Recipe Fresh Tuna Steak & Duck Egg Nicoise Salad As salad season descends upon us here is a great salad for the whole family to enjoy. Not only is this a healthy option it's quite a show stopper for a barbeque or summer soiree.

For the vinaigrette

Method

1 and 1/2 tbs white wine vinegar 6 tbs virgin olive oil 1 tsp sugar 1 tsp honey 1/2 tsp Dijon mustard salt, pepper

A Nicoise Salad should be a symmetrically and delicately arranged dish so be creative and bring out your artistic side

Gently whisk together for a minute or so, set aside in fridge

Quarter the tomatoes and half the olives and continue the theme of presentation

For the salad 2 or 3 Fresh Tuna Steaks (2.5cm thick) 4 Little Gem Lettuces 1 Red Onion 12 pitted black olives 1 Green pepper 3 vine ripened tomatoes 3 Duck Eggs 6 Anchovy Fillets Sprig of Parsley Squeeze of Lemon Juice Parmesan flakes

Prepare gem lettuce and arrange in a large round serving dish, slice pepper in thin slices and arrange in the same fashion

In the centre of the dish place the anchovies in a star shape Continue the process with the red onion and olives When duck eggs are boiled, cool and peel. Lay them out equally around the dish showing the yolk to the outside of the dish Place the tuna steaks in a med hot griddle pan or similar, and cook for 5 minutes each side (try not to turn the steaks until the 5 minutes Once the tuna has had 5 minutes each side set aside and cool. They should look brown on the outside and pink and juicy in the middle Once cooled, lay steaks around the dish and finish with parsley and lemon Finally add parmesan flakes and drizzle over the vinaigrette and serve.

Laura Taylor-Stephenson has opened a new bespoke skincare, nail and beauty salon located in the Upper Castle Street conservation area of Hinckley. Laura has gained over 12 years’ experience in all aspects of the skincare, nail and beauty profession and for the last 9 years has run successful businesses in Hinckley and Ibstock. She feels that the time is right for her to expand the business and having searched for her ideal location she acquired a unique building in Upper Castle Street that had suffered severe fire damage. LONDON MARATHON A RUNAWAY SUCCESS Our amazing London Marathon runners have raised tens of thousands of pounds from their wonderful efforts this year. Some 29 runners took part in the nation’s favourite fundraising challenge for us on Sunday, including Eastenders’ star Adam Woodyatt and his son Sam who needed the services of the Air Ambulance last year. All of them were raising money for our two local air ambulances or the national Children’s Air Ambulance. The money is still coming in but more than £34,000 has been collected so far – and the final total is expected to exceed this. The team included former patients and families of people who had been helped by our services as well as other supporters. Soap star Adam – who was running with his son Sam, has raised about £4,470, well exceeding his target. One of our runners even completed the race in a truly impressive three hours and 16 minutes. Events manager Laura Tapp said: “A huge thank you to all the runners and the volunteers who came along and helped out cheering them on and motivating them through those last gruelling couple of miles. London Marathon is always such an inspiring and emotional day, it’s amazing to see people putting their bodies through one of the toughest challenges for an amazing and important #ReasonToRun!” More than 40,000 people took part in this year’s marathon. The Curious Case of the Wistow Maze To mark the 130th anniversary of the first Sherlock Holmes novel, the award winning Wistow Maze has been designed in the shape of Sherlock himself, complete with deerstalker hat and pipe.

Diana continues: “The challenge is to find 12 quiz boards hidden amongst the paths of the giant maze. Each one will have a clue to help identify the culprit and solve the curious case of the Wistow Maze!”

“First conceived in 1887 by Sir Arthur Conan Doyle, Sherlock Holmes has fascinated millions of adults and children alike with his extraordinary brain, solving the most inexplicable of crimes over the decades. Now visitors to the Wistow Maze can put their own detective skills to the test, finding their way both through the maze and collecting different clues along the way,” explains Diana Brooks, owner of Wistow Maze.

An excellent family day out, visitors can not only pit their wits against the maze but can also take part in a variety of mini mazes and games in the Activity Funyard, which includes a space hopper track, hoopla and a football shooting game.

