Robert Moody will conclude his 10-year tenure with the Portland Symphony, and we are in a Music Director Search for our next artistic leader. Out of a 240 candidate pool, Ken-David Masur, Daniel Meyer, and Eckart Preu have been selected as our three finalists for this role. They all have incredible talent, and like Robert, have the ability to move the orchestra’s work on stage and in the community to the next level. ABOUT THE CHEFS Troy Mains - Hors d’oeuvres Harraseeket Inn, Freeport

A native New Englander, Chef Troy Mains brings a modern flair to traditional New England Cuisine. Mains began his career with the Harraseeket Inn as the Chef de Cuisine in the Maine Harvest dining room before his promotion to Executive Chef. Using modern techniques, Mains has refreshed the Harraseeket Inn’s menus while continuing the mission of the Inn and designing from the ever-changing seasonal bounty of ingredients living in Maine provides. Recently named the 2018 “Chef of the Year” by The Maine Restaurant Association, Chef Mains received the majority of his training at the Robinhood Free Meetinghouse, learning invaluable production techniques and management skills. Under James Beard Winner, Chef John Besh, with Restaurant August in New Orleans, Mains was able to delve into the world of Cajun cuisine and the operations of a large, upscale restaurant setting. Mains spends his off time with his wife Nichole and their two daughters, Maisie and Ruby. He is an avid hunter and fisherman and loves the Maine winters.

Sam Hayward - Salad Course

Fore Street, Portland and Scales, Portland Sam Hayward is the 2004 winner of the James Beard Foundation’s Best ChefNortheast award, and in 2011 he was named Sustainer of the Year by the Chefs Collaborative for his career-spanning work encouraging local, sustainable agriculture and fisheries. Since its opening in 1996, Fore Street has twice been named one of the Top Fifty Restaurants in the U.S. by Gourmet Magazine (2001 and 2006), and has been a finalist for the Beard Foundation’s Outstanding Restaurant award (2010.) Sam also serves as Executive Chef for the Cobscook Bay Company in Trescott Township, Maine. He currently serves on the boards of MOFGA and the Bowdoin International Music Festival. Sam has also been nominated for the 2018 James Beard Foundation’s Outstanding Chef (national category).

Paolo Laboa - Pasta Course Solo Italiano, Portland

Paolo Laboa’s journey started in his mother’s kitchen, where he learned the secrets of real Genovese cooking, the pinnacle of Northern Italian cuisine. Every ingredient chef Paolo touches is fresh from the farm to his kitchen to your table. Some of his favorite farms are Stonecipher Farm, Dandelion Springs Farm, Valley Farm, Olivia’s Garden for basil and herbs, and Northspore for foraged mushrooms. Fresh fish is brought in each day through Upstream, Harbor Fish Market or Browne Trading Co. We also source other proteins like wild rabbit from Sumner Valley Farm, lamb and pork from Two Cove Farm, while our dairy comes from a variety of these farmers as well. “Cooking is what I love and I want each ingredient to sing. Simplicity is my goal. If there are five ingredients, I want you to taste all five of them.” Breads and pastas are all made in-house from scratch using traditional Genovese recipes. “It is very important–the food that you eat,” says Laboa.

He and his family moved from the west coast to be closer to Gloucester, MA, where his wife Mercedes grew up. Portland reminds Paolo very much of Genova, Italy. “I love having the sea in front and the mountains and forest in the back, so many different food flavors to work with,” says chef Paolo.

Sara Jenkins - Fish Course Nīna June, Rockport

The daughter of a foreign correspondent and a food writer, Sara Jenkins was born in Maine but grew up all over the Mediterranean, eating her way through its cultures and learning to appreciate everything from Lebanese tabbouleh to Catalan paella to North African tagines to Italian pasta dishes. She began her kitchen career in Boston with Todd English at Figs, then went on to work as a chef in Florence and the Tuscan wine country, before returning to the United States to bring back all she had learned and put it to work in the kitchen. In New York City, Sara was chef at I Coppi, earning two stars from the New York Times within her first three months. After similar turns at the helm of Il Buco, Patio Dining, and 50 Carmine, she took time out to have a child and wrote a cookbook, Olives and Oranges: Recipes and Flavor Secrets from Italy, Spain, Cyprus, and Beyond (Houghton Mifflin, 2008). Later that same year, Sara opened Porchetta in New York’s East Village, a storefront specializing in the succulent pork roast typically sold in street markets in Rome and Tuscany. Wildly successful, with a four-star review from New York Magazine, Porchetta created a nation-wide trend for the savory specialty. In 2010, Sara followed that success with Porsena, a sit-down restaurant also in the East Village, where she drew on her Tuscan and Roman childhood with a pasta-centric menu, featuring authentic Italian recipes made with fresh, seasonal ingredients. Meanwhile, she authored a second cookbook, written with her mother, Nancy Harmon Jenkins, The Four Seasons of Pasta (Penguin/Avery, 2015), which sets pasta in a thorough-going seasonal context. And most recently, in 2016, she has opened Nīna June in the seaside village of Rockport, Maine, where she brings her Mediterranean sensibility to play on the magnificent array of Maine-grown, harvested and foraged foods.

Ilma Lopez - Dessert Course

Piccolo and Chaval, Portland A native of Venezuela, Ilma Lopez grew up in the kitchen, alongside her grandmother. After getting her start at Malabar in Caracas, she was accepted to the pastry program at Stratford University in Virginia. Today, Lopez is the co-owner and pastry chef at Piccolo and Chaval in Portland, Maine. Her husband, Chef Damian Sansonetti, is the savory chef and co-owner. Like Sansonetti, Lopez is a veteran of some of the most demanding and rewarding kitchens in the industry, such as DB Bistro, Corton, Tailor, El Bulli, Café Boulud, and Le Bernardin. When the couple was drawn from New York City to the quieter reaches of the Northeast, Lopez found a new terrain she couldn’t resist. Arriving with a mastery of colors, flavors, textures, and spices— and a seasoned ability to work under pressure—Lopez makes classic dishes her own, with attention to micro-detail and thoughtful twists. For her work, Lopez was a semi-finalist nominee for Outstanding Pastry Chef for the James Beard Awards in 2017. Ilma has also been nominated for the 2018 James Beard Foundation’s Outstanding Pastry Chef.

ABOUT THE PSO WINE DINNER The PSO Wine Dinner and Auction has been a fixture on the Portland calendar of “must do” events since 2002. It was the brainchild of Jeff Kane, a former PSO Board Member and Former President of National Distributors. Along with Sam Hayward, Fore Street Partner/ Executive Chef and nationally known food guru, they conceived of an event in which a selected winery would choose wines for each course and the participating chefs would create a dish to complement the wine. Typically the wines in any given year are from the same country or region and have included Oregon, New Zealand, Portugal, Italy, Chile, California, France, Sicily, Sardinia, Australia, Spain, Argentina, Greece, Austria and Germany. We have been lucky enough to have had the support of many of the area’s finest chefs.
