關於 本計畫

大三鶯，是一處河流匯聚而興起的老城區。 三峽過去盛產茶葉、大菁；鶯歌盛產陶土，藉著「茶、染、陶」產 業，讓三鶯過去成為北臺灣經濟重鎮。共築出民間產業能量，也 養成諸多技藝精妙的職人。 隨河運沒落、青年外流等問題，曾飽含創作力度的城鎮，面臨產 業凋零、職人手藝失傳不復。 「三鶯．宴」重新收攏三鶯地區茶、染、陶三大在地文化核心， 邀請在地青年加入，匯聚工藝文化能量，導入跨界設計進行一 場連結三鶯地方文化與創新的跨域饗宴，期待提升在地產業、 翻轉城鄉產業發展。 整體計畫集萃三鶯茶、染、陶等 10 種在地工藝產業，透過跨界 及能量加乘，重新詮釋新北三鶯城鄉文化特色與價值。 這場宴席，邀請三鶯工藝職人、跨界創作者與每位踏上這塊土 地的朋友，感受生活美學在工藝產業的具體展現，重新認識、體 驗蘊藏豐富內涵且貼近生活的三鶯文化。

三鶯 歷史

位於大漢溪、三峽溪、橫溪三河的匯流之口，舊稱三角湧的三峽，因地理環境、自然資源與人文生 活特質，發展出藍染、茶葉、樟腦等主要產業。而鶯歌則因具有窯土、黑土、煤礦等陶土原料而發展 陶瓷產業。在時光的推移下，三鶯地區產業風貌不斷改變，唯獨茶、染、陶歷經時光洪流，延續至今。

1900 三角湧（三峽舊稱）成立台灣第一個農會。

1999 三峽傳統染織工作技術復原團隊成立，致力

恢復藍染技藝，深入研究藍染原料馬藍種植 知識，並進行耆老訪談與文史資料蒐集。

2001 三角湧文化協進會成立「三峽染工坊」，推廣藍染技藝文化。

2002 舉 辦第一屆「三峽 藍 染 節」，透 過年度地方性 活動

凝聚在地民眾、推廣三峽在地文化，持續舉辦至今。

製茶 群山環抱，雲霧繚繞，氣候涼爽，土壤肥沃等得

茶產業除了靠天吃飯，也常常受經濟、大環

內，沖泡時散發獨特的柚子香；帶領民眾實

春茶、龍井茶、包種茶。其中碧螺春茶與龍井茶

際走訪茶園與茶廠，進行茶文化導覽與製

屬於不發酵綠茶，特有「青心柑仔」茶種的一心

茶 體驗。希望為傳統老產業增添活力與新

二葉，不經發酵直接殺菁揉 捻，外觀 格外新 鮮

意，清甜香氣持續飄香三峽。

碧綠，翠 綠茶湯嘗起 來清甜自然，帶 有淡淡的 海苔香氣。臺灣綠茶產量稀少，也突顯了三峽茶 產區的特殊性，而廣受好評的碧螺春更儼然成 為三峽的代名詞。

Sanxia Tea is collec tively referred to as “Haishan Tea” which includes Biluochun tea, Longjing tea and Pouchong tea. Tianfang Teashop is located in Chengfu, Sanxia which boasts a hundred years of tea making experience. Its fourth and fifth-generation successor Huang, Cheng-Chung and Huang, Yao-Kuan inherited the crafts, wisdom of the old generations. Apart from sticking to the quality and spirits, they also attempted all sorts of innovation. Feel the vitality

打鐵 在過去的農業社會裡，先民循著河流經過的地 方農 耕 生活，以利於灌溉，而三峽不僅 水源充 沛，氣候與地形皆適合從事農業，也由此衍生出 對農具的大量需求，舊城的打鐵業便在這樣的 背景下興起。藍染、木業、煤礦等三峽地方產業 繁盛時期，打鐵舖曾有十三間之多，加上家用、 做 生意的菜刀需求，打鐵 業家家生意興隆、訂 單應接不暇。 然而，就在三峽河道因泥沙淤積、灌溉功能性不 再，且貿易也隨著交通轉移至大城市，種種原因 使得打鐵業逐漸沒落。其中，萬發打鐵店便是舊 街上少數僅存的打鐵舖。除了販售各式菜刀、農 具、鐵工類器具，也提供維修、磨刀等服務。老 師傅手 藝精湛，秉 持 傳統 古 法 技術：鍛 燒、錘 鍊、淬火、打磨，萬發出品的鐵器不僅堅固耐用，

