Fire up the grill for a memorable Thanksgiving

T

he beauty of a Thanksgiving table is something to behold. It is a great time, surrounded by family and friends, to put the bounty of the fall harvest on the table, surrounding the centerpiece of it all, a delicious golden turkey – cooked expertly on your backyard grill. By taking your Thanksgiving cooking outdoors, you reduce the bustle of activity in your kitchen and create a more welcoming space for your guests that is less hot, and doesn’t leave the oven on for hours. “Today’s backyard grills are an extension of your kitchen,” says Stephen Schroeter, co-chief executive of Napoleon Grills. “Cooking a turkey on your grill gives you the opportunity to introduce new techniques and flavours that will change the way you enjoy Thanksgiving.” When it comes to getting the turkey cooked, there are two different methods you can use on your grill. ROTISSERIE For a perfectly moist and tender Thanksgiving turkey with deliciously crisp skin, go for a homemade “butterball” with a butter-injected rotisserie turkey. 1. Before turning on your grill, remove the cooking grates and place a drip pan under where the turkey will be cooking. 2. Turn on the rear rotisserie burner and pre-heat the barbecue to 325°F. 3. Melt ¼ cup of butter, mix in 2 tablespoons of orange blossom honey and, using a marinade injector, inject your honey butter into all of the meaty parts of the bird. 4. Season the turkey with a healthy blend of coarse salt, fresh ground pepper and herbs (sage, rosemary and thyme are best) plucked

from your own herb garden. Then truss the turkey to keep the wings and legs from flopping around as it spins. 5. Insert the rotisserie rod and secure the forks, ensuring that the bird is balanced on the spit. Place the turkey onto the grill, turn on the rotisserie and let it go. 6. Check on it every 15 to 20 minutes, marinating with melted butter. (If it looks like the wings or legs are cooking too fast, wrap them in foil until the rest of the turkey is done cooking. It is done cooking when the breast reaches an internal temperature of 150°F. Remove it from your barbecue, wrap in foil and cover with towels for 15 to 20 minutes before carving. For a gravy, remove the

pan with the drippings and use a gravy separator to separate the turkey fat. In a saucepan, combine the fat with enough flour to make a paste. Then, slowly add the liquid strained from the drippings until you have the perfect gravy consistency. If needed, season with salt and pepper to taste. INDIRECT COOKING You can achieve the same delicious roasted turkey from the oven by using your gas grill to cook it too. Using this technique allows you to add some extra touches that you just can’t get while using the oven too. 1. Start by preparing your grill for indirect cooking and placing a drip pan with a bit of water above the unlit

burners, but below the cooking grate (if possible, try to leave a space between the cooking grates where you can fit a baster; but if you can’t make a basting liquid by combining melted butter with some white wine). 2. To introduce new flavours, fill a smoker tube with apple wood chips and place over the lit burners – you cannot replicate these naturally smoky flavours in your oven. 3. As the barbecue warms up to a steady temperature of 350°F, get your bird ready. Even though you are cooking it on your grill, proceed as if you were doing it in your oven. Stuff it with your preferred mixture, season the skin (Napoleon

suggests rubbing the outside of the turkey with butter and then liberally seasoning it with coarse salt, fresh ground black pepper and fresh thyme, sage and rosemary from your herb garden), truss the legs and, when the barbecue reaches the desired temperature, place it on the grill. Check and baste it every hour. 4. Cook until it reaches the desired internal temperature: 150°F in the breast, about 160°F in the dark meat, or about 20 minutes of cooking time per pound. Not only are there several shapes and patterns, but most retailers also carry tiles that resemble hardwood and stone. These higher-end vinyl products are called luxury vinyl flooring (LVF), and like laminate, are well-suited for damp areas of the home. 3. Linoleum.
