Editor’s Foreword SEARCHING FOR THE SUNSHINE Without any doubt, from my perspective 2016 was a pretty miserable year, culminating in Brexit and the election of Trump. And I accept wholeheartedly that many of you have had an excellent 2016 because you see Brexit and Trump as positive outcomes. But life goes on and it isn’t purely based on, or even mainly on, the political happenings in the world. Someone posted on Facebook a cartoon where two creatures were having a conversation, which went like this. “What do you think 2017 will bring?” “Flowers” “Flowers, why flowers?” “Because that’s what I’m planting” I liked that! I think of my self as a positive person and perhaps at times insanely optimistic, but I do let myself get depressed by, what I see as a world turning its back on its needy and vulnerable. But I’m still planting flowers! My four sons are healthy, in work and are fairing fine. They in turn have blessed me with eleven busy grandchildren that are full of the energy and enthusiasm that typifies children untainted by the stresses and strains of adult life. And my extended family and rich circle of friends ensures my face is a tapestry of lines caused by extensive smiling and raucous laughter. And is there anything better then putting a smile on somebody’s face. I’m lucky enough to be Chair of PANTRY, a Food Bank based in Pontardawe. As, in common with Food Banks up and down the country, we’re getting busier all the time. Seeing broken people humbled by coming to get food parcels to feed themselves and their families can be disturbing. But the trusty group of volunteers that man the fort each and every week give out an awful lot more than just food. Their empathy, smiles and yes laughter are every bit as important as the bags of food they process. ‘We’re with you, we care’ And I’ve noticed a huge difference in the body language of the people that come into the Food Bank and when they then leave. At least for a while their self esteem is repaired a little and they walk a little taller. I’m also a Town Councillor on Pontardawe and recently I managed to get the council to hold award nights where we honour those that make ‘Ponty’ a better place to live in. The first of these events will be held in March. There are in every community ‘the doers’ and I feel that they ought to be appreciated and encouraged. They might be volunteers at food banks, but they might be football or rugby coaches, or youth club organisers or neighbour watch organisers. There are hosts of individuals that give of their time to make our communities a better place to live in and we ought to let them know that we notice, we care, we are grateful. I will continue to struggle, strive and fight for the kind of society that I want my grandchildren to live in but in between time I will enjoy the life that I’ve earned. The seeds that I’ve planted are thriving! But I will keep planting flowers all the same.

GOING FOR A STROLL January’s walk saw us setting off from the Pontardawe Inn. After a week of pretty indifferent weather we were lucky to be greeted by a dry if coolish morning. We followed the river by the recreation fields heading for Trebanos. The area is unsurprisingly popular with dog walkers and mine had ample opportunity to converse forcefully with canine beasts of every shape and variety. We then took the tow path to Trebanos and from there crossed the main road and climbed Pheasant Lane in the heart of Trebanos before turning right on to Lloyd and then the footpath on to the old railway track. Even though there had been a fair amount of rain on the preceding days the paths weren’t too muddy and it’s a very pleasant area to walk, complete with a waterfall (cascade). Further on we meandered through some of the more picturesque roads in our valley with substantial properties with cared for gardens. It really is a different world here. Eventually we entered the ‘Jewel in Pontardawe’ the Glanrhyd estate. In years gone by the estate boasted apart from a substantial mansion, a swimming pool, lawn tennis courts, a walled garden and an arboretum. The Mansion and tennis courts are long gone and the swimming pool and walled garden are sadly in ruins but the trees continue to prosper. There are wonderfully impressive species that take your breath away, none more so than the redwood that towers so majestically high above the estate. A fair amount of work has been undertaken recently and there are carvings and informative plaques making the visit that bit more enjoyable. Eventually we headed down the path and the countless steps to the valley floor. We followed the river down to our exit by the Cross and along Herbert Street back to the pub. In all, the walk took two hours and offered a rich variety of terrain and views. Apart from the ten minute hike up Pheasant Lane it’s an easy walk. Next month’s walk will be on Sunday February 12th at 10 am. We will be starting at Penwllyt. The walk will last about two hours and should, weather permitting, offer some excellent views. Take the A4067 as far as Pen Y Cae. Turn right to Penwyllt, follow to the top, by the quarry and park up. As per normal, everyone is welcome but must be responsible for themselves. The January Blues – An Overview of Divorce When a marriage comes to an end it can be one of the most difficult times for a person and their family. One of the major contributions to this stress is the uncertainty of what the divorce process is. It is therefore very important to take the time to go through all your options with a specialist divorce Lawyer. They can provide you with all the information you need and give you some peace of mind that your matter is in safe hands. If you did wish to pursue a divorce a petition has to be prepared. The person that files this petition with the Court is referred to as the Petitioner and it is down to them to explain in the petition how the marriage has irretrievably broken down e.g. adultery, unreasonable behaviour or periods of separation. A specialist Lawyer has the knowledge and experience to help draft the petition to ensure it satisfies the courts’ criteria and does not inflame what could already be a tense situation. Once the divorce petition is filed with the Court and is accepted it will be served on your spouse, who is known as the Respondent. The Respondent is required to file an acknowledgement of service before the next stage which is to apply for a Decree Nisi. It will then be six weeks after the date of the Decree Nisi that you can apply for the Decree Absolute to finalise the divorce. It is important that prior to applying for the Decree Absolute all financial issues are dealt with and agreed. Although it is possible to get a divorce without legal assistance, not obtaining the correct advice can lead to unfair financial settlements. Lawyers are experienced and able to negotiate arrangements regarding finances and/ or children. They also know how to correctly draft documents to avoid them being sent back from the Court, thus delaying the process. If you are considering a divorce and you wish to discuss this with a specialist Lawyer then why not contact Jennifer Melly Law where we are offering a first free 30 minute appointment.

