Recipes for the Airwave Health Cooker

Victoria Sponge Makes 1 x 20cm spring form tin 200g butter 220g caster sugar 4 large eggs 1 tsp vanilla extract 240g self raising flour 3 tbsp milk, you may need a little more To decorate Whipped cream Strawberries 1. Line the springform tin with parchment, butter and flour the sides of the tin. 2. Using an electric mixer, cream the butter and sugar until pale and fluffy. 3. Add the eggs, one at a time, beating after each addition and stir in the vanilla extract 4. Fold in the flour and add the milk to form a soft dropping consistency. 5. Turn on the Air-Wave Health Cooker to 190째C. 6. Place the tin on the lower rack, bake for 30 to 35 minutes until golden on top and when a skewer is inserted it comes out clean. 7. Remove from the oven and set aside to cool slightly before removing from the tin. 8. Place on a cooling rack. Using a cake divider, cut the cake into two and fill with whipped cream and strawberries. Tip: Divide the Victoria sponge in two and fill with lemon curd and cream and dust the top with icing sugar and sprinkle edible flowers.

Traditional Rice Pudding Serves 4 If you have a microwave, heat the milk before adding all the other ingredients together to speed up the cooking time.

75g pudding rice 30g caster sugar 350ml milk pinch nutmeg 2 tbsp raisins ½ lemon, zest only Pinch of salt 1. Place all the ingredients into a glass ovenproof bowl. 2. Turn on the Air-Wave Health Cooker to 185C, place the bowl on the lower rack, and cook for 30 minutes, stirring once or twice. 3. Continue to cook for a further 20 minutes, stirring a few times. 4. Remove from the Cooker, stir and leave for 12 minutes before serving. Tip: Instead of the cream add coconut milk and 1 diced mango for a yummy dessert.
