Onion and Radish Soup Ingredients • • • • • • • • • • •

24 red radishes 1 sweet onion 2 1/2 cups broth 3 tablespoons butter 3 tablespoons unbleached flour 2 cups half and half 3 tablespoons worcestershire sauce 1/2 teaspoon salt 1/4 teaspoon ground black pepper 1/2 tablespoon horseradish 1 tablespoons mayonnaise

Directions 1. Scrub the bell radishes with an abrasive plastic pad reserved for vegetables, followed by rinsing. Remove tops and leaves. 2. Peel and chop the onion, chop the radishes. 3. In large saucepan, combine radishes, onions and chicken stock or broth. 4. Bring to a boil. Reduce heat and simmer 40 minutes. Remove from heat and cool. 5. In food processor, puree mixture. Set aside. 6. In large saucepan melt butter. Whisk in flour and cook, stirring, 1 minute. 7. Add half and half and cook, stirring, until thickened, about 5 minutes. 8. Whisk in Worcestershire sauce, salt, pepper, horseradish and mayonnaise. Add pureed radishes.