三鶯 產業

藍染 散步於三峽民權老街（舊稱三角湧街），還能看

歷經數十年的藍 染復興，社區持續培育種

到許多「染坊」匾額在牌樓立面上高掛著，記載

金工 三藝金工的「溫師傅」溫清隆在家中排行第二，熟識的朋友都稱呼他為「二哥」，不過在成為師傅 之前辛苦的求藝歷程，說來有些輾轉也有些緣分。 溫清隆唸小學時是個遲到大王，並非不愛念書而故意遲到，而是小小年紀得幫忙打理家務：柴火、 飼養家眷，經常忙完抵達學校時，早已超過規定的的到校時間。畢業後，家人提供兩個選擇給溫 師傅：不是唸書就是去學一技之長，於是跟著在台北珠寶店工作的舅舅，學起了金工技藝。憶起 這三年四個月的學徒生涯，雖然技術尚未深入，卻奠定了扎實的基本功。溫清隆出師那幾年，適 逢金工的黃金年代，訂單應接不暇。好景不常，後來遇上臺灣經濟萎靡，民國 96 年決定轉換跑 道，挑起扁擔賣肥皂，雖然和金工搭不上邊，但互動過程讓他感到很快樂。 成家之後，到朋友的工廠從事銀飾工作，重拾金工技藝，從中學習不同做法，同時累積更多能量。 然而，喜歡與人互動的溫清隆，內心一直希望有一天能擁有自己的工作室，推廣傳承金工技藝。 民國 103 年與三峽在地組織「甘樂文創」合作，創立個人工作室「三藝金工」，結合體驗、教學、 創作與維修保養，推廣手作銀飾的樂趣，亦走進校園，希望從教育啟蒙，進而傳承技藝。

Wen, Ching-Lung from Sanyi Metalworking Studio followed his uncle working at Taipei jewelry shop to learn metalworking crafts in his adolescence. In 2014, he established partnership with “The Can”, a local organization in Sanxia to set up his own studio, Sanyi Metalworking Studio. He combines the experience, teaching, creation and maintenance together to promote the joy of handmade silverware.

木雕 250 年歷史的三峽清水祖師廟除了是地方重要

黃希宸自幼美術 科班為基礎，就讀臺藝大

的信仰中心，雄偉建築更是集結多位匠師與藝

時，洪耀 輝老師的教導開啟了他傳統 木雕

術家一時之作，精雕細琢之作被譽為「東方藝術

工藝的創作大門，深受薰陶、吸引，繼續攻

殿堂」。其中，精湛細緻的神龕等木作雕刻出自

讀研究所並擔任教學助理，畢業後仍繼 續

「國寶級木雕藝師」洪耀輝之手，從事傳統廟宇

向老師學習傳統木雕技藝，甚至也來到了

木作雕刻四十餘年，繼承匠師蘇海萍的功夫、

三峽成立個人工作室—以木雕刻工坊。

藝術家 李 梅樹的精神，努力地推廣、傳承 這門 技藝。

跟隨老師的步伐，黃希宸積極投入傳統木 雕 工藝的推廣與教學，開設木雕時鐘等手

修繕祖師廟時，洪耀輝意外地被臺灣藝術大學

作課程讓民眾體驗並認識這門技藝，更與

古蹟藝術修護學系系主任發現，受邀至臺藝大

授課，從此投入教學行列。只要年輕人肯學，洪

Sanxia Qingshui Zushi Temple, with a histor y of 250 years, is an impor tant belief center in local area. The finely crafted work is honored as “Oriental Art Palace”. Among them, the exquisite and meticulously carved shrine and other wooden works were carved by Hung Yao-Hui, a national treasure wood carving artist. Huang, Hsi-Chen, at an age of 79, is the prized pupil among his students.

Following to the steps of his teacher, Huang, Chen-Hsi takes active part in the promotion and teaching of traditional wood carving crafts. He serves as wood

carving teacher in Grass Life Skills Academy. They worked hard together to pass on the beauty of traditional craft wood carvings from generation to generation.

