Liebman’s latkes sizzle every year during the holidays By Sarina Trangle


arcelo Pena says he’s flipped a million latkes during his 26 years at Leibman’s Delicatessen. Mr. Pena, 49, first encountered the fried potato pancakes traditionally served during Hanukkah when he started as a dishwasher there. Then, he worked his way up to the head chef position by learning from “the real old timers.” He mixes up the same latke batter the Riverdale restaurant debuted when it opened in 1953. Demand for Leibman’s bagelsized latkes soars during Hanukkah. The Jewish holiday commemorates a group of Israeli rebels’ triumph over a Syrian-Greek Emperor who outlawed Judaism in Israel around 168 B.C. After the victory, the Jews were eager to rededicate their temple, but only managed to scrounge up enough olive oil to light the synagogue for one night. Somehow, the flames lasted for eight days. Today, Jews remember this miracle by lighting menorahs and enjoying potato latkes fried in oil and topped

with sour cream or applesauce. Mr. Pena flips 2,000 latkes a day during the holiday, Leibman’s meat grinder slices hundreds of cubed potatoes each morning and the deli delivers latkes from Washington Heights to Westchester, according to its manager Art Rabin. The crispy crust and dense, savory interior have made Leibman’s latkes a hit with Riverdalians as well. “They’re great,” said Hedy Adler, who is in her 80s and has been buying the $3.50 jumbo potato pancakes and $2 medium ones for decades. “A couple times of year, I get them –– when it’s time to pig out.” Leibman’s wouldn’t discuss its recipe in detail, but the deli divulged a few tips. Mr. Pena said caramelizing onions before mixing them into the batter helps give latkes a sweet flavor. He balances that with a pinch of pepper and sugar. Leibman’s has always fried the pancakes in the oven. Cooks can avoid getting splashed with sizzling oil by baking the latkes in a deep dish filled with oil. Mr. Rabin suggested testing the temperature by dropping a dollop

of batter in the oil. If it sputters slightly, spoon the batter into pancakes. If the oil is too hot, the latkes could burn; if it’s too cool; oil will saturate the pancakes and make them soggy. However tight-lipped Liebman’s may be, Press readers can turn to What’s Cooking author Danielle Rehfeld’s well-vetted potato latke and applesauce recipe: POTATO LATKES Makes 15 to 20 pancakes. 2 lbs., russet potatoes (about 5 small-medium sized) 1 yellow onion, peeled 1/2 lemon 1-1/2 tsps. kosher salt 1/4 Cup all purpose flour 1 large egg canola, grapeseed, or vegetable oil, as needed kosher salt Peel the potatoes and place in cold water. Squeeze the lemon juice into a bowl and on the smallest holes of a box grater, grate the onion into the lemon juice.

Next, dry off one potato and grate it on large holes into the bowl. Toss with the onion mix. Repeat with all the potatoes, working quickly and tossing with the onions. Add 1-1/2 tsps. salt. Mix and then wrap the potatoes in a cloth napkin and squeeze well to release all the liquid. Keep wrapped in an airtight ball until you’re ready to mix in the flour and egg. Toss the potatoes with flour and egg and form into small bite-sized patties. Flatten them slightly. In the meantime, heat a non-stick pan to medium heat. Add enough oil to fully coat the bottom of the pan. Add one latke to test the oil. It should sizzle and bubble a bit around the edges. If not, wait until the oil gets hotter. Once ready, add some latkes to the pan, leaving space between them. Do not overcrowd and adjust the heat as needed to ensure they fry without burning. When latkes become golden brown on the bottom side, flip them. Cook until brown and crisp on the other side. Taste to see if they’re done, and if the middles require more cooking, place in a 425-degree oven for 3 to 5 minutes.

Blot on a paper towel-lined plate and transfer immediately to a drying rack. Sprinkle with kosher salt and serve right away. APPLESAUCE 3 lbs. gala apples, peeled and cut into small chunks 1/4 Cup sugar, plus 2 Tbsps. 1/4 Cup water 3 Tbsps. lemon juice (about 1 lemon) Place water, 1/4-Cup sugar, lemon juice and apples in a large pot. Cover and turn the heat to mediumlow. Cook covered for 15 minutes. Remove cover and cook another 10 to 15 minutes, stirring occasionally, until almost all the liquid has evaporated and the apples are tender. Add another 2 Tbsps. of sugar, more if necessary, and cook another minute. At this point you may leave the sauce chunky or puree in a food mill or processor. Serve immediately or cool down and serve cold or at room temperature.

