Palace Gate Hotel

Dine In The Dark

DID - Dine in the Dark is a perfect place for indulging in an enjoyable new world of sensations. The venue is located on Street 19 (between cross streets 154 & 172), in one of Phnom Penh’s historical townhouses close to the riverside. It provides a truly unique dining experience that needs to be “seen” to be believed. Actually, you won’t see anything as you are plunged into total darkness during the entire meal. This enhances your non-visual senses and allows you to fully experience all flavours and textures presented to your palate. Running since 2013, the restaurant is a social enterprise that helps provide employment to visually impaired locals while raising awareness. There are four three-course menus to choose from: Khmer, international, vegetarian, and the chef’s monthly selection. All contain delicious surprises, so feel free to lick your plate clean … no one will know.

Romdeng Restaurant

Set in a beautiful colonial building surrounded by a lush garden and swimming pool, Romdeng serves Cambodian cuisine that ranges from almost forgotten recipes from local provinces to contemporary, creative Cambodian cuisine. The menu features several options of the “creep crawly” variety, such as tarantulas and crunchy crickets, to favorites like Roast Pork Belly and Crispy Morning Glory Salad with Galangal Tumeric Dressing, or Soft Shell Crab, Green Mango and Pickled Ginger Salad with Tamarind Chili Dressing. They also provide vegetarian options including Silken Tofu with Soybeans, Cucumber, Seaweed and Sesame Miso Dressing, or the delicious Roast Tomato, Zucchini and Pumpkin Amok. Red Sticky Rice with Coconut and Mango is waiting for those who have a sweet tooth. Their drink list is extensive, with imaginative local creations such as the Passion Fruit, Mango and Ratanakiri Honey Freeze, or the house special cocktail; Frozen Mango, Tumeric and Lime Daiquiri. NPA Explosive Detection Dogs

In 1992, Norwegian People’s Aid (NPA) arrived in Cambodia with a mammoth but noble mission: to free the land of unexploded bombs and land mines (UXO) that still litter the landscape decades after conflict. Since then, they have trained and deployed over 500 dogs to 19 countries worldwide to speed up the painstakingly slow process of UXO removal, incredibly with not a single dog harmed. In 2016, NPA opened a Dog Training Centre in Siem Reap with canine graduates continuing their mission throughout Southeast Asia. At the visitors centre, you will learn about the effects of the hazards buried beneath Cambodian land and witness incredible live demonstrations of obedience, agility, search and detection by the dogs. You’ll even have the chance to meet these stars afterwards. By protecting lives, making land safe again for people to live and work on, these dogs prove themselves to be truly man’s best friend. Wheelchair-friendly facilities of the centre include toilets, cold drinks and a souvenir shop. There are two live demonstrations a day at 8:30am and 4pm (Monday – Friday).

Green-Go Vegan & Vegetarian Garden

Get a spring in your step at this unique fully vegan and vegetarian restaurant. Looking for somewhere to get away from the hustle and bustle of temple town, or just out of the sun? This is the place for you. The creators of Green-Go Garden have thought of everything to create a sanctuary-like space in which to relax while being active. From 9am until 5pm, the place functions as a co-working space (with no current charge for desk space, by the way) and café serving detox smoothies and organic coffee, with a proud emphasis on sustainability. After sundown, the garden lounge comes to life with Cambodian craft beers on tap and organic wines alongside its fusion Mediterranean menu with a touch of Khmer cuisine. Signature dishes include creative plates like the Mediterranean Pepperoni & Cream puff filled with tofu paste and sweet caramel. Their selection of cocktails, from classic favourites to new Green-Go fresh fruit infused specials, and spirits can be enjoyed in their daily happy hour until 7pm.

The Village Café

This chic but casual continental café epitomises the charm and sophistication of a 1930’s jazz club, but with a twist! Now open from 8am until midnight, you can enjoy their delicious dishes such as pan-fried salmon with lemon drizzle, Australian grass fed rib-eye steak & fries, soups, salads & pastas, and decadent desserts. They also offer a great variety of high-end drink choices with a fantastic selection of wines, champagne, whiskeys, and spirits. The world-class coffee is made with a range of internationally procured beans processed with a top-of-the-line Nespresso machine. With products imported from Italy they’ve created over 20 delicious crunchy pizzas and fresh homemade pasta. Enjoy Gnocchi, Ravioli and Fettuccine with all the tasty sauces. Other items include over 30 authentic Italian Sandwiches like back in the old country. Anglophiles can enjoy a huge English breakfast and there is also proper dairy ice cream. The minimal breezy design of Enocafe with its light playful colours and clean finishes are expressed throughout both upstairs and down. Promotions include a 10% discount on pasta from 11am-1pm. and a free drink with pizza from 6pm-7pm. Enocafe collaborates with Via Del Campo NGO donating pizzas for the street kids and organising vocational placements, launching young people into the world of work. Bravo!

