red ‘n white I was recently enjoying one of the “Nectar of the gods” from South Africa, called the Café Culture Pinotage. This seductive and refined Pinotage offers aromas of coffee, a distinctive mocha, dark chocolate and toffee, with flavors complemented by juicy berry aromas. Taking a sip, I noticed the soft and juicy taste to it with an abundance of fruit on the palate, which gives integrated tannins and a velvety structure. Tanzania was not the first to use this kind of technology. Results from other sea turtle satellite tracking projects found that green turtles from four different nesting sites in the region made the Rufiji Delta in central Tanzania their final destination after nesting. This is most likely due to the presence of lush seagrass meadows which is the favourite food of green turtles. Consequently, the Rufiji Delta has been identified as one of only five regional ‘hotspots’ for foraging green turtles. The value of community-led sea turtle research and conservation programmes conducted by the Sea Sense team cannot be overstated. They have provided critical protection for nesting sea turtles and their eggs and generated important information for the development of conservation and management measures for this internationally endangered and protected species. Most importantly, the work is helping to change attitudes towards sea turtles which are becoming increasingly recognised for their biodiversity value instead of a resource to be exploited for consumption.

Spread the first layer with soft butter. Some cooks like to add a sprinkling of the filling on every layer of pastry, while others prefer to put the filling in the middle of the gogal. The choice is yours.

Roll out the second ball of pastry. Place the rolled out pastry on top of the first layer, spread with softened butter and sprinkle with the filling (if using this method). Repeat until all the layers have been used. Don’t add the butter and filling to the top layer.

Cut the layers of pastry into strips, 1 to 2 inches thick. Cut the strip into pieces some 2 inches long.

Now for the tricky part – take a piece of pastry, roll into a mini swiss roll shape, take each end of the roll and twist like a sweet wrapper. Press the twist of pastry down into a round shape.

To stuff each gogal, make a hole in the middle of the gogal with your thumb and form a pocket for the filling. Put a spoon of filling into the pocket and close the dough over the hole. Turn the gogal upside down and place on a firm surface. Push down carefully to flatten the gogal but not too much. Set aside and cover with food film. Continue until all the rolls are done.

Place the round gogal onto a well greased baking tray. Brush the top of each gogal with beaten egg yolk, with the threads of saffron added, and sprinkle with poppy seeds.

Bake in a hot oven 200 C/390 Fahrenheit/Gas Mark 8 for 20-25 minutes until the gogal are golden or golden brown.

Shekerbura (şəkərbura) are a popular Azerbaijani sweet pastry, filled with ground almonds, hazelnuts or walnuts.

Shekerbura, shor gogal and bakhlava are all eaten in Baku at the Novruz spring holiday. According to one tradition, the slightly crescent shaped shekerbura represent the moon while the round, yellow gogal is the sun. As with gogal and bakhlava, the process of making shekerbura is time consuming and, traditionally, the women of the family get together before Novruz to make shekerbura. Although shekerbura are traditionally a delicacy for holidays and special occasions, nowadays they are enjoyed all year round as well.

This method of removing the skin enhances the flavour of the nuts, like roasting. Another way to remove the skin is to soak the nuts in boiling water for a few minutes and then peel the skin off. If using the latter method, leave time for the nuts to dry. Grind the nuts in a nut or coffee grinder. Mix the ground nuts with the sugar. Add the powdered cardamom.

Warm the milk to 30-35 degrees Celsius/86-95 degrees Fahrenheit.

Sieve the flour onto a large board or into a large bowl and make a hole in the centre. Pour the warm milk, yeast, egg yolks, soft butter and salt into the hole and gradually fold in the flour from the outside.

Knead well until the dough is smooth and soft.

Cover with a clean tea cloth and leave in the fridge or a cool place to rise slowly for about 30 minutes (the dough for shekerbura should not rise too much or the traditional design will blur).

Take the risen dough and break off a piece some 50 g in weight. Roll into a ball and then roll out the ball on a flat surface into a round 10 cm/4 inches in diameter.

Place 1 large tablespoon of filling into the middle of the pastry and pull the edges together. Pinch the pastry edge all the way along with your thumb and forefinger to create a twisted design.

