PHNOM PENH GUIDE

Phnom Penh’s bevy of businesses have grown to offer something for everyone, meaning there’s never been a better time to visit the Kingdom’s capital. Here’s our selection of outstanding establishments to get you started:

Palace Gate Hotel

#44B, Sothearos Blvd

This brand new luxury hotel has arguably the best location in the whole of Phnom Penh, being mere metres from its namesake, the gates of the Royal Palace. 105 rooms are housed in two separate buildings: the colonial-style Royal Wing, with a gym on the top floor, and the Apsara Wing, which draws inspirations from classic Asian designs. The centerpiece of the hotel is Mealea Restaurant, a beautifully restored colonial building with stunning original floor tiles, ornate columns, and walls adorned by photographs of Cambodian royalty. The fine dining experience of traditional Khmer cuisine and Western grill can be enjoyed by both in-house guests and outside diners, and there are three meeting rooms available for private bookings of 25, 30 or 45 people. The newly opened Palace Sky Bar grants spectacular views to the Palace and Wat Botum park, and a Christmas Gala Dinner and a New Year Countdown are events scheduled for December. Guests can also choose from an extensive range of treatments in the spa facility downstairs, with rooms available for individuals or couples to book.

Auntie Anne's

Ground Floor, Sorya Center Point, St.63

The latest international franchise to hit the Phnom Penh culinary scene, Auntie Anne’s, at the newly renovated Sorya Center Point, is heaven on earth for pretzel lover’s everywhere! Started back in 1988 by “Auntie” Anne Beiler, it’s no surprise that Auntie Anne’s is now the world’s largest pretzel chain with more than 1,600 locations across 25 countries. They’ve tasted success thanks to the star of their show – freshly-baked, hand-rolled pretzels in a variety of flavours such as Cinnamon Sugar and Sweet Almond. They also have pretzel-based goodies including the Pretzel Dog and Pepperoni Pretzel to enjoy. And what better way to wash it all down than with a delicious glass of traditional old fashioned lemonade, just as Auntie Anne makes herself! More locations are on the way, with the TK Avenue Toul Kork outlet opened earlier this year. So don’t get yourself in a twist when you need a wholesome snack. Get down to Auntie Anne’s for some freshly baked pretzels served up by their friendly staff.

Seara

Camned Building, 4th Fl., #142, Norodom Blvd.

Seara is the exclusive supplier of world-leading fitness brands from America including Life Fitness, Hammer Strength, Octane Fitness, Vectra Fitness, and Balanced Body. They also are the regional leader specializing in the design, development, supply and installation of International standard sports, recreation, and fitness facilities in Southeast Asia and beyond. They provide high quality products and services to many market sectors including homes, health and fitness facilities, private clubs, education institutions, hotels and resorts, property developments, and commercial and governmental clients. What makes Seara unique is the added value through their consultative approach to each and every project rather than focusing on “selling”. Their many years of experience in the region, in both quality fitness equipment and sports construction materials, truly sets them apart as they provide a full solution for top notch recreational and sport facilities from conceptual design to delivering quality products, complimented by a solid after sales service.

The Shop

St. 240 / St. 102 / St. 337 / St. 63

While it may have a rather simplistic sounding name for a restaurant, The Shop has been catering to the complex demands of the Phnom Penh expat community, as well as discerning locals, for over 15 years. Its popularity has also seen it expand to five locations spread wide across the city. With its charming, colonial heritage-style vibe and menu geared towards fresh, organic Western fare, you’ll hear many customers rave about the eggs benedict, chicken & avocado sandwich or their healthy salads, accompanied by a top quality pastry and a mighty fine cup of coffee. The sweet tooths amongst us should also take solace in the only locally-produced Belgian chocolates in town. Coming to The Shop is not just a matter of self-indulgence – you are also supporting the local economy. Operating as a social enterprise, the restaurant sources ingredients from quality local producers and puts great care and thought into taking care of their well-trained and loyal local staff.

