About the Chefs Eric Flynn, Executive Chef Harraseeket Inn, Freeport
Long recognized as a gem in the Maine culinary landscape, the Harraseeket Inn offers comfortable elegance and a devotion to the best ingredients. ______________________ Mitchell Kaldrovich, Executive Chef Sea Glass at Inn by the Sea, Cape Elizabeth American born but raised in Argentina, Chef Mitchell Kaldrovich enjoyed cooking as a young boy under his grandmother’s direction. His career began at Galani Restaurant, a Four Star restaurant in Buenos Aires. He then worked at the L’Orangerie Restaurant in West Hollywood, The Duck Club in Monterey, California, the La Palma D’Or in the Biltmore Hotel in Coral Gables, Florida, and the Llao Llao Hotel & Resort in Patagonia. Prior to opening Sea Glass at Inn by the Sea in 2008, he was Executive Chef at Plump Jack Café in Squaw Valley, California. Chef Mitchell Kaldrovich enjoys celebrating all things Maine in the ocean view Sea Glass Restaurant at Inn by the Sea, on sandy Crescent Beach in Cape Elizabeth, 7 miles south of Portland. Mitchell is delighted by the abundance of fresh produce and seafood available from nearby farms and the sea, as well as the panoramic ocean views visible from the intimate restaurant, or al fresco on seaside decks. ______________________ Ian Hayward, Executive Chef Petite Jacqueline, Portland
Bakery. He started his own catering company, Ian Eats Catering, in 2004 and dealt with aspects of preparing and serving food up until last year. He now still does private chef work but is focusing most of his time at Petite Jacqueline.
Ian, a self-trained cook, is currently the Executive Chef at Petite Jacqueline. Growing up in Bowdoinham, Maine, Ian started a relationship with food at an early age. He recalls days as a young boy standing on a milk crate watching his father, James Beard Best Chef Northeast winner, Sam Hayward, sauté at the old Brunswick hot spot 22 Lincoln. Though in and out of the construction industry, Ian found himself “falling in love with food, especially regional foods” and always ended up back in the kitchen. Ian has learned aspects of food from every angle, starting at the age of 8 when he started working on Merrymeeting Farm. From growing and harvesting on several other farms in the Bowdoinham area, he then went on to work at Fore Street, starting out as a dishwasher in 1996 until he worked his way up to a line cook, specializing with the wood oven. He has also worked the retail side of food doing a four-year stint at Rosemont Market and
Sam Hayward is the 2004 winner of the James Beard Foundation’s Best ChefNortheast award, and in 2011, he was named Sustainer of the Year by the Chefs Collaborative for his career-spanning work encouraging local, sustainable agriculture and fisheries. Since opening in 1996, Fore Street has twice been named one of the Top Fifty Restaurants in the U.S. by Gourmet Magazine (2001 and 2006), and has been a finalist for the Beard Foundation’s national Outstanding Restaurant award (2010). Sam also serves as Executive Chef for the Cobscook Bay Company in Trescott Township, Maine. He currently serves on the boards of MOFGA and the Bowdoin International Music Festival. Ken Thomas, Fore Street Kitchen Manager Ken Thomas has been the Kitchen Manager at Fore Street Restaurant for 13 years. Previously Ken was at the Harraseeket Inn. Ken is from the west coast originally and sailed into Portland some twenty years ago. Ken’s position at Fore Street allows him to work with some very interesting people and he is constantly amazed at the bounty of food products that Maine and New England have to offer. Nate Nadeau, Chef de Cuisine Nate Nadeau is the long serving Chef de Cuisine at Fore Street. The first place Nate stopped on the way home from being born was his grandfather’s fish market. He’s been in the business ever since. He is an enthusiastic outdoorsman and a recovering touring musician. ______________________ Ilma Lopez, Pastry Chef Grace, Portland Born in the capital city of Caracas, Venezuela, Ilma has many fond memories of food. Growing up, her family was always cooking around her. Though she originally studied to become a doctor, she felt pulled to the restaurant world and pastries. “I always wanted to make things perfect, and food followed suit, even at a young age” says Ilma. Ilma traveled to the United States to study Pastry Arts in Virginia, and upon graduation she joined the pastry team at db Bistro Moderne in midtown Manhattan. It was here that she began to build on her foundation of pastry arts, and also creative French techniques. From there she worked at El Casino de Madrid in Madrid, Spain, Café Boulud, Silver Seas Cruise Line, and Brasserie 8 ½. It was at Brasserie 8 ½ where she produced forward thinking yet familiar flavors in a modern American brasserie, and incorporated local and seasonal flavors. Her love of food and drive to produce the best has brought her to Grace where she continues to use local products and the best season fare available.

About the PSO Wine Dinner The PSO Wine Dinner and Auction has been a fixture on the Portland calendar of “must do” events since 2002. It was the brainchild of Jeff Kane, a Portland Symphony Orchestra board member and President & CEO of National Distributors. Along with Sam Hayward, Fore Street owner and chef, and nationally known food guru, they conceived of an event in which a selected winery would choose wines for each course and the participating chefs would create a dish to complement the wine. Typically the wines in any given year are from the same country or region and have included Oregon, New Zealand, Portugal, Italy, Chile, California, France, Sicily, Sardinia, Australia, Spain and Argentina. We have been lucky enough to have had the support of many of the area’s finest chefs.