Opposites Attract. This theme is based on Scandinavian styling, Nordic lights, casual and Bohemian inspirations. Designers take their stimulation from natural motifs such as animals, trees, leaves, organic objects and treasures from the sea and beach. This look is all about the balance of opposite elements: old and new, cool and warm, minimalist and familiar, raw and smooth effects, which obtain a comfortable and homey interior. Craftsmanship is combined with innovation, giving interiors a clean, airy and sometimes transparent ambiance. This is contrasted by handmade crafts such as knitting, braiding, crochet and even raw ceramics (perfect, since we know that Tanzania has maddesign skills when dealing with these mediums). Textiles such as curtains, pillows and carpets play an important role to balance textures and products. Modular and small furniture are important to obtain a playful effect. Ah‌Home sweet Home In this romantic and feminine theme, we see a fascination with our heritage - tradition with a twist. Old items found in second-hand shops, antique markets and in old attics are recycled. Even new products get the antique treatment! We see romantic twilight lamps, vases or crystal facetted glasses, plates, candle sticks, crystal chandeliers, old-fashioned style furniture, gilded and sculpted mirrors, beds, and candy coloured porcelain table sets. Inspiration comes from French, English, and Scandinavian country-sides and one gets a feel of a very feminine boudoir, decorated with soft, romantic products and textiles such as velvets, satin, metallics, golden rims, gilded wood, gold, silver and copper. Ethnic African hand-woven fabrics and paisleys are mixed with plastic braided furniture. Patchwork fabrics with zigzag motifs, tapestries, cross stitch and multi-coloured stripes and folky embroideries are found in sofa’s, beds and pillows. Animal prints, leopard, zebra, reptile, leather and suede give a tribal atmosphere. These are just some of the innovative designs that will be in our homes in the future! Electrolux Design Lab ran a competition for young designers to show their wares, and some clever designer gadgets are coming to a home near you. The most common ideas tap into to making cooking, cleaning and air cleaning more inspiring in the future - there is a strong need to make our homes healthier and to address personal needs. The designs are clever and not too serious, they delight and surprise us and at the same time offer us solutions based on true needs.

The 3F Vacuum Cleaner is a “living” product, which responds to consumer’s needs. It has 3 main functions – it cleans, it disinfects and freshens the air in your home simultaneously! As each room in your house has its own character and each day has its own mood, the 3F is able to map your home and can assign a different scent to each room, set the timing and launch the cleaning. Settings for this can be done in just a few seconds using your smartphone or tablet or mechanically on the machine. The scent is also an indication of the cleaning task’s success. The designer of this product wanted to establish “effortless cleaning” and create a more pleasant and enjoyable cleaning experience without you having to do all the work!

Breathing Wall The concept of the indoor Breathing Wall is to heal the body and mind of people exhausted by everyday stresses. People can exercise efficiently and take rests by recollecting their good memories through the changes in the indoor atmosphere. For example, let’s suppose that you want to take a rest by thinking back upon a specific happy memory. When you enter the information of that particular situation into the Breathing Wall, it turns the indoor atmosphere into the air environment of that particular time. This allows you to rejuvenate and prepare yourself for the next day.

Atomium Atomium is a food 3D printer that develops meals based on the users’ desires of shape and flavour of their food. Atomium will recognize an object/sketch by scanning it and then printing it. It will go as far as choosing the molecular ingredients to construct nutritional balance for the user´s body, based on the user´s medical data. The devise uses a finger-digital identification to recognize the user and connect itself with newest personal data, such as medical conditions and daily activities that can influence the nutritional balance of the user´s body. Sure the above innovations are concepts for a competition, but not too far-fetched considering that a few years ago a Plasma TV seemed, literally, out of this world. We implore once again that you let your imagination run, and run and run. Antonio Gaudi, the genius of architectural design had creative thought beyond his time. The population wanted to commit him as a madman, a soothsayer with visions beyond this world. His creativity knew no bounds and still today, we continue attempting to complete construction of his largest masterpiece, the La Familia Sagradia.
