grill’s Instagram Stories. By the end of the year, Miami’s Saturday brunch covers increased by 32% compared to the same period the previous year with a sales increase of 27%! VEGAS Meanwhile on the West Coast, because every day is a

weekend in Las Vegas… SUGARCANE raw bar grill began offering brunch specials daily, serving up brunch and lunch favorites in addition to bottomless mimosas at $25 per person. Weekday brunch covers increased by a whopping 58%, with weekday brunch sales increasing by 23% compared to when only lunch was offered during the weekdays. BROOKLYN Our Dumbo brunch launched in November, and in

true SUGARCANE raw bar grill style, we stepped it up a notch with live entertainment! New York’s beloved brass band Hudson Horns performs every Sunday afternoon, creating an atmosphere of everyday celebration to complement the crave-worthy SUGARCANE raw bar grill brunch menu.

VEGAS GETS A FACELIFT! In December, SUGARCANE raw bar grill in Las Vegas revealed a stunning makeover of the main entrance. Inspired by our iconic main gate in Miami, a new and improved iron façade now graces the halls of The Venetian. The fresh look brings the open, inviting vibe of SUGARCANE raw bar grill to the next level, embodying the “kick back, eat well, stay awhile” mantra.

LATE-NIGHT HAPPY HOUR IN MIAMI FEATURING TUNES In November, SUGARCANE raw bar grill in Miami added to its late-night happy hour experience on Friday nights with a DJ mixing LIVE every Friday night from 10pm to 1am.

LAS VEGAS RESTAURANT WEEK Dining out for a cause! SUGARCANE raw bar grill participated in Las Vegas Restaurant Week from June 19 to July 7, supporting Three Square Food Bank in its fight to end hunger in Southern Nevada. SUGARCANE raw bar grill offered special familystyle brunch ($20), lunch ($20) and dinner ($40) menus, featuring our signature shareable plates. We donated $4 per menu sold to Three Square Food Bank, with a grand total of $1,140 raised for this worthy cause.

MIAMI SPICE IS BACK! When August rolls around, so does Miami Spice at SUGARCANE raw bar grill! Guests enjoyed special three-course lunch ($23) and dinner ($39) menus from August 1 to October 31, extended this year due to Hurricane Irma. For 2017, Chef Timon Balloo added an extra course to the dinner menu, offering guests a culinary bonus! We saw a 63% increase of year-over-year Miami Spice sales, with a 76% increase in covers taking advantage of this special menu.

FEB SUGARCANE raw bar grill attended several South Beach Wine & Food Festival events across the city. This year, more than 65,000 attendees were introduced to SUGARCANE raw bar grill’s global flavors at the event “Paella and Tapas by the Pool.”


MARCH SUGARCANE raw bar grill attended Miami’s “Taste of Tennis,” an event held to kick off the Miami Open, in which internationally ranked tennis players are paired with chefs to help prepare their signature bites. This year, tennis player Robert Lindstedt assisted SUGARCANE raw bar grill’s Sous Chef Michelle Saavedra while preparing our maguro tuna tartare for guests.


APRIL SUGARCANE raw bar grill Las Vegas participated for the first time at the Pebble Beach Food and Wine Festival in Monterey, CA, where Chef Timon — alongside Las Vegas Executive Chef Ryan Nuqui — treated attendees to several signature dishes including our Korean style beef short ribs.


APRIL SUGARCANE raw bar grill Las Vegas hosted a three-kitchen tasting for Bon Appetit’s Vegas Uncork’d, the city’s premier culinary and wine event. Chef Timon treated guests to dishes from each of our three kitchens. SUGARCANE raw bar grill Las Vegas also participated The Grand Tasting at Caesar’s Palace, the festival’s main event. APRIL-MAY Chef Timon was recently named Chef Chair of No Kid Hungry, an honor bestowed on him after several years of committed work with this charitable organization that helps fight childhood hunger across America. In April, Taste of the Nation for No Kid Hungry was held in New York City and SUGARCANE raw bar grill was well represented: After enjoying Chef Timon’s take on tuna tartare, guests were excited to know they’d be enjoying it again soon at SUGARCANE raw bar grill Brooklyn! At the South Florida iteration of the event in May, Chef Timon shared Local Snapper Nam Prik with farm greens and herbs.

LAS VEGAS EPICUREAN AFFAIR MAY Set in the lush poolside paradise of The Palazzo, the Las Vegas Epicurean Affair offers guests a night of “divine indulgence” – and this year, Chef Timon hosted the evening as the Celebrity Chef face of the event! JAMES BEARD HOUSE DINNER MAY Chef Timon hosted several VIP guests to a sold-out dinner at the James Beard House in New York. Guests enjoyed Chef Timon’s global cuisine and shared plates concept including North African Mezze, Trinidad Fish Stew and “K-Town BBQ” courses.


JUNE Chef Timon also returned to The Great Chefs Event in Philadelphia. The event raised more than $500,000 to benefit Alex’s Lemonade Stand Foundation (ALSF) and Vetri Community Partnership. More than 40 top chefs were present this year.