Opening this year on Wednesday 19th July, Leicestershire’s famous Wistow Maze features three miles of intricate pathways carved through eight acres of living corn, with high level bridges and towers giving fabulous panoramic views.

Across the road is the Wistow Rural Centre with its cafe, garden centre, art gallery, model village and numerous shops, ensuring there really is something to satisfy all ages. The Wistow Maze is a winner of Leicestershire’s “Best Visitor Attraction” and attracts over 20,000 visitors each year.

Welcome to our June 2017 Newsletter We hope you are enjoying the sunshine! This month means the election, and whichever way it goes housing is always an issue where politicians like to “dabble”. The housing targets have never been hit, not even in the 1930’s building boom, and these days they struggle because the local authorities aren’t building council houses alongside the private sector. It’s good news however that new infrastructure does assist with housing demand. We’re often asked by investors if now is a good time to buy, and we answer that it’s always a good time depending on how long you wish to keep the property for. Remember an investment property is a long-term plan, but not without it’s costs. It will need to be maintained to a good standard which hopefully the rental income will cover. The equity will grow as the debt is paid down, and the length of ownership remains long term. As you can see from below, if you purchased 20 years ago, then the equity gained is worthwhile. Even with the worst recession since the 1930’s in the middle, the house prices have risen over the longer term. Selling too soon, either through impatience or changes of circumstance could be costly with the benefit from the longer-term strategy lost.

We’re always looking for the latest unique selling point, and we’re introducing “Property File” to all our new Sellers, and eventually Landlords. It’s a web portal powered through our software and Sellers can see the progress of their sales listing with viewing feedback shown alongside real-time Rightmove stats. Landlords will be able to access their property information and download statements, view maintenance updates and feedback on viewings. It’s a good tool and will be rolled out to all our customers during June.

Robinson Crusoe and the Pirates of the Pacific - Dance Auditions Concordia Theatre will soon be holding auditions for dancers for our next panto Robinson Crusoe and the Pirates of the Pacific , January 10th - February 3rd 2018. If you, or any youngsters you know love to dance and would like to be a part of this exciting production go to our website www.pantomimecompany.com where you can find all details on applying. Bamboozle in China and Leicestershire

Last month, Leicester based charity and theatre company Bamboozle took two shows for learning disabled audiences to Shanghai. Down to Earth for profoundly disabled audiences and Storm for audiences who are on the autistic spectrum. The performances caused huge interest - 4 television channels presented news items and there was a massive hunger amongst families and teachers for theatre and workshops tailored specifically for children with learning disabilities. Plans are under way for developing a three year partnership to help families in China who have a child with learning disabilities. It is closer to home in Leicestershire and the East Midlands that Bamboozle does most of its work enabling families to have creative time together: “This whole experience has been so enabling for the whole family. The kids get a chance to enjoy doing things together and enjoy seeing each other achieve – this kind of activity doesn’t exist anywhere else as far as I know. We get a sense of ‘belonging’ which is a rare and special thing for families like us”. Jo Goodwin, Parent Christopher Davies, Bamboozle’s Artistic Director said: “Funding is an ever present challenge for us to provide all the activities for children that we want to. So next year I am taking on the 70seventy challenge. Some say it’s madness! I will be climbing the National Three Peaks *Ben Nevis, Scafell Pike and Snowdon+, cycling across the Pyrenees *including the Col du Tourmalet+ and running a marathon round Leicester Racecourse. These events will take place in the 6 weeks leading up to my 70th birthday on June 21st and we plan to raise £70,000 in the process.” Bamboozle is inviting anyone who would like to be involved in walking, cycling or running, or in sponsoring the events to get in touch with natasha@bamboozletheatre.co.uk to find out more. Cats In Need is a small locally based charity run entirely by local volunteers who foster the cats in their own homes. They do not have access to a sanctuary. To see more of the cats currently looking for homes please take a look at www.catchat.org under Leicestershire and Warwickshire.

