CHAR-GRILLED AUBERGINE & FETA ROLLS
n Sausalito, just across the bay from San Francisco, there’s an area filled with houseboats. They’re beautiful, not boring little things, and some of them are permanently fixed on floating concrete pads. Others you can genuinely put to sea. Quite a few famous literary and arts figures have rented boats out there and invited friends like Jack Kerouac, Allen Ginsberg and William Burroughs to visit. And it is also where Otis Redding wrote ‘Sittin’ on the Dock of the Bay’. I was invited for lunch on a houseboat by Paula and Cory, whose best friend was English and had seen my programmes. In the end about 15 locals showed up, all bringing fabulous food. I know they may have been trying to impress, but they were all people who were used to cooking regularly and eating well and healthily. I remember thinking, this is California, this is good. These lovely aubergine rolls stuffed with feta were brought along by Olivia, one of the guests.
SERVES FOUR AS A STARTER OR PART OF A MEZZE
• 2 aubergines • 4 tbsp olive oil • 175g feta cheese • 175g ricotta cheese • Small handful flatleaf parsley, chopped • 5–6 rasps freshly grated nutmeg • 10 turns black peppermill • 1½ tbsp capers, chopped
• 100g mixed rocket, watercress and baby spinach • Juice of ½ lemon • 2 tbsp extra virgin olive oil • Seeds from ½ pomegranate • Salt and pepper Cut the aubergines lengthwise into slices about 5mm thick. You should get about 6 slices from each aubergine. Brush the aubergine slices on both sides with oil and grill them in batches on a barbecue or griddle pan for 3–4 minutes on each side until browned, tender and pliable. Set them aside. Mash the feta and ricotta in a bowl with a fork and add the parsley, nutmeg and black pepper. Stir in the capers. Spoon a generous tablespoon of filling on to the wide end of each aubergine slice and roll it up like a Swiss roll. To serve, arrange the salad leaves on a platter, dress them with lemon juice and olive oil, then season. Arrange the aubergine rolls on top, seam-side down, and decorate them with pomegranate seeds. Serve at room temperature as a starter or part of a mezze. 55

TURKEY BREAST WITH PASILLA & CHIPOTLE CHILLI & BUTTER SAUCE
lthough Mexico and the southern US are where turkeys come from there are precious few recipes for them in Mexican cuisine. It’s traditional to serve mole poblano with turkey, but more often than not it’s made with chicken. So I thought I would come up with my own roast turkey dish. I found that most supermarkets sell a butter-basted turkey breast joint, which serves three or four people, and I marinated this in the chilli salsa, then slow roasted it. I suggest serving it with Mexican red rice, or slicing it and rolling it up in tortillas with some pico de gallo salsa and avocado, but then it’s also nice British style with roast potatoes and yes, some Brussels sprouts.
SERVES THREE TO FOUR • Butter-basted turkey breast joint (about 650g) • 10g butter
For the marinade
• 1 pasilla chilli, seeds shaken out • 3 cloves garlic • ½ small onion, chopped • 2 tsp cider vinegar • 1 tsp salt • 30g butter • 1 heaped tsp Chipotles en adobo • 5g achiote paste • 25g cashew nuts • 1 tbsp dark brown sugar 56
Tear the pasilla chilli into 4 or 5 pieces and put them in a bowl with 200ml of justboiled water. Leave to soak for 20 minutes. Put the chilli with its soaking water and the remaining marinade ingredients into a blender and blend until smooth. Pour one-third of this mixture over the turkey breast and rub it in all over. Cover and leave the turkey to marinate in the fridge for 1–2 hours. Preheat the oven to 180°C/Fan 160°C. Put the turkey in a roasting tin and add 70ml of water. Roast for 45 minutes, then put the butter on top of the turkey and roast for another 5 minutes. Check the internal temperature of the turkey with a probe if you have one – it should be 70°C. Baste the turkey with the pan juices, then transfer it to a warm plate, cover with foil and leave it to rest for 5–10 minutes. Add 100ml of water to the juices in the tin and deglaze over a medium heat. Add the remaining marinade and stir to combine. Simmer for 5–10 minutes, adding a little more water if the sauce looks too thick, then pass the sauce through a sieve. Slice the turkey on the bias and serve with sauce spooned over and some Mexican red rice or roast potatoes.

RHUBARB GALETTE CHEZ PANISSE
oing to Chez Panisse was inevitably a high point of California for me. Alice Waters at Chez Panisse has for years been my ideal – she runs a small local restaurant serving what’s fresh from the market and with a menu that changes every day – and meeting her only reinforced that. I’ve chosen the rhubarb galette from the many dishes I tasted. The restaurant’s pastry section is the sort of place you’d love your teenager to work, surrounded by Californian citrus fruit, baskets of rose petals and the new season’s rhubarb. Would that every youngster aspiring to become a chef could join such a kitchen. I did ask Alice if my stepdaughter Olivia could do a stage there. And she said yes.
• 225g plain flour • Pinch salt • 170g cold, unsalted butter, cut into 1cm cubes • 80ml ice-cold water
For the filling
• 500g rhubarb, cut into 6cm long batons (save any trimmings) • Finely grated zest of an orange • 200g granulated sugar • Pinch salt • Juice ½ orange • 1 tbsp muscat dessert wine • 30g unsalted butter, melted • 30g caster sugar • 2 tbsp sugar, for the glaze
Vanilla ice cream or whipped cream
In a food processor, pulse the flour and salt. Add the butter and process briefly. Sprinkle over the ice-cold water and pulse for about 5 seconds, until just moistened. Transfer the dough to a floured work surface and knead it 2 or 3 times until it comes together. Pat the dough into a disc. Lay a sheet of baking parchment on your work surface and dust it with flour. Roll out the dough like a pizza to make a 35cm circle, 4–5mm thick. Transfer the parchment to a baking sheet and chill the pastry. Preheat the oven to 220°C/Fan 200°C. Toss the rhubarb in a bowl with the orange zest, sugar, salt, juice and wine and mix well. Arrange the rhubarb on top of the pastry and sprinkle over any remaining sugary mixture. Leave a border of 5–6cm around the edge of the pastry, fold that in and crimp to form a border. Brush the fruit with melted butter and sprinkle with caster sugar, then repeat this process three times. Bake the galette for 10–12 minutes, then lower the oven temperature to 200°C/Fan 180°C and bake for a further 30–35 minutes. To make the glaze, cook the rhubarb trimmings with 75ml of water until soft. Strain the liquid from the pulp and add the 2 tablespoons of sugar. Pour this back into the pan and let the sugar dissolve, then reduce to a thick syrup. Leave the galette to cool, then brush it with the glaze. Serve with vanilla ice cream or whipped cream. 57