SIHANOUKVILLE GUIDE

Sun, sea, sand – this southern coastal resort town has it all, and more. With an abundance of exquisite beaches, both on the mainland and on islands offshore, and plenty of great restaurants, bars, activities and hotels, you're all set for an unforgettable holiday:

Olive&Olive

Golden Lion Circle

Looking out onto the magnificent swirl of chaos that is the Golden Lions roundabout, this dining experience is the pole position of Sihanoukville. Likewise, inside, it is the busiest place in town, even in off-season. At its inception, top professionals from Italy and Turkey were flown in for a year to train the Khmer staff on preparing Mediterranean and European food the way it should be. Only seafood and vegetables are sought from trusted local suppliers. Almost everything else is imported from Italy except the Australian beef; the New Zealand lamb and the extra virgin olive oil are from Turkey. The thin crust Italian pizzas are created in a wood-fired oven to get that perfect crust. The lamb shanks just fall off the bone effortlessly. Three words: Beetroot Merlot steak. The tantalising tiramisu is only surpassed by the rich cheesecakes. Signature cocktails include the Mango Mojito and Moscow Mule. This labour of love has well-earned the ‘Certificate of Excellence’ from Tripadvisor for the last four years running. Find out why.

Cafe Amazon

Ekareach St.

Café Amazon is located in downtown Sihanoukville on Ekreach Street. This branch outlet for the immaculate franchise has its own university for coffeeology and a roasting plant! Participating in the restoration and conservation of local natural resources and the environment, especially upstream forests, Café Amazon consequently receive high quality coffee beans used to brew the best cup of coffee for their customers. Last year Café Amazon took out numerous awards at the World Branding Awards. The drinks are available hot, cold or frappe. The most popular coffee drinks are Amazon, Espresso, Mocha, Latte, Honey Black Coffee, White Choc Macchiato, Black Coffee and Cappuccino. A wide variety of teas are also available. Chocolate milk and the fruit smoothies also come highly recommended. Premium coffee drinks include; Caramel Macchiato, Coffee Marble and Iced Latte Amazon. The exterior and interior of the cafe is comprised of a series of redbrick masonry units and glass to evince that New York café vibe. The different specials and promotions vary regularly.

Alan's Paradise

National Highway

Just twenty minutes out of Sihanoukville and one kilometre past Kbal Chhay Waterfall this adult playground created by Chinese Alan is berserk! Tear around a real racing track in a Go-Kart designed like a neon-lit formula one car roaring to glory with the buzz of the burning petrol. Fancy war-games? Go on a shooting frenzy with a crystal submachine-gun spraying waterlogged pellets at your friends. Works like paintball minus the pain and mess. Score some serious soccer points shooting in the nets at numbers. Will you tell your friends to meet at the archery range? And for those that love their action virtual there are 3-D video games complete with immersive VR headsets. Also available: foosball, karaoke, giant water balls and off-road 4-wheel-drive buggies. Upon tiring, hang out with a loved one on the jetty overlooking a picturesque lake. At the end of the day the restaurant and bar are a great place to unwind. This is definitely Alan’s paradise, because unlike the rest of us, he gets to play here all day.

CJ Jewellery Centre

Samudera Supermarket, 7 Makara

A Russian family started CJ Jewellery Centre over three years ago. Their attentive staff are always ready to assist speaking English, Russian, Chinese and Ukrainian to cater for all one’s jewellery needs from 9.30 a.m. to 20.00 p.m. every day. Popular items include many styles of brooches, pendants, necklaces and rings. Similar to the famous ‘Rose of Maine,’ the red-hued phosphorescent 32-carat morganite ring is an exquisite addition, so named after industrialist J.P. Morgan. Pearls always add a subtle touch of sophistication to even the most humble of visages, so why not splash out on a pair of earrings for that special someone? Fancy a gorgeous deluxe pear-cut London blue topaz set into a cubic zirconia sterling silver ring? Some other popular items include the oval pink opal spinel set in a sterling silver pendant. Or how about the sublime oval hot rainbow black opal peridot set in a modernist square sterling silver ring? Be the belle of the ball in your life and check out this little gem of Sihanoukville.

Khmer New Year

Khmer New Year, or ‘Bon Chol Chhnam Thmei', is the Cambodian calendar’s foremost national holiday. Marking the end of the rice harvest and prime fishing seasons, the festival is a time for one and all to let their hair down and enjoy the fruits of the year's labour - at least until preparations for the next begin.

