Helpful Hints Avoid brown lettuce Brown lettuce results from storage in higher than ideal temperature. Store lettuce between 34 and 36 degrees. Avoid pink lettuce leaves Pink lettuce is caused by oxidation (exposure to air). Seal any holes in the plastic bag. Refresh limp lettuce leaves Limp leaves can often be refreshed through washing in cold water. Increase salad volume For a fuller plate, choose a fluffy lettuce, such as an Arcadian blend.

Lettuce Lettuce Varieties Iceberg lettuce is the number one workhorse lettuce in the industry. This versatile crisp, firm lettuce is great for salads, sandwiches, hamburgers, wraps, and as a garnish. It is round in shape and tightly bound with broad, thick-walled leaves. Outside leaves range may be dark to lime green while inner leaves range from light green to white. Romaine lettuce has a tall head with stiff, dark green leaves with a central rib running the length of each leaf. It has a crisp texture with delicate and sweet inner leaves and more bitter outer leaves. Romaine lettuce is slightly sweeter than iceberg lettuce and is a popular choice for salads, sandwiches, and wide range of other foodservice applications. The tender and delicate leaves of red and green leaf lettuce are mild in flavor and not as crisp as those of Romaine or Iceberg. There leaves are shades of green and purple and present nicely in salads or on sandwiches. Spring mix is typically a blend of small, tender, multicolored leaves of several types of letuce. Peak spring mix blends five green lettuces, and three red lettuces for a flavorful way to add vegetables to almost any meal. This washed and ready to use product adds lots of color and taste to your salad offerings and bulks up on the plate for greater portions than traditional Iceberg and Romaine salads.

Off-site dining, whether in the form of takeout, delivery, grab & go, or catering, is a major revenue category for restaurants, and according to trend watchers, it shows no sign of slowing down. In fact, a Restaurant Business survey found that, “by 2020, an estimated 40% of restaurants’ sales could come from delivery.” For this reason alone, it’s a category that restaurant owners can’t afford to ignore. And with the trend comes a new crop of challenges; training staff, coordinating with delivery services, streamlining ordering, and a big one: packaging.

So, let’s dive into the materials and best practices that can make your off-site program a success.

» Leak-proof A few bumps in the road, and your delivery driver or guest will be dealing with a sloppy situation. A simple plastic foam clamshell isn’t going to cut it in this case, but there are options. You can wrap clamshells in plastic wrap, which may add an unnecessary step to your fulfillment process; or, you can invest in leak-proof packaging, which keeps spills at bay and inspires consumer confidence.

» Safety seal With the rise of third-party meal delivery services, the concept of safety-seal packaging has grown in importance. Safety seals can be on the individual menu items or on the bag itself. When a customer sees this, it creates peace of mind that this food has not been tampered with and is, thus, safe to eat.

» Eco-friendly With the proliferation of takeout and delivery has come a surge in single-use packaging, and many would argue that this has a negative impact on the environment. Brands seeking to reduce their carbon footprint should invest in recyclable or biodegradable packaging, and there are more and better options in these categories than ever before. Molded fiber packaging, for example, is becoming increasingly popular as suppliers see eco-friendly design as integral to food packaging. Make sure to educate consumers about your packaging choices to let them know if you’ve made an investment in eco-friendly packaging, as this can set your business apart from the competition.

Know your materials. Before investing in food packaging options, familiarize yourself with common packaging materials and determine which represents the best fit for your business: » Pre-consumer recycled

Pre-consumer materials are generated by manufacturers and processors and may consist of scrap, trimmings, and other byproducts that were never used in the consumer market.

» Post-consumer recycled

Post-consumer material is something that completed its life cycle as a consumer item and would otherwise have been disposed of as a solid waste if not recycled by consumers or businesses

» Polyethylene Terephthalate (PET, PETE) The resin most often used to make water bottles but is also used to make drink cups and deli and dessert containers.

» Polypropylene (PP)

A durable plastic used to make drink cups and food containers.