FOR FEBRUARY 2017

by Jonathan Powell, Swansea Sound Weatherman

February, perhaps not so much in recent times, harbours the ability to conjure up whatever cold and wintry weather that both December and January failed to generate. However, indications are that whilst there remains the capability for February to produce a sting in winter's tail, it is unlikely that snow will grind the region to a halt at any stage. The drivers for February's weather look more likely to come from a source that will deliver rain and slightly milder temperatures, rather the snow and colder values. However, snow cannot be ruled out, especially over higher ground, but the bottom line will probably see the cold reveal itself more in the guise of frost activity than anything else. A slightly wetter and slightly milder February looks likely to prevail.

ABERCRAF W.I. DECEMBER 2016 MEETING REPORT

Vice President Mrs Jane Brewster welcomed members to the Christmas meeting and business matters were duly dealt with. Mrs Marian Bratton agreed to be our Meeter and Greeter. Members had prepared a sumptuous buffet for the Christmas meeting and the following “social” afternoon was a time to catch up with other members and their plans for Christmas and the New Year. All too soon it was time to clear up and members could be heard wishing eachother Happy Christmas as they made their way home.

ABERCRAF W.I. JANUARY 2017 MEETING REPORT

President Mrs Elizabeth Tyler, together with many of the members, descended upon the Rheolau Arms in Abercrave for the annual Christmas lunch. The dining room was beautifully decorated and a warm welcome was received. The meal that followed was absolutely delicious and thoroughly enjoyed by all. Crackers were pulled and jokes read . After coffee and mince pies it was time to make our way home having wished each other a Happy New Year! If you like the sound of our Group, why not get in touch and come and “give us a try”. Please contact either President Mrs E. Tyler on 01639-731324 or Secretary Mrs Iris Lewis on 01639-730364, We meet at the Welfare Hall, Abercrave on the first Friday of the month (except for March).

Pontardawe Labour Ward 24 Heol Las, Ynysmeudwy Tel: 01792 862222 Fax: 01792 863333. Mobile: 07831227404 Christmas and New Year behind us, we now look to May 2017, and the Election of Councillors to represent you on Neath Port Talbot Council for the next 4 years. Lets look back at what I have achieved, on your behalf, as your Labour Council representative for the Pontardawe and surrounding area. To keep Council Tax as low as possible, and we have achieved this over the last 5 years. The proposed Council Tax rise for 2017/18 is a low 2.5%. To provide the best education for our children by continually improving our schools, through the 21st century schools programme, with new schools being built at Bae Baglan and Margam. Continue to provide free bus passes for our Senior Citizens, and I am trying to get this service extended to the whole of the UK not just WALES. Continue with free prescriptions for everyone. Maintain our high quality recycling service, which is now recognised as one of the best in Wales. Continue with our promise to improve our environment, by the regeneration of our Towns and Villages. We have a fantastic Arts Centre and Theatre, a well equipped Leisure Centre, and a well used Swimming Pool, which I am committed to maintain and keep operational until we can fund the building of a new pool adjacent to the existing Leisure Centre. A fantastic Retail Park, together with a fantastic new Lidl, and I am pleased to see that Lidl believe that Pontardawe has the ability for home grown investment in local business, enabling them to provide one of their largest stores in the UK. and Tesco. Then look around at other Towns and Villages, and compare them to Pontardawe. All this has been achieved by myself and the Labour Council of Neath Port Talbot, Please continue to support me in the Council elections in May 2017 by voting Labour. PLEASE TRY AND MAKE THE EFFORT AND USE YOUR VOTE IN MAY 2017, IF YOU REQUIRE A POSTAL VOTE, TO SAVE THE INCONVENIENCE OF GOING TO A POLLING STATION, THEN PLEASE CONTACT ME, OR THE COUNCIL, SO THAT THIS CAN BE ARRANGED FOR YOU.