AngkoR

In-Flight Magazine March - April 2018

31

The New Year festival bids universal thanks to the guardians of the land who have brought rain and sun to the crops, new fish stocks to the river, and a time to pray for good fortune for the year soon to commence. Through a western lens, Khmer New Year is not wholly dissimilar to Christmas in its practice. Although the Cambodian version is focused on rejoicing in seasonal cycles and balancing

one's

karma, both

celebrations

revolve around joining with family and sharing gifts and food with loved ones, as well as those in need. The celebrations preceding this coming New Year begin on 14 April 2018, and will bring with it a mass exodus from major metropolitan centres across Cambodia, as most will return to their eldest family member's home in the provinces. April 14, known as 'Maha Sangkran', marks the two-day eve of the New Lunar Year. Most Cambodians, not surprisingly, gravitate toward their

local

temples. Here

prayers

secure

blessings and alms are offered to monks. Meanwhile, family homes are cleaned and decorated in preparation for the first day of the New Year. On the 15th, New Year's Eve or 'Virak Wanabat', younger family members give gifts to parents and other elders. Time is taken on this day to collectively remember ancestors and pay tribute to their lives. All the while, families relish the opportunity to share meals and time together. Catching up after a year apart in the big city is a common theme at many contemporary Khmer family tables over the break. Seng Song, from the Cambodian Living Arts Organisation

32

AngkoR

In-Flight Magazine March - April 2018

(CLA), an internationally renowned society that supports Cambodian artists and art, locally and abroad, believes New Year traditions are changing fast. "Ever-increasing urbanisation, new and more affordable opportunities to travel and work regionally and internationally, and dramatic changes in professional lifestyles are all diminishing the traditions of Khmer New Year," he explains. Seng remembers the old traditions fondly: "Even if we are busy, we have to make an effort to see our families for the New Year and remember why we have long celebrated this time. We can't let such fulfilling traditions die as Cambodia changes to meet the demands of the global economy."

'Virak Leung Sakk', the third and, officially, final day of the festival marks the first day of the Khmer Lunar New Year. On the morning of New Year's Day, cleansing ceremonies are held at local pagodas. In this rite, everyone has the chance to settle personal indiscretions of the past year by offering repentance for these wrongs to the monks of the temple. After these acts of contrition, all may leave the service with good luck blessings and, hopefully, a small stockpile of good fortune in check for the year to come. After the formalities are through, the party really begins. For the first days of the new year, villages across Cambodia will see water fly and clouds of white talcum powder. Water and powder is doused on temples, houses, vehicles, people

and animals, in an indiscriminate bid to wash away residual evil spirits and gain a fresh wet blessing for the new year. Traditional games all come with flirtatious twists at New Year: a time to enjoy one's newfound freedom away from the farm and maybe even spark a romance. ‘Teanh Proart’ is a common New Year's game, very similar to the fun western game Tug Of War, where two teams face a test of strength by holding on to either end of a length of rope and trying to pull each other over a line in the middle. Girls and boys form two teams, one at each end of the rope. A referee shouts "yak-or" and the players reply "ho-verr" three times to ensure everyone is ready, then the referee rings a bell and each team pulls until one has been pulled over the line drawn in middle. The team that is pulled over the line is the loser. At Khmer New Year, all cultures are welcome to choose different ways to join the party season depending on their family's own traditions. Seng believes this inclusiveness is not new in Khmer culture. For example, the Cham people of Cambodia don't eat pork due to their religion, so naturally they can't enjoy 'Nam Ansom Chrouk', a sticky rice delicacy emblematic of Khmer New Year and fertility, but that doesn't spoil the fun. Instead, the Cham enjoy 'Num Go', the same delicious snack with beef substituting pork. So if you're in Cambodia this New Year, don't be afraid to join the party. Be thankful for the success of the past year, remember those who have brought you this far, and welcome good fortune for the year to come.

Beauty From A Stone

Cambodian Carving For millennia, the art of stone carving has flourished in Cambodia and is now considered a quintessential element of Khmer culture. From the grandiosity and splendour of the murals which grace the walls of Angkor Wat to the small, intricate Buddha heads painstakingly shaped with hammer and chisel by Siem Reap-based artisans today, stone carving is a cherished art in the Kingdom.

