3. When the shell ‘gives’, push the knife in further at an angle so it slides along the top shell, cutting through the adductor muscle. This will open the shell then it can be lifted with the knife and the top shell broken off at the hinge.

4. Turn the oyster with frill towards you and cut from right to left underneath the adductor muscle at the shell and flip the oyster over. Note: in France and many restaurants in the UK they do not turn the oyster, leaving it secured by the adductor muscle to be detached by the customer, usually with a flat oyster fork.