CANINE HEART DISEASE It is estimated that about 10% of dogs seen within primary veterinary practices have heart disease. Middle aged to older dogs are most at risk. Routine yearly examinations with your vet can help to detect the onset of heart disease. There are two main causes of heart disease; • Atrioventricular valvular insufficiency – a disease of the heart valves • Dilated cardiomyopathy – a disease of the heart muscle Signs of Heart Disease Early detection of heart disease is key, left too long then unfortunately management is likely to be unsuccessful. Things you may notice are; • • • • • • • •

Reduced activity levels, tiring more quickly on walks, more lethargic, depression Increased breathing effort Reduced appetite and weight loss Coughing (this can also be seen with respiratory disease) Changes in sleeping habits such as being more restless at night Presence of a heart murmur, in severe cases you can even feel these Elevated heart rate Distended abdomen

If you notice any of these signs then it is advisable to take your dog to your local vet Investigations of Heart Disease Initially your vet will carry out a thorough exam of your dog. They will assess heart rate, lung sounds, pulse quality, colour, demeanor and many other things. If they have any concerns then they may recommend a number of tests, which may include; • X-Rays – these are useful to assess the size of the heart, the blood vessels leaving the heart and changes to the lungs. In heart disease the heart can become very large and fluid can accumulate on the lungs causing a cloudy pattern • ECG – This provides an electrical trace of the heart and helps to check the contractility. It is particularly useful if the heart is not beating regularly • Echocardiography – This is a scan of the heart and allows the valves, heart muscle and heart chambers to be assessed Management of Heart Disease Unfortunately we cannot cure heart disease but there are a number of medications that we can give to help quality of life and delay progression. Medications can include tablets to reduce fluid building up on the lungs and in the abdomen and also tablets to help the contractility of the heart. It is also likely that you will be advised to reduce exercise and be careful with your dog in warm weather as this will put greater strain on the dog’s heart. Regular health checks and possible repeat scans may be required.

If you have any concerns then please don’t hesitate to contact us.

ANIMAL DOCTORS ‘MONTH OF THE HEART’ Clydach based veterinary centre Animal Doctors are helping doting dog owners look after their doggy valentines by offering an essential test at almost 90% less than the usual cost. DCM (Dilated Cardiomyopathy) is a heart disease that mainly effects large breed dogs as well as cockers. The disease, which can significantly reduce a dogs if left undetected, has 2 phases; a long ‘silent’ phase, where the heart has the disease and is slowly deteriorating without displaying any outward signs, and the ‘overt’ phase; this is where the heart can no longer cope and begins to fail. Outward signs start to be seen during the latter, but the covert nature of the first phase means that it cannot be detected by clinical examination alone. Early detection is crucial to counter the disease before it becomes unmanageable. Now Animal Doctors have managed to secure funding that will allow them to offer the ‘pro-BNP’ blood test to owners of large breeds (over 20kg) over 3 years old, and also to cockers over 3 years old, for just £10 instead of the usual price of £98, but this offer must be taken during February. To book your test call Animal Doctors on 01792 842437.

TOP 5 HEALTHY HEART TIPS

February is National Heart Month and the 14th is Valentine’s Day, when we can all focus on those we love or ourselves! The British Heart Foundation has some great tips on its website - I thought I’d share a few here. Quit Smoking - It’s the single best thing you can do for your heart health. You’re more likely to stop smoking for good if you use stop smoking services. At the Health Dispensary we are NHS accredited to offer support, products and coaching.

Get Active - This doesn’t mean having to join the gym. Think of ways you can increase your exercise to 30 minutes total a day. Hoovering, gardening, walking the dog or walking your kids to school are all great and free ways of getting and staying fit.

