Being Active Can Improve Our Mental and Physical Health Over the past few years a number of research papers and articles have highlighted the health benefits of being more physically active. Whether it’s walking, jogging, cycling or carrying shopping back from the supermarket, being active can have many positive effects. It is estimated at least twothirds of people in Scotland are not active enough, which can have serious consequences for our health and wellbeing. The World Health Federation reported that physical inactivity doubles the chances of developing heart disease and increases the risk of diabetes and high blood pressure. The good news is that active people live longer lives and in addition to the physical health benefits, being active can improve our mood and reduce the risk of depression. Physical exercise is recommended as a treatment option for people with mild depression, which affects as many as one in 10 British adults at some point during our lives. As we get older it may take longer for us to recover from exercise. This starts to put people off, as they get injured or get tired too soon or feel sore too early.

People then decide to do less and less and stop exercising altogether. However, it is never too late to start. If you have not taken regular exercise for a while, you will need to start gently. Try walking for a few minutes 2-3 times a week. Then over a few months, build up your routine until you can exercise for 30 minutes, 2-3 times a week. If you have concerns you may wish to check first with your doctor before you begin. Walking is a great way to become more active and there are a number of walking groups in East Lothian including groups run by CHANGES Community Health Project in Musselburgh, Prestonpans and Haddington. Why not think of ways to be more active that you enjoy and get started – as it’s a win, win situation for your health! We have all heard of the 1914 Christmas truce during the First World War. Stories of British and German soldiers taking part in hastily organised football games and the trading of gifts. But did you know a local man was one of those who witnessed it? Lance-sergeant William Yourston of Musselburgh was in his trench staring across the frost of no-man’s-land when an incredible story began to unfold. Yourston then sent a postcard home with details of what had happened. How it got past the censors is unknown, although it could be that Yourston actually was one of the censors and so passed his own le�er. His wife then passed the postcard to the Musselburgh News which reprinted it in full. Unfortunately Yourston died only four months later. Here is his le�er: My Xmas here was fairly good under the conditions. The weather was very frosty. A very funny thing happened here on Xmas eve. The Germans, who are only 100 yards in front of our trenches, started singing, and our boys

shouted hurrah after each verse. This went on for a long time. A length one of the Germans shouted in fairly good English – ‘Have you any rum over there?’

One of our fellows shouted back – ‘Yes.’ Others shouted – ‘Have you any bully beef?’ ‘Can you speak German?’ and all sorts of questions. At length one of

the Germans shouted – ‘Come over,’ and by this time it was Xmas morning,

misty, but very frosty, and from where I was I could hear distinctly what was said. Each side then shouted in turn – ‘A merry Xmas to you.’ One of our

fellows shouted ‘Come half way across,’ and two Germans left their trenches and two of our fellows went out to meet them. Greetings were exchanged between the firing lines, and not a shot was fired from either side. Both

exchanged cigarettes for cigars etc and each returned to their own trenches.

Shouting continued all morning. The Germans said they were not going to fire for three days. All was quiet up till 3pm on Xmas afternoon, when around

20 Germans left their trenches and came out to greet our fellows on the left. Our fellows went across the intervening ground and met them. Greetings

were exchanged and souvenirs given. I was on the right flank trench, and

when I saw what happened, the platoon sergeant and I went down for the curio of the thing, and the following conversation took place. I was greeted with outstretched hands, and the Germans said in broken English, ‘English comrade.’ I then said ‘War finish?’ He replied, ‘Oh no! 3 days.’ I said ‘No, no, finish. I pack up and go England; you pack up and go Germany,’ but he replied as before ‘3 days.’ While this was going on the dead body of a

Frenchman was observed lying close by. Shovels were sent for and Seaforths

and Germans took turn about of digging the grave. When all was ready two Seaforths took the head and two Germans the feet and the Frenchman was laid to his last resting place. When the grave had been filled in two candles were lighted and placed on top with the deceased’s cap, then a German