Micky, Martina and Pippo, a hotel owner of over three decades, established this bistro in 2011. Working from original family recipes that have been passed down generations, the resulting flavors are at a stage of refinement reflecting the region Emilia Romana. The fresh pasta and pizza dough is handmade daily. Try the gnocchi, tagliatelle, or one of the stuffed pastas, such as the locally inspired black fish ravioli stained with squid ink. Aside from regional coffee sourced by Rumblefish or the many wines, the signature cocktail is the ‘Ginger Passion,’ a rum based drink of ginger, lime and passion fruit topped with ginger ale. The delectable tiramisu, gelato and cheesecake are a must for the sweet of tooth. Of the highly trained twenty staff only three are Westerners. In high season, special promotions include buy one pizza and get 50% discount on the second from 4 p.m. to 6 p.m. This business actively supports local fundraisers including Shine, a non-for-profit charity providing children with poverty relief and free education.

The Mystery

of the Khmer Harp The Khmer harp went missing and has not been heard since the 14th century in Cambodia, it is estimated. That was until ethnomusicologist Patrick KersalĂŠ found evidence of the ancient instrument during more than two decades of exploration in remote areas of South East Asia and India. To try and unravel the mystery of this instrument, he started a personal project to rebuild the Angkorian harp and restore the orchestras from the glorious past of the Khmer empire in agreement with the Ministry of Culture and Fine Arts of Cambodia and UNESCO.

Kersalé set about reconstructing both the pre-Angkorian and Angkorian harp by studying dimensions of both the Burmese and Karen harps and scales given by some bas-reliefs. This information allowed him to finely craft both instruments. For the soundboard and the neck, he used the same wood species used in the traditional Khmer instrument as it was both easy to machine and recognized for its acoustic qualities. Harps were found to be made of leather and thus tests were performed with various types of skin, such as snake, goat, and cow. Snakeskin proved to be the most robust and wide enough to use in the manufacture of traditional Khmer instruments, such as fiddles and drums. Considered by many to be the “jewel of Khmer art”, Banteay Srei, which means ‘Citadel of the Women’ is more ancient, more secluded, and arguably more striking when compared to Angkor Wat. Though lacking in size perhaps, its statues, bas reliefs, pediments and lintels are considered the finest of all Angkor temples. Its beauty and remarkable state of preservation makes it one of the highlights for anyone visiting this historical and deeply spiritual area of Cambodia.

“To be a great chef, you must be patient, respect the ingredients, respect the flavours, find a way to balance them - and love food!”

A The future of our cuisine depends a lot on the unique qualities of our ingredients and improving standards - just look at the evolution of Kampot pepper! 10 years ago it was grown in a tiny area and almost no one in the world had heard of it - now it’s considered the best pepper in the world! More Cambodian products like Kompong Speu palm sugar may also follow this path. More and more of the medicinal properties in our core ingredients are being discovered, for example turmeric, lemongrass and the latest “superfood”, moringa. Three years from now, I think more doctors and nutritionists will be coming to study these herbs more closely.

What inspired you to become a chef?

A I was lucky to come from a family of chefs, so we always had good food at home - I fell in love with cooking at an early age. My grandmother worked in the kitchen at the Royal Palace, and

A Sometimes visitors come with low expectations because they don’t know about Cambodian cuisine. Then they taste it and, wow, it’s so easy to exceed their expectations! Things are moving fast in Cambodia - we receive more visitors now than ever before and they come with more diverse needs, so we need to update our offer. We have to thank the Ministry of Tourism and Ministry of Commerce for their hard work to promote Cambodia to the world, and food is a large part of that.

Q What are your hopes for the future of Cambodian cuisine?

My newest venture is Kanji, a restaurant with a new signature cuisine inspired by natural seasonal flavours, bringing together quality Japanese fish and meat with the freshest vegetables and seafood from Cambodia.

Top Travel Tips Air travel can be tiring and uncomfortable – here are our top tips to help you have a more relaxing, enjoyable and comfortable flight:

Keep hydrated

Get comfortable

Wear glasses

drink water before, during and after the flight, and keep coffee, tea and alcohol to a minimum

wear loose-fitting clothes and slip-on shoes and bring a light sweater for night flights

or in any case avoid wearing contact lenses as the dry air in the cabin can cause eye irritation
