Serves 4 approx. I think the homemade version of this is much better than that which you buy ready-made and you can alter the flavours to suit your taste. MEATBALLS WITH TOMATO SAUCE AND PASTA METHOD:

INGREDIENTS: Meatballs • 250g (8oz) mince • 40g (1 ½ oz) fresh wholemeal breadcrumbs • 1 small onion – finely chopped • ½ tsp mixed herbs • ½ tsp cumin • 1 small egg • 2 tablespoons oil • 2-3 tablesp flour Tomato Sauce • • • • • • • •

1 small onion – finely chopped 2 tablesp oil 1 can chopped tomatoes 1 tablesp tomato purée 1 teasp dried basil ½ teasp chilli flakes if desired 1 teasp sugar Salt and pepper

Pasta (tagliatelli) • Approximately 50g (20z) per person

Meatballs

Liquidize until smooth.

In a large bowl combine the mince, breadcrumbs, onions, herbs, spice, chilli if used, and beaten egg. Season with salt and pepper.

Add the chilli flakes if used with salt and pepper.

Bind all together with a hand. Form into 12 meatballs with floured hands. Chill for 1 hour. Fry in the oil over a low heat, turning until cooked through. Tomato Sauce Fry the onion gently in the oil until soft but not brown. Add the tomatoes, tomato purée and herbs.

Pasta Cook the tagliatelli according to the packet instructions. To Serve Put the pasta on the serving dish with the meatballs in the centre. Pour some tomato sauce on the top and sprinkle with grated parmesan cheese. Use either one large dish or individual bowls. Note: the meatballs can be frozen in an airtight container for up to 2 months.

March is famously windy; the sea is at it coldest as winter draws to a close, whereas the land is warming rapidly with the arrival of the sun. The difference in air pressures creates the wind. Crisis? What crisis? How to make your own Nutty Chocolate Spread. Nutella, the most popular spread in Europe, first began as a result of Napoleon’s Continental Blockade in 1806 – designed to paralyze Britain by destroying commercial trade. The blockade had disastrous consequences for the chocolatiers of Turin. Ever resourceful, they hit upon the idea of adding hazelnuts to the then scarce chocolate to make it stretch further. The clever idea was forgotten until the second world war, when rationing led to another chocolate shortage. An enterprising Turin pastry maker called Pietro Ferrero decided to recreate the Napoleon-era treat in 1946, as hazelnuts were abundant in the area. It was sold as a solid ‘brick’ for slicing and placing on bread. Gianduja was a major hit all over Italy. When his son Michele took over in 1957, he devised a method of turning the slab into a spread by adding oil. In 1964 the spread was named Nutella – a combination of the English word ‘nut’ and the Latin suffix ‘ella’ meaning sweet – and the brand went global. When Michele Ferrero died in 2015, he was thought to be Italy’s richest man with a personal fortune of $26bn. Today, Ferrero uses 25% of the world’s supply of hazelnuts, in Nutella and their equally famous Ferrero Roche. Despite the family’s immense personal wealth, it has been a huge boon to the local economy – the purpose is not that they want people for the factory, the factory is for the people. Extensive benefits and care are offered to workers and this is repaid by their rigorous 10

Here is a starter recipe, you can work with it. Some people substitute almonds for all/some of the hazelnuts, others suggest using orange oil to complement the chocolate. • 140g/5ozs/cup Hazelnuts, blanched is easier • 225g/8ozs Chocolate (dark 70%, milk or a mixture as you prefer) • 25-50g Sugar (Can also use honey or maple syrup) • 3 Tbsp Powered whole milk • 350ml whole milk • Dash vanilla extract • Pinch of Salt. • Additional Cocoa powder to taste? • Vegetable oil – consider hazelnut or walnut oil.

1 If your hazelnuts are raw, roast them - single layer on baking tray for 12-15 mins at 180. Allow to cool. (If not blanched, put in a tea towel and rub to remove the skins)

2 Grind the hazel nuts to a paste in a food

processor – you can remove some early for extra crunch.

3 Melt the chocolate in a heatproof bowl above simmering water/ microwave.

4 Heat the milk, milk powder and 25g sugar in a pan to a slight simmer.

5 Add the melted chocolate, milk mixture,

vanilla and a pinch of salt gradually to the processor and mix. Add a little oil to thin if necessary, plus the rest of the sugar to taste.

