In the first step, the raw material passes into a drying chamber in the dehydration phase. This process aims to reduce the water content present in the Increases the vegetables, thus concentrated flavor. allowing to intensify and Improves the texture of enhance the the product. characteristic flavor of each vegetable, as well as maintain the color. Moreover, the reduction of water content prevents, during freezing, the breaking of individual molecules of the vegetables, allowing the ingredient to maintain its structure and a natural look. The second phase is the flavoring of the ingredients. Every single vegetable, previously grilled, roasted or simply natural, is sautĂŠed with olive and sunflower oil, salt, fresh herbs and aromatic plants. Cooking each ingredient separately guarantees, after mixing and reactivation of the mix, each vegetable to maintain its natural aroma. In this phase, therefore, we have enhanced the flavor characteristics of each vegetable, preventing these much desired characteristics not to disperse when mixed and cooked with other vegetables.

The tomatoes of the Pomodamore line are cultivated only in Italy, in open field harvest or in greenhouses out of season. Thanks to a tight partnership with its suppliers, GFI follows the production process from the tomatoes cultivation to the finished product

Genius Food Ideas has rediscovered the origin of one of the most common cuisine ingredients world-wide, the tomato. Our absolutely unique approach for such a well know product gives our PEELED SEMI DRIED TOMATOES a value unmatched in today’s market. This value can only be achieved by having carefully contracted to use only fresh raw material every day coming from either open field crops or greenhouses to guarantee 100% fresh tomatoes year round and able to trace the material to its origin. The end result is a PEELED SEMI-DRIED TOMATO, without the rough texture of the skin and exploding with exceptional flavor.

POMODAMORE CULINARY

Specifically designed for preparing platters or main courses, where after cooking, it is important to decorate the platter itself. Of round shape, Pomodamore Culinary, releases juice during cooking needed to flavor the platter, keeping the form and structure for a perfect presentation and visual appearance.

MUSHROOMS Genius Food Ideas has always had a particular preference for mushrooms, an ingredient unique and special in all of its numerous varieties. We’ve created a project that allows us to obtain ingredients with a natural taste profile, seemingly homemade. Mushrooms, like all other products in the Autentico range, follow the guidelines of the unique production process developed in our Culinary Center. We carefully select the raw material, choosing only mushrooms that are collected and frozen during their harvest season.

Our production does not use mushrooms in brine, which always leave an unpleasant aftertaste in the mouth and we also with stain form using preservatives, acidifiers, flavor enhancers or yeast extracts. The mushrooms are simply sautĂŠed in pan with a little oil, salt, garlic and parsley, as you would do in your kitchen. The water released by the mushrooms during cooking, blends and smoothes the flavor, enhancing the natural aroma and intense flavor of the mushrooms.Finally mushrooms are frozen and packed in bags, with variable weights depending on customer needs (Genius Serving Custom Pack). Versatile and suitable for many preparations, Autentico mushrooms range are practical because they are already pre-cooked, seasoned, dry and easily reactivated for use in just a few minutes.

GRILLED VEGETABLES Traditionally, the roasted or grilled vegetables have been used as a side dish. However, given the nature of their smoky flavor, they are becoming increasingly popular and their use has been widened as a topping for pizzas, sandwiches, baguettes or other preparations. Produced according to the particular Genius production process, our grilled vegetables are especially tasty and delicious, therefore, tomatoes, onions, mushrooms, peppers, eggplant, zucchini, potatoes, carrots and more are at your disposal to make your preparations unique.

ARTICHOKES The artichoke is a vegetable of the more unrefined variety, but at the same time the tastiest that the gastronomic panorama offers us. Its unmistakable taste is able to harmonize well with other ingredients without covering them. The artichoke is a perennial plant that develops buds in late winter and spring. What we eat at the table, is the “bud” harvested before it develops the flower. Following the unique production process that characterizes all vegetable ingredients of our Culinary Center, we obtain an artichoke ready to use, tasty and natural. The artichoke is sautéed in a pan with a little oil, herbs and aromatic plants. Finally artichokes are frozen and packed in bags, with variable weights depending on customer needs (Genius Serving Custom Pack). Versatile and suitable for many preparations, Autentico arichokes range are practical because they are already pre-cooked, seasoned, dry and easily reactivated for use in just a few minutes.