Eat Well - Too often we focus on calories instead of the nutrition of food. Eating plenty of vegetablesespecially green leafy ones support Heart Health. Cut down on too much sugar, salt and eat more fibrelentils and beans are great to pop in stews and sauces in winter. Eating well also helps with weight management which is a big risk factor in heart disease

Drink Less Alcohol - After Christmas we may not feel like that much! But reducing our intake of alcohol throughout the year can help keep our hearts and bodies healthy.

Know Your Numbers - If you want to make improvements its good to be able to measure your progress. Knowing your weight, body fat percentage, blood pressure, blood glucose and cholesterol can be helpful in making a change and keeping you motivated. Call us now to Book your Healthy Heart Check * *Private Service- ask about our current prices. Book during February and receive 25% off

Dear Editor, As a candidate for Pontardawe in the forthcoming Council Elections, I am naturally spending a lot of time meeting with people in the local community, finding out what really matters, which I am enjoying doing. Many issues come up for discussion, but one of the main themes of concern I frequently hear about is Neath Port Talbot Councils budget proposals and how this will affect the community. Pontardawe people were understandably pleased therefore to read a recent statement in the Community Mag by Cabinet Member for the Community, Cllr Mike James, which states that “the threat to the budget in both the Arts Centre and Margam Park have been avoided”. What does this mean for the community? Does it mean that the budget proposals have changed? If so, this is wonderful news for the Arts community in Pontardawe and an issue that people are clearly and understandably concerned about. Whilst, on first glance this is fantastic news, the budget consultation may have finished, but Council has not yet met to discuss, debate or decide on the outcome, my concern therefore is that this apparent positive news over a valuable part of the community may be somewhat premature and not necessarily guaranteed. I will, of course, closely monitor the developments on your behalf and will keep you informed, my main concern always being the community, ensuring that people know about what matters to them most. Anthony John Richards Plaid Cymru Candidate for Pontardawe Hi Phil. I’d like to thank the people of Ystradgynlais and Ystalyfera who gave so generously to this years Poppy Appeal raisin £11,646.77 for the cause. I would also like to thank the public who attended this years parades, the two min silence on the cross and at the dedication of the refurbished Cenotaph also the remembrance service and parade on the Sunday, Both days had excellent support from the public. Many Thanks on behalf of the Ystradgynlais Royal British Legion and Poppy Appeal. Les Jones Branch Secretary.

COUNCILLOR LINET PURCELL Plaid councillor for PONTARDAWE

Your voice on Neath Port Talbot County Borough Council Hello, Happy New Year. Unfortunately, many residents in this area , experienced a “rubbish” start to the New Year! You received flyers from the Council , - you put your recycling out on the right day – then woke on Jan 1st to streets lined with bags of rubbish and NO INFORMATION AS TO WHAT TO DO NEXT. I visited residents and you asked me, “What should we do – leave it out or bring it back in? However, no officers had warned me or neighbouring councillors that there was a problem, and no one was contactable to give us information. I gather, from your comments, that this was what annoyed you most. There was no criticism of the refuse collectors themselves; it was the lack of communication. Fortunately my Plaid colleague, Cllr Ros Davies, is a member of the Environment and Highways Scrutiny Committee. She had the opportunity, on Jan 5th to pass on our concerns about the situation and had assurances that lessons will be learned. The New Lidl: At a recent PACT meeting residents of Ynysderw Road reported problems being experienced with the new store. I delivered a letter to each resident asking them to contact me with details and offering to act on their behalf. I also visited the manager of the store. He asked me to tell you that if there is any problem with the day to day running of the store to go in and speak to him and see if the matter can be sorted straight away. I have corresponded with Lidl Head Office in the past and found them approachable and helpful so will continue to act on the residents’ behalf and hopefully the remaining issues can be resolved. The Arts Centre: Sharing your concerns about the future of our much loved and excellent Arts centre, I asked Plaid AM Dr Dai Lloyd, the Shadow Cabinet Secretary for Culture to meet with manager Angie Dickinson to see if he was able to offer any support. He is investigating the level of funding received by the Centre from the Arts Council and will be championing our cause! Parking Charges: No news yet....I will let you know the outcome of Sian Gwenllian AM’s discussion with Ministers as soon as I know myself. ‘Til next month... COUNCILLOR REBECA PHILLIPS Plaid Cymru County Councillor for Trebanos and Mayor of Pontardawe Town Council. Cynghorwr Sir Plaid Cymru dros Drebannws a Maer Cyngor Tref Pontardawe Footpaths – Some residents may remember when I was first elected I started the plight to get the footpaths behind Lloyd Street, Trebanos to be registered. These footpaths have been used by residents for many years and form part of the village history. This was a very long and legal process and I am very grateful to residents who took their time to fill in paperwork and be interviewed regarding the matter. I am now delighted to note that the footpaths have been officially registered. It is so important that any footpaths of this nature are preserved and registered to protect them from closure and from being blocked. Dementia Friendly Pontardawe – At the January meeting of Pontardawe Town Council a representative of the Alzheimer’s Society joined us to discuss making Pontardawe and surrounding areas Dementia Friendly. This is of course a very important matter with an increasingly elderly population and the number of dementia sufferers on the up. Simple things like going to the shops and feeling safe is imperative to people suffering from the cruel illness as well as their careers. I would be delighted for the council to lead this bid. It will be discussed at the next town council meeting. Caring for our Community – I am very much aware that there has recently been some major problems with the collection of refuse and recycling in the area. This is of course totally unacceptable and does not give residents the incentive to continue to recycle. The Plaid Cymru group have made many representations to council officers regarding this matter and we will continue to do so. We all want to see a clean, litter free, tidy Trebanos and we have pride in our community. If you have any issues regarding litter, dog fouling or recycling please do not hesitate to contact me. Plaid Cymru – With all the uncertainty of our future under ‘Brexit’ plans I believe it is crucial that Wales has a strong voice now more than ever. It is clear that Labour under the leadership of Jeremy Corbyn have no strategy and are no real opposition to Theresa May’s Government. Only Plaid Cymru will always put the people of Wales first. Have you ever considered joining Plaid Cymru? If so, now is definitely the time to do so! Please feel free to contact me if you could like an informal chat regarding the matter.