OLDLAND WINDMILL A story of survival and restoration By Fred Maillardet: Chairman, Oldland Mill Trust. Most readers will be familiar with Jack and Jill, the pair of windmills sitting atop the Downs at Clayton. But next time you visit Jill, the white post mill, look out across the weald and you’ll spot little more than a mile to the north another post mill perched on the first greensand ridge. This is Oldland Windmill. Oldland Mill first appears on the Oldland Estate map of 1703 and was probably constructed to replace a mill to the north of Ditchling which “fell down” in 1684. Oldland was constructed by the Turner Family to provide flour for the local villages of Ditchling and Keymer, both being mentioned in the Doomsday Book. (Hassocks did not exist as it only burst onto the scene with the arrival of the London to Brighton railway line in the 1840s.) Oldland was worked commercially by a succession of tenant millers, many of whom carved their name in the main post. The earliest photograph (fig 1) shows the mill bedecked in bunting marking Queen Victoria’s Golden Jubilee Celebration in 1887. In those days it was quite common for windmills to be decorated to celebrate both local and national events. 12

Oldland in 1887 By the late 19th century, the industrial revolution had led to steam engines being available as a source of power and the fate of windmills in general was sealed. Oldland embraced this new technology by adding an external engine drive in about 1880 and the large pulley on

the side of the mill to receive a leather drive belt from an engine can be clearly seen in figure 1. (It’s interesting to speculate why the drive belt had been removed and the engine drawn back out of sight when the picture was taken!) However, even this major enhancement could

only delay the inevitable, and Oldland finally succumbed being abandoned in 1912. But a commercial life of over 200 years is hardly to be sneezed at! Being situated at the intersection of three ancient trackways and nowhere near any metalled roads, Oldland Windmill sat forlorn slowly rotting and rusting, the only visitors being passing walkers who occasionally ventured up to the decaying structure. However, this isolation undoubtedly saved Oldland from destruction as she was not stripped of her timbers, vandalised or set alight – the fate of many windmills early in the 20th Century. In 1927 the mill was conveyed to the Sussex Archaeological Society by the Turner Family. The Society worked to prevent further deterioration and mounted a “display of agricultural implements” in the Round House, the large building housing the massive trestle which supports the main post which gives this type of mill its name. Oldland’s round house is actually octagonal – an unusual and rather attractive feature. In 1934, the idea of restoration was first suggested, and a ‘Shilling Fund’ was launched with a target of £150 to cover the estimated cost of repairs. Sadly only £12 was raised and the attempt abandoned. This was much regretted in an article in the Sussex County Magazine where it was noted that “Oldland Mill is down and done for…”

suggesting that it was now beyond repair (fig 2). However, this prompted the Archaeological Society to carry out some “urgent repairs” to the structure in 1935, primarily to prevent total collapse. Frank Brangwyn, the Ditchling Artist, loved Oldland and the spectacular views it offered to the south along the Downs. In 1951, he launched a second appeal for funds, the estimated cost having risen to £500. But this second attempt was also abandoned after only a year of modest contributions. The future looked bleak once again. This was not helped by a survey in 1976 which found the structure to be “unsafe”, an estimate to restore the mill to “a workable condition” being given as £2,000 (fig 3). This alarming news prompted the Hassocks Amenity Association (HAA) and the Hassocks Field Society to begin to explore the possibility of restoration once again. The HAA seized the nettle in 1980, obtained a short lease and started serious restoration, a figure of £7,000 being the updated cost estimate. A team of local volunteers was formed by Keymer residents John and Iris Annett. The Bourne sisters of Ditchling joined and together with the Annetts they conceived and ran a major exhibition in Ditchling over a weekend in August 1980 which raised about

£1,700 – a remarkable amount at the time – enabling a more thorough Engineers Report to be commissioned. This revised the estimate to £25,000, and that was assuming that all the work was carried out by volunteers! The challenge was now set. A team of local volunteers was established in 1980 and work progressed steadily through the 80s and 90s, but by 1996 progress was slowing, some volunteers had drifted away and the spiralling cost of materials led the Mill Committee to meet to consider abandoning the project! John Annett – still leading the project – was passionate about continuing and won the day following a heated debate. In 1997, the HAA obtained the freehold of the mill and Oldland Mill Trust (OMT) was established as a separate

registered charity linked to the HAA. By 2004, it had become clear that substantial funds would still be required to complete the restoration (fig 4) so available grants were explored. Eventually, a Rural Enterprise Scheme grant for £62,500 was awarded by DEFRA to replace the sweeps, construct a new brake wheel and reinforce the main structure – all essential to ensure that the mill would work again (fig 5). This grant, together with more modest but regular grants from the Turner-Dumbrell Foundation, spurred on the team of volunteers to accelerate progress so that by October 2007, new sweeps were hung and the wind turned the wind shaft, transmitting drive through the whole structure once more. In October 2008, stone ground flour was produced for the first time in nearly 100 years. Oldland was