To this day, the passion and livelihood of hundreds of individuals and families across the country is tied to the craft of carving stone statues

For Mr Kong Chan, speaking on behalf of the Samnake Stone Carving Community in Kampong Thom “each sculpture is completely unique, with the artisan imprinting his or her very own character into the creation. The roots of stone carving in Cambodia extend back so far that they have been obscured by the mists of time. What it certain is that the practice predates the mighty Angkor Empire by hundreds of years, and it was under the Angkorians that the craft prospered; from the 9th to 13th century, Khmer stone carvers were considered the finest in the world. The myriad murals and statues scattered throughout the temples of Angkor live on to showcase the skill and prowess of these ancient virtuosos of stone.

passing on this knowledge: “By making sure the new generations master these techniques we are helping to preserve traditional Khmer culture. This is one of the primary objectives of our social enterprise.” While you are in the Kingdom, do not pass up the opportunity of visiting a traditional stone-carving workshop. Seeing the artisans at work is a remarkable sight, and you have the opportunity to take home a one-of-a-kind high quality handicraft or two as an enduring aide–mémoire of your trip, not to mention the magnificence of the temples of Angkor.

The secret to the endurance and success of the art lies in the raw materials. The 400 million year-old sandstone found in Banteay Meanchey, the province bordering Siem Reap, is perfect for all manner of carving. The nearby provinces of Kompong Thom and Pursat were also renowned for their quality of stone. Whole tribes living around the sacred mountain of Phnom Kulen made their living transporting stone to the royal sites for use in some of the more detailed carvings, such as those found in Angkor Wat. The traditional method used by artisans, still widely employed to this day, begins with rough pre-cut blocks of stone. As with world-class sculptors of today, artisans were compelled to gaze deeply into the block until they arrived at a vision of the sculpture’s final form. Then they set to work by hewing the block of stone until its shape is as close as possible to that of the envisioned figure. Next comes the actual sculpting with hammer and chisel in which the artisan takes utmost care not to chip away too much of the block as any changes are indelible. Lastly, any excesses are removed by polishing the statue with sandpaper or other abrasive material after which the finishing touches are added, including cleaning the piece with water and embellishing it with lacquer or gilding.

Between Heaven & Earth

Bayon Temple Angkor Wat may be star of the show in the Kingdom of Wonder, but at its zenith the Bayon temple was the capital and epicentre of the great city of Angkor Thom, representing the intersection between heaven and earth.

AngkoR

The Bayon’s design stands out for two main reasons: its construction almost a century after Angkor Wat under King Jayavarman VII makes it the last state temple to be completed within the complex, and the only Mahayana Buddhist shrine dedicated to the Buddha. Jayavarman’s Hindu and Theravada Buddhist successors did proceed to modify its motifs, however. Its deeper carvings, coupled with bas-reliefs and towers originally painted and gilded in gold further distinguish Bayon from the neighbouring colossus. An approach via Angkor Thom's magnificent South Gate is unforgettable; its causeway is lined with 54 figures of devas (gods) facing 54 asuras (demons), with both sides locked into a perpetual enactment of Hindu myth, the Churning of the Ocean of Milk using the mythical snake or naga. From the eastern entrance, you can admire the awe-inspiring trios of apsaras (celestial goddesses ) dancing on lotuses depicted on the frontal pillars. Exquisite bas-reliefs of historical scenes featuring over 11,000 figures on the outer gallery wall can be photographed throughout the day. The inner gallery on the first floor is patterned with stunning carvings detailing stories and figures, including Hindu deities Shiva, Vishnu, and Brahma. Natural light in the cloistered galleries and courtyards at each intersection allows visitors to admire the grandeur of the Bayon's facets. Now for the architectural climax: the Central Sanctuary of the third level, comprising the famously serene though enigmatic faces, 200 of which grace its remaining 37 towers. They are generally accepted to represent the Lokeśvara, or “compassionate lord who gazes down" at the world, but their striking resemblance to King Jayavarman VII has moved some scholars to hypothesise homage to him, or even a King-Lokeśvara composite. Whatever their reason for being, omniscient four-directional

architecture, such as at the apex of Phnom Penh's Royal Palace. The central mass was crowned undoubtedly by the same one Chinese emissary Zhou Daguan chronicles; a legendary golden tower rising at the heart of the Khmer Kingdom, flanked by over 20 smaller towers and several hundred stone chambers. These vantage points afford spectacular views of the multitude of faces over different levels. Located 1.7km north of Angkor Wat, the Bayon with its “Smiles of Angkor” is a must-see. The tranquility of early mornings and amber rays at sunset throwing the aspects into glorious relief make these ideal times to visit.