A MAN WALKS INTO A PARK by Alicia Gwynn A man walks into a park. A beautiful daffodil and tulip-painted springtime park. He is a sad pale-faced young man. The park is hopeful, full of life and early spring-washed promise. The man is not. He is walking with a troubled slightly stoop gait. His dark suit is too loose, his sallow skin shows he is a man not taking care of himself, not bothering; the mournful black tie, stark and solid, carefully tied, shows why. He reaches an unoccupied bench, shuffling, hands in his pockets. The lunch time crowd are not about yet and the joggers and mums-with-pushchairs have gone home, so he has plenty of choice. He sits on the still slightly wet wooden bench and immediately holds his head in his hands. He weeps Tears for himself and the emptiness and loneliness which he cannot understand and doesn’t want to live with. After a few minutes he removes his hands from his tear-streaked face and looks at them. The skin stretched tightly and thinly over his bony hands is translucent with grief. His brittle white fingers twist the gold band round and round on his left hand. He stares at it, not looking at the pretty spring scene. He cannot bear to contemplate that life in its unstoppable and inevitable way may well be going on. Life is, in fact, closer than he realises. A large, night-black, silent cat emerges from the dense green undergrowth behind the pale young man. She pads forward and winds around his leg. He starts, suddenly, at the feeling of movement and life thrust upon him. He shoves the velvet cat sharply with his cold hands. The last thing he wants is to look at, or care, about something else. He pushes her away again, but her soft warmth and gentle persistence makes him feel guilty. The cat turns her face towards his. He sees her amber eyes, hard like glass marbles and unblinking. She sees his blue eyes, liquid, grief sodden and empty. She suddenly springs noiselessly and lands on the bench next to him, 57