Red Cross man conducted a short service, while both sides stood with heads uncovered. The scene was one I can never forget. Afterwards both sides

returned to their trenches. This lasted for roughly twenty minutes, and as they said no firing took place for three days. The Germans I saw were of

the Saxon type, and were very poor. They were, I think, what the Germans call their 3rd Reserve. Several wore glasses and all appeared to be fed up, but they were fairly well clothed. They said the war would soon be over,

and they also said they were going to win. What a hope. Of course, we were

careful to let them believe that. They dreaded our artillery, and I think from what they said our artillery must have done some good work. Our artillery were very busy on the 26th, shelled them like fury the whole day, and

at time of writing they are giving them a hot time of it. We just received

Princess Mary’s Xmas gift – a very nice box indeed, so I am trying to get it sent home.

POACHED CHICKEN, BRAISED VEGETABLES & HERB DUMPLINGS Serves 4 4 x skinless chicken breasts 2 x pints of fresh chicken stock 4 x carrots 3 x white turnips 3 x sticks of celery bunch of flat leaf parsley 2 x sprigs of thyme For dumplings: 150g x beef suet 150g x of sifted self raising flour salt & pepper water to bind Preheated oven to 200 centigrade First prepare all the vegetables by peeling and chopping into evenly diced pieces about the size of 10p. Make the dumplings. Place the suet in a bowl add add the flour. Using you hands, mixed the suet and flour well and season with a pinch of salt and freshly ground pepper. Add some chopped parslpy and thyme leaves. Make a well in the centre of the mixture and add water a bit at a time, mix with your hands until you get a firm dough that comes away cleanly from the bowl. Turn out onto a clean board and sprinkle with flour and portion into equal size balls about the size of 2p. Put 1 pint of chicken stock in a baking tray and put the rolled dumplings into the

liquid, cover with tinfoil and bake for 25-30mins, then allow to cool slightly. While the dumplings are cooking gently heat the remaining chicken stock and braise the vegetables slowly for 30 mins or until the soft and tender. Add the chicken breasts into the vegetables and stock and slowly poach for 12mins being careful not to allow the stock to boil rapidly. Divide the vegetables and dumplings between 4 bowls. Slice the chicken into 3 pieces and add to the bowls. Pour over the remaining poaching stock. Finish with parsley. Enjoy!

Expert care and support for your pet’s health Since Links Vet Group opened its new hospital complex at Alderston in Haddington 4 years ago it has been providing East Lothian with a 24 hour, 7 day a week, comprehensive diagnostic and emergency service right in the heart of the county. At Links, the most important issue is the health and wellbeing of the patient and great care is taken to provide every facility required to deliver first class treatment. There is an emphasis on preventative healthcare, and Links provides many free clinics into which patients can be enrolled. Some provide one off assessments, such as Dental Assessments, whilst others provide monthly appointments to monitor progress, such as the Weight Clinics. The focus on preventative healthcare starts young, with puppies being offered free puppy party classes, with courses extending over several weeks. These classes run in the evenings, and are free to any puppies who have been vaccinated. The Haddington site also houses Scotland’s first dedicated veterinary rehabilitation centre, providing specialist care and treatment for dogs and cats suffering from mobility issues. Many different medical and physical issues can affect mobility. Weight problems, arthritis, spinal and disc related disease, trauma and limb surgery, and even just plain wear and tear or old age can all result in lameness, loss of enthusiasm for exercise, pain, muscle and posture change. The effects of these can happen in an instant, or can creep up gradually, and all can have very negative effects on the quality of life enjoyed by the sufferer. This ‘department’ of Links Vet Group, the Lothian Canine Rehabilitation Centre (LCRC), has attracted clients both directly, and via their own vets, from all over Scotland, and offers a fantastic facility to affected pets in a safe, caring, knowledgeable and cost effective environment. It is run by Dr Tom Brown, one of the partners of Links Vet Group, who is supported by a team of Chartered Veterinary Physiotherapists and dedicated support staff. The aim of the Centre is to give patients the best care with the least discomfort and the fastest return to fitness- often with minimal or no use of drugs. Treatments include hydrotherapy with a water treadmill and physiotherapy, including massage, ultrasound and electrical muscle stimulation. Weight management programmes are popular as weight problems often impact on mobility, as are personal fitness packages where animals recovering from joint or bone surgery are individually nurtured back to full fitness for life, something that rarely happens without the support of teams such as the LCRC. Rhubarb Panna cotta 200 ml double cream 200 ml full fat milk 120g caster sugar 2x 2g gelatine leaves (soaked in cold water) 1 ½ Vanilla pod (Seeds scraped out)