Progress since then has continued unabated with commissioning of the grain and flour handling equipment, improving safety measures to encourage public access and, critically, learning how to run the mill efficiently, with a sub-set of the volunteers forming the ‘Milling Team’. More than 100,000 manhours of volunteer time, over 20 tonnes of green oak and over £100,000 of donations and grants all spread over approaching 40 years have together enabled the third restoration attempt to succeed. Oldland once again produces stone ground flour (fig 7) and can claim to be the

Herbs to Aid a Good Night’s Sleep By Lucinda Warner Ideally we spend about a third of our day asleep, a time which is vital for the healing, rejuvenation and replenishment of our whole body. Yet so many of us suffer with disrupted sleep which leaves us tired and under functioning during our waking hours and reliant on stimulants like coffee to get us going in the morning. There can be many causes for chronic insomnia from stress to hormonal imbalances, anaemia, certain medications or screen use, so if poor sleep is a regular problem then it is worth investigating the cause. Insomnia is a vast topic and an article such as this can only scratch the surface but here are some ideas for herbs that help to support us in getting the restful sleep we need to best enjoy our days.

Relaxing the body and mind before bed can be the key to drifting off to sleep peacefully and quickly. That can mean turning off screens, writing down tomorrow’s to-do list so it doesn’t disturb our thoughts or having a nice cup of herbal tea. All the herbs listed below have been used traditionally for sleep and relaxation though not all will be suited to everyone, so if one doesn’t work for you don’t give up, another might! Chamomile – A gentle soothing herb that is suitable for children and the elderly as well as those who may suffer from anxious thoughts and tense digestion. It is anti-spasmodic, calming and supportive. It’s best to have a couple of strong cups of the tea (use two or three tea bags per cup) in the late afternoon and evening and it will work best when taken over a period of time. Lime blossom – Another lovely herb for children and those suffering from anxiety, the gentle honey-like taste of lime blossom is especially soothing. It helps ease nightmares and is useful for those who hold a lot of tension resulting in high blood pressure. Lemon verbena – A tasty tea that combines well with any of the other herbs on this list to improve their flavor as well as adding its own health benefits. It is both soothing and uplifting so helps us into a positive yet peaceful state before bedtime. Ashwagandha – A traditional herb of Ayurvedic

Majestic Magnolias

Magnolia are an ancient genus. They arrived before bees and evolved to be pollinated by beetles instead. As a prehistoric plant they survived ice ages, mountain formation and continental drift – their long journeys mean they are considered native to areas now as disperse as China & Japan and The Americas. Their beautiful flowers are ‘primitive’, in common with others with ancient lineages. The flower is not enclosed in sepals but bracts – specialised leaves. Nor do they have petals but tepals. They are bisexual, each flower having both male and female parts. The west discovered them in the early 1700s on Martinique and named them after the famous French botantist Pierre Magnol. The flowers of many species are considered edible. In parts of England, the petals of M. grandiflora are pickled and used as a spicy condiment. In some Asian cuisines, the buds are pickled and used

to flavour rice and scent tea. In Japan, the young leaves and flower buds of Magnolia hypoleuca are cooked eaten as a vegetable. Older leaves are made into a powder and

used as seasoning; dried, whole leaves are placed on a charcoal brazier and filled with miso, leeks, daikon, and shiitake, and broiled. There is a type of miso which is seasoned with Magnolia, hoba miso. The bark and flower buds are used in traditional Chinese medicine. Notwithstanding any uses they may have, Magnolias are much admired for their beauty and over 200 varieties have been developed through hybridisation. … giving us more and more ways to marvel at the spring.

The healing power of nature Martlets is excited to be working in partnership with PLOT22, a Hove community allotment charity, on an innovative new project to support bereaved men that uses nature as a source of emotional healing. Funded by Hospice UK, Earthworks is a weekly space for the men to get together to grow and harvest an abundance of vegetables, flowers and fruit. It’s a welcoming and supportive environment in which to work, whilst enjoying getting outside in the fresh air. Jane Cato from the hospice’s Bereavement Team said, “It’s all very relaxed; each morning begins with a cuppa in the allotment shed around the wood burner. Previous gardening experience isn’t important; you can take on whichever jobs interest you, whether that’s lighter work in the greenhouse or getting really stuck into the digging and clearing. Simply getting closer to nature can be very therapeutic, regardless of what the weather’s doing!
