An exquisite coffee maker with great historical lineage that puts back ‘pomp and ceremony’ into coffee making. The quest to create a twenty-first century Royal classic led to the courts of Franz Joseph, Emperor of Austria, King of Hungary, and his now legendary 1850s royal banquets. Tale is told of an elegant eight-course dinner at Schloss ‘Schönbrunn’, hub of the royal social life. Franz-Joseph served his guests an after dinner coffee with a new and very exquisite machine, ‘the balancing syphon coffee maker’. In 1849, the balancing syphon came to England where Apoleini Preterre sent greetings to her most Excellent Majesty Queen Victoria in the hope to acquire a patent.

Seldom has one invention captured the imagination of so many. The origins of a Royal brought together the world’s finest glassmakers, mathematicians, goldsmiths and engineers to impress on the aristocracy and provide a daring proof of concept.

A step-by-step

BREW PROCESS

— which remain in the glass carafe by way of a gold filter. As a Royal delicately balances its temperatures, the water never physically ‘boils’ when it comes in contact with the grounds.

As boiling water moves through the handcrafted pipet, it has already cooled the critical few degrees required before reaching the grounds. The result: coffee and water meet at the perfect temperature to extract the delicate oils and flavours, but not so hot as to impart a ‘scorched’ taste. The elegance in how a Royal accomplishes this must be noted in how the coffee is brewed by extended contact with water, maintained at precisely the correct brewing temperature, after which the coffee is immediately separated from the bitter grounds

Evolved through countless sketches and hours of model clay forming, each Royal has been meticulously conceived by French artists, sculptors, metallurgists and engineers. Only the finest materials have been considered in a Royal’s design and construction.

Brass parts such as the gargoyle, counter weight, oak leaves and finials are created by employing age-old methods of casting using the lost-wax method known as ‘cire perdue’, where more than 5 hours are spent on the spigot’s unique ‘chasing dolphins’ closing system alone.

BACCARAT — A PARTNER FOR PERFECTION

Each Royal is accompanied by two exquisite pieces, both handmade in France exclusively for Royal — the crystal carafe and burner vase. Since 1764, Baccarat has become internationally renowned for its traditional methods, fastidious detailing and innovative approach to design. That’s why, when contemplating the design of a Royal, we considered nothing less.

After casting is complete, the artist works on each individual detail by hand. Elaborate chiseling, brazing and polishing is involved to meet the exacting standards of our French craftsmen, where each part — no matter how small — is treated with the utmost care for Royal’s fine level of detailing.

Only through such laborious, manual work are our craftsmen able to achieve a jewelry-class finish — where it is inspected, quality-checked and perfected across a series of appraisals to meet our exacting high standards. individually held and worked upon by hand during each stage of the finishing process. Additional time and care is devoted to these critical stages, with the final result evoking a bespoke finish of lasting beauty.

For the following recipes slightly reduce the appropriate amount of water when adding liqueurs or syrups to the coffee grounds. This prevents the brewed coffee from overfilling the kettle. BLACK FOREST MOCHA
