Broccoli and Ranch Radish Salad Ingredients • • • • • • •

4 cups broccoli crowns 1/2 cup green onions 8 ounces water chestnuts 2/3 cup mayonnaise 2 tablespoons lemon juice 2 tablespoons dry ranch salad dressing mix 1 cup radishes

Directions 1. Scrub the radishes with an abrasive plastic pad reserved for vegetables, followed by rinsing. Remove tops and leaves. 2. Drain and rinse the water chestnuts if canned, then chop. 3. Dice and then rinse out the broccoli crowns in a bowl. 4. Slice the green onions and radishes. 5. In a bowl combine the broccoli, onions, radishes, and water chestnuts. 6. In another bowl, combine the mayonnaise, lemon juice and salad dressing mix. Pour over vegetables and toss to coat.