豆腐 空氣中溢滿濃濃的豆香，禾乃川國產豆製所隱身三峽巷弄，嚴選臺灣國產非基改大豆製作，除了 希望能找回記憶中的好滋味，也想和更多人分享這份純粹的美好。 為了確保大豆品質，禾乃川師傅更特地南下拜訪豆農，從不同面向考察、口感測試，堅持選用無毒、 友善栽種的黃豆，並與小農契作，建立互助、互信的友善合作模式。 成就一杯好豆漿，需從挑豆、洗豆等基本功開始做起，「對豆製品來說，豆子好壞是決定產品品質 最關鍵的因素。」師傅進一步分享，「基本的準備工作完成後，必須細心照顧好每個環節，親眼看 著它從生豆煮成豆汁、接著開始散發豆香、最後變為帶有天然甜味的新鮮豆漿。」除了優質豆漿， 也選用臺灣純天然日曬鹽滷製作豆腐和豆干，取代快速成型的食用石膏，每一項原料的選擇，都 是對產品的堅持，更是禾乃川對消費者的承諾。

製餅 糕餅，過去是傳統婚俗、年節送禮和歲時節慶的要角，這幾年受到西方文化的影響，意涵逐漸淡 化，儼然成為常民飲食的一部分，於臺灣各地延伸在地化發展。而位在歷史悠久的三峽傳統市場 附近，兩家老店 – 桂香餅店與福美軒餅舖傳承三代，持續守護著製餅好手藝，於三峽飄香。 桂香餅店是間七十歲的老餅鋪，目前由第三代傳人林慶宏所經營，每逢年節、神明誕辰，在地人 總習慣到桂香買壽桃、壽麵，訂製壽龜，平時也有不少居民到店裡購買綠豆椪、金牛角、馬卡龍等 點心。「不添加香精、防腐劑，但保證添加最溫暖的人情味」，老餅舖的堅持與執著，讓人甜在 心頭。 每回提起三峽，總聯想到金牛角麵包，卻僅有少數人知道創始店是巷弄裡六十年的老餅舖「福 美軒」。三十年前，在一次出國旅行的飛機上吃到西式麵包，對特殊的口感念念不忘，靈機一動 做出金牛角，經多年推廣，不僅成為店鋪人氣商品，更晉升為地方特產。在這裡的金牛角麵包，只 供應一款口味，讓好品質與好味道經典飄香。

In the past, cake is a necessity and custom for traditional wedding, gift in festivals and celebration. In recent years, under the concept of product innovation and change of food, they have gradually become part of the daily diet. Located near the traditional market of the Sanxia, the Kueihsiang Cake Shop and the Fumeixuan Cake Shop have been handed down for three generations. 位於三峽成福的天芳茶行，為傳承五代的百年傳統製茶世家。插畫家將繪畫立體化，描繪出

Tianfang Teashop, located in Chengfu, Sanxia, is a century-old traditional tea-making family that has been inherited for five generations. The illustrator makes the painting three-dimensional, depicting the face of different generations of tea professions. Through the absorption and exclusion of magnetic force, the seemingly independent work is closely linked to each other under a certain arrangement. Behind the tea professions, a complete tea mountain is pieced together, representing the change of the times, the family will always be together. And through mutual support to put up

藍染小劇場 穿梭古今的三鶯演義 歷史悠久的傳統技藝與生動的傳說故事，賦予一個地方獨特且鮮明的樣貌。以臺灣早 期盛行的棋盤式紙上遊戲—雙六為靈感，透過插畫創作將繁複的藍染技法、有趣的三 鶯地方故事及文化元素交錯安排於遊戲紙面，構築出完整的紙上遊戲，在遊戲的每個 過程中，一步步更深入了解三峽與鶯歌庶民文化元素背後，累積的是從古至今深厚的 地方文化記憶，期望透過本次創作，讓觀者對三鶯文化產生更深刻的興趣。

Inspired by Taiwan’s early chessboard style game--Backgammon, through the creation of illustrations, the complex blue dyeing techniques, interesting three-dimensional local stories and cultural elements are arranged on the game paper to create a complete paper game. In each process of the game, the visitors can understand the Sanxia & Yingge step by step.

Behind these common cultural elements, the accumulation of cultural memories from ancient

房瑞儀（Elainee，藍尼），1988 年生於台北台灣，於醫療院所擔任職能治療師，半路出 家誤打誤撞成為插畫家、畫家，離職後到處擺攤幫人家畫肖像畫一年。甫從英國 Royal College of art Print 版畫系碩士班畢業，目前主要活動於台灣，作品從自身經驗出發，

The blue-dyed fabrics of various blues will be spread and dyed, and the fabrics will then be suspended and stacked into sky outlook, with the light, devices to lead the visitors, so that they feel like wandering in the clouds and enjoying the beauty and coziness of the clouds and mists.