Fine French Dining in Siem Reap While the charming little city of Siem Reap may not – at first glance – seem like the most obvious destination for fine French dining, Cambodia has a centuries-old connection with France that thrives until today. The Kingdom of Cambodia was a colony of French Indochina from 1863 – 1953, and aside from leafy European-style boulevards and a few borrowed words, the long-standing influences of this period are arguably felt most in the country’s food. Baguettes are now a staple part of numerous Khmer dishes, for example, and the popular Khmer beef dish ‘loc lac’ is said to have been borne of the French love of steaks! So when you’re visiting Siem Reap why not take the opportunity to explore the country’s culinary past, and indulge in an evening of fine French food.

Following her unexpected win at the 2014 Cambodia Pioneer Digital Championships Maily has taken Southeast Asia by storm, playing to sold out crowds in Thailand, Malaysia, and the Philippines. Now in huge demand throughout Cambodia, she is often called upon by the world’s most recognised brands including Hugo Boss, Fashion TV, Heineken Beer, Johnnie Walker, Adidas and Charles & Keith. Most recently she toured as the official DJ for the Tiger Street Football Tour 2018. We sat down with Maily to discuss how she got started, what drives her forward, and the future development of the Cambodian DJ scene.

Q How did you learn at first and how have you progressed since then?

A I bought my first Dj Controller while I was overseas travelling. I would study and learn from videos online. Then I contacted the GM of a club who I knew and he arranged training for me with my first DJ master. He was a Malaysian DJ and the resident at the club during that time. From that day on I have never stopped studying and practicing my skills. DJing is my career and I take it very seriously. Like any skill, we can only improve with study and practice, so I dedicate a lot of time to that. There are always new tracks and beats being released that I want to add to my set so that is a big part of the job. Making sure my sets are fresh and different each time. I am always

I didn’t expect to win at all, so when I did it was just such an incredible feeling. I was obsessed and it was my dream to compete in one of them, but I didn’t think I’d ever have the chance in Cambodia. Protected Perfection

Tonle Sap Reserve

The Tonle Sap Biosphere Reserve is the only area in Cambodia labelled by the Man and the Biosphere Programme (MAB) under UNESCO’s directive as “protected”. The main goal of the reserve is to study and promote indigenous ecological knowledge and its incorporation in the management practices of the local communities.

Only 10 percent of the area is covered by tall-tree forest, mainly along streams and wetter areas. The least disturbed and most botanically diverse areas have been gazetted as core areas: Prek Toal (Battaming Province), Moat Khla / Boeng Chhma (Siem Reap/Kompong Thom Provinces) and Stung Sen (Kompong Thom Province). This area is vital for the economy of Cambodia, since its fisheries provide 80 percent of the protein consumed within the country. The capital Angkor, situated 10 km from the north-eastern edge of the lake at the edge of the biosphere reserve is a World Heritage site. More than one million inhabitants live mainly in the buffer and transition areas. Some sixty floating villages are found on the lake and lake edges in the buffer zone. ATR SAFETY

យន្តហោះបភ ្រ ទ េ ATR 72 រចនា ATR 72: DESIGNED WITH SAFETY IN MIND ឡើងដោយផ្តត ោ លើសវុ ត្ថភា ិ ពខ្ពស់ Cambodia Angkor Air is proud to count the ATR 72 among its airliners. This prestigious aircraft is a twin-engine turboprop short-haul airliner built by the French-Italian manufacturer ATR. The ATR 72 is widely recognised as the most cost-effective regional aircraft, a reputation that has made it the preferred choice for short-haul flights. The craft’s innovative design introduces a range of improvements that have dramatically improved the passenger experience. The airliner’s revolutionary design minimises noise within the cabin, thanks to the installation of dynamic vibration absorbers and the use of advanced, soundproof materials. This makes for a silent and serene environment, maximising customer satisfaction. The innovations introduced by the design of the ATR 72 are not limited to passenger comfort. Powered by PW127 engines, the ATR 72 provides outstanding short-field landing performance, particularly for an aircraft of its size. With regards to safety, the ATR 72-500 has been suitably modified to better handle icing, and has a clean safety record. To deal with control surface jams, the ATR 72 has a provision to disconnect the otherwise linked elevator, allowing for the captain or the first officer to have full authority over their respective, independent elevators. With the inclusion of the revolutionary ATR 72, Cambodia Angkor Air offers its customers one of the best flying experiences of any airliner in the region. Clients can enjoy the aircraft on Phnom Penh-Siem Reap, Siem Reap-Sihanoukville and Phnom Penh-Ho Chi Minh City routes, and more to come. Always giving maximum priority to safety, Cambodia Angkor Air continues to invest in new aircrafts that adhere to all international safety requirements.
