HOW FOOD EXPERTS ARE CHAMPIONING THE PHILIPPINES’ TRADITIONAL CUISINE Monte Mathews, Author Our ship, Silver Muse, glides between emerald green islands and anchors in a quiet cove.

We have reached Romblon Island, just one of the 7,641 islands that comprise the enormous archipelago that is the Philippines. While this particular island is best known for its marble industry and exceptional beaches, our goal is a culinary adventure.

We are part of a pilot group traveling with Silversea’s new Sea And Land Taste (S.A.L.T.) program. Designed in collaboration with Adam Sachs, a three-time James Beard Award Winner and former editor-in-chief of Saveur magazine, S.A.L.T. aims to lead Silversea guests on immersive culinary discoveries—both aboard ship and on international shores.

Filipino cuisine currently holds a prominent place on the world’s culinary radar. Sachs, who is leading our expedition into the Philippines’ food culture, lauds it as a gloriously varied mosaic of tastes and regional traditions.

A DAY IN THE LIFE OF A JAPANESE GEISHA Selena Hoy, Author “Let’s play a game!” exclaims Fukuya as she pours me another drink. She and her companion, Teruha, stand at the front of a room in the Hachioji area of Tokyo in Japan on each side of a small taiko drum. “Does everyone know how to play rock-paper-scissors?” she asks. Everyone does. She then explains the rules as rock-paper-scissors with a twist— literally. She and Teruha demonstrate playing the game to a steady beat. The loser of each round must spin in a circle while the winner beats the drum, and then return to face front in time to do another round.

This new take on the game is, of course, harder than it looks, especially after a few glasses of beer, sake, shochu or whatever the guest prefers. The first person to lose the rhythm must take a drink. Fukuya raises her glass and leads us in a saucy chant: “The more you drink, the more handsome he gets!” Everyone takes a turn, and more spinning, laughing and drinking ensues.

LIVING PICTURES: THE PHILOSOPHY BEHIND THE MOST BEAUTIFUL JAPANESE GARDENS Selena Hoy, Author Japanese gardens are rightly famous for their understated beauty, from the perfectly raked gravel of Zen temples to the serene tea houses reflected in mirror-like ponds. The gardeners themselves treat these gardens as a canvas, using the seasons as paintbrushes and employing minimalism to dictate a sense of balance. From the meticulous pruning, leaf by leaf, of each bush, to the weeding of a neighborhood flower patch with a pair of chopsticks, gardening in Japan is an exercise in meditation. It inspires mindful contemplation in both the garden’s creator and its viewer.

The practice of ordering nature in Japan has a long history, with the first known treatise on garden design, Sakuteiki, dating back a thousand years. “There are so many different styles that range over time and place,” says expert garden designer Toby Musgrave who has written ten books on gardens and holds a Ph.D. in garden history.
