Destination. Bromo

Located in the Tengger massif of East Java, Mount Bromo is one of the most iconic mountains in Indonesia. Surrounding this majestic active volcano, there is a deeply rooted culture that lies behind.

Tengger Community Tenggerese, descendants of princes of the 13th century Majapahit kingdom, formed communities commonly spread into four regencies: Pasuruan, Probolinggo, Lumajang, and Malang. Since the Majapahit era, Tengger area was considered as a holy place, which explains the strong commitments to traditions within the community. Until now, the people follow the Hindu traditions stretching back to the ancient empire.

Cultural Acts Every year, the community holds a religious ritual known as Yadnya Kasada in the middle of the night on the full moon of the 10th Javanese month, where adherents bring offerings and throw them into the crater. The ceremony is to honor Sang Hyang Widhi, the God Almighty, Roro Anteng, daughter of King Majapahit, and Joko Seger, son of Brahmana. Another unique cultural performance to catch at Bromo is Reog Tengger, a traditional Javanese dance with some distinct characteristics that originates from the Tengger region. Compared to the Reog Ponorogo version, Reog Tengger adds mystical elements where the dancer is brought into a trance when he dances. A blessing ceremony is commenced before every performance. Visitors can catch graceful choreography, physical strength and extravagant costumes and decorations during this rich performance.

Rich Vegetation Apart from its unique cultural elements, Tenggerese are also known as highland farmers. The weather and topographical settings give an opportunity for them to grow fresh vegetation. The people behind the kitchen. Behind all of our signature authentic dishes that Plataran prides on, there is a passionate team of chefs behind the kitchen door who ensures that only the most flavorful dishes are served to our diners. This edition, we would like to introduce our Executive Chefs at two of our legendary restaurants in Dharmawangsa, Jakarta with two distinctive taste and atmosphere, yet both delivering the essence of Plataran’s culinary commitment. Plataran Dharmawangsa – Chef Dogol Some diners who have been to Plataran Dharmawangsa might recognize the talented chef who runs the kitchen team of the restaurant – Chef Dogol. He often takes a break from the kitchen to check the flow and atmosphere of the crowd and ensures all diners are pleased with the dishes served.

Patio Venue & Dining – Chef Riri This homey yet intimate restaurant located in the prestigious Dharmawangsa district has been known to serve casual and hearty Western and Indonesian cuisine. Chef Riri, the Executive Chef of Patio Venue & Dining, leads the team with his basic principle on ‘definition of a perfect dish’ being “a dish that has been cooked solely from one’s passion.” He believes once the diners see and taste the dedication that has been put into a dish, they would always return back like it is their second home. Being the Executive Chef of the only Plataran restaurant in Jakarta where the menu offers a great mix of Western classics and Asian favorites, his most preferred type of cuisine can be easily guessed: European. And, not to mention his favorite dish being “a classic pasta & pizza” combination. The most recent challenge and fun the team faced were the process of developing an extensive range of brunch dishes for the newly launched weekend brunch concept. He quoted “the menu was carefully selected to capture all those weekend brunch-goers tastebuds.”

Since the very first day at Plataran, which has already been 4 years, his daily source of endorphin remains as “serving delicious dishes that make diners wanting to come back again and again, and watching them enjoy the dishes we present.” During peak hours, the kitchen might turn into a war zone, coupled with the relentless pressure to present the best dishes. His tip on keeping this team motivated and well-coordinated during these periods is to constantly develop a sense of kinship between team members in order to mentally and physically prepare them for such moments. A constant trust and support system, whether it is work related or personal matters, needs to be in place to strengthen the team. Having a flawless communication within the team is critical in the kitchen for a successful night. Despite some ups and downs, he believes “my team has a strong bond and the ability to work together by respecting and understanding each other’s tasks and rules” Chef Riri’s Most Recommended Dish at Patio: Bistecca ala Florentina

He believes all dishes presented in Plataran Dharmawangsa reflect the richness and uniqueness of Indonesian culture and cuisine; representing “the cultural elegance of Indonesian dining.” Hence, explains the high frequency of traveling within Indonesia involved in his job to ensure he and his team develop menus where diners can experience a various range of dishes that reflect the diverse flavors and cuisines of Indonesia. Chef Dogol believes a good Indonesian dish is something that embodies a sense of both familiarly and adventure - turning a traditional dish that brings nostalgia with a hint of elegant elevation. After being part of the Plataran Venues & Dining for over 4 years, he describes his team as the most “loyal group of chefs.” United with individual’s passion towards Indonesian cuisine, Chef Dogol finds a special connection with his team that cannot be explained in words.