stretching lazily and selfishly in the spring sunshine. The white-faced man and the black-faced cat sit together in companionable silence. This would be the worst time. Now and then over the next few months the young man returned. The cat always appeared and sat by him, needing nothing. He would come at lunchtime on warm days to escape the office and the sympathy and drop crumbs from his sandwich for his companion. She didn’t always eat them. She saw his pale face slowly becoming less strained and he would sometimes manage a weak smile when he saw her. When summer was ended the chilly park put on its most spectacular show. Flame-bright reds, oranges and burnished copper adorned every tree. The silent cat sat and waited, her velvet black lost in the shadow of autumn splendour. Soon, the show was over and the trees stood bare and bleak. The first day of winter. The earth cold and hard. No colour and no life, yet the cloak black cat sensed something that morning. At lunchtime she sat at the foot of an old oak tree and quietly watched the damp wooden bench. Then, what the cat knew became clear. She watched from afar as a slim, nervous, young woman rushed towards the bench and sat down next to the pale young man. She turned to smile and so did he. Tentative and selfconscious, they shared lunch. The cat noticed that the pale young man was now not quite so pale and the nervous young woman not quite so nervous. Their smiles were warm and they looked into each other’s eyes unaware of the world at large. Because they were exploring their own. It had all happened just as the cat thought it would, and she turned her wise amber eyes away and padded silently and unobserved into the dense green undergrowth. And waited. Hello Vince, I really must respond to the letter from Dr. Dennis Thomas in January’s magazine. It’s a remarkable coincidence that I too have had a hip replacement, and suffered from Carpel Tunnel Syndrome in both hands. I was very surprised to read that Dr. Thomas described this latter condition as “not being such an urgent problem,” That was certainly not my experience, having to sleep with both hands dangling downwards outside the bedclothes and, fortunately, I had it dealt with very much more quickly than the 30 weeks that he had to wait. But that was over 40 years ago when being on a waiting list in the NHS in Wales was not the trial it is today under the Labour administration in Cardiff. Regarding the 11 + examination, I agree completely with Dr. Thomas that it was a disgrace that those who failed this examination went to secondary modern schools, and were regarded as failures. The huge error made by Shirley Williams was that Comprehensive Schools were introduced instead of secondary modern schools being up-graded to accommodate late developers and others for whom an academic education held no attraction. Presumably, since Dr. Thomas taught in Comprehensives for 24 years, he would be familiar with the practice of dumming down in those schools (which I saw ample examples of with the homework of my own grandchildren) where essays were “doctored” by the teacher, returned to the pupil and the subsequent new essay submitted and used to bolster the infamous coursework marking, going towards the final GCSE grade. As for his statement that “Grammar schools perpetuated the idea among their pupils that they were superior,” that is something that I, an ex-Grammar school pupil, never, ever came across. A friend of mine who, like Dr. Thomas, taught in Comprehensives, told me that because, economically, they had to be large units, his attempts to discipline pupils outside his classes proved to be something of a drop in the ocean, and he eventually gave up, insisting on discipline only in any classes he took. Certainly, the bad language of pupils and failure to eradicate bullying, seem to be a feature of Comprehensives today, something that was absent in the Grammar school I attended.

66

He ends his letter with the claim that he does not belong to the political left yet, just like the political left, he pointedly omits to comment on the fact that Grammar schools represent a complete cross-section of social classes. Regards, B.Jones

I was shocked last year when one of the big name pasta sauce makers advised that their products shouldn’t be eaten more than once or twice a month due to the high sugar and salt content. I’m sure I’m not the only one who found a jar of pasta sauce quick and convenient, so I set about making a pasta sauce from scratch and discovered that it’s just as easy as using a jar, cheaper and tastier to boot! This is a quick and simple recipe, tailor it how you like and to suit what you’re adding it to or to it. I love this with meatballs and lardons, but a little extra chilli makes it superb with prawns too. Don’t be afraid to play around with it.

BASIC PASTA SAUCE RECIPE (serves 5/6)

INGREDIENTS

2 x 500g cartons of Passata 1 Large Onion, finely chopped 2 large cloves of Garlic, crushed 1 Glass of Red Wine (optional) 1½ tsp Dried Basil 2 tsp Oregano

1 tsp Mild Chilli Powder 2 tsp Sugar Black Pepper 1 Tbsp Olive Oil

Heat a saucepan to a medium heat before adding the olive oil. Finely chop the onion and fry gently for approx. 2 minutes, add the garlic and dried spices and continue to fry gently until they become fragrant and the onion is soft. If you are adding meat, fish or veg to the sauce you can add these now. If using meatballs from raw, brown them in the same pan beforehand, remove and add them back in at this point. Add the red wine, if using, and reduce slightly. If you want the taste of red wine but don’t want to open a bottle, you can add a scant teaspoon of red wine vinegar, make sure you cook the vinegar out a little before moving on. Add the passata, stir through the ingredients, and bring to a simmer. The sugar is only needed if the batch of passata is quite sharp, add it to the warm sauce to take the edge off it. Stir in a few twists of black pepper, then simmer gently until your main ingredient is heated through properly, and serve with your favourite pasta. And that’s it! You can vary this as much or as little as you like to your own taste. Enjoy. Phil
