hether a gift intended to ease the lives of mortals, or the product of human creativity, chocolate is enjoyed today in all its forms the world over. And last November the chefs at Colors CafÊ decided to pay tribute to the world’s favourite sweet treat. While humans have always had an inkling for sweet food, documented

since Ancient Egyptian times, chocolate as we know it today has only really become available in the last hundred

or so years. However, once consumed as a bitter drink, chocolate traces its origins back to the ancient Aztec and Mayan peoples, who discovered the value of the cocoa plant, using its beans for centuries as a means of payment

Ancient chronicles report that the Aztecs believed the god Quetzalcoatl travelled to earth with a cocoa tree from Paradise, bringing his offering to the people as a special blessing. He showed them how to roast and grind the cocoa seeds, making a nourishing paste that could be dissolved in water. Adding spice, they drank of their xocoatl, believing it brought them universal wisdom and knowledge.

It is said that along with his many other discoveries, it was Christopher Columbus who first brought back cocoa beans to the Old World and King Ferdinand’s court. But amongst the many other more exciting