Rehomes from Existing Owners We are like most rescues extremely over stretched in respect of spaces to take in cats. We are currently limited to rescue only for now and so are unable to deal with the frequent requests for rehoming pets from an existing owner. We try to offer what help we can by featuring those cats on our homing page to assist owners with the rehoming of their pets which in turn keeps our waiting lists shorter for those in more urgent need. When looking at one of these cats with a view to adoption please bear in mind the following: We ask owners assurance that the cat is healthy, neutered and up to date with flea and worm treatment in order that they be featured on our homing page however please remember that Cats in Need have not seen the cat or environment and so cannot guarantee this. If you have concerns over a cat you have visited then please contact us.

Any arrangement made is with the owner including any financial arrangement. Should you wish to make a donation to help us continue our work it is always gratefully received. In the case of difficulties after the adoption or the cat needing to be returned then this needs to be dealt with by the original owner, we are unable to take cats in that were not adopted via us and so would be placed on the waiting list which may be weeks or months at times. It is advisable that you discuss what would happen in this event and if the cat could be returned if necessary before proceeding. Charity Link, a charity which supports people in poverty, hardship or crisis throughout Leicestershire, is looking for individuals and teams of friends, family or work colleagues to join it for its ‘Leicestershire 3 Peaks Challenge’ on Sunday 24th September 2017. The charity, which has been providing essential items, including food, clothing and beds to local people for over 140 years, has devised a unique 16 mile route which takes in the two highest peaks in Leicestershire - Bardon Hill (which, at 912ft, is just 88ft short of a mountain!) and Beacon Hill. The third ‘peak’ is that of Old John Tower in the famous Bradgate Park, previous home of the nine day Queen, Lady Jane Grey. So why not join the team making strides to help local people in poverty and see some of Leicestershire’s most beautiful (and physically challenging!) countryside at the same time. You can choose to walk with the main group (the target is around seven hours) or for those looking for an extra challenge, runners are welcome to see if they can beat the Charity Link Leicestershire 3 Peaks Challenge record. Registration costs £15 and challengers also raise extra funds. Due to the unique way in which Charity Link works, for every £10 raised it can provide £50 worth of essential items – so by taking part you really will be helping to improve the lives of the most vulnerable local people. A professional women’s business networking group launched last year for local businesses has proved to be extremely successful and now has 37 members. Women that Connect is an exclusive membership group meaning only one member per profession/industry is invited to join which means it has a good, diverse mix of businesses. The launch meeting last September was a great success and subsequent meetings have proved similarly successful. It is proving a great way for Leicestershire and Warwickshire women business owners to meet. The monthly lunchtime meetings are friendly and relaxed yet professional allowing members to build new business relationships whilst cementing existing ones. Sue Tonks of Sue Tonks.co.uk spoke at the May lunch meeting. Sue gave a very useful and

entertaining presentation on how to succeed with the stresses and tribulations of being in business. Guests are very welcome to attend a maximum of two meetings a year as long as there is no clash with a business who is already a member of the group. The next lunch meeting is on Wednesday 12th July. Charity Page Leicester Animal Aid Community Pet Support Scheme (CPSS) Are you struggling to care for your companion pet?

Leicester Animal Aid’s referral based free to use community outreach scheme provides elderly, physically disabled and housebound pet owners with support to help them care for their cherished pets in their own home. If you know of someone that may benefit from this scheme, please contact Sarah Moakes, Co-ordinator, by email at CPSS@leicesteranimalaid.org.uk or alternatively call 01455 888257. Leicester Animal Aid will arrange for an appropriate referral partner and will personally meet clients to assess their need for support such as dog walking, transportation to the vets and/or grooming. The animal care team are fully trained and DBS checked.

The CPSS team are also very keen to hear from anyone who can provide a temporary foster home for clients who may need respite care or temporary hospital stays. The full cost of fostering will be covered. This scheme is funded by Leicester Animal Aid, Mars Pedigree, Edith Murphy Foundation, People’s Postcode Trust, The Kennel Club Charitable Trust and Support Adoption for Pets. It currently operates for residents in the districts of Hinckley and Bosworth, Blaby and Oadby and Wigston.