Rhubarb Puree 2 large sticks of rhubarb (washed) Knob of butter 2 tbsp sugar

Poached Rhubarb 200g Rhubarb (washed) ½ Vanilla pod cut in half 100g caster sugar 500 ml water Optional Good quality vanilla ice cream

Method Heat the milk, cream, sugar and the scraped vanilla pods then bring to a fast simmer, remove from the heat and set aside for ten minutes. While the mixture is cooling squeeze any water from the gelatine then whisk into your panna cotta mix. Pour the mix into your chosen moulds, a tea cup works great or if you have them a dariole mould. Leave these for a good hour in the fridge uncovered. The rest is easy, for the puree find a good heavy based pan. Add the sliced rhubarb and sugar and leave on a gentle heat. The juices from the rhubarb will stop the sugar from caramelising but you will need to mix now and again. Simmer for ten minutes and then chill in fridge. Now that your panna cotta and rhubarb mix have chilled its time to pipe the puree into the panna cotta. just a small squeeze of puree into the middle of each will do. The rest of the puree mix can be added to ice cream for an easy rhubarb ripple ice cream. For the poached rhubarb cut the rhubarb sticks into 2 inch batons. Heat the water, sugar and vanilla pod together bring to the boil then take off the heat and add your rhubarb. This guarantees that your rhubarb won't become too soft because you're only poaching it. I garnish this with some of the syrup from the rhubarb batons and some baby mint leaves it’s a great looking dessert and a dream for rhubarb lovers. Once the panna cottas have chilled for a good 3-4 hours they should look like creamy jellies although they will be slightly more fragile. Pop the moulds under a warm running tap, a gentle shake and they should pop out no problem.

Toffee Apples Ingredients 6 Cox apples 6 small wooden ice lolly sticks 225g/8oz granulated sugar 110ml/4 oz water 30g/1oz butter 2 tbsp golden syrup

Preparation method Push the wooden sticks halfway into the apples at the stalk end. Dissolve the sugar and water in a thick-bottomed pan over a gentle heat. Add the butter and syrup to the mixture and bring to the boil. Continue to boil, without stirring, until the toee reaches 140C/275F (use a sugar thermometer to measure this). Remove the pan from the heat. Carefully dip each apple into the toee, making sure each apple is well coated, and set aside to harden on a baking try lined with non-stick parchment.

Make yourself warmer As energy bills rise, do you feel nervous about turning up the thermostat at home? Well, take heart, because there are lots of things you can do to get a handle on the heating this winter - so read on and look after yourself. Wear several thin layers, rather than one thick layer. This is because they trap warm air close to the body Go for clothes made from wool, cotton or fleecy fabrics, if possible. Draw your curtains, as soon as it gets dark to stop the heat escaping and the draughts coming in. Keep any windows and internal doors closed when it’s cold – this will keep heat inside, where you most need it. A lot of heat is lost through the head and neck, so if you’re chilly indoors, try wearing a hat and scarf.

Your body keeps warm by burning food you've eaten, so make sure you have regular hot meals that contain carbs, such as potatoes, pasta, bread and rice. Try porridge with hot milk for breakfast and soups and stews for lunch and dinner. If you’re sitting down, a shawl or blanket will provide extra warmth. You should also try to keep your feet up, because air is cooler at ground level. Wear warm clothes in bed. When it’s really cold, wear thermal underwear, bed socks and even a hat.

Some longer-term things you can do to help ward off the winter chill Have your heating system serviced and chimney swept. Check your water stopcock is working properly. Get a keyhole cover – it should only cost a couple of pounds and will help keep the draughts out in cold weather. Fit thermal linings to your curtains if you can – this will also help to keep the heat in.
