Italian Pastas & Sauces

Florentine-Style Pork Rib Roast

DEMO Francesca presents pasta and sauce combinations from three different regions of Italy for your culinary enjoyment. From Rome she presents Amatriciana, a tomato sauce of sautéed onions, pancetta, tomatoes and wine, tossed with penne pasta and topped with a pecorino romano cheese. Naples inspires a Rigatoni con salsiccia e ricotta, loose sausage meat sautéed in wine and garlic, then tossed with ricotta and parmesan cheese and dressed with fresh basil. Sicily is represented by a baked pasta, Maccheroni al forno, which features a tomato sauce, layered with fried eggplant, mozzarella and parmesan cheeses. Scholarship recipients pay $25. 1 class.

DEMO Inspired by the hills of Florence, this Pork Rib Roast is sure to have your mouth watering. Francesca pairs it with a Tuscan Bean Ragu simmered with tomatoes and sage. Bettola insalata is a boiled Swiss Chard that is tossed in a homemade lemon vinaigrette. Finish with Zuccotto, a dome shaped sponge cake filled with a mascarpone cheese and whipped cream filling, topped with mixed berries. You are sure to feel as if you have been transported to one of Italy’s finest restaurants. Scholarship recipients pay $25. 1 class.