ATLANTA FOOD & WINE FESTIVAL JUNE Chef Timon returned to the Atlanta Food & Wine Festival for the “Destination Delicious” event, where he delighted guests with Thai alligator larb with peanuts, chili and lime.

TASTE TALKS: HOW BURNT IS BURNT? & AN ODE TO THE FAMILY MEAL SEPT Chef Timon was invited to speak in front of an engaged foodie crowd at the annual Taste Talks Brooklyn – the borough’s leading culinary event. While demonstrating various techniques live, Chef Timon discussed the use of a charred flavor to elevate a dish. Chef Timon also prepared an intimate family dinner for 100 guests in Williamsburg among other chefs, including longtime pal Chef Fernando Navas from Balvanera. AUG Taste of Tennis Miami has long been a favorite event of the SUGARCANE raw bar grill team. This August, Chef Timon joined the event for their New York iteration, which took place hand in hand with the U.S. Open. Guests got a chance to taste Chef Timon’s harissa marinated carrots with yogurt and nuts as a preview of the SUGARCANE raw bar grill Brooklyn opening! Press: The Daily Meal, Huffington Post




NOV The Brooklyn team represented SUGARCANE raw bar grill at the 28th annual St. Jude Wall Street Taste of New York, one of the charity’s biggest events of the year. Guests were treated to a sampling of our crunchy tuna roll.

OCT SUGARCANE raw bar grill made its NYCWFF debut at “East Coast Eats: Maine to Miami,” hosted by Chef Josh Capon. Guests enjoyed a sampling of the popular Hokkaido scallop crudo, and with the East Coast theme of the event, many fans of the Miami location in attendance were thrilled to learn of the recent Brooklyn opening!

DEC Chef Timon returned to the Palm Beach Food & Wine Festival, where he was invited to prepare hors d’oeuvres and the main course at a special dinner event — “Intro to Avocado Grill re: A Rustic Root.”

2017 best in instagram • 2017 saw the rapid expansion of the use of Instagram Stories, and SUGARCANE raw bar grill has been at the forefront of these trends, using the new 24-hour channel to promote same-day specials, give followers a behind-the-scenes peek and engage even more directly with our followers. • In July, we hit the 10,000 follower mark on Instagram. This gave us access to the “Swipe Up” feature, allowing us to link our Instagram Stories to an external URL such as a reservations link, events page or delivery menu.

• On the back end: We worked with digital marketing experts to create healthier databases with a more strategic infrastructure, allowing us to grow our lists in a smarter way and reach our guests with the news and updates that are most relevant to them. We implemented a new, user-friendly sign-up form on our website, allowing us to collect basic data on our guests than ever before. • On the design side: We created a new HTML-optimized email template, ensuring visibility and readability of our email blasts across desktop and mobile. With each new e-blast, we continue to implement new best practices and design elements to make all our blasts as effective as possible.


• Working with key software providers in the areas of ADA compliancy, local search and reputation management, we are staying current on all the necessary updates and enhancements for a searchable and accessible website. • Stay tuned for a website facelift in Q1 2018! We will be making our website even more user-friendly, with a special focus on ensuring cross-promotion of our three locations.

The episode aired on Food Network on December 27 and a watch party was hosted in Miami with appearances by Chef, his family, friends and longtime fans. Although Chef Timon did not win, he put up a great fight against Iron Chef Alex Guarnaschelli. You’re a winner in our book, Chef! We are proud of you!

SUGARCANE raw bar grill attracts celebrities from all corners of culture! Since opening in Brooklyn, several celebrities have dined with us, including: Actor Tim Robbins, Socialite Olivia Palermo, Hip Hop Artist & Actor Mos Def, Actor John Lithgow and Celebrity Chef Emeril Lagase.

In Miami, Latin Recording Artist Sebastian Yatra celebrated his birthday at SUGARCANE raw bar grill; we also hosted the likes of Miami Heat Basketball Player Justise Winslow and Latin Recording Artist Prince Royce.

BY SUGARCANE RAW BAR GRILL Under the leadership of Chef Timon, the team at SUGARCANE raw bar grill in Miami kicked off a bespoke charitable initiative called Canvas, designed to spread awareness for and help fight childhood hunger in America. Every month, Chef Timon invited a guest chef to create a unique, inspiring dish using a bowl as his or her blank “canvas.” Proceeds from every order were donated to No Kid Hungry, which connects kids in need with nutritious food and teaches their families how to cook healthy, affordable meals. #VEGASSTRONG Tragedy struck the City of Las Vegas in October and brought SBM and OBM together. To show our support for the city and the families of the victims, SUSHISAMBA and SUGARCANE raw bar grill offered a specialty cocktail called “Vegas Strong” from October 6 to 8. The cocktail sold at $10 and both restaurants donated the full $10 of every purchase directly to the Las Vegas Victims’ Fund. This marked the first time that the two companies joined together in this way.