自然與詩意溫潤出的陶土容顏 文學家以詩詞書寫三鶯，九十九個字，精煉三鶯地區的多樣風情，淘洗出三鶯的獨特之處。陶藝家則將文 字化作實體，以鶯歌地名傳說由來「鸚鵡」作為創作元素，口中吐出的水流，則象徵著三峽經大漢溪切割 而成的河谷地，並將其化作船舶，承載著象徵三鶯歷史與文化的文字陶章，在時光的洪流中繼續前進。

三峽陶藝家，樂山陶藝工作室負責人。從小接觸、

三角湧文化協進會榮譽理事長。1999 年，在協進

柴燒之心與藍染的真誠互動 順應三峽碧螺春綠茶與蜜香紅茶不宜悶泡之特性，設計開 放 式無蓋茶具組，運用柴燒陶質地特性，賦予器具良好 使 用手感，兼具美感與機能。藍染創作以全藍色調為基底， 擷 取 三鶯河川意 象與柴燒 陶特 色 元 素，運用深淺 呈現圖 樣，襯托柴燒陶質樸自然之作品風格。透過陶與染的結合， 創作出自然、富含三鶯人文氛圍之特色茶席組。

The Concept of Creation The open uncovered tea sets are designed to satisfy the characteristics of biluochun green tea and black tea that are not suitable for steeping. The use of wood-burning ceramics gives the appliance a good touch, so that it's equipped both with aesthetics and functions. The blue dyeing creation is based on allblue tune. The creation captures the river image of Sanxia & Yingge and characteristic elements of wood-fired pottery and applies the shade to present the drawings, setting off the plain and natural style of the wood-fired pottery.

The featured tea sets that are natural and rich in humane atmosphere of Sanxia & Yingge are created by the combination of pottery and blue dyeing.

新旺集瓷 不忘初心、堅守傳承的在地陶業 新旺集瓷在 2009 年轉型觀光工廠博物館，品牌使命即在於「傳承文化、創新產業、共享共好」三個 方向，不僅傳達家族製陶 90 年歷史的精神外，更期待推動鶯歌文化與產業革新。 尖山埔路 ( 陶瓷老街 ) 隔著鐵道的另一頭，有一間百年老廟「福興宮」，裡面供奉著長期守護鶯歌陶 業的土地公還有陶瓷守護神 羅明先師。2016 年，因年久失修需要重新整修，新旺團隊認為可以透過 這個機會，為地方做些事情。因此，2016 年誕生了連結尖山埔廟宇與陶瓷老街的「尖山埔文化季」。 2017 年串連文史工作者，擴及周邊老窯老店，進行更深入的關於鶯歌老窯、老師傅、老工藝的系列

講座，藉此探究鶯歌陶瓷產業文化的過去與未來。今年，期望將鶯歌文化季品牌化，讓鶯歌的文化， 在年輕一代手上，不停歇的延續下去，甚至有更好的發展典範。藉由談鶯歌文化，更深入地，找尋鶯歌 陶瓷產業的未來。

樸實創意 讓設計在生活裡發聲 近年來臺灣對於地方再造、創生的重視，透過當地自發推廣亦或公部門加入整合，各區 域特有的人文、專屬產業遍地開花，也喚醒在地年輕族群的投入與興趣，凝聚在地共識， 賦予地方新意、促發產業升級。 對樸實團隊而言，最大的任務便是如何透過可視性（viewability）設計導入，結合「地 方創生」概念，聚集在地產業能量，串連外部跨界藝術創作者共同創作，以可被大眾接 受、足夠吸引目光並創造議題討論的設計策展呈現。因此在此次策展概念中，邀請外 部跨界的年輕創作者，與三鶯各產業職人合作，打破既有的產業印象與產品框架，重新 打造出蘊含三鶯往昔記憶的當代新穎，進行一場「創新之中不忘原初」的地方創生運動。

Make Design Carry Forward in Life In recent years, Taiwan has attached great importance to local placemaking and creation.

Through the local spontaneous promotion and the integration of the public sector, the unique cultural and exclusive industries in various regions are in blossom everywhere. It also awakens the input and interest of young people in the region, and builds consensus and endows local innovation with industrial upgrading.

As for Plain Design Team, the most important task is how to combine the concept of “local creativity and production” and gather the local industrial energies as well as connecting the external cross-field arts for joint creation by introducing the viewability design, so that they can be accepted by the public, and attract the attention, create issues for discussion as well as design exhibitions. As a result, when it comes to the exhibition concept, the team invites young creators from other fields, cooperates with the industrial professionals in Sanxia & Yingge to break the existing and stereotypical industrial impression and product frame, so that the modern novelty with past memories of Sanxia & Yingge can be created for a local creativity and production campaign based on the philosophy of “innovation with original intention”.