The economy will affect the value of your home, but so will other factors Nowadays, homeowners looking to sell their homes know it’s not as easy to do so as it might have been a few years ago. A struggling economy has made it difďŹ cult for many homeowners to sell their homes for a price they’re comfortable with. But the sagging economy is not the only thing that can make it difďŹ cult to sell a home. In fact, a host of other things, some obvious but some not so obvious, can hurt a home’s value as well. • Location: A home’s location is arguably its best or worst selling point. A home in a great location won’t be as difďŹ cult to sell as a home in a bad neighborhood. But location goes beyond a neighborhood’s reputation, especially

in recent years. Homeowners who live in a neighborhood or development with many foreclosures might ďŹ nd those foreclosed properties are hurting their own home’s value. Lots of foreclosures could negatively affect a neighborhood’s reputation, which might make a home less attractive to prospective buyers. • Appearance: A home’s appearance is another obvious variable that might affect its resale value. Homeowners might want their home to reect their own individuality, but that’s not going to help when the time comes to sell. If the exterior paint is out of the ordinary, then it might be wise to choose a more traditional or conservative color before

erecting the “For Saleâ€? sign. The same goes for a home’s interior. If the interior design is especially unique, a more traditional decor might help the home sell faster. • Size and style: Another thing to consider when selling a home is its size and style. A home that stands out on the block might be an attention-grabber, but that’s not always attractive to prospective buyers. For instance, a colonial sitting in the middle of a street ďŹ lled with contemporary homes will stand out, but likely for all the wrong reasons. It will likely appear dated and out of place, which is something buyers might not want. In addition, if the home is considerably larger or smaller than the sur-

rounding homes, then this could hurt its value. • Non-conformity: In many ways, conformity is not considered an admirable trait. But when selling a home, conformity could make the difference between a home selling quickly or remaining on the market for months if not years. When shopping for a home, buyers often shop in certain neighborhoods and towns and might see many different homes within a given ZIP code. Homeowners with homes that don’t conform to others in the area might ďŹ nd it difďŹ cult to sell their homes. For instance, homeowners trying to sell a two bedroom home in a neighborhood ďŹ lled with three bedroom homes might

notice their home’s value is not as high as that of surrounding homes, regardless of the neighborhood or how similar the home’s exterior is to surrounding homes. • Age: Older homes might have character and a sense of nostalgia, but appraisers take age into consideration when determining a home’s value. And buyers tend to lean toward newer homes for a number of reasons, not the least of which is the feeling that newer homes have far more modern amenities than older homes. When it comes to a home’s value, there are a host of things that could ultimately increase or decrease that value in the eyes of prospective buyers.

Superstorm Sandy highlights importance of storm preparedness Superstorm Sandy, which blew through the northeastern United States in late October of 2012, left a path of destruction in its wake thanks to a record-breaking low pressure system and a tidal surge that caused many coastal areas to be submerged in water. The storm crippled transportation systems, caused epic flooding, even in areas that never had water breach storm walls before, knocked out power for millions of people and was responsible for scores of fatalities. Although many people heeded the evacuation warnings in areas expected to be hit the hardest, others took precautions by stocking up on food, water and battery-powered items. But no one could fathom the scope of damage Sandy would bring. In the wake of Sandy’s destruction, many people have resolved to go to greater lengths to prepare for future disasters. Those making plans for change in the new year may want to move disaster preparedness to the top of their to-do lists.

Record-breaking storms have increased in frequency and intensity in recent years. Hurricanes Katrina, Irene and Sandy are each glaring examples of just how devastating such storms can be, and how important it is to be prepared for such disasters. The following are a few preparation suggestions from FEMA, the Federal Emergency Management Agency. Pack an emergency “go bag.” Individuals may be urged to evacuate their homes when certain storms are on the horizon. Doing so quickly and effectively means having packed items at the ready to grab at a moment’s notice. Pack several changes of clothes, some cash, medications, identification, snacks and water, a first-aid kit and a list of important phone numbers. Develop a communication plan. Establish a communication plan so that family can be contacted and notified of your situation should you be separated from your home or if family members become separated from one another. Don’t forget entertainment. If power is lost for an extended period

of time, many of the electronics that keep children and adults amused will be rendered useless. Have books, puzzles and manual toys available for entertainment. Pack your prescription medications. Individuals who are on maintenance medications should be sure to refill or have doctors call in a refill to a pharmacy prior to the arrival of a storm. Stock up on fuel. In the event of a power failure, fuel pumps do not work and gas shortages may occur. Fill your gas tank and have several gallons of gasoline available to run a generator if you have one. Carry some cash. It is important to withdraw cash before a storm arrives. The ATM at your local bank may not operate, and the bank may be closed. Stores may not be able to accept credit or debit cards. A disaster is something no one anticipates. But everyone can and should take measures to prepare for a disaster should one such as Hurricane Sandy occur. —Brandpoint

What’s cooking?

