KIR ROYALE Canon Felix Kir, a local priest, helped villagers in France take back wine that was being looted by invading soldiers. In his honour they created this classic cocktail incorporating blood red Crème de Cassis and white wine. In a ‘Royale’ the Cassis is added slowly to fine Champagne so it hangs like a blush in the evening sky. It is elegant, refreshing and uplifting.