» Polystyrene

Polystyrene or PS is a form of plastic that can be foamed or rigid. In foamed form, it offers good insulation. It is not widely recyclable and is not biodegradable

» Bioplastics

These plastics are made from sugar cane, corn, and other plantbased feedstocks. It’s important to note that not all feedstock-based plastics are biodegradable, despite common misconceptions. Some non-biodegradable bioplastics, however, are still recyclable.

» PLA

Polylactic acid, a bioplastic made from cornstarch. It is compostable but only in commercial composting facilities. While somewhat heat tolerant, it is not microwavable. Used primarily for cold drink cups and food containers.

» Bagasse

Made from sugarcane pulp, it is compostable and biodegradable. It is heat tolerant, microwavable, and suitable for hot drink cups and soup containers.

» BPA

Bisphenol A, a chemical used in manufacturing plastics that is believed to be able to seep into foods. Suppliers will know if their containers are made with BPA, so ask. Once you determine the best materials for your packaging needs, consider other elements that may be important to the consumer, such as visibility of the item. Containers with clear lids or windows present the food in a more desirable way than opaque packaging. Another important aspect is the breathability of the container. If an item is supposed to arrive to the consumer with a crispy exterior, such as fried foods, consider packaging options with ventilation for steam. (Source: Starfleet Research)

When it comes to the service side of things, there is an opportunity to provide an excellent experience for the in-house diner who has leftover food to take home. Train staff to box leftovers for the guest, instructing them on using the appropriate size and shape container for each food item. Whether staff are packaging leftovers or fresh food to be delivered, here are some best practices to keep in mind:

Separate food items of different temperatures.

Don’t box hot chicken with a cold salad, or both items will be lukewarm when they arrive. Make sure to choose packaging that is appropriate for maintaining temperatures, especially when it comes to delivery. Portable coolers and heat-maintaining bags can make a huge difference in consumer satisfaction.

Package sauce on the side whenever possible.

It can reduce the mess and gives the guest control over their experience.

Ask about napkins and utensils rather than including them automatically. This can translate

to a big savings for the restaurant over time, and most people don’t need plastic ware because they will be eating the food at home. Include menus and special offers. This is another marketing opportunity, so equip guests with a reason to return and anything they might need to make the return experience easier or more pleasurable.

Consider the total unboxing experience. What opportunities are there for you to communicate your brand via packaging? Can you stamp, emboss or sticker packaging with your branding to bring some of the feeling of your business into the home? If so, it may be a useful differentiator that stands out in the consumer’s overall experience. No matter what choices you make for your packaging needs, you’re making a statement to the consumer about your values. Make sure it’s one that you’re comfortable with and that represents your business well. 

Farm to Table Veggie options for your summer menu

Thank goodness spring is here and summer is right around the corner. With what seemed to be a never-ending winter finally in the rear-view mirror, we can now look forward to warmer weather and more time outdoors, but it is also time to review menu offerings for the seasons that are approaching. We sell a lot of produce here at Performance FoodserviceNorthCenter, and we are constantly looking for ways to show you how to utilize those products. This month, I am focusing on all things PRODUCE! There is a big consumer push to eat healthier, as all segments of our industry are in need of additional "healthier" options for customers. Our product buyer, Kara Wing, does a great job at sourcing what is available from our local farmers, as well as our West Coast suppliers. She is always on the hunt for the next coolest new item. Recently, she brought in a bunch of new labor-saving items, such as some pre-cut veggies and spiralized vegetables, to help take away some of the pain caused by minimum wage increases. Pre-sliced and diced tomatoes, celery, red and yellow onions, green peppers, and curly zucchini and yellow squash are among a few of the current trendy items. She also brought in a couple of unique lettuce blends, as well as yellow tomatoes and cipollini onions. I have taken some of these items and made some tasty dishes to inspire you‌get some creative juices flowing, take the produce plundge and try some on your customers. They will "thank you" for offering healthy options, and you can make some great profits when you place these on your menus!

DECONSTRUCTED RATATOUILLE APPETIZER Lots of layers in this dish…let's start at the bottom… Bottom, a simple layer of marinara sauce down the middle of the plate, with some sauteed spinach on both sides. Next, a big thick slice of breaded eggplant (#410628), followed by a grilled red onion slice. Then I took some of the spiralized zucchini (#573808) and yellow squash (#573810) and light breaded and fried both and placed atop the previous two veggies. Topped it all with a little more marinara, some grated parmesan cheese and a fried basil leaf on top.

