Orange Maple Glazed Roasted Carrots

SERVING SIZE: 4 1 bunch multicolored carrots with tops ¼ cup freshly squeezed orange juice (1 navel orange) + ½ navel orange for roasting 2 tablespoons butter 2 tablespoons pure maple syrup ½ teaspoon kosher salt Fresh thyme sprigs for garnish

Preheat oven to 425 degrees. Clean carrots and cut off leafy tops. Cut ½ orange into thin slices. Place carrots and slices on parchment-lined baking sheet. In a small saucepan over medium-high heat, cook orange juice, maple syrup and butter using a whisk to combine until melted. Pour about 2 to 3 tablespoons of orange juice mixture over carrots and orange slices and toss until coated. Set remaining mixture aside. Sprinkle carrots with salt. Bake in oven for 20-plus minutes, depending on carrot size. Just before carrots are done, bring remaining orange juice mixture to a boil, until reduced by half and thickened. Transfer carrots from oven and pour remaining orange juice mixture over top, and garnish with fresh thyme.