A voluptuous brisket with root vegetable gravy By Danielle Rehfeld When it comes to traditional Jewish dishes like chicken soup or latkes, everyone has her own specific recipe or technique that’s been tweaked to perfection over the years. Nowhere is this truer than with brisket, that unforgiving cut of beef that’s been associated specifically with Jewish cooking and Texas barbeque. Everyone who’s had lots of brisket knows there’s only two ways that meat’s turning out; dry, shrunken, and tougher than pigskin itself. Or, if all goes well, voluptuous, buttery and so tender that it’s challenging to slice without leaving tons of moist, irresistible little bits on the cutting board. In fact, one Rosh Hashanah 12 years ago, it was those little pieces of leftover meat and the intoxicating aroma of onions and garlic from my mother’s brisket that seduced me into the kitchen. One look at that meat and I knew my year as a pescatarian was officially over. This Hanukkah, my mother wasn’t in New York so I was on my own, in charge of the brisket. While I didn’t feel entirely helpless, it wasn’t as if I was approaching this dish with the speed and efficiency of a person who’s made it more than 10 times a year for the past 30. This would have to be a more thoughtful process; some sort of new beginning between me and the meat. While my mom puts the meat, her onion soup mix, garlic, peppercorns and salt in a pan with a little water and lets the low temp oven do the rest, I decided to go in a different direction. Like any cook, I wanted my recipe to yield the soft, tender meat guests would go nuts for, but instead of the loose pan juices of yester-brisket, I wanted a thicker, more nutritious sauce to coat the meat and keep it moist. I decided to blend the vegetables with some of the cooking liquid and whisk them back into the pan, adding body to the juices without any thickening agents like flour or cornstarch. The result? A yielding, fork tender brisket with a balanced, thick vegetable sauce perfect for sopping up with challah, roasted potatoes or rice. BRISKET WITH ROOT VEGETABLE GRAVY Ser ves 4. 4 lbs. beef brisket (first cut)* kosher salt and pepper canola oil, as needed 2 medium carrots, peeled and cut into large chunks 2 medium yellow onions, cleaned, cut into large chunks 2 celer y stalks, cut into large chunks 1 medium parsnip, peeled and cut into large chunks 2 heaping Tbsps. tomato paste 3 cups beef stock fresh thyme or parsley, for ser ving. Remove the meat from the fridge a half hour before cooking and preheat oven (not convection) to 325 degrees. Heat a large pan over medium high heat with a very thin coating of canola oil. Dry the meat well with paper towels and season with salt and pepper. Sear the meat in the fiery hot pan on the fatty side, letting it sizzle and form a dark golden crust. Adjust the heat to make sure nothing is burning. Remove meat to a large Pyrex dish or braising pan large enough to comfortably fit the meat, juices and vegetables. They shouldn’t be packed in like a crowded rush hour 1 train. In the same sauté pan, add the large chunks of carrot, onion, celery, parsnips and tomato paste. Cook over medium high heat and when all of that starts to create some nice color in the pan, about 2 minutes, add beef stock and scrape all the bits up off the bottom of the pan. Season the cooking liquid and vegetables with salt and pepper.

Transfer the vegetables into the braising dish and pour enough liquid to come halfway up the sides of meat. Cover very tightly with a few pieces of foil, making sure it’s airtight. Transfer to oven and cook at 325 degrees for the first hour and a half. Turn down to 300 degrees for another 4 hours, cooking for a total of 5 1/2 hours. Remove the meat. Skim the

fat off the juices. Transfer the vegetables to a blender and puree with some of the cooking liquid until smooth. Transfer back to the pan and whisk. Taste for seasoning. Slice the meat against the grain and return to baking dish, spooning the sauce over the brisket to keep moist. Garnish with fresh thyme sprigs or torn parsley and serve family style at the table.