I sauteed some baby bella, portobella and shiitake mushrooms, roasted cippolini onions (#272749) and some julienne yellow tomatoes (#968649) in some olive oil with a little salt and pepper. Just a quick sautee to soften the mushrooms. To that, I added some Vegan Thai Coconut Broth (#575469) and simmered until heated thoroughly. On the side, I cooked off some Lilly's wild mushroom raviolis (#391221) and placed them on a bed of fresh spinach, then topped them with the mushroom and Thai Coconut broth, which made a wonderful flavor when combined with the earthy mushrooms…think UMAMI to the max! I finished the dish with a little Cotija Cheese (#252805) and a couple of fried basil leaves…and then my photo crew ate every last bite!

On a bed of fresh spinach, layer the following items: I pre-cooked some Lilly's Burrata ravioli (#531834) and cooled it, then cut them into halves. Layered it with some sliced yellow tomatoes (#968649), topped with salt and pepper, a drizzle of olive oil and balsamic glaze (#476950), topped with diced roasted red peppers and chiffonade of basil. This presentation will have your guests wanting to take and post pictures!

Preparation

1. Preheat oven to 300°F. 2. Generously salt and pepper ribs. Lay ribs in a single layer, in roasting pan. Cook for 3 hours, turning once midway through cooking time. Remove from oven and cool slightly. Pour off any fat from bottom of pan. When meat is cool enough to handle, cut into individual ribs. 3. While ribs are cooking, sauté onion and garlic in olive oil in large stockpot, until soft. Add remaining ingredients, except molasses and guava paste/jelly and bring to a boil. Reduce heat and simmer, stirring occasionally, reducing liquid by half, approximately 1 hour. Sauce should be thick, but still loose enough to pour.

4. Add molasses and guava paste/jelly to sauce and continue reducing for 10 to 15 minutes until thick enough to coat the back of a spoon. If sauce becomes too thick, thin with extra guava nectar and/or beer. Season with salt and pepper.

5. Coat ribs generously with sauce. Continue cooking ribs for 1 hour more, or until rib meat is tender and easily pulled from bone. Sauce will thicken and darken on ribs, so turn darker ribs over. Before serving, brush ribs with additional sauce. Serve extra sauce on the side.

wners Eric Greenler, Tyler MacDonald and Jack O’Sullivan had worked together in the restaurant business for several years and decided to open their own place. An opportunity arose when the space became available with the exit of what was probably most known as a beat up old dive bar. They took the keys to the building on downtown Main Street Newmarket, NH September 2015 and began gutting and rebuilding the space. The building was very old and needed a good amount of attention. Hard work from the owners and friends brought the place back to life in very short time. Oak House opened its doors October 28, 2015. When designing the new space, the owners looked to nature. Several dining hall pieces were crafted from a massive log. A live edge high top bar runs the center of the dining room surrounded by bench seats cut and formed from the same log. Rustic dÊcor connects the space with eclectic abstract art from local artists dotting the walls. ➢

The casual yet dynamic personalities of the owners can be seen and felt in Oak House from the rustic décor, cheerful staff and expertly crafted unique menu items. Oak House is well known for its vegan and smoked meat menu. They have found a balance in their menu that draws a broad range of customer preferences. Whether you order the Eggplant Napoleon or the Barbe-Cuban (smoked pulled pork) you will not be disappointed. The three owners are ‘locally’ focused. They enjoy and support the community they live and work in. Much credit is given to their community for the support they received in getting the business up and running to the regular locals who visit often. Many local beers are served; local artists can display their art and local food is sourced as often as possible. Staff is relied upon of course. When asked about staff turnover or anything special they’d like to share, Eric explained they really don’t have high turnover. They expect the college students to leave when school is done but other than that, most employees stay a long time. A fun team environment fosters an enjoyable work space. A unique approach - every person is trained and works every position from front to back of the house. This teaches everyone what each job takes and fosters appreciation for what others are giving to serve our customers. Owners Eric, Tyler and Jack invite you to visit.
