LENT SEAFOOD DISHES WITH

The season of Spring is approaching quick, but really tough to focus on right now with all of the winter still around us. With that being said, Performance Foodservice-NorthCenter is committed to offering our customers many quality seafood options and solutions for your “Features” board this year. Our line of Empire’s Treasure and Baywinds products are sourced from the best locations possible from around the globe. Saku Block Tuna, Mahi-Mahi, Rainbow Trout, Shrimp, Scallops and Red Snapper are the items that are featured in the following recipe ideas. Many contain interchangeable ingredients, meaning that the accompaniments surrounding each dish can be used with items from another recipe. Most importantly, these are some easy solutions with great flavors that you can introduce to your customers on a weekly basis, and they are simple to produce.

Empire’s Treasure Yellowfin Tuna is available in 4 oz., 6 oz. and 8 oz. portions, as well as Saku block (8-12 squared blocks).

This recipe is bright, colorful and spicy. I rolled the Saku block (#420826) in black and white sesame seeds and seared in a hot pan with some sesame oil for about 15 seconds on all sides, then removed from the heat and let rest prior to cutting into ½ “ thick planks. Arranged over some Seaweed salad and garnished with grilled lemon, Kimchi (#589825), and a Go Chu Jang Sauce, this plate screams out “bold and spicy” deliciousness!
